Wheat
The milled grain is the world's foremost bread grain and a safe staple for most people. It contains gluten, so it is not suitable for those with celiac disease or wheat allergy. The green plant and immature grain are not eaten (though wheatgrass juice from young blades is a separate health-food use). Ergot, a toxic fungus, occasionally infects the heads - discard any grain with hard purple-black horn-like bodies among the kernels.
Overview
The world's great bread grain, and a surprisingly easy garden crop: a cool-season grass sown thickly in fall or spring, left largely alone for months, then cut, threshed, and milled into your own flour.
Wheat is the grain that built Western civilization — the foundation of bread, and one of the three cereals (with rice and corn) that feed the world. It's also a genuinely rewarding and low-effort crop to grow at home: a fine cool-season grass that you sow densely, largely ignore for months while it does its slow work, and then harvest, thresh, and grind into flour with real, satisfying results even from a small bed.
The key thing to understand is the split between winter wheat and spring wheat. Winter wheat — the most common kind — is sown in fall, establishes a low green clump, survives winter, and requires that cold spell (vernalization) before it will head out and ripen the following summer. Spring wheat skips the cold requirement: it's sown in spring and ripens the same summer, and it's the choice for the coldest regions where winter would kill the fall crop. Watch out for
Fusarium Head Blight (Scab) High
A fungal disease infecting the heads in warm, wet weather at flowering, shriveling the grain and contaminating it with mycotoxins - a food-safety concern as well as a yield loss. Oats are among the cereals most affected by the T-2 and HT-2 toxins.
Watch for: Prematurely bleached, straw-colored spikelets or whole heads while the rest is green, often with pink-orange fungal growth at the base of the florets, and shriveled, chalky-white 'tombstone' kernels.
Prevent: Rotate away from corn and small-grain residue, avoid dense stands that stay wet, and harvest and dry promptly - sheaves left damp in wet weather are the home-scale version of the problem.
Treat: No home cure - discard shriveled, discolored, musty, or moldy grain rather than eating or feeding it; the toxins survive cooking. Prevention through rotation and fast, thorough drying is the control.
The mycotoxin makes scab a food-safety issue, not just a yield one - when heads are heavily bleached and grain is shriveled and pink, do not use it.
Wheat Rust High
A group of fungal diseases (leaf, stripe, and stem rust) producing orange to reddish-brown or black pustules on leaves and stems, sapping the plant and shriveling grain; historically one of wheat's most devastating diseases.
Watch for: Orange, rusty-brown, or (stem rust) dark pustules that rub off as powder, in rows or scattered on leaves, sheaths, and stems, worst in warm humid weather.
Prevent: Grow resistant varieties (the primary defense), give airflow, avoid excess nitrogen, and remove volunteer wheat and grassy hosts that carry rust between seasons.
Treat: Little can be done once rust is heavy; resistant varieties and clean rotation prevent it - late rust on a nearly ripe crop causes limited loss.
Stem rust in particular once caused catastrophic losses; modern resistant varieties keep it manageable, but rust evolves, so variety choice matters.
Aphids Medium
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
Cereal aphids transmit barley yellow dwarf virus, and the virus, not the feeding, is the real damage - it stunts plants and yellows or reddens the leaves in patches, worst on early-sown fall wheat and in mild springs. Controlling aphids, growing tolerant varieties, and delaying fall sowing slightly are the practical home defenses; the virus itself cannot be cured.
Birds & Wildlife Medium
Birds find ripening fruit and seed before you do. Robins, waxwings, starlings, catbirds, jays, sparrows, finches, blackbirds, and doves all work a garden, and the pressure arrives in a narrow window - the last days before harvest, when sugar rises, color changes, and the crop softens or the grain hardens. A flock can strip a small planting in a day or two, and birds that only peck rather than take whole fruit still leave wounds that rot or draw wasps. Squirrels, chipmunks, and other wildlife usually turn up on the same crop at the same time. This is competition rather than disease: the birds are not harming the plant, and a big tree or a heavy-cropping bush often has enough for everyone - but on a small planting it can be the difference between a harvest and none.
Watch for: Fruit disappearing from the outermost, most exposed parts of the plant first, and from the top of a tree where you cannot reach anyway. Single neat pecks and gouges in ripening fruit, with several fruits sampled rather than one eaten through - the classic sign that it was birds rather than an animal. Heads of grain or seed going visibly lighter and emptier as they ripen, with hulls and chaff scattered underneath. Freshly sown seed vanishing off the surface of a bed before it germinates. Bird traffic in and out of the plant picking up as the crop colors, and birds waiting on nearby wires and branches. Wasps arriving at the pecked and split fruit shortly afterward.
Prevent: Net, and net early. Bird netting draped over a frame or hoops so it stands off the fruit, with the edges closed at ground level, is the only thing that reliably works at harvest scale - and it has to go on before the crop starts to color, because once birds have found the food they are far harder to displace. Keep fruit trees small enough that netting them is actually feasible; that decision gets made years earlier, at planting. Bags of mesh, organza, or paper slipped over individual heads, clusters, or prize fruit protect a small crop without netting the whole plant. Then shorten the exposure: pick promptly and completely rather than leaving ripe fruit hanging as a lure, clear split and dropped fruit that draws birds and wasps alike, and where a crop can finish off the plant, harvest a little early and ripen or dry it under cover. Rake in or cover broadcast seed so it is not lying in plain view.
