Carrot
The root and (in moderation) the leafy tops are edible. Carrot foliage contains furanocoumarins that can cause mild skin irritation or sun-sensitivity in some people who handle it in quantity - wear sleeves if you're sensitive.
Overview
A cold-hardy root crop that's slow to start but sweetens in frost - direct-sow it, thin it hard, and stagger sowings for carrots all season.
Carrots are a cool-season root crop grown for their sweet, crunchy taproot - technically a biennial (it flowers and seeds in year two) but harvested as an annual in its first season. They ask for two things most gardeners underdeliver: loose, stone-free soil so the root can drive straight down, and patience at germination, which can take up to three weeks. Get those right and the rest is easy.
The single most common carrot failure is skipping the thinning. Crowded seedlings make twisted, forked, finger-thin roots no matter how good the soil is. Thin ruthlessly to a couple of inches apart, keep the bed evenly moist, and sow a fresh short row every three weeks for a steady supply rather than one glut.

Watch out for
Carrot Rust Fly High
A small shiny-black fly whose maggots tunnel rusty-brown channels through carrot roots (and parsnip, celery, parsley). The classic carrot-family pest, worst in spring and fall.
Watch for: Rusty tunnels and dark scars through the root when cut; stunted, reddish, wilting tops; larvae in the soil around the crown.
Prevent: Float row cover over the bed from sowing (the flies find carrots by scent), rotate away from last year's carrot ground, and delay sowing past the spring egg-laying peak.
Treat: No spray rescue once maggots are in the root - harvest early, cut away damaged sections, and reset with row cover and rotation next season. Beneficial nematodes drenched into the soil suppress larvae.
Root-Knot Nematodes Medium
Microscopic soil roundworms (Meloidogyne species) that invade roots and force them to swell into beady galls. A galled root cannot take up water and nutrients properly, so the plant stunts, yellows, wilts in heat despite watering, and yields poorly, and root and tuber crops come up forked, knobbly, hairy or cracked instead of clean. They are worst in warm, sandy soils and build up steadily wherever a susceptible crop is grown in the same ground year after year. The wounds they leave also open the way for fusarium wilt and rots.
Watch for: Stunted, yellowing, unthrifty plants that wilt in the heat even though the soil is moist, and poor yields for no obvious reason. Confirm by digging: beady swellings strung along the roots and side rootlets, and root crops that are forked, branched, cracked or knotted rather than clean.
Prevent: Rotate to non-hosts, and grow resistant varieties where they exist for your crop. A French marigold cover crop grown thickly the season before and turned in genuinely lowers populations. Build organic matter and mulch heavily, which feeds the soil life that suppresses them. Plant only clean stock, never move soil from an infested bed around the garden, and solarize badly infested ground through the hottest part of summer.
Treat: There is no in-season cure. Pull and destroy affected plants rather than composting them, and bring that ground back over several seasons with rotation, resistant varieties and marigold cover crops. Where a crop can be grown in a container of fresh mix, that sidesteps the problem entirely.
Carrots come out forked, stubby, hairy and knotted - damage usually blamed on stones or fresh manure. If you de-stoned the bed and still got forking, dig one root in midsummer and look for beading along the side rootlets.
Alternaria Leaf Blight Medium
Fungal leaf-spotting diseases (Alternaria, Septoria and others) that make angular dark spots on the hairy leaves, especially in wet, humid weather - a very common cosmetic issue on black-eyed Susans.
Watch for: Brown-to-black circular spots with concentric rings and yellow halos, often on outer and older leaves; sunken dark lesions on the head in wet weather.
Prevent: Clean seed, 3+ year rotation, wide spacing for airflow, water at the base not overhead, and clear crop debris; avoid working plants when wet.
Treat: Remove badly affected foliage, keep leaves dry, and apply copper or a biological fungicide early in a wet season. Harvest on time - the roots stay fine even as tops decline.
Aphids Low
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
The willow-carrot aphid colonizes the ferny tops and can carry virus into the crop, which matters more than the feeding. It seldom does enough damage to affect the root; a row cover over young plants keeps it off.
Flea Beetles Low
Flea beetles are tiny dark beetles - often shiny black or bronze, rarely more than a couple of millimeters long - with enlarged back legs that let them spring away like fleas the moment you lean in. The adults chew countless small round pits and shot-holes through leaves, giving the foliage a peppered, buckshot-riddled look. They overwinter as adults in leaf litter, hedgerows, and crop debris, emerge hungry in spring, and are worst in warm dry spells. The damage is mostly a seedling and transplant problem: a small plant with a few leaves can be checked, stunted, or killed outright, while the same plant shrugs them off once it is large and growing strongly. Different species specialize on different plant families, so the beetles hammering your brassicas are not the ones on your nightshades. Some species also have larvae that feed on roots and tubers underground.
Watch for: Dozens of pinhead-sized round holes peppered across the leaves, thickest on the youngest, most tender growth. Tiny beetles that spring away as you brush the plants or lean in for a closer look - that jump is the identification. Seedlings that go lacy and stop growing, and transplants that sit and sulk instead of taking off. Damage heaviest in warm, dry weather and along the edge of a bed nearest weedy ground or last year's crop debris. On root crops, shallow narrow grooves or channels scarring the skin at harvest, from larvae feeding underground.
Prevent: Floating row cover or fine insect mesh, laid over the bed from the day of sowing or transplanting and sealed at the edges so nothing can walk in underneath, is the single best defense - and on the crops they favor it is close to essential. Leave it on until plants are large and growing strongly, or until flowering on anything that needs pollinating. Push growth: a well-watered, unchecked plant outgrows the damage, so the whole game is getting seedlings through their vulnerable weeks fast. Keep beds weed-free, since related weeds host the beetles alongside your crop, and clear crop debris at the end of the season where the adults overwinter. Rotate away from a bed that grew a related crop last year. Where you can, shift sowing dates - cooler-season and fall plantings often miss the peak of adult feeding entirely.
Treat: Row cover and healthy fast growth carry most crops through, and on an established plant the damage is usually cosmetic and needs nothing at all. Where a young planting is genuinely being stripped, kaolin clay coats the leaves and deters feeding, and spinosad will knock the beetles back. Spinosad is acutely toxic to bees while the spray is still wet - apply it at dusk when bees are not flying, never onto plants in flower, and follow the product label. Anything you spray must be labeled for the plant you are treating, and you must observe its pre-harvest interval on a crop you are picking. Yellow sticky traps are useful for telling you when the beetles have arrived. Where the damage falls on the part you eat, harvesting young often beats them outright; where you are growing for a root or a fruit, leaf damage can simply be tolerated. Larvae feeding underground cannot be reached by a foliar spray, so rotation and clean beds are what work against those.
Rarely more than cosmetic on established carrots, which outgrow it. Protect the seedlings and keep the bed watered.

