Entirely edible raw or cooked, blade and pale stalk alike, and mild enough to eat by the handful. Very high in vitamin K, so anyone on blood-thinning medication should keep their intake steady rather than swinging. Raw brassicas in enormous daily quantities can affect thyroid function in iodine-deficient people, which is a non-issue for normal eating and reduced further by cooking. Despite the name mustard spinach, it is a brassica and carries far less oxalic acid than true spinach.

Overview

A fast, mild Japanese green with smooth glossy leaves - the most heat-tolerant and forgiving of the Asian greens, and the closest thing in the cabbage family to a spinach substitute.

Komatsuna is the workhorse of the Japanese greens. It grows upright to a foot or more, with broad, smooth, glossy dark-green blades on slender pale stalks — no frills, no crinkles, no grit traps — and it tastes gently sweet and cabbagey with only the faintest mustard note. Baby leaves cut at about 21 days and full-size leaves at 35 to 40, which makes it one of the fastest things in the garden.

Its real distinction is tolerance. Komatsuna germinates and grows across a wider temperature range than any of its relatives: it takes hard frost standing and keeps producing in heat that sends mizuna, tatsoi and bok choy straight to flower. If you have tried Asian greens and lost them all to bolting, this is the one to try next.

It is sold in North America under several names, and this is where confusion starts. Komatsuna, Japanese mustard spinach, mustard spinach and Tendergreen are all the same plant. The spinach in those names is a description of how it eats, not botany — it is a cabbage-family green, and unlike true spinach it carries very little oxalic acid, which is exactly why it wilts into a dish without that metallic edge.

One correction worth knowing. Komatsuna is usually shelved under mustard greens, but it is a different species: komatsuna is Brassica rapa, alongside turnip, napa cabbage, bok choy, mizuna and tatsoi, while the true leaf mustards are Brassica juncea. It changes nothing about growing them side by side, and it reverses the isolation rule if you save seed — see Propagation.

Flea beetles are tiny dark beetles - often shiny black or bronze, rarely more than a couple of millimeters long - with enlarged back legs that let them spring away like fleas the moment you lean in. The adults chew countless small round pits and shot-holes through leaves, giving the foliage a peppered, buckshot-riddled look. They overwinter as adults in leaf litter, hedgerows, and crop debris, emerge hungry in spring, and are worst in warm dry spells. The damage is mostly a seedling and transplant problem: a small plant with a few leaves can be checked, stunted, or killed outright, while the same plant shrugs them off once it is large and growing strongly. Different species specialize on different plant families, so the beetles hammering your brassicas are not the ones on your nightshades. Some species also have larvae that feed on roots and tubers underground.

Watch for: Dozens of pinhead-sized round holes peppered across the leaves, thickest on the youngest, most tender growth. Tiny beetles that spring away as you brush the plants or lean in for a closer look - that jump is the identification. Seedlings that go lacy and stop growing, and transplants that sit and sulk instead of taking off. Damage heaviest in warm, dry weather and along the edge of a bed nearest weedy ground or last year's crop debris. On root crops, shallow narrow grooves or channels scarring the skin at harvest, from larvae feeding underground.

Prevent: Floating row cover or fine insect mesh, laid over the bed from the day of sowing or transplanting and sealed at the edges so nothing can walk in underneath, is the single best defense - and on the crops they favor it is close to essential. Leave it on until plants are large and growing strongly, or until flowering on anything that needs pollinating. Push growth: a well-watered, unchecked plant outgrows the damage, so the whole game is getting seedlings through their vulnerable weeks fast. Keep beds weed-free, since related weeds host the beetles alongside your crop, and clear crop debris at the end of the season where the adults overwinter. Rotate away from a bed that grew a related crop last year. Where you can, shift sowing dates - cooler-season and fall plantings often miss the peak of adult feeding entirely.

