Potato
Only the tubers are edible - and only when not green. Leaves, stems, and the small tomato-like seed balls contain toxic solanine and are never edible. Trim away small green patches and any sprouts, and peel deeply. Discard whole tubers that are extensively green, badly sprouted, or that taste bitter or burn the tongue - cooking does not destroy solanine.
Overview
The world's great staple, grown from seed potatoes rather than seed: plant a piece, hill it up, and dig a meal's worth of tubers per plant a few months later.
The potato is the crop that changed the world — a tender perennial from the Andes grown as an annual for the starchy tubers it swells underground. It's uniquely rewarding for a home garden: high-calorie, storable for months, and grown not from tiny seed but from seed potatoes (whole small tubers or cut pieces, each with an 'eye' that sprouts). Tuck a piece in the ground and it becomes a plant that returns five to twenty potatoes.
The key concept is early vs. maincrop. Early varieties give tender 'new' potatoes in 60-80 days and dodge summer heat and late blight; maincrop varieties take 100-130 days but yield the big, storable spuds. One important rule up front: buy certified seed potatoes, never plant grocery-store potatoes — store spuds are often sprout-inhibited and can carry disease into your soil for years.

Colorado Potato Beetle High
The signature potato pest: a rounded yellow-and-black-striped beetle whose humpbacked brick-red larvae can strip a plant's foliage in days, cutting yield hard.
Watch for: Yellow-orange egg clusters on leaf undersides, humpbacked reddish larvae feeding in groups, and skeletonized leaves from the top down.
Prevent: Rotate potatoes far from last year's bed (adults overwinter in soil and walk to the nearest nightshade); use straw mulch and row cover on young plants; interplant beans.
Treat: Hand-pick adults and crush egg masses daily - the single most effective home control; spinosad or Bt (tenebrionis strain) for heavy pressure. They develop resistance fast, so rotate any spray.
If you grow potatoes and eggplant, expect this beetle; scouting from emergence and squashing eggs before larvae hatch prevents most damage.
Late Blight High
The Irish-famine pathogen (Phytophthora): greasy gray-green lesions that can collapse a planting in under a week of cool, wet weather.
Watch for: Large greasy-looking dark patches on leaves and stems, white fuzz under leaves in humidity, and firm brown-to-purplish rot on tubers.
Prevent: Plant certified clean seed and resistant varieties; give maximum airflow; keep foliage dry; destroy volunteer potatoes and cull piles that harbor it over winter.
Treat: There is no cure - remove and bag whole infected plants immediately to protect neighbors, and cut down foliage before digging so spores don't reach the tubers. It spreads on wind for miles.

Flea Beetles Medium
Flea beetles are tiny dark beetles - often shiny black or bronze, rarely more than a couple of millimeters long - with enlarged back legs that let them spring away like fleas the moment you lean in. The adults chew countless small round pits and shot-holes through leaves, giving the foliage a peppered, buckshot-riddled look. They overwinter as adults in leaf litter, hedgerows, and crop debris, emerge hungry in spring, and are worst in warm dry spells. The damage is mostly a seedling and transplant problem: a small plant with a few leaves can be checked, stunted, or killed outright, while the same plant shrugs them off once it is large and growing strongly. Different species specialize on different plant families, so the beetles hammering your brassicas are not the ones on your nightshades. Some species also have larvae that feed on roots and tubers underground.
Watch for: Dozens of pinhead-sized round holes peppered across the leaves, thickest on the youngest, most tender growth. Tiny beetles that spring away as you brush the plants or lean in for a closer look - that jump is the identification. Seedlings that go lacy and stop growing, and transplants that sit and sulk instead of taking off. Damage heaviest in warm, dry weather and along the edge of a bed nearest weedy ground or last year's crop debris. On root crops, shallow narrow grooves or channels scarring the skin at harvest, from larvae feeding underground.
Prevent: Floating row cover or fine insect mesh, laid over the bed from the day of sowing or transplanting and sealed at the edges so nothing can walk in underneath, is the single best defense - and on the crops they favor it is close to essential. Leave it on until plants are large and growing strongly, or until flowering on anything that needs pollinating. Push growth: a well-watered, unchecked plant outgrows the damage, so the whole game is getting seedlings through their vulnerable weeks fast. Keep beds weed-free, since related weeds host the beetles alongside your crop, and clear crop debris at the end of the season where the adults overwinter. Rotate away from a bed that grew a related crop last year. Where you can, shift sowing dates - cooler-season and fall plantings often miss the peak of adult feeding entirely.
