Rye
The grain is a wholesome, traditional bread grain. Rye contains gluten (a lower-gluten form than wheat) and is not suitable for celiac disease. Rye is notably prone to ERGOT, a toxic fungus that replaces grains with hard purple-black horns in the head - discard any grain containing them, as the alkaloids are poisonous. The green plant is not eaten. This is CEREAL/GRAIN rye (Secale cereale), not the unrelated turf 'ryegrass' (Lolium).
Overview
The hardiest grain of all and the number-one winter cover crop: an extraordinarily tough, vigorous grass that grows in cold and poor soil where nothing else will, feeds the soil, and makes the dark, distinctive grain of rye bread.
Cereal rye (Secale cereale) is the toughest of all the grains and, for most gardeners, the single most useful cover crop there is. Nothing else matches its cold-hardiness (it survives to around -30F), its tolerance of poor, dry, acidic soil, or its vigor — it germinates in nearly frozen ground, grows whenever the weather is above freezing, and can be sown later in fall than any other cover, still establishing when everything else has quit. That toughness made it the bread grain of cold, poor northern Europe, and it makes it the workhorse of soil-building today. (Note: this is grain rye, not the unrelated 'ryegrass' used for lawns.)
Rye leads a double life. As a cover crop and green manure, fall-sown rye holds soil against winter erosion with its deep roots, scavenges leftover nutrients, smothers weeds better than any other cover, and even releases natural weed-suppressing compounds — compounds that also hold back small-seeded crops for a few weeks after termination, so the residue takes a little planning around — then it's mowed, crimped, or tilled in spring to feed the soil. As a grain, left to grow on, it shoots up tall (5-7 feet), heads out, and ripens the dark, hearty grain that makes rye bread, pumpernickel, crispbread, and rye whiskey. It's the rare crop that is both the best thing you can plant for your soil and a genuine, distinctive food grain.

Watch out for
Ergot High
A fungus (Claviceps purpurea) that infects open cereal flowers and replaces developing grains with hard, dark purple-black, horn-shaped bodies (sclerotia) packed with toxic alkaloids. It also infects grassy weeds, which carry it between crops.
Watch for: Sticky, sweet 'honeydew' droplets on the heads at flowering (the early sign), and later hard, dark, curved horn-shaped bodies protruding from the head in place of normal kernels.
Prevent: Grow clean seed, control grassy weeds that host it, rotate, and cut and remove infected heads; cool, wet weather at flowering favors it.
Treat: No cure - carefully pick out and DISCARD all ergot bodies from harvested grain; never mill, eat, or feed grain containing them, as the alkaloids are poisonous.
Rye is the most ergot-prone cereal: it is the only cross-pollinated grain, so its flowers stay open and exposed to infection far longer than a self-pollinating wheat or barley head. Treat every rye harvest as needing an ergot inspection, and discard the batch rather than mill grain you cannot clean. Ergot-contaminated rye flour caused the historic mass poisonings known as St. Anthony's Fire.
Birds & Wildlife Medium
Birds find ripening fruit and seed before you do. Robins, waxwings, starlings, catbirds, jays, sparrows, finches, blackbirds, and doves all work a garden, and the pressure arrives in a narrow window - the last days before harvest, when sugar rises, color changes, and the crop softens or the grain hardens. A flock can strip a small planting in a day or two, and birds that only peck rather than take whole fruit still leave wounds that rot or draw wasps. Squirrels, chipmunks, and other wildlife usually turn up on the same crop at the same time. This is competition rather than disease: the birds are not harming the plant, and a big tree or a heavy-cropping bush often has enough for everyone - but on a small planting it can be the difference between a harvest and none.
Watch for: Fruit disappearing from the outermost, most exposed parts of the plant first, and from the top of a tree where you cannot reach anyway. Single neat pecks and gouges in ripening fruit, with several fruits sampled rather than one eaten through - the classic sign that it was birds rather than an animal. Heads of grain or seed going visibly lighter and emptier as they ripen, with hulls and chaff scattered underneath. Freshly sown seed vanishing off the surface of a bed before it germinates. Bird traffic in and out of the plant picking up as the crop colors, and birds waiting on nearby wires and branches. Wasps arriving at the pecked and split fruit shortly afterward.
Prevent: Net, and net early. Bird netting draped over a frame or hoops so it stands off the fruit, with the edges closed at ground level, is the only thing that reliably works at harvest scale - and it has to go on before the crop starts to color, because once birds have found the food they are far harder to displace. Keep fruit trees small enough that netting them is actually feasible; that decision gets made years earlier, at planting. Bags of mesh, organza, or paper slipped over individual heads, clusters, or prize fruit protect a small crop without netting the whole plant. Then shorten the exposure: pick promptly and completely rather than leaving ripe fruit hanging as a lure, clear split and dropped fruit that draws birds and wasps alike, and where a crop can finish off the plant, harvest a little early and ripen or dry it under cover. Rake in or cover broadcast seed so it is not lying in plain view.
Treat: There is no treatment once a crop is being taken - only protection and timing, so the answer is to get netting on and to pick what is ready. Reflective tape, flash ribbon, spinners, and decoy predators do work, but only for a few days at a time: birds habituate fast, so move and rotate them and never rely on them as the main defense for a crop you care about. Cut and gather grain or seed heads a little early, at firm dough, and finish drying them under cover instead of leaving them standing for the flocks. Plant a little extra, or a decoy crop the birds prefer, and accept sharing anything that crops heavily. On a wild or foraged patch, fruit going to birds and small mammals is the point of the plant rather than a problem to solve.
A concern only when rye is grown for grain - as a terminated cover crop it never reaches the stage that draws birds. For a grain crop, cover the broadcast seed and net or harvest promptly at ripening.
Lodging Medium
The flattening of a stand when tall, weak stems bend or break under their own weight, wind, or rain - teff's most significant weakness, made worse by rich soil, excess nitrogen, and heavy heads, and it tangles the crop and complicates harvest.
Watch for: Whole patches bent or flattened to the ground, especially after storms or on rich, over-fertilized ground, with tangled stems and heads in the dirt.
Prevent: Feed lightly (avoid excess nitrogen), grow teff on lean-to-moderate soil, avoid over-watering, and choose sturdier or shorter varieties where available.
Treat: Little can be done once lodged - harvest lodged teff carefully; prevention through lean feeding and good variety choice is the real answer.

