Shallot

Overview
The gourmet allium: plant one set and harvest a cluster of mild, sweet, fine-flavored bulbs - grown like garlic, tasting like a refined onion.
Shallots are the chef's onion — milder, sweeter, and more complex than a bulb onion, with a hint of garlic. They grow on the multiplier principle: plant a single small bulb (a 'set') and it divides underground into a whole cluster of shallots, so a handful of sets returns a season's supply. That, plus their long storage and premium price at the store, makes them one of the most rewarding small-space alliums.
Their calendar is garlic-adjacent. In mild-winter regions, shallot sets go in during fall to grow over winter and mature bigger the next summer; in cold regions, plant them in early spring instead. You can also grow shallots from seed like onions — that gives single large bulbs rather than clusters — but sets are the classic, easy route.

Watch out for
White Rot (Allium) High
The most serious allium disease there is. A soil fungus (Sclerotium cepivorum) rots the roots and the base of the bulb, growing a white fluffy mold over it studded with tiny black sclerotia like poppy seeds. Those sclerotia survive in the soil for twenty years or more and germinate whenever an allium is planted above them, so a bed that gets it is finished for alliums within a home gardener's timescale. It arrives on infected planting stock and on moved soil.
Watch for: Yellowing, wilting plants that pull up far too easily because the roots have gone, and - on the rotted bulb base - white cottony fungal growth with tiny black poppy-seed-like dots through it.
Prevent: This is entirely about never introducing it. Buy certified disease-free seed stock, sets and plants, never plant grocery-store bulbs or cloves, quarantine new stock, and do not move soil, bulbs or tools between an affected bed and a clean one. Once it is in, it is essentially permanent.
Treat: There is no viable garden treatment. Remove and bin infected plants, never compost them, and do not grow alliums in that soil again. This is why clean planting-stock discipline matters more here than for any other allium problem.
Shallots are fully susceptible, and because they are usually grown from saved sets the disease travels easily with the planting stock. Buy certified sets and never plant grocery bulbs.
Rust (Allium) Medium
A fungal disease that raises bright orange pustules on allium leaves. The pustules destroy green tissue, and since those leaves are what feed the bulb, a heavy infection shrinks the crop or weakens the clump. It builds in humid weather, in crowded plantings and in high-nitrogen soil, and it rarely reaches the bulb itself.
Watch for: Orange-red raised dots and streaks on the leaf blades, worst in humid spells and on crowded, poorly spaced or congested plantings.
Prevent: Give wide spacing and full sun so the leaves dry quickly, avoid overhead watering and excess nitrogen, divide congested perennial clumps, and rotate alliums on a three-year cycle. Rust-tolerant varieties are available in some allium crops.
Treat: Strip or shear off the worst-affected leaves early and let clean growth come back, improving airflow at the same time. A bulb crop usually still matures, so harvest on schedule rather than writing it off - rust rarely reaches the bulb itself.
Rust shrinks the whole bulb cluster rather than a single bulb, so leaf area matters more here than on a single-bulb onion. Space the clusters properly and go easy on nitrogen.
Onion Maggot Medium
The larvae of a small gray fly - the onion fly is the same insect - that lays its eggs at the base of allium plants. The white maggots tunnel into the bulb, shank or stem base, and the damage they leave opens the door to soft rot, so the plant yellows, wilts and collapses into a mush. It is worst in cool, wet springs, in unrotated allium beds, and in dense rows where the maggots can work from one plant to the next.
Watch for: Individual plants yellowing and wilting while their neighbors look fine, and - on pulling one - small white maggots with brown, slimy rot in the bulb base, shank or stem.
Prevent: Rotate alliums yearly, cover the crop with row fabric through the fly's spring egg-laying window, space plants out rather than growing them in dense rows, and never plant into fresh manure, which draws the flies in.
Treat: There is no rescue for a maggot-riddled bulb. Pull and destroy infested plants rather than composting them, and never save affected bulbs for replanting. Beneficial nematodes drenched into the soil help suppress the larvae in a bed you have to keep using.
As with any clustered allium, one maggot has several bulbs within reach once it is inside. Lift and destroy the whole affected cluster, and never keep bulbs from it for replanting.
Stem & Bulb Nematode Medium
Microscopic worms that live inside onion tissue, causing bloated, twisted, stunted growth and soft, cracked bulbs - spread almost entirely through infected planting stock and seed.
Watch for: Stunted, swollen or twisted plants; soft, spongy bulbs with cracked or discolored basal tissue; bloated leaf bases.
Prevent: The whole defense is clean stock: certified seed, sets, and transplants, and never replant from a suspect crop.
Treat: None in-season. Destroy infected crops, hot-compost nothing from them, and rest that bed from alliums for 4+ years.