Treat: Row cover and healthy fast growth carry most crops through, and on an established plant the damage is usually cosmetic and needs nothing at all. Where a young planting is genuinely being stripped, kaolin clay coats the leaves and deters feeding, and spinosad will knock the beetles back. Spinosad is acutely toxic to bees while the spray is still wet - apply it at dusk when bees are not flying, never onto plants in flower, and follow the product label. Anything you spray must be labeled for the plant you are treating, and you must observe its pre-harvest interval on a crop you are picking. Yellow sticky traps are useful for telling you when the beetles have arrived. Where the damage falls on the part you eat, harvesting young often beats them outright; where you are growing for a root or a fruit, leaf damage can simply be tolerated. Larvae feeding underground cannot be reached by a foliar spray, so rotation and clean beds are what work against those.
Mostly cosmetic on established potatoes, but they can check emerging plants and spread bacterial disease; protect new growth in spring.
Early Blight Medium
Fungal disease (Alternaria) causing brown spots with concentric target rings, starting on the lowest leaves and climbing - the same nightshade disease that hits tomatoes and potatoes.
Watch for: Bulls-eye-patterned brown spots on lower leaves, yellowing around the spots, and leaf drop moving upward; dark sunken spots on tubers.
Prevent: Mulch to stop soil splash, water at the base, rotate out of nightshade beds for 2-3 years, and keep plants well-fed (stressed plants suffer worse).
Treat: Remove and trash (never compost) affected leaves at first sight; copper or biological fungicides slow the spread through the canopy.
Rarely fatal on its own but weakens the plant and shortens the bulking window; more of a slow drain than late blight's sudden collapse.
Verticillium Wilt Medium
A soil fungus (Verticillium dahliae and relatives) that enters through the roots and grows upward inside the water-conducting tissue, plugging it from within. The plant is not being eaten or rotted, it is being cut off from its own water supply, which is why the signature symptom is one branch or one side wilting and browning while the rest looks perfectly healthy. Cut into affected wood or stem and the tissue is streaked olive-green, grey or brown. The host range is enormous - maples, redbud, olive, tomato, potato, pepper, eggplant, strawberry and many more - and the fungus survives in soil for years as tough resting structures, so infected ground stays infected. Grasses and conifers do not get it.
Watch for: One branch, one limb or one side of a plant wilting, yellowing and browning in summer while the rest carries on normally - the lopsided pattern is the tell - and leaves that wilt and then hang on rather than dropping cleanly. Cut into affected wood and look for olive-green, grey or brown streaking along the grain; in a cut vegetable stem it shows as a ring of discolored dots. On vegetables, lower leaves yellow in a wedge from the margin inward, and the plant wilts at midday but recovers overnight in the early stages.
Prevent: There is no way to sterilize garden soil of it, so prevention is plant choice and plant vigor. Do not replant a susceptible species where one has already died of it. Grasses, conifers, ginkgo, hawthorn, hornbeam, honeylocust, oak and beech do not get it, and many vegetable varieties carry bred-in resistance - the V in a VFN code on the seed packet. Rotate susceptible vegetables on a long cycle and keep them off ground where the disease has shown. Buy clean stock, avoid wounding roots with spades and machinery, and keep woody plants steadily watered, mulched and only lightly fed, because a vigorous plant walls the fungus off far better than a stressed one.
Treat: There is no cure and nothing to spray. On a tree or shrub the aim is to keep it alive long enough to compartmentalize the fungus, which many plants manage for years: prune out dead and wilting branches well below the discolored wood, sanitize the pruners between cuts, water deeply through dry spells, mulch, and feed lightly rather than pushing it with a heavy feed. On vegetables, pull and bin affected plants rather than composting them, and move that crop to clean ground or to containers of fresh mix. Do not replant the same species where one has died.
Part of the 'early die' complex in potatoes, and it shows as brown streaking in the tuber's vascular ring as well as the stem. A bed that keeps killing potatoes weeks early is a sign to rotate hard away from all nightshades.
Common Scab Medium
A soil bacterium (Streptomyces) that produces rough, corky, raised or pitted lesions on tuber skins; cosmetic but unsightly, worst in dry, alkaline soils.
Watch for: Brown, corky, scabby patches or star-shaped pits on the potato skin at harvest; the flesh underneath is fine.
Prevent: Keep soil evenly moist during tuber formation (the key control), don't lime the potato bed (keep pH 5.0-5.5), avoid fresh manure, and grow scab-resistant varieties.
Treat: No treatment once tubers are affected - they're still edible; peel and eat normally, and fix the soil moisture and pH for next year.
Cosmetic only: scabby potatoes are perfectly good to eat. The best prevention is consistent watering from flowering onward.