Treat: Row cover and healthy fast growth carry most crops through, and on an established plant the damage is usually cosmetic and needs nothing at all. Where a young planting is genuinely being stripped, kaolin clay coats the leaves and deters feeding, and spinosad will knock the beetles back. Spinosad is acutely toxic to bees while the spray is still wet - apply it at dusk when bees are not flying, never onto plants in flower, and follow the product label. Anything you spray must be labeled for the plant you are treating, and you must observe its pre-harvest interval on a crop you are picking. Yellow sticky traps are useful for telling you when the beetles have arrived. Where the damage falls on the part you eat, harvesting young often beats them outright; where you are growing for a root or a fruit, leaf damage can simply be tolerated. Larvae feeding underground cannot be reached by a foliar spray, so rotation and clean beds are what work against those.

The defining pest of this crop, and worse here than on most because komatsuna's summer sowings run straight through the beetles' warm-weather peak. Row cover sealed to the soil from the day of sowing, plus growing the fast summer crops on hard, is what keeps the leaves presentable.

Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.

Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.

Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.

Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Easier to deal with here than on most brassicas: the leaves are smooth with no crinkles to hide colonies, so a hard rinse actually reaches them. The one place they build is deep in the crown at the base of the stalks - check there, and shear a colonized patch back rather than spraying a leaf you eat raw.

Slugs and snails are nocturnal mollusks that rasp ragged holes in soft leaves, shear off seedlings at ground level, and chew into ripe fruit that touches the soil. They feed at night and in the early morning and spend the day hidden under boards, pots, dense mulch, leaf litter, and low foliage, becoming active in exactly the cool, damp, shaded conditions that suit young plants. Damage is heaviest in wet spells and on tender spring growth: a single wet week can erase a row of seedlings while an established, tough-leaved plant of the same species is barely marked. They lay clusters of small pearly eggs in damp soil and under debris, so a garden with plenty of cover carries a resident population year after year rather than being invaded from outside.

Watch for: Irregular ragged holes chewed out of the middle of leaves and along the edges - not the clean-edged cuts a caterpillar leaves. Seedlings that vanish overnight, or that are cut off at soil level with nothing left behind. Silvery dried slime trails across leaves, soil, pots, and paving in the morning: this is the giveaway that tells you it was mollusks rather than an insect. Chewed pits in ripe fruit, especially where it rests on the ground. Damage that shows up on the lowest, dampest leaves first and gets worse after rain or evening watering. Turn over a board, an upturned pot, or a clump of dense mulch during the day and look for the animals themselves sheltering in the cool underneath.

Prevent: Take away the daytime shelter first: lift boards and upturned pots, clear piles of debris, keep dense mulch pulled back from crowns and stems, and give crowded plantings enough airflow to dry out. Water in the morning rather than the evening so the surface is dry by the time they come out. Copper tape around containers and raised beds gives them a shock they will not cross, and it is the one barrier that reliably works. Get plants past the vulnerable stage quickly - start seedlings in pots and set them out at a decent size rather than direct-sowing into a cold wet bed, since most plants stop being worth defending once the leaves toughen. Leave the ground beetles, frogs, toads, and ground-feeding birds alone, because they eat mollusks all night for free and broad-spectrum slug pellets kill them too. Where thick-leaved or resistant varieties exist for what you are growing, they take far less damage.

Treat: Hand-picking works and costs nothing: go out an hour after dark with a headlamp, drop what you find into soapy water, and repeat nightly for a week or two - persistence is what wins, not any single product. Shallow beer traps sunk to soil level catch them too, but need emptying and refilling daily to be worth anything. Iron-phosphate bait is the standard control and is far lower-risk around pets and wildlife than the old metaldehyde products, but it is not harmless: many formulations include EDTA, and a dog that eats a quantity of pellets can develop iron toxicosis. Scatter it thinly per the label, never in piles, and keep dogs off a baited bed. Clear fallen foliage and debris in autumn, where the eggs are laid. In a wet climate this is a population you manage each season rather than one you eradicate - and on most established plants light grazing is cosmetic and needs nothing at all.

A seedling-stage problem: a wet week can erase a newly sown cutting bed, while the upright habit of an established plant keeps most leaves clear of the ground and out of reach. The row cover you are already using against flea beetles blocks them too if the edges are sealed to the soil.

