Celery
Every part of the plant is edible - stalks, leaves, seed, and the celeriac knob. Celery is a recognized major food allergen: reactions to eating even small amounts can be severe, and cooking does not reliably remove the risk. Separately, the sap and celery seed contain furanocoumarins that can cause a phototoxic skin rash in people handling large quantities in sunlight.

Celery has a reputation as the fussiest vegetable in the garden, and it earns it: it wants a long, cool season, constantly wet feet, rich soil, and steady feeding, and it punishes any lapse with stringy, bitter, hollow stalks. But home-grown celery is a different vegetable from the pale supermarket bunch — deeper flavored, darker, and useful right down to the leaves.
The key to understanding celery is its ancestry as a wetland plant. It never truly leaves the marsh: its shallow roots cannot chase water, so the soil around them must never dry out. Late Blight (Septoria Leaf Spot) High
The most damaging celery disease (Septoria apiicola): a seed- and soil-borne fungus that appears as small yellow spots which enlarge into brown, speckled lesions on leaves and petioles, spreading fast in warm, wet weather.
Watch for: Small circular yellow spots on leaves and stalks that turn brown with dark pinprick fruiting bodies (pycnidia) at the center; angular spots where bounded by veins.
Prevent: Start with hot-water-treated or disease-free seed (this is a seed-borne disease); rotate out of celery/celeriac for 3 years; space for airflow; water at the base, never overhead.
Treat: Remove and bag affected leaves at first sight; copper or chlorothalonil-type fungicides slow spread in a wet season. Harvest ahead of a prolonged wet spell.
Slugs & Snails Medium
Slugs and snails are nocturnal mollusks that rasp ragged holes in soft leaves, shear off seedlings at ground level, and chew into ripe fruit that touches the soil. They feed at night and in the early morning and spend the day hidden under boards, pots, dense mulch, leaf litter, and low foliage, becoming active in exactly the cool, damp, shaded conditions that suit young plants. Damage is heaviest in wet spells and on tender spring growth: a single wet week can erase a row of seedlings while an established, tough-leaved plant of the same species is barely marked. They lay clusters of small pearly eggs in damp soil and under debris, so a garden with plenty of cover carries a resident population year after year rather than being invaded from outside.
Watch for: Irregular ragged holes chewed out of the middle of leaves and along the edges - not the clean-edged cuts a caterpillar leaves. Seedlings that vanish overnight, or that are cut off at soil level with nothing left behind. Silvery dried slime trails across leaves, soil, pots, and paving in the morning: this is the giveaway that tells you it was mollusks rather than an insect. Chewed pits in ripe fruit, especially where it rests on the ground. Damage that shows up on the lowest, dampest leaves first and gets worse after rain or evening watering. Turn over a board, an upturned pot, or a clump of dense mulch during the day and look for the animals themselves sheltering in the cool underneath.
Prevent: Take away the daytime shelter first: lift boards and upturned pots, clear piles of debris, keep dense mulch pulled back from crowns and stems, and give crowded plantings enough airflow to dry out. Water in the morning rather than the evening so the surface is dry by the time they come out. Copper tape around containers and raised beds gives them a shock they will not cross, and it is the one barrier that reliably works. Get plants past the vulnerable stage quickly - start seedlings in pots and set them out at a decent size rather than direct-sowing into a cold wet bed, since most plants stop being worth defending once the leaves toughen. Leave the ground beetles, frogs, toads, and ground-feeding birds alone, because they eat mollusks all night for free and broad-spectrum slug pellets kill them too. Where thick-leaved or resistant varieties exist for what you are growing, they take far less damage.
Treat: Hand-picking works and costs nothing: go out an hour after dark with a headlamp, drop what you find into soapy water, and repeat nightly for a week or two - persistence is what wins, not any single product. Shallow beer traps sunk to soil level catch them too, but need emptying and refilling daily to be worth anything. Iron-phosphate bait is the standard control and is far lower-risk around pets and wildlife than the old metaldehyde products, but it is not harmless: many formulations include EDTA, and a dog that eats a quantity of pellets can develop iron toxicosis. Scatter it thinly per the label, never in piles, and keep dogs off a baited bed. Clear fallen foliage and debris in autumn, where the eggs are laid. In a wet climate this is a population you manage each season rather than one you eradicate - and on most established plants light grazing is cosmetic and needs nothing at all.
Celery's required constant wetness makes this a persistent battle, and they hide down in the damp crowns where you will not see them. Stay consistent through damp spells and check inside the crowns when you harvest.
Early Blight (Cercospora Leaf Spot) Medium
A fungal leaf spot (Cercospora apii) favored by warm, humid, rainy weather: pale, then brown, spreading blotches on older leaves that can blight whole plants when severe.
Watch for: Larger, irregular tan-to-brown blotches on older leaves (without the black pinpoint dots of Septoria), sometimes with a velvety gray growth in humidity.
Prevent: Same hygiene as Septoria: crop rotation, base watering, weed control, and generous spacing so foliage dries quickly.
Treat: Remove affected foliage, improve airflow, and apply a protective fungicide early if the season is wet.
Blackheart (Celery Tipburn) Medium
Not a disease: a calcium-delivery failure during fast growth and uneven moisture that browns and rots the innermost young leaves at the heart of the plant - celery's version of blossom end rot.
Watch for: Brown, dry, papery edges on the newest inner leaves; in bad cases a blackened, slimy heart hidden inside an otherwise healthy-looking plant.
Prevent: Steady, even watering and mulch are the whole defense; the soil usually has enough calcium - the problem is delivery during moisture swings and heat.
Treat: No cure for affected leaves; smooth out the watering rhythm and new growth comes in clean. Trim damaged inner leaves before use.
Aphids Low
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
Aphids tuck into the leaf axils and the crowded heart of the bunch, so check the center before eating and soak harvested bunches to flush out what is wedged between the stalks.
Black Swallowtail (Parsley Worm) Low
The green, black, and yellow-banded caterpillar of the black swallowtail butterfly, which favors fennel (a top host plant) along with dill, parsley, and carrots. It chews the feathery fronds but rarely does real harm to an established plant - and it becomes one of the garden's most beautiful butterflies.
Watch for: Plump smooth green caterpillars ringed with black and yellow-orange dots on the fronds, chewed foliage, and dark droppings; usually just a few per plant.
Prevent: None needed - this is a welcome garden visitor. Plant extra dill specifically to share, the standard ecological approach.
Treat: Consider tolerating them - fennel is grown by many gardeners specifically as a swallowtail host, and the frond damage is cosmetic. Hand-pick to a spare plant if numbers threaten a small crop; Bt works but kills the butterflies you may want to keep.