Grow
Push sets pointed-end-up an inch deep, 6 inches apart; fall-plant in mild zones, spring-plant in cold ones. Or start seed like onions.
The easy way is from sets: buy certified bulbs (grocery shallots may be treated or diseased), and push each one pointed-end-up into loose, rich, well-drained soil so the tip barely shows, spacing them 6 inches apart in full sun. Give each set room — it will divide into a cluster. In zones 6-9, plant in fall like garlic and mulch; in colder zones, plant as soon as the ground can be worked in spring.
The other route is from seed, started indoors 8-12 weeks before last frost and transplanted like onions; seed-grown shallots make single large bulbs rather than multiplying clusters and give a wider variety choice. Either way, keep shallots weeded and evenly watered through leaf growth — their shallow roots make them poor competitors and sensitive to drought.
Care
Feed and weed through leaf growth, then stop feeding and taper water as the clusters swell and the tops fall.
Shallot care mirrors onion care. Through the leaf-building phase, feed nitrogen every few weeks and keep the bed relentlessly (and shallowly) weeded — every leaf becomes part of a bigger bulb, and weeds steal the growth. Water evenly, about an inch a week, since shallots can't make up lost growth later.
Then flip: once the cluster starts to swell and split into distinct bulbs, stop feeding and taper off water as the tops soften and flop. Dry conditions at the finish cure firmer skins and better-keeping bulbs. Don't bend the tops over by hand to rush maturity — let them fall on their own. Watch for rust on the leaves and, in wet unrotated beds, the allium pests covered under Threats.
Harvest
Lift the whole clusters when most tops have flopped, separate the bulbs, and cure them dry for months of storage.
Shallots signal readiness the way onions do: when two-thirds or more of the tops have yellowed and bent over, the clusters are done. On a dry day, loosen the soil with a fork and lift each clump — a single planted set will have multiplied into a handful of bulbs. Snip young green tops earlier in the season for scallion-like use if you like, but leave enough leaf to size the bulbs.
Then cure, the step that unlocks long storage. Spread the whole plants in a single layer somewhere warm, dry, shaded, and breezy for two to three weeks until the necks are papery-dry and the skins are tight and crackly. Separate the cluster, trim tops and roots, brush off soil (don't wash), and they're ready to keep for months.
Storage
Well-cured shallots keep 6-8 months in a cool, dark, dry, airy place - and your biggest bulbs are next season's sets.
Cured shallots are excellent keepers — better than most onions — lasting 6 to 8 months (sometimes longer) in a cool, dark, dry spot with airflow: mesh bags, baskets, or slatted crates. Never a sealed plastic bag (trapped moisture rots them), and not the fridge unless already peeled. A soft or thick neck, sprouting, or a strong smell means a bulb is going — use it now.
The virtuous cycle: set aside your biggest, best-formed bulbs at harvest to replant as next season's sets. Because shallots multiply from sets, you can perpetuate a favorite strain indefinitely without ever buying seed again — and by always replanting your best, the strain adapts to your garden over the years.
Growing across climates
Mild-winter zones fall-plant sets like garlic; cold zones spring-plant. Everywhere they want a long, cool leaf-building stretch.
Shallots follow the garlic pattern, tuned to your winter. Zones 3-5: plant sets in early spring as soon as the soil thaws; hard winters make fall planting a gamble, though deep mulch can carry the hardiest types through. Zones 6-7: either works — fall planting (with mulch) gives bigger clusters, spring planting is simpler and safer. Zones 8-9: fall-plant on the garlic calendar to grow over the mild winter and mature in late spring. Everywhere, shallots want a long, cool leaf-building season before the bulbs form; heat pushes them to bulb early and stay small, so early planting matters. In hot-summer regions, get them in and grown before peak heat.
Troubleshooting
Small clusters mean crowding, heat, or missed feeding; rot means poor drainage; bolting follows a cold spell. Rust and allium pests trouble the leaves.
Small bulbs or few in the cluster: too little cool leaf-building time (planted late), crowding, skipped nitrogen, or heat — plant early and feed through leaf growth. Bulbs rotting in the bed: waterlogged soil; shallots demand sharp drainage, so use raised beds where winters are wet. A flower stalk (bolting): triggered by a cold spell on establishing plants (common with oversized or cold-stored sets); pull and use those bulbs first, as they won't store. Sprouting in storage: too warm or too damp — keep them cool, dark, and airy. Nutrition
A nutrient-dense allium eaten in small amounts - vitamin B6, manganese, folate, and unusually high antioxidant and organosulfur content for its size.
Shallots pack the allium family's chemistry into a small, sweet package. Clove for clove they're denser than onions in several nutrients — vitamin B6, manganese, folate, potassium, and vitamin C — and they carry notably high levels of antioxidant flavonoids (quercetin and kaempferol) and the organosulfur compounds behind allium health research, along with prebiotic fibers.
You eat shallots in seasoning quantities, so their dietary role is as a flavor-dense, low-calorie way to add those compounds to a dish. Their milder, sweeter flavor also means they're often used raw — minced into vinaigrettes and finishing sauces — where the delicate organosulfur compounds survive intact. Grow them for the refined flavor; the concentrated nutrition comes along for free.
In the kitchen