Cabbage Worms & Loopers Medium PestMay, Jun, Jul, Aug, Sep

The brassica caterpillar complex: velvety green imported cabbageworms (larvae of the white cabbage butterfly) and inch-worming cabbage loopers (a moth larva). Both chew large ragged holes through the leaves, then work into whatever folds up at the center - head, curd, sprout, or growing crown - fouling it with green pellet droppings. Fast leaf crops are usually cut before the damage matters; slow heading crops suffer most. Nasturtium carries the same mustard-oil chemistry that cues the butterflies to lay, so it hosts them too and is often planted nearby as a decoy.

Watch for: Ragged holes in the leaves, dark-green frass in the crown, and green caterpillars that match the leaf and hide along midribs and leaf undersides. White butterflies fluttering low over the bed mean eggs are going down now - look under the leaves for the small pale-yellow eggs, laid one at a time rather than in clusters.

Prevent: Floating row cover from sowing or transplant is the near-complete fix - it stops the adults ever laying. Seal it at the soil edges and lift it only to weed or harvest. Otherwise check leaf undersides twice a week, rub off the eggs, and hand-pick the caterpillars. Let dill, cilantro, or other umbels flower nearby to feed the parasitic wasps that do this work for you.

Treat: Bt (Bacillus thuringiensis kurstaki) is the one to reach for first: it affects only caterpillars and is safe around bees, parasitic wasps, and hoverflies. Spinosad also works, but it is not caterpillar-specific - while the spray is still wet it is toxic to bees and to the parasitic wasps that hunt cabbage worms for you. If you use it, spray at dusk so it dries before bees are out, and never wet open flowers, including flowering companions like dill or nasturtium. Follow the label for both. On a small planting, hand-picking and rubbing off eggs is enough on its own.

Summer sowings sit right in the cabbage whites' season, so this matters more here than on the strictly cool-season Asian greens. The broad flat leaves make caterpillars easy to spot and hand-pick, which on a crop cut every few weeks is usually the whole treatment.

A soil-borne pathogen (Plasmodiophora brassicae) that infects brassica roots and swells them into distorted, clubbed galls. Affected plants stunt and yellow, wilt on warm afternoons and recover overnight, and never size up properly. It is worst in acidic, poorly drained ground, and the resting spores survive in soil for up to 20 years, moving around on soil, tools, boots, water and infected transplants.

Watch for: Midday wilting that recovers overnight, yellowing and stunting with no obvious cause, and - the giveaway - swollen, distorted, clubbed roots instead of clean ones when a plant is pulled.

Prevent: Rotate at least 4 years out of every brassica, counting the fast salad ones and any brassica cover crop. Lime toward pH 7.0-7.2, since the pathogen dislikes alkaline soil, and improve drainage. Plant only clean seed and transplants, never move infested soil or plants around the garden, and grow resistant or tolerant varieties where the disease is known to be present.

Treat: There is no cure once the soil is infested. Pull and destroy affected plants - bag them, do not compost them - lime the bed, and keep brassicas off that ground for years. Rotation and pH are the whole game here.

Komatsuna is Brassica rapa and is infected as readily as cabbage or turnip. Because it is fast enough to crop three seasons a year, the real risk is resowing the same bed over and over - rotate successions to different ground rather than building spore load in one spot.

Cabbage Root Maggot Low PestApr, May, Jun, Sep

The larvae of a small gray fly that lays its eggs at the soil line against brassica stems. The white maggots hatch and tunnel down into the roots, scarring and rotting them, so plants wilt on warm days, stunt, take on a blue-green cast, and can die outright; root brassicas are tunneled through and spoiled. It is worst in cool, wet spring soil, on transplants and early sowings, and in ground that grew brassicas the year before.

Watch for: Sudden wilting on the first warm days even though the soil is moist, stunted plants with a bluish cast, and - on pulling a failing plant - brown tunnels and slimy scarring through the roots with small white maggots inside.

Prevent: Cover the crop with floating row fabric from the day you sow or transplant, sealing the edges down to the soil so the fly cannot reach the stems, or fit a cardboard or felt collar disc flat around each stem to block egg-laying. Rotate at least three years away from ground that grew brassicas, and do not plant into fresh manure.