Treat: There is no treatment once a crop is being taken - only protection and timing, so the answer is to get netting on and to pick what is ready. Reflective tape, flash ribbon, spinners, and decoy predators do work, but only for a few days at a time: birds habituate fast, so move and rotate them and never rely on them as the main defense for a crop you care about. Cut and gather grain or seed heads a little early, at firm dough, and finish drying them under cover instead of leaving them standing for the flocks. Plant a little extra, or a decoy crop the birds prefer, and accept sharing anything that crops heavily. On a wild or foraged patch, fruit going to birds and small mammals is the point of the plant rather than a problem to solve.
Less catastrophic than for sorghum or rice, but a small grain bed can still be thinned at both ends - cover or rake in the broadcast seed for good soil contact, and net or harvest promptly at ripening.
Ergot Low
A fungus (Claviceps purpurea) that infects open cereal flowers and replaces developing grains with hard, dark purple-black, horn-shaped bodies (sclerotia) packed with toxic alkaloids. It also infects grassy weeds, which carry it between crops.
Watch for: Sticky, sweet 'honeydew' droplets on the heads at flowering (the early sign), and later hard, dark, curved horn-shaped bodies protruding from the head in place of normal kernels.
Prevent: Grow clean seed, control grassy weeds that host it, rotate, and cut and remove infected heads; cool, wet weather at flowering favors it.
Treat: No cure - carefully pick out and DISCARD all ergot bodies from harvested grain; never mill, eat, or feed grain containing them, as the alkaloids are poisonous.
Uncommon in home gardens but important to recognize: the dark horns are toxic, so discard affected grain - this fungus caused mass poisonings ('St. Anthony's Fire') historically.

Sow thickly and shallowly into a firm, moist bed - winter wheat in fall, spring wheat in early spring - in full sun; it needs no thinning and little care once up.
Growing wheat is refreshingly simple. Prepare a firm, weed-free bed in full sun, then sow the seed densely — broadcast it and rake it in, or drill it in rows a few inches apart, about an inch deep. Unlike vegetables, wheat is meant to grow thick: a dense stand tillers (branches at the base), fills the canopy, shades out weeds, and yields far more per square foot. There is no thinning.
Timing is the one real decision. Winter wheat goes in during fall, 6-8 weeks before hard frost, so it roots and tillers into a low clump before winter; it then sits dormant, takes the cold it needs, and races up to head and ripen the next summer. Spring wheat goes in as early as the soil can be worked in spring and ripens that same summer — the right choice for very cold zones. Dried thoroughly and kept cool, dry, and airtight, they last for years — even decades in ideal cool, oxygen-limited storage — which is exactly why wheat underpinned granaries and civilizations. Store them in sealed food-grade buckets or jars against moisture and pantry pests; freezing new grain for a few days first kills any hitchhiking weevil or moth eggs before long storage.
The important trick for home bakers: store the grain, not flour, and grind fresh as you bake. Whole-grain flour still carries the oily germ, so it goes stale and eventually rancid within weeks at room temperature, while intact berries keep their oils sealed for years. Wheat is one of the most climate-flexible grains, grown from Canada to the subtropics by matching type to region. Zones 3-4 (harsh winters): grow spring wheat, sown as early as the ground thaws and ripened the same summer, since winter would kill a fall crop. Zones 5-8: the heartland of winter wheat — sow in fall, let it vernalize, and harvest the following summer; this is the classic, highest-yielding way to grow it. Zones 7-9 (mild winters): winter wheat still works, sown in fall for a late-spring harvest, and the mild winter usually supplies enough chill. Wheat is fundamentally an energy and protein staple. It's mostly carbohydrate, but it carries more protein than most cereals — including the gluten proteins that give bread dough its stretch and rise, wheat's signature and the reason it's the bread grain. As whole wheat (the whole berry, bran and germ included) it also delivers meaningful fiber, B vitamins (thiamin, niacin, folate), iron, magnesium, and zinc, plus antioxidants in the bran.

Wheat's culinary reach is unmatched, and it starts with flour. But wheat is good far beyond flour. Saving seed is simply saving grain: keep back a portion of your cleanest, best-filled grain from vigorous, disease-free, well-ripened plants, exactly the grain you'd otherwise eat or mill.
Store that seed grain dry, cool, and airtight, where it stays viable for several years, then sow it next season as you would bought seed — winter wheat in fall, spring wheat in spring. Because there's no crossing to manage, a single planting of a heritage variety (Turkey Red, Red Fife, an old landrace) can be carried on indefinitely, and by always saving from the plants that ripened best, stood up without lodging, and resisted disease in your garden, you slowly adapt the wheat to your own ground — the exact process that gave the world its thousands of regional wheat landraces before modern breeding.
History
Domesticated in the Fertile Crescent about 10,000 years ago, wheat enabled settled farming and civilization itself, spread worldwide, and remains one of the three grains that feed humanity.
Few plants have shaped human history like wheat. It was among the very first crops domesticated in the Fertile Crescent of the Near East roughly 10,000 years ago — early farmers selected wild einkorn and emmer grasses whose ripe heads held onto their grain instead of shattering, and that single change let people harvest, store, and sow it. Wheat made settled agriculture possible, and with it granaries, cities, writing, and civilization; bread became sacred and central across the ancient Near East, Egypt, Greece, and Rome.
Modern bread wheat (Triticum aestivum) arose from natural hybridization between cultivated wheats and wild grasses, gaining the extra genes that give its dough superior rise. Wheat spread across Europe and, with colonization, to the Americas and around the globe; hard winter wheats like Turkey Red, carried to the American plains by Mennonite immigrants from Ukraine in the 1870s, turned the Great Plains into a breadbasket. The 20th-century Green Revolution bred short, high-yielding wheats that vastly increased world food supply. Today wheat feeds billions — and a gardener growing a bed of heritage grain holds a living thread of that 10,000-year story.