Aphids Low
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
Rye's vigor and hardiness make aphids and barley yellow dwarf much less damaging here than on wheat, barley, or oats - usually a non-issue on this crop.

Rye is the easiest grain to grow and the most forgiving of poor conditions. Its specialty is fall sowing: broadcast or drill the seed thickly, about an inch deep, into a firm bed any time in fall — even late fall, after it's too cold and late for oats, wheat, or clover to establish, because rye germinates in near-freezing soil and keeps growing whenever it's above freezing. It's grown thick, tillers hard, and smothers weeds, so there's no thinning. It tolerates poor, dry, sandy, and acidic soil that defeats other grains, needs little or no feeding, and asks for nothing but full sun.
Then comes the decision that shapes everything: cover crop or grain? As a cover crop, let it grow through winter and terminate it in spring — mow it, roll/crimp it flat, or till it in — before it gets too tall and tough (timing matters; over-mature rye is hard to manage and ties up nitrogen). As a grain crop, simply let it grow on: it will shoot up very tall, head out, and ripen through early summer. One botanical quirk sets rye apart from the other cereals: it is cross-pollinated by wind, so for good grain set, grow a reasonable block rather than a single thin row.
Care
As a cover crop, rye needs essentially no care beyond timely spring termination; as a grain, watch for lodging in the very tall crop and, above all, for ergot in the heads.
Rye is close to no-care. As a cover crop, you sow it and walk away — it needs no feeding, no watering, and no attention until spring, when the one real task is timely termination: mow, crimp, or till it before it grows too tall and woody (ideally before or just as it heads), because over-mature rye is tough to kill and its high-carbon residue can temporarily tie up soil nitrogen. Many gardeners crimp or mow it and plant right into the flat mulch (no-till). One thing to plan around: rye residue is allelopathic as well as high-carbon — the same compounds that make rye such a good weed smotherer also suppress germination of small-seeded crops. Transplants go into rolled or mown rye happily after two to three weeks, but don't direct-seed carrots, lettuce, spinach, or small brassicas into fresh rye residue for three to four weeks after termination.

What 'harvest' means depends on your purpose. As a cover crop, there's no grain harvest at all — you terminate the rye in spring by mowing, roller-crimping it flat, or tilling it under, returning all that growth to the soil as green manure or leaving it as a weed-suppressing mulch to plant into.
Grown for grain, harvest when the tall plant has turned golden and the kernels are hard. Cut the long stalks (rye straw is famously long, tough, and prized for thatching, mulch, basketry, and crafts) and bundle them into sheaves to finish drying somewhere airy. Store in sealed containers against pantry pests, and freeze new grain briefly to kill any hitchhiking eggs. As always, keep the grain whole and grind flour fresh as you bake, since whole-grain rye flour goes stale over time — and freshly milled rye has a deep, aromatic flavor that makes far better dark bread than old flour. Double-check that stored grain is free of ergot before milling.
Rye's straw is a valuable byproduct worth storing: long, strong, and durable, it's traditionally used for thatching, mulch, animal bedding, basketry, and crafts — keep it dry and it lasts indefinitely. And keep back some of your best clean grain as next year's seed; note that because rye is cross-pollinated, saved seed will stay reasonably true only if you don't have a very different rye variety flowering nearby — but for the common cereal rye that gardeners grow, saved seed reliably carries on the crop.
Growing across climates
The most cold- and poverty-tolerant grain of all: unmatched as a fall cover crop from the far North to the mild South, and the grain that fed cold, poor lands where wheat could not grow.
Rye's whole identity is toughness, and its range shows it. Zones 3-5: rye's element — the hardiest grain there is, surviving brutal winters and thriving as the most reliable fall cover crop for cold regions, sown late when nothing else will establish, and grown for the dark rye bread of cold northern cuisines. Zones 6-8: excellent as both a fall cover crop and a grain; its vigor and late-plantability make it the default winter cover. Zones 9-10 (mild winters): still the top over-winter cover crop, sown in fall for soil protection and spring green manure, and it will make grain in the cool season. Rye also shrugs off poor, dry, sandy, and acidic soils that other grains reject, which is exactly why it became the staple grain of the sandy, cold, poor lands of northern and eastern Europe. Wherever the ground is cold, poor, or the season short, rye is the grain and the cover crop that will still grow.
Troubleshooting