Treat: There is no rescue once the maggots are inside the roots. Pull and destroy badly infested plants rather than composting them, and reset the bed with row cover and rotation. Beneficial nematodes drenched into the soil help suppress the larvae in a bed you have to keep using.

Mostly a cool wet spring problem, and this crop is usually fast enough to outrun it. The row cover you already have on against flea beetles blocks the egg-laying fly as well, provided the edges are sealed to the soil.

Not a separate crop but komatsuna under its long-established American market name - also sold as mustard spinach or Tendergreen mustard. Smooth glossy dark-green leaves, mild and quick, marketed for decades as a bolt-resistant spinach substitute. Carried as its own catalog name so the packet you bought resolves; it grows, crops and crosses exactly like Komatsuna, and it is a Brassica rapa despite usually being shelved with the true mustards.

Grow

Direct sow shallow, cover against flea beetles, thin to 8-12 inches for full-size plants, and succession sow - it will crop in spring, fall and, uniquely, summer.

Direct sow ¼–½ inch deep into rich, well-drained soil; seedlings appear in 3 to 5 days almost regardless of the weather. Thin by intention: leave a dense stand at 2–3 inches for a baby-leaf cutting bed, or thin to 8–12 inches for full-size plants, which grow larger than most people expect — well over a foot tall with leaves the length of your forearm.

Give it full sun in the cool months and afternoon shade in warm ones, keep moisture even, and feed lightly. Steady water is what keeps the leaves broad, glossy and sweet; a drought-checked plant makes small sharp leaves and bolts early, which is essentially the only way to make komatsuna taste bad.

Two things to plan for. Flea beetles are the main pest, and since the leaf is the crop, floating row cover from the day of sowing is the difference between clean greens and peppered ones. And succession sowing is still the right habit even though this is the most bolt-tolerant of the group — a short row every two weeks keeps you cutting continuously.

The one place komatsuna beats every relative is the calendar. Spring and fall are both easy, the fall crop is the best of the year, and unlike mizuna, tatsoi or bok choy it is genuinely worth attempting a midsummer sowing in most of the country. Summer leaves come smaller and a little sharper, so shade it, water it hard, and cut at baby size.

Care

Even water, a light feed after every cut, row cover against flea beetles, and a new sowing started before the old one tires.

Care here is aimed almost entirely at keeping regrowth fast. Water evenly — about an inch a week, considerably more in summer heat — and mulch to steady both moisture and soil temperature. After every hard cut give a light nitrogen or liquid feed; you can watch the next flush come in faster for it.

Keep floating row cover on through the young weeks. It handles flea beetles, cabbage worms and, with the edges sealed to the soil, slugs shearing off a newly sown row. Check leaf undersides and the crown for aphids, especially in a sheltered winter tunnel where still air lets colonies build; a hard rinse handles them, and the smooth leaves make this far easier than on a curly or savoyed green.

The rest is timing rather than tending. Watch for the central stalk beginning to rise and cut everything you want when you see it start — take the sweet buds as a bonus and move on to the next succession. In heat, expect smaller, sharper leaves rather than outright failure; that is komatsuna behaving normally at the edge of its range, and cutting young plus a little afternoon shade is the whole answer.

Harvest

Cut baby leaves at three weeks or full leaves at five, pick from the outside and leave the growing point, and take the flower buds as a bonus.

Three modes, and all of them work. Baby leaf: shear a dense stand at 3–4 inches from about 21 days, straight into a salad. Outer leaves: take the big outside leaves off a full-size plant an inch above the crown, a few at a time, leaving the center growing — the most productive approach for a household, and one plant will keep a kitchen going for weeks. Whole plant: shear it an inch above the crown for a big cooking batch; it usually regrows once more.

Cut in the cool morning and get it out of the sun. There is nothing to trim and nothing to strip — the smooth leaves hold no grit and the pale stalks are eaten with the blade — which makes komatsuna one of the least fussy greens to prepare. Full-size leaves are for the pan; keep the tender young ones for raw use.

When a plant finally bolts, take the flowering shoots and unopened buds before the yellow flowers open. They are sweet and broccoli-raab-like, excellent blanched with soy or thrown in a stir-fry, and they buy you another week of eating from a plant you had written off.