Wireworm Medium
The tough, wiry, orange-brown larvae of click beetles, which live in soil for years and bore narrow holes and tunnels through storage roots.
Watch for: Thin, clean holes and shallow tunnels in roots at harvest, and stiff orange-brown 'worms' in the soil - worst in beds recently converted from lawn or sod.
Prevent: Avoid planting potatoes into ground that was grass/sod the year before; rotate; cultivate the soil to expose larvae to birds; bait with buried potato chunks and remove them with their feeders.
Treat: No rescue for holed tubers - trim and eat them soon (they don't store); trap with buried potato or carrot pieces before planting to gauge and reduce numbers.
Damage is cosmetic tunneling rather than plant death, but heavy populations riddle a crop; new gardens broken from lawn are the classic hotspot.
Aphids Low
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
The real danger on potatoes isn't the feeding but the viruses aphids spread (leafroll, PVY) - which is another reason to plant clean certified seed and control aphids early.

Cut seed potatoes to one or two eyes, let the cuts heal, and plant 4 inches deep, 12 inches apart, 2-4 weeks before last frost.
Start with certified seed potatoes. Cut larger ones into pieces with one or two eyes each and a chunk of flesh, then let the cut faces dry and callus a day or two (this prevents rot); plant egg-sized tubers whole. 'Chitting' — pre-sprouting the pieces in light for a couple of weeks — gives a faster, stronger start in cold soil.
Plant pieces cut-side down, eyes up, about 4 inches deep and 12 inches apart in a shallow trench, in full sun and loose, well-drained, slightly acidic soil (keep pH 5.0-5.5 to discourage scab; up to 6.0 is fine on ground where scab has never appeared, but don't lime the potato bed). Go in 2-4 weeks before your last frost once soil hits 45°F. Then plan to hill: mounding soil up the stems as they grow is how you get a big crop of unblemished, ungreened tubers. Care

Potatoes give you two harvests from one planting. For tender, thin-skinned new potatoes, gently reach into the hill at flowering and rob a few from the outer edges without disturbing the plant — eat these within days, they don't store. For the main crop, wait until the foliage has yellowed and died back and the skins have set (they won't rub off under your thumb); that's your signal the tubers are mature.
Dig on a dry day, starting a foot out from the stem so you don't spear the tubers, and lift the whole plant with a fork. Let the dug potatoes dry on the soil surface an hour, then cure them a week or two somewhere cool, dark, and airy so cuts heal and skins toughen. Handle gently — every bruise is a future rot spot — and never wash until you're ready to cook.
Storage
Cool, dark, humid, and ventilated - cured maincrop potatoes keep for months; never refrigerate, never store in light.
Cured potatoes are one of the garden's best keepers. Store them somewhere cold but not freezing (ideally 40-50°F), completely dark, and humid with some airflow — a paper bag or ventilated box in a cool basement or root cellar is perfect. Light turns tubers green and toxic, so darkness is non-negotiable. Kept well, maincrop varieties store 3-6 months; thin-skinned earlies keep only a few weeks.
Two things to avoid: the refrigerator (cold converts starch to sugar, making sweet, dark-frying potatoes — though it reverses if you warm them a week before cooking), and storing potatoes next to apples or onions (apples' ethylene speeds sprouting). Check the bin monthly and remove any soft or sprouting spud before it spoils its neighbors.
For long-term storage beyond the bin, potatoes dehydrate into flakes or freeze once par-cooked. They can also be canned — but only in a pressure canner. Potatoes are low-acid, so a boiling-water bath cannot make them safe no matter how long you process them, and home-canned potatoes are a documented cause of botulism. Follow a current USDA or National Center for Home Food Preservation tested process for cubed or small whole potatoes; there is no safe home-canning process for mashed or puréed potatoes.
Growing across climates
Cold zones plant in spring for a summer dig; hot zones grow potatoes as a cool-season crop in late winter and fall.
Zones 2-4: a spring-planted, midsummer-harvested crop — plant around last frost, choose early and mid varieties, and the cool summers actually suit potatoes well. Zones 5-7: classic potato country; plant 2-4 weeks before last frost and grow anything from earlies to long-storage maincrops. Zones 8-9: heat is the limit — tubers stop forming above ~90°F, so plant in late winter (Feb) for an early-summer harvest and again in late summer for a fall crop. Zones 10-11: strictly a cool-season crop, planted late fall through winter; potatoes won't tuber in sustained tropical heat, which is why in the tropics they're grown mainly at elevation.
