This shorter shelf life of the milled flour is worth knowing, because it's a real difference from wheat: traditional millet-eating cultures often mill it fresh in small batches for exactly this reason. Toasting the grain lightly before storing or grinding both deepens the flavor and helps. Keep back some of your best clean whole grain as next season's seed — and remember pearl millet also stores beautifully as premium birdseed, so a surplus is never wasted. Cooked millet also freezes well for quick meals.