Storage

Five days to a week in the crisper, and it takes to Japanese salt pickling better than any other green here.

Store cut leaves unwashed in a loosely closed bag with a paper towel in the crisper, where they hold five to eight days — sturdier than lettuce or mizuna thanks to the thicker blade. Wash and spin dry just before use, and put it in the bag dry, since wet greens go slimy. A wilted bunch revives from 20 minutes in ice water.

For a glut, blanch for a minute and freeze for later use in soups, stir-fries and ohitashi; the thicker leaf survives freezing better than most Asian greens do. It also dehydrates acceptably for soup, though there is little reason to bother.

The traditional answer is pickling, and komatsuna is genuinely good at it. A simple salt pickle (komatsuna no tsukemono) — leaves rubbed with salt, weighted, and left a day or two — is a classic Japanese preparation, and a quick refrigerator pickle with soy, vinegar, ginger and a little sugar keeps a week or two. As with its relatives, though, the best storage in fall and winter is the garden bed itself, where it stands through frost.

In the kitchen

A spinach substitute that does not go slimy or metallic: quick to wilt, mild and sweet, and equally good in a stir-fry, a soup or a salt pickle.

Use komatsuna wherever you would use spinach and it will behave better. It wilts fast without collapsing into slime, holds a little texture in the stalk, and carries none of the astringent metallic edge that spinach's oxalic acid gives. Stir-fry it with garlic, ginger and sesame oil for a minute; drop it into miso soup, ramen or a noodle bowl right at the end; braise it briefly with a splash of soy.

The Japanese preparation worth copying is ohitashi: blanch the leaves for thirty seconds, plunge them into cold water, squeeze out the moisture, cut into lengths and dress with dashi, soy and a shower of bonito flakes. It is served cold, takes ten minutes, and is the best possible use of a large komatsuna harvest. In Tokyo it is also a traditional ingredient of ozoni, the New Year soup.

Young leaves are mild enough to go straight into a salad, where they are sweeter than arugula and sturdier than mizuna, and they take a sesame or miso dressing well. Full-size summer leaves are sharper and want cooking. The flower shoots of a bolting plant stir-fry like a small sweet broccoli raab.

Nutrition

Very high in vitamin K, A and C with notable calcium - and unlike true spinach it is low in oxalate, so more of that calcium is actually available.

Komatsuna is a nutrient-dense leafy brassica: very high in vitamin K, rich in vitamin A as beta-carotene and vitamin C, and a good source of calcium, potassium, folate and fiber for almost no calories. Like every cabbage-family plant it carries glucosinolates, the sulfur compounds behind its faint mustard note and the family's most-studied phytochemicals.

The point worth making about this particular green is the one its nickname obscures. True spinach is high in oxalic acid, which binds calcium and iron in the same mouthful and matters to people prone to calcium-oxalate kidney stones. Komatsuna is a brassica, not a spinach, and is low in oxalate — so the calcium it contains is far better absorbed, and it is a sensible substitute for anyone who has been told to moderate spinach, chard or beet greens.

The standard leafy-green caution still applies: the vitamin K content means anyone on blood-thinning medication should keep weekly intake steady rather than swinging between none and a great deal. That is a matter of consistency, not avoidance, and worth a word with your doctor.

Troubleshooting

Flea-beetle shot-holes, bolting in real heat, slow regrowth after cutting, and aphids in the crown - and very little else.

Leaves peppered with tiny round holes: flea beetles, far and away the most common complaint. Row cover from the day of sowing is the fix; established plants outgrow the damage, so the whole game is getting seedlings through fast.

Central stalk shooting up: bolting. Komatsuna resists it better than any of its relatives, so if it happens the plant has usually hit sustained real heat, a long dry spell, or simply reached the end of its run. Cut everything, eat the buds, and start the next succession.

Small, sharp-tasting leaves in summer: normal at the edge of its range rather than a failure. Shade it in the afternoon, water harder, and cut at baby size for the pan rather than the salad bowl.

