
Beef and Mushroom Soup with Whole Grain Berries
The old-fashioned beef and barley pot, made with whatever whole grain you threshed: chunks of chuck simmered until tender with mushrooms, carrots, and thyme, the berries swelling in the broth until every spoonful is chewy and rich.

- ¾ cup whole grain berries (barley, wheat, rye, or spelt-type), rinsed · quinoa, rice, or buckwheat also work; see the timing in step 4
- 1 large onion, chopped
- 3 medium carrots, sliced into coins
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 4 sprigs fresh thyme
- ¼ cup fresh parsley, chopped (optional)
From the pantry
- 1½ lb beef chuck, trimmed and cut into 3/4-inch cubes
- 8 oz mushrooms, sliced
- 2 tbsp tomato paste
- 8 cups beef stock
- 2 bay leaves
- 2 tbsp olive oil
- 1 tbsp Worcestershire sauce (optional)