Shallots are where chefs reach when onion is too coarse. Raw, finely minced, they're the soul of a classic vinaigrette, mignonette for oysters, and countless finishing sauces — sharp but gentle, dissolving into the background. Sweated gently in butter, they melt into a sweet, silky base for pan sauces and beurre blanc, prized because they soften faster and sweeter than onion.
Two more tricks: sliced thin and slowly fried, shallots become the crisp golden garnish that crowns dishes across Southeast Asia and studs green bean casserole; and roasted whole, they turn jammy and caramel-sweet alongside meats and vegetables. Substitute shallots anywhere you want onion flavor with more finesse — and don't forget the green tops as a chive-like garnish early in the season.

Shallots are the easiest allium to perpetuate. Because each planted set multiplies into a cluster, you simply save your biggest, healthiest bulbs at harvest and replant them as next season's sets — a self-renewing supply that costs nothing and, over years of selecting your best, adapts to your soil and climate. Budget a few bulbs held back per row.
For true seed (and to renew vigor if a strain declines), let a few plants overwinter and flower in their second year; they form onion-like globes of small flowers that ripen into black seed. Shallots cross-pollinate with onions and other flowering shallots, so isolate for pure seed, and note the allium catch: the seed is short-lived, viable only a year or two. Most gardeners stick with sets — simpler, faster, and true to type.

Shallots are a very old form of onion, grown across the ancient Near East and Central Asia. Their common name traces to Ascalon, a city in the ancient Levant that Europeans associated with the plant — the old name 'eschalot' and the botanical epithet ascalonicum both echo it, though the shallot is now classed as an aggregatum-group onion.
It was France that made the shallot a culinary institution. French cooks embraced its mild, refined flavor for sauces and dressings, and 'French shallots' became the standard for gourmet cooking that spread through Western kitchens. Meanwhile, the same multiplier-onion habit that made shallots easy to keep and replant kept them alive for millennia in cottage gardens — an allium propagated hand to hand, bulb to bulb, long before commerce ever bagged them.