Regrowth after cutting is thin and slow: either you cut below the growing point (stay an inch above the crown) or the plant is hungry — feed and water after every hard cut. After several cuts a plant is simply finished.

Sticky colonies in the crown: aphids, especially under winter covers. Rinse hard, shear the patch back, and check before eating raw.

Ragged holes with green pellets: cabbage worms — row cover prevents them and hand-picking finishes them on a crop this fast.

Wilting with swollen, clubbed roots: clubroot, the one serious disease here. Lime toward pH 7.2 and keep brassicas off that ground for years.

Growing across climates

The widest window of any Asian green: hardy enough for a winter tunnel and heat-tolerant enough for a real summer sowing in most of the country.

Zones 3–5: spring, summer and fall crops all work — cool northern summers suit it particularly well, so it can crop continuously from thaw to hard freeze. Under a low tunnel it extends well into winter.

Zones 6–7: the easiest zones. Sow spring, attempt midsummer with afternoon shade, and rely on the fall crop, which matures into cold, stands through frost and keeps cutting under light protection.

Zones 8–9: a fall-through-spring staple. Midsummer is still the off-season here even for a heat-tolerant green, though komatsuna will usually give you a few more weeks at each shoulder than its relatives.

Zones 10–11: a cool-months crop on absolute dates, roughly mid-September to mid-March. Use the shadiest ground you have and cut young.

Across every zone the same summary holds: aim the main crop at cool weather like any brassica green, but treat komatsuna as the one you reach for when the calendar does not cooperate.

Propagation & seed saving

Easy seed to save, but the isolation rule is the Brassica rapa one: isolate from turnip, napa cabbage, bok choy, mizuna and tatsoi - not from true mustards.

Komatsuna flowers and pods in a single season, so no overwintering is needed: let a healthy plant bolt, flower and form its slender pods, cut the stalks as they dry, and thresh the tiny round seed out over a sheet. One plant yields hundreds, and komatsuna self-sows readily enough that volunteers appear on their own the following year.

The crossing rule is where most gardeners are misled, because komatsuna is shelved under mustard greens and people apply the mustard advice. It does not fit. Komatsuna is Brassica rapa. It crosses freely with turnip, napa cabbage, bok choy, mizuna, tatsoi and broccoli raab, and it does not cross with the true leaf mustards (Southern Giant Curled, Red Giant, Osaka Purple, Ruby Streaks), which are Brassica juncea. It also will not cross with kale, cabbage or broccoli, which are B. oleracea.

So the practical rule is to let only one Brassica rapa crop flower at a time, or to isolate the one you want seed from by distance or by caging and hand-pollinating. Your bolting komatsuna is a problem for the turnip seed, not for the curled mustard next to it. Note also that the widely sold Tendergreen is komatsuna under another name, so a Tendergreen plant left to flower will cross with your komatsuna — they are the same crop. Save from open-pollinated varieties only; seed from hybrids like Summerfest will not come true.

History

Named for a village near Edo in the 18th century, and still the everyday green of Tokyo kitchens - now sold in America as Tendergreen.

Komatsuna is named for Komatsugawa, a village in what is now eastern Tokyo, where it was grown in the Edo period. The traditional account credits the shogun Tokugawa Yoshimune with naming it after the place during an 18th-century visit, having been served it in a local soup. Whether or not the anecdote is literally true, it reflects something real: this has been the everyday leafy green of the Tokyo region for centuries, and it is still what goes into ozoni, the New Year soup, in that part of Japan.

Botanically it is one more branch of Brassica rapa, the extraordinarily plastic species that Asian and European growers shaped into turnips, napa cabbage, bok choy, mizuna, tatsoi and oilseed rape. Komatsuna was selected for large, smooth, quick-growing leaves and an unusually wide temperature tolerance — the qualities that make a vegetable a staple rather than a specialty.

Its American career has been quiet and slightly confused. It arrived in US seed catalogs largely under the name Tendergreen or mustard spinach, marketed as a spinach substitute that would not bolt in summer heat, and it has often been listed among the mustard greens rather than with its actual relatives. Gardeners who buy Tendergreen and gardeners who buy komatsuna are, in almost every case, buying the same Japanese vegetable.