Nutrition
A hearty, high-fiber whole grain with a low glycemic response and good minerals; darker and more filling than wheat, with less (but still present) gluten - off-limits for celiac diets.
Rye is a nutritious, distinctive whole grain, valued especially for its fiber and its low glycemic response. Whole rye is rich in soluble and insoluble fiber (including arabinoxylans and some beta-glucan) that promotes fullness and slow, steady blood-sugar release — whole-grain rye bread is notably more filling and satiating than wheat bread, and has a gentler effect on blood sugar. Rye also supplies good manganese, magnesium, phosphorus, iron, zinc, and B vitamins, concentrated in the bran and germ of the whole grain.
Rye contains gluten, but a different and generally lower amount than wheat, with weaker dough-forming proteins — which is why rye breads are denser and stickier and often mixed with wheat for a lighter loaf. That gluten still makes rye unsuitable for celiac disease and gluten intolerance. And rye's proneness to ergot is a real food-safety point: historically, ergot-contaminated rye flour caused ergotism ('St. Anthony's Fire'), so cleaning ergot from grain is essential. For those who can eat it, whole rye is one of the most filling, fiber-rich, blood-sugar-friendly grains — a genuinely wholesome dark bread grain.

Rye is the grain of dark bread, and its flavor is unmistakable: deep, tangy, faintly sour, and hearty. Because rye's gluten is weak, rye breads are dense and moist and are usually leavened with sourdough, which suits rye's chemistry and gives it its classic tang — from light Jewish deli rye and Scandinavian crispbreads (knäckebröd) to dense German pumpernickel and Eastern European black breads. Rye flour is often blended with wheat for a lighter loaf, but a 100% rye sourdough is a world of its own. The grain also cooks as chewy rye berries for grain bowls and salads, and cracked or rolled into a hearty porridge.
Rye's other famous kitchen life is in the still: rye whiskey, the spicy, peppery American and Canadian spirit, is made from a rye-heavy mash, and rye contributes to some vodkas and gins. Beyond food, rye's long straw thatches roofs and weaves into crafts, and its cover-crop biomass feeds the soil. Propagation & seed saving
Unlike the other cereals, rye is cross-pollinated, so keep just one variety and save seed from a decent-sized block; common cereal rye reliably carries on from saved grain.
Rye is the odd one out among the cereals for seed-saving because it is cross-pollinated by wind, not self-pollinating — so it doesn't automatically come true the way wheat, barley, oats, and rice do. In practice this matters little for gardeners, because the common cereal rye grown for cover cropping and bread is a broad, stable population rather than a delicate named cultivar: save your cleanest, best grain (ergot-free!) from a reasonable-sized block, and it will carry on the crop reliably.
The one caution follows from cross-pollination: if you're growing a specific rye variety and want it pure, don't have a very different rye flowering nearby, since they'll interbreed — and grow a decent block rather than a few plants, both for good pollination and to keep a healthy gene pool (like corn, rye can lose vigor from very small inbred plantings). Store the seed grain dry, cool, and airtight, and re-sow in fall. Because rye is such a vigorous self-sower, be aware that shattered grain readily volunteers — useful if you want it to reseed, a weeding job if you don't.
History
Rye began as a hardy weed of wheat and barley fields, was domesticated as it followed farming into cold, poor northern lands, and became the daily bread grain of northern and eastern Europe.
Like oats, rye started life as a weed. It grew as a hardy, cold-tolerant contaminant among the wheat and barley fields of the ancient Near East, and as farming spread north and west into the colder, poorer, sandier lands of Europe where those crops struggled, the tough rye weed thrived where the intended grain failed — and farmers came to sow and rely on it deliberately. So rye was domesticated relatively late, as a 'secondary' crop that earned its place by sheer hardiness.
It became the daily bread grain of northern and eastern Europe — Germany, Scandinavia, the Baltics, Poland, and Russia — where its cold-hardiness and tolerance of poor soil let it feed populations that wheat could not, and dark rye bread became a cultural cornerstone. Rye also carried a dark chapter: ergot outbreaks in rye flour caused waves of ergotism ('St. Anthony's Fire') through medieval Europe, with gangrene, convulsions, and hallucinations, until the fungus was understood. Rye came to North America with European settlers, and while it faded as a bread grain as wheat spread, it found an enormous new role in the 20th century as the premier cover crop of soil conservation — and it endures as the grain of rye bread, pumpernickel, and rye whiskey. A former weed became both a beloved bread and the gardener's best friend for building soil.