Troubleshooting
Green potatoes mean sun exposure; scabby skins mean dry or alkaline soil; hollow or cracked tubers mean uneven water; stripped leaves mean beetles.
Green shoulders on tubers: light reached them — hill more soil and store in the dark. Trim away small green patches and any sprouts and peel deeply, but discard whole tubers that are extensively green, badly sprouted, or that taste bitter or burn the tongue: cooking does not destroy solanine. Rough, corky patches on skins (scab): usually dry soil during tuber set or soil pH above ~5.5 — keep moisture even and don't lime the potato bed; it's cosmetic and peels off. Cracks, knobs, or hollow centers: a drought-then-deluge water cycle during bulking — steady the watering. Leaves skeletonized, brick-red humpbacked grubs: Colorado potato beetle — hand-pick and crush egg clusters daily. Greasy dark blotches spreading fast in wet weather (late blight): remove and bag affected plants immediately; it kills the crop and rots tubers. Few, tiny tubers: too much nitrogen (leafy tops), no hilling, or a heat-shortened season.
Nutrition
A serious source of potassium, vitamin C, and fiber - nutrition that lives mostly just under the skin, so cook them whole.
The potato's reputation as 'empty starch' is undeserved. A medium potato with skin delivers more potassium than a banana, a solid dose of vitamin C (Andean cultures relied on potatoes to prevent scurvy), vitamin B6, and several grams of fiber — all for around 160 calories and no fat. Colored varieties (blue, purple, red) add anthocyanin antioxidants, the same compounds found in berries.
Two things shape how healthy your potato is. Much of the fiber, vitamin C, and potassium sits in and just under the skin, so eating them skin-on keeps the most nutrition. And cooking method is everything: a baked or boiled potato is genuinely nutritious food; deep-frying is what earned potatoes their bad name. Cooling cooked potatoes also forms resistant starch that's gentler on blood sugar.

Match the potato to the dish: waxy types hold shape for salads and boiling, starchy russets bake and fry, all-purpose golds do everything.
The one rule that makes you a better cook: waxy vs. starchy. Waxy potatoes (fingerlings, reds, Charlotte, Nicola) are low-starch and hold their shape — use them for potato salad, boiling, roasting, and gratins where you want distinct pieces. Starchy potatoes (russets like Burbank and Norkotah) fall apart fluffy — the choice for baking, mashing, and fries. All-purpose golds (Yukon Gold, Carola) split the difference and are the safe everyday pick.
Beyond the obvious: new potatoes need nothing but butter and salt; a whole roasted-then-smashed potato gives maximum crispy surface; leftover boiled potatoes fry into hash or pan-fry with rosemary. Save the starchy water from boiling for bread. And the golden kitchen law — start potatoes in cold salted water and bring them up to a boil, so they cook evenly from the center out.
Propagation & seed saving
Every potato is its own seed: save your best small tubers to replant, cut and heal larger ones, and start clean from certified stock when disease appears.
Potatoes are propagated vegetatively — a tuber grows into a plant genetically identical to its parent — so every potato you harvest is potential seed for next year. Set aside egg-sized, healthy, disease-free tubers from your best plants, store them cool and dark over winter, and replant in spring. Cut larger seed potatoes into pieces with one or two eyes each and let the cuts callus before planting.
The important caveat: disease (especially viruses and late blight) builds up in saved seed over generations, which is why growers periodically buy fresh certified seed potatoes to reset. Never save from a diseased crop, and never use grocery potatoes. Potatoes can also make true seed from their small green fruit ('seed balls'), but that seed doesn't grow true to type — it's a tool for breeders, not gardeners wanting the same variety back.

Treat it as excellent food that quietly does a lot of nutritional work — and remember the green parts and foliage are genuinely toxic, the one hard safety line with this plant.
History
Domesticated high in the Andes 7,000+ years ago, carried to Europe by the Spanish, and tied forever to the Irish famine that its own blight caused.
Potatoes were domesticated in the high Andes of Peru and Bolivia over 7,000 years ago, where Indigenous farmers bred thousands of varieties in every color and adapted them to freeze-drying into storable chuño. Spanish explorers carried the potato to Europe in the 1500s, where it was distrusted for two centuries as an odd nightshade before becoming the calorie engine that fed a growing continent.
That success became catastrophe: by the 1840s, Ireland's poor depended almost entirely on a single potato variety, and when Phytophthora infestans — late blight — swept in, the crop rotted in the ground and roughly a million people died in the Great Famine, with a million more emigrating. It's a permanent lesson in the danger of monoculture, and the reason late blight still shapes how carefully gardeners buy clean seed and rotate their beds today.
