Stir-Fried Celery with Minced Beef
A fast Sichuan-style home dish: celery cut on a sharp bias and tossed over high heat with garlicky minced beef, ginger, and a splash of soy.

- 1 tbsp fresh ginger, minced
- 2 tbsp soy sauce · divided; 1 tablespoon marinates the beef
- 1 tsp cornstarch
- 2 tsp rice vinegar
- ½ tsp granulated sugar
- ½ tsp red pepper flakes
- 2 tbsp neutral oil · divided