For the surplus, celery freezes well for cooking use (it loses crunch, so freeze it for soups and stews, not snacking) — chop, blanch briefly, and bag flat. The strongly flavored leaves dry into an excellent homemade herb, and the whole plant can be simmered into a concentrated stock base that freezes in cubes.

Famously low-calorie and high-water, but a real source of vitamin K, potassium, and the antioxidant compounds behind its blood-pressure research.
Celery is about 95% water and nearly calorie-free, which is exactly why it's a diet staple — but it's more than crunchy water. It's a genuinely good source of vitamin K, provides folate, potassium, and vitamin A, and carries antioxidant flavonoids (apigenin and luteolin) plus phthalides, the compounds studied for modest blood-pressure and anti-inflammatory effects.
The dark outer stalks and especially the leaves carry several times the nutrition of the pale inner heart, so the darker home-grown plant is nutritionally ahead of the blanched store bunch. And celery's real dietary role is as a vehicle and a flavor base — the crunch that carries dips and the aromatic backbone (with onion and carrot) of countless soups.

Celery is two ingredients in one plant. Raw, the crisp stalks are the classic vehicle for peanut butter, dips, and a Bloody Mary, and the diced heart adds crunch to tuna and chicken salad. Cooked, celery is foundational: with onion and carrot it forms the mirepoix that begins French cooking (and the 'holy trinity' with bell pepper in Cajun cooking), melting into the background flavor of stocks, soups, and braises.
Use the whole plant. History
Cultivated from wild marsh celery (smallage) in the Mediterranean - first as medicine and flavoring, only later bred into the mild stalk vegetable.
Celery descends from smallage, a bitter, strong-smelling wild plant of Mediterranean marshes and coasts. Ancient Greeks and Romans grew it for medicine, for flavoring, and as a ceremonial plant — celery leaves crowned victors and were strewn at funerals — long before anyone ate it as a vegetable. Wild smallage is still used as an herb (and survives in celery seed and celeriac, celery's swollen-root cousin).
The mild, fleshy-stalked celery we grow was bred in Italy and France from the 1600s onward, with gardeners selecting for thicker, less bitter stalks and developing the blanching techniques that tamed its strong flavor. It reached American tables as a prized, labor-intensive luxury in the 1800s — sold by the stalk and served in special 'celery vases' — before modern varieties and irrigation made it the everyday crop it is now.
