Crimson Clover
Crimson clover is grown to build the soil, not for the table, though its flowers are edible as a mild garnish and it's good livestock forage. One honest caution shared with all clovers: livestock should not graze clover heavily when it is mold-damaged or during bloat-risk conditions, and old, dry, over-mature crimson clover heads can develop hair-like fibers that occasionally cause problems for grazing animals - a forage-management note, not a concern for its use as a cover crop.
Overview
The most beautiful cover crop there is, and a soil-building workhorse: a nitrogen-fixing annual legume, usually fall-sown, that holds and improves the soil over winter, feeds bees with brilliant crimson flowers in spring, and is tilled in for a rich shot of free nitrogen.
Crimson clover is grown not for a harvest but for the soil — and it may be the loveliest way there is to build it. A fast, soft-leaved annual legume, it's one of the great cover crops and green manures: like all legumes it partners with soil bacteria to fix nitrogen from the air, storing it in root nodules and lush growth that, when tilled in, feeds the next crop with free fertilizer. It also blankets bare ground against erosion, smothers weeds, and adds organic matter.

Fungal rot of the central crown and rhizome, most common in cold, stagnant, waterlogged conditions during winter dormancy or when dead leaves are left to decay against the crown.

Beyond watching for that bloom window, there is essentially nothing to do.
Harvest
Not a food harvest - the 'harvest' is termination: mow, crimp, or till the clover in at bloom to release its nitrogen into the soil, or leave it cut as a mulch to plant into.
Crimson clover isn't harvested for food — its whole purpose is to be returned to the soil, so 'harvest' means termination, and the timing is everything. Terminate at early-to-full bloom, when the clover's fixed nitrogen and biomass are at their peak and before it sets seed. You have a few methods: mow it and let the residue break down; roller-crimp or cut it flat and plant right into the mat (a no-till approach, using the clover as a weed-suppressing mulch); or till it in as classic green manure, turning the lush growth under to decompose and feed the following crop.
If you turn it in, wait a couple of weeks before planting so the residue starts breaking down and the nitrogen becomes available. The reward is substantial: a well-grown crimson clover cover can supply a meaningful share of a following crop's nitrogen needs, along with a big boost of organic matter and improved soil structure — free fertilizer and soil-building in one. If instead you want it to reseed (for a returning cover in an orchard or path), simply let it bloom on and set seed before it dies — but for feeding a vegetable bed, terminate at bloom.
Storage
There's no crop to store - crimson clover feeds the soil - but you can save its hard seed dry and airtight to re-sow, and it self-sows readily where allowed to bloom on.
As a cover crop, crimson clover produces nothing to store in the pantry — its value goes into the ground. What you can store is seed. If you let a patch flower on past the termination window, it sets small, hard, shiny seeds in the dried crimson heads; collect the dry heads, rub out the seed, winnow, and store it dry, cool, and airtight, where clover seed stays viable for several years. This lets you save your own sowing stock rather than buying seed each fall.
Note that saved seed may benefit from fresh inoculant at sowing to ensure good nitrogen-fixing nodulation, since the bacteria don't store with the seed indefinitely. And crimson clover's own habit of self-sowing is a kind of built-in storage: allowed to seed, it banks seed in the soil and returns on its own the next cool season, perpetuating a cover in orchards, vineyards, and pathways with no replanting. For most gardeners, though, seed is inexpensive and comes pre-inoculated, so buying fresh each season is the simplest route — and terminating at bloom means little seed is set at all.

Winterkilled in the North: crimson clover isn't hardy below about zone 6 — grow it as a spring cover in cold zones instead of fall-sown. Crimson clover popping up everywhere the next season: it was allowed to set seed and self-sowed — terminate at bloom before seed set to prevent volunteers (or welcome them as free cover). Damping-off, rotting seedlings: cold, wet soil at establishment — sow into well-drained ground with some warmth. After tilling it in, the next crop seems slow: give a couple of weeks after turning in the residue before planting, so it breaks down and releases its nitrogen. Sparse bloom, leggy growth: too much shade — give it more sun.
History
