Garlic
Safe for people; like all alliums, toxic to dogs and cats in quantity. Garlic stored in oil (confit or infused oil) is a botulism risk and is NOT shelf-stable: refrigerate the cloves and the oil together and use within 4 days, or freeze. Never leave garlic in oil at room temperature.
Overview
Plant cloves in fall, ignore all winter, harvest fat bulbs in early summer - the highest-reward, lowest-effort crop in the garden.
Garlic runs on a different calendar from everything else in the garden: you plant it in fall as the season winds down, it roots in before winter, sleeps under mulch, then races through spring to hand you a summer harvest of bulbs that store for months. Almost nothing bothers it - deer, rabbits, and most insects want no part of it.
The essential split is hardneck vs. softneck. Hardnecks are the cold-country garlic: hardier, easier to peel, complex flavors, plus a bonus crop of edible scapes - but they store 4-6 months. Softnecks rule mild-winter climates, store 9-12 months, and are the braidable garlic of grocery stores.

Watch out for
White Rot (Allium) High
The most serious allium disease there is. A soil fungus (Sclerotium cepivorum) rots the roots and the base of the bulb, growing a white fluffy mold over it studded with tiny black sclerotia like poppy seeds. Those sclerotia survive in the soil for twenty years or more and germinate whenever an allium is planted above them, so a bed that gets it is finished for alliums within a home gardener's timescale. It arrives on infected planting stock and on moved soil.
Watch for: Yellowing, wilting plants that pull up far too easily because the roots have gone, and - on the rotted bulb base - white cottony fungal growth with tiny black poppy-seed-like dots through it.
Prevent: This is entirely about never introducing it. Buy certified disease-free seed stock, sets and plants, never plant grocery-store bulbs or cloves, quarantine new stock, and do not move soil, bulbs or tools between an affected bed and a clean one. Once it is in, it is essentially permanent.
Treat: There is no viable garden treatment. Remove and bin infected plants, never compost them, and do not grow alliums in that soil again. This is why clean planting-stock discipline matters more here than for any other allium problem.
Seed-source discipline is the whole defense here: buy certified seed garlic, and never plant grocery cloves, which are the classic route in.
Rust (Allium) Medium
A fungal disease that raises bright orange pustules on allium leaves. The pustules destroy green tissue, and since those leaves are what feed the bulb, a heavy infection shrinks the crop or weakens the clump. It builds in humid weather, in crowded plantings and in high-nitrogen soil, and it rarely reaches the bulb itself.
Watch for: Orange-red raised dots and streaks on the leaf blades, worst in humid spells and on crowded, poorly spaced or congested plantings.
Prevent: Give wide spacing and full sun so the leaves dry quickly, avoid overhead watering and excess nitrogen, divide congested perennial clumps, and rotate alliums on a three-year cycle. Rust-tolerant varieties are available in some allium crops.
Treat: Strip or shear off the worst-affected leaves early and let clean growth come back, improving airflow at the same time. A bulb crop usually still matures, so harvest on schedule rather than writing it off - rust rarely reaches the bulb itself.

