Watch out for

An aggressive water-mold disease (Phytophthora capsici) that rots roots, crowns, stems, and fruit; it can collapse a pepper planting within days in warm, waterlogged soil.

Pepper care is a study in consistency. Water deeply once or twice a week for about an inch total, keeping the rhythm even — moisture swings drop blossoms and cause the sunken blossom end rot familiar from tomatoes. Wait to mulch until the soil is genuinely warm (peppers want heat at the roots), then 2-3 inches holds that moisture steady.

Feed modestly: heavy nitrogen grows a lush green bush with almost no fruit, so switch to a balanced or bloom feed once flowering starts, favoring potassium. Peppers are a nutritional bargain: low in calories, high in fiber, and one of the very best vegetable sources of vitamin C — a ripe red bell carries more per cup than a citrus fruit, and roughly double its own green stage. Ripening from green to red also multiplies the beta-carotene (vitamin A), which is why color tracks nutrition so closely: let peppers finish coloring and you eat a denser fruit.

History

Domesticated in the Americas thousands of years ago, carried worldwide by Columbus, and now the backbone of cuisines from Sichuan to Hungary.

Peppers were domesticated in Mexico and Central America at least 6,000 years ago — among the oldest cultivated crops in the Americas — long before Europeans arrived. Columbus, hunting for black pepper (an unrelated Asian vine), met chiles in the Caribbean and misnamed them 'peppers,' a confusion that stuck for good.

What happened next reshaped world cooking: within a century of 1492, chiles had spread along trade routes into India, China, Thailand, Africa, and Hungary, becoming so central to those cuisines that it's hard to imagine them as newcomers.