The whole game at this stage is keeping that seedbed from drying out or crusting over during the long germination - mist daily, or lay a board or burlap over the row and lift it the moment sprouts show. The first rule: remove the tops right away, because the greens pull moisture and go limp fast. Unwashed carrots keep 1-3 months in a perforated bag in the crisper, or for months in a box of barely-damp sand in a cool cellar. In mild-winter zones the garden bed itself is the best storage - mulch heavily and dig as needed.
Limp carrots aren't spoiled - a 30-minute soak in ice water crisps them back up. For long-term surplus, blanch and freeze coins or sticks, or pickle and ferment them. Green shoulders and any soft, black, or slimy spots are the signals to compost a root.

Zones 3-5: a spring sowing and a fall sowing bracket the short summer; the fall crop can overwinter under deep mulch for winter digging. Zones 6-7: classic carrot country - stagger sowings spring through late summer, easing off during the hottest weeks. Carrots are the food most associated with vitamin A for good reason: they're loaded with beta-carotene, the orange pigment your body converts to vitamin A, which supports vision, immune function, and skin. One medium carrot supplies over half a day's worth. That figure is for orange carrots, though — white and yellow types carry far less beta-carotene, and purple ones vary. They also bring fiber, potassium, vitamin K, and antioxidants, all for about 25 calories.
The kitchen trick: beta-carotene is fat-soluble, so a little olive oil, butter, or a handful of nuts alongside dramatically increases how much you absorb. Light cooking helps too - it breaks down the tough cell walls and frees more of the carotene than raw does, so roasted and steamed carrots actually out-deliver raw sticks on this one nutrient.
In the kitchen

Seed-saving carrots takes patience because they're biennial - they only flower and set seed in their second year. In mild zones, leave a few of your best roots in the ground over winter (mulched); in cold zones, dig and store the best roots and replant them in spring. The next summer they bolt into tall, lacy white flower heads (they look just like their wild cousin, Queen Anne's lace) that yield thousands of seeds. One serious caution about that resemblance: lacy white Apiaceae umbels also include poison hemlock and water hemlock, among the deadliest plants in North America — so never use your flowering carrots as an identification guide for a wild plant. Two cautions: carrots cross readily with any other carrot variety - and with wild Queen Anne's lace - flowering within about a quarter mile, so isolate for pure seed. Carrots were domesticated over a thousand years ago in the region of modern Afghanistan and Persia - but the originals were purple and yellow, and grown as much for their aromatic leaves and seeds as their root. The taproot we prize was a later selection, and the orange carrot is surprisingly modern: Dutch growers bred it into prominence in the 16th and 17th centuries, and the popular story that they did it to honor the royal House of Orange is charming if unproven.
The carrot belongs to the Apiaceae family alongside parsley, celery, dill, and fennel - and its wild self, Queen Anne's lace, still grows in roadsides across much of the world. The rainbow of purple, yellow, white, and red carrots now in seed catalogs is really a return to the crop's older diversity.