Onion Maggot Medium
The larvae of a small gray fly - the onion fly is the same insect - that lays its eggs at the base of allium plants. The white maggots tunnel into the bulb, shank or stem base, and the damage they leave opens the door to soft rot, so the plant yellows, wilts and collapses into a mush. It is worst in cool, wet springs, in unrotated allium beds, and in dense rows where the maggots can work from one plant to the next.
Watch for: Individual plants yellowing and wilting while their neighbors look fine, and - on pulling one - small white maggots with brown, slimy rot in the bulb base, shank or stem.
Prevent: Rotate alliums yearly, cover the crop with row fabric through the fly's spring egg-laying window, space plants out rather than growing them in dense rows, and never plant into fresh manure, which draws the flies in.
Treat: There is no rescue for a maggot-riddled bulb. Pull and destroy infested plants rather than composting them, and never save affected bulbs for replanting. Beneficial nematodes drenched into the soil help suppress the larvae in a bed you have to keep using.
Garlic is in the ground through the whole of the fly's spring flight, so row fabric over the spring growth is the practical protection. A single wilting plant is worth pulling and checking rather than watering.
Stem & Bulb Nematode Medium
Microscopic worms that live inside onion tissue, causing bloated, twisted, stunted growth and soft, cracked bulbs - spread almost entirely through infected planting stock and seed.
Watch for: Stunted, swollen or twisted plants; soft, spongy bulbs with cracked or discolored basal tissue; bloated leaf bases.
Prevent: The whole defense is clean stock: certified seed, sets, and transplants, and never replant from a suspect crop.
Treat: None in-season. Destroy infected crops, hot-compost nothing from them, and rest that bed from alliums for 4+ years.

The giant of the garlic bed - technically a bulbing leek (Allium ampeloprasum) with fist-sized bulbs of a few huge, mild cloves. Plant in fall like garlic; roast whole for a sweet, gentle spread. Expect some solid single 'rounds' the first year - replant them.
Grow
Break bulbs into cloves and plant pointy-end-up, 2 inches deep, 6 inches apart, a few weeks before the ground freezes.
Buy seed garlic from a garden supplier rather than the grocery store (store bulbs are often sprout-inhibited and can carry disease). A day or two before planting, crack bulbs into individual cloves, keeping the papery skins on - the biggest cloves grow the biggest bulbs; cook with the small ones.
Plant each clove pointy end up, 2 inches deep (3 in the coldest zones), 6 inches apart in rich, well-drained soil in full sun. Water in, mulch 4-6 inches, and walk away until spring. Cold exposure is required, not tolerated: weeks of chill are what trigger a clove to divide into a full bulb.
Care
Feed and weed in spring, snap the scapes, stop watering before harvest.
Spring is garlic's whole growing life, and the job list is short: feed nitrogen a few times from green-up to mid-spring (each leaf becomes a bulb wrapper, so leaf growth is everything), keep the bed ruthlessly weeded - garlic competes badly - and give an inch of water a week.
When hardnecks send up curling flower stalks (scapes) in late spring, snap them off where they meet the top leaf: bulbs grow noticeably larger for it, and the scapes themselves are one of the garden's best kept secrets on the grill. Two weeks before harvest, stop watering entirely so the bulbs cure in the ground.
Harvest
Lift - don't pull - when the bottom third of leaves has browned, then cure for storage.
Harvest timing is a leaf-counting exercise: lift bulbs when the lower third of leaves has browned but 4-6 green leaves remain. Each green leaf is an intact wrapper layer protecting the bulb in storage - wait too long and the wrappers split; too early and bulbs are undersized. Loosen the soil with a fork and lift; pulling by the stalk snaps necks.
Cure whole plants (leaves on) for 2-4 weeks somewhere shaded, dry, and breezy. When the necks are papery-dry, trim tops and roots, brush off dirt, and they're ready for months of storage.
Storage
Cool, dark, dry, and ventilated: hardnecks keep 4-6 months, softnecks 9-12. Save your biggest bulbs for replanting.

