Sorghum is one of the world's major cereals and one of the most useful, versatile, and forgiving grains a gardener can grow. A tall African grass that looks like a lean, tough cousin of corn, it is famous for drought and heat tolerance — it curls its leaves and waits out dry spells that flatten corn, and it thrives in punishing summer heat — making it a resilient grain for a warming climate and dry gardens.

The remarkable thing about sorghum is that one species is grown for three distinct purposes. Grain sorghum (milo) is grown for its heads of round grain, cooked like rice, popped, or ground into gluten-free flour. Sweet sorghum is grown for the sugary juice in its stalks, crushed and boiled down into sorghum syrup, a distinctly Southern sweetener. The berries are prized by birds, chipmunks, mice, turtles, and other wildlife, which often strip a patch of ripe fruit before a forager can gather much - a sign of the plant's ecological value as much as a nuisance.

Sorghum is easy to grow if you give it what it wants above all: heat and sun. Direct sow it about an inch deep a week or two after your last frost, once the soil has warmed to 60F — unlike corn there's no advantage to rushing into cold ground, and warm soil gives fast, even germination. Space by type: grain sorghum is grown fairly close, thinned to about 4-6 inches in the row; sweet sorghum and broomcorn take a bit more room to build heavy canes or long brush.

It asks little after that. Sorghum is a moderate feeder (hungrier for nitrogen than a legume, far less than corn) and famously drought-hardy, so it needs only occasional water in real dry spells. It starts slowly — weed it while young — then takes off in summer heat and shades the ground itself. Because it is largely self-pollinating, you don't need corn's block planting; a single row heads and sets grain perfectly well. Its one real vulnerability is birds at ripening, so plan to protect the heads.

Care

Weed it early, feed moderate nitrogen, water only in real drought, and watch for sugarcane aphids - then defend the ripening heads from birds.

Sorghum's care is light. The early weeks matter most: it germinates fast but grows slowly at first, so keep weeds down until it gets going, after which its canopy suppresses them. Give it a moderate nitrogen feeding during rapid growth for strong stalks and full heads, and water only in prolonged drought — overwatering and over-feeding just push soft, floppy growth on a plant built for lean, hot conditions.

The pest to know is the sugarcane aphid, which has become sorghum's major insect problem: it clusters on leaf undersides, coats the plant in sticky honeydew and sooty mold, and can seriously weaken a stand — scout leaf undersides and encourage the ladybugs and lacewings that control it. Chinch bugs and sorghum midge are lesser concerns. Then the season's defining task arrives at ripening: birds. Sorghum grain is a bird magnet, and a small planting can be stripped, so bag or net the heads as the grain colors.

Harvest

For grain, cut and dry the heads when the seed is hard, then thresh and winnow; for sweet sorghum, cut the canes at soft-dough, press the juice, and boil it down to syrup.

How you harvest depends entirely on your type. For grain sorghum, wait until the grain is hard and fully colored and the plant is drying down; cut the whole heads with a length of stalk, hang them to finish drying somewhere airy and bird-safe, then thresh (rub or beat the grain loose) and winnow away the chaff. The bare grain then cooks like rice, pops, or grinds to flour.

For sweet sorghum, the goal is sugar, not grain: cut the canes when the seed reaches soft dough and stalk sugar peaks, strip off the leaves, and crush the stalks to squeeze out the green juice (a mill, or careful pressing at small scale). Then boil the juice down — roughly 8 to 10 gallons of juice make one gallon of syrup — skimming as it reduces to amber sorghum syrup. It's a full day's project and a piece of living Southern foodways. For broomcorn, cut the seed heads with long stalks, remove the seed, and dry the stiff brush straight for tying into brooms.

Storage

Store thoroughly dried grain cool and airtight for a year or more; sorghum syrup keeps for a long time sealed; broom brush stores dry indefinitely.

Dry sorghum grain stores well — thresh, winnow, and dry it fully, then keep it in airtight containers somewhere cool and dark, where it holds for a year or more like other whole grains. Guard against pantry moths and weevils with sealed jars and a spell in the freezer for new grain. Whole grain keeps better than ground; mill it to flour as you need it, since sorghum flour, like all whole-grain flour, goes stale over time.

Sorghum syrup, once boiled down and bottled hot, is high enough in sugar to keep for a very long time in a sealed jar in the pantry, though it may crystallize or thicken with age (gentle warming re-loosens it). Broomcorn brush simply needs to be dried straight and kept dry, after which it stores indefinitely for broom-making. And of course, save some of your best hard grain as next year's seed — sorghum comes largely true from saved seed.

Growing across climates

A hot-climate champion - easy and productive across the warm South and drylands, and one of the best grains for heat and drought; only cool, short seasons limit it.

Sorghum is built for heat, and its range reflects that. Zones 4-6: workable with the shorter-season grain types, sown once soil is warm; it will make grain in a normal summer but wants heat to excel. Zones 7-8: excellent — the warm South is classic sorghum and sweet-sorghum-syrup country, and the crop thrives on summer heat that stalls corn. Zones 9-10: ideal, with a long season that easily ripens grain and can allow a second sowing; sorghum's drought toughness makes it a standout low-water grain here. Zones 11-13: its African home climate — year-round growing and reliable performance. Everywhere, sorghum's great virtues are heat and drought tolerance: where summers are hot and water is short, it is one of the most dependable grains you can plant, and a smart choice as climates warm and dry.

History