Growing across climates
Cold winters are garlic's friend. North: hardnecks, planted before freeze-up. South: softnecks, pre-chilled where winters are mild.
Zones 2-5: hardneck country - porcelains and rocamboles thrive on hard winters; plant on the earlier side and mulch deep. Zones 6-7: everything grows well; plant either type in mid-fall. Zones 8-9: switch to softnecks (artichoke types) and plant late fall; in zone 9, pre-chill seed garlic 8 or more weeks in the refrigerator because winter may not deliver the required cold (hardnecks want 10-12 weeks of chill and still struggle). Zones 10+: genuine garlic struggles without vernalization - softnecks pre-chilled 10-12 weeks and planted in early winter can produce modest bulbs, and elephant garlic (actually a leek) is the more forgiving choice.
Troubleshooting
Small bulbs mean late planting, crowding, or missed feeding. Rot means drainage. Sprouted storage means it got cold or damp.
Small bulbs: the big four causes are spring planting without chill, cloves too close together, skipped nitrogen in spring, or harvesting before the plant finished. Bulbs rotted in the bed: waterlogged soil - garlic demands drainage; plant into raised beds if your winters are wet. Undivided round bulbs: insufficient cold exposure (common with unchilled spring planting or warm-zone falls). Orange leaf pustules (rust): remove affected leaves, improve airflow, and rotate alliums to a new bed for 3 years.
Nutrition
Small doses, big chemistry: manganese, B6, vitamin C, and the sulfur compounds that give garlic its bite and its health reputation.
Nobody eats garlic by the cupful, but clove for clove it's remarkably dense: manganese, vitamin B6, vitamin C, and selenium all show up meaningfully even at seasoning quantities. The interesting chemistry is allicin — the sulfur compound created the moment garlic is crushed, responsible for the smell, the bite, and most of the studied health effects.
Kitchen chemistry that matters: allicin forms in the ~10 minutes after crushing, and immediate high heat prevents it. Crush or chop your garlic, let it sit while you prep everything else, then cook — you keep both flavor depth and the compounds.
In the kitchen
Raw for fire, sautéed for warmth, roasted for sweetness, confit for luxury - plus scapes, the bonus crop.
Garlic is four ingredients in one bulb depending on treatment: raw (minced in dressings and salsas) it's sharp and hot; sautéed it turns warm and savory — but burns to bitterness in seconds, so add it after onions, not with them; roasted whole at 400°F for 40 minutes it becomes sweet brown butter you squeeze from the skins; confit (cloves poached slowly in olive oil) gives you both spreadable cloves and a rich garlic oil.
Confit is a fresh food, not a pantry item. Poaching does not destroy botulism spores, and garlic held in oil at room temperature is one of the classic causes of home-kitchen botulism. Refrigerate both the cloves and the oil — people often strain the oil off and keep it on the counter, believing the oil itself is inert — and use within about 4 days, or freeze it. The same rule covers any home-made garlic-in-oil infusion.
Don't overlook the scapes from your hardnecks in June: grilled whole like scallions, blitzed into pesto, or pickled, they're a crop most people never get to buy.
Propagation & seed saving
Garlic is its own seed: save your biggest bulbs each summer and replant their cloves each fall - your stock improves every year.
Garlic almost never makes true seed — it's propagated by planting cloves, which means every bulb you harvest is next year's seed stock. The virtuous cycle: set aside your biggest, best-formed bulbs at harvest (resist eating them), and plant their outer, largest cloves in October. Because you're always replanting your top performers, your strain adapts to your soil and climate and genuinely improves year over year. Budget roughly one saved bulb per 4-6 planted feet.
Hardnecks offer a slower second route: leave a scape or two and they form bulbils — dozens of pea-sized aerial mini-cloves. Plant those and you get small rounds the first year, full bulbs by year two or three. Slow, but it multiplies one plant into dozens and the bulbils are disease-free.

History
Domesticated in Central Asia, fed to pyramid builders, buried with pharaohs - garlic has seasoned all of recorded history.
Garlic was domesticated from wild alliums in Central Asia (around modern Kyrgyzstan and Tajikistan) and shows up at the very start of the written record: Egyptian laborers on the Giza pyramids received garlic rations, cloves were sealed into Tutankhamun's tomb, and Greek athletes ate it before competition. Roman soldiers planted it across the empire, which is how it colonized every European cuisine.
The hardneck varieties in northern gardens today descend closely from those Central Asian originals; softnecks are the more domesticated southern branch, bred toward storage and braiding. Either way, when you plant a clove in October you're continuing an unbroken 5,000-year chain of gardeners doing exactly the same thing.
