Pear
The flesh and skin are the food. Seeds (like all pome and stone fruit) contain small amounts of a cyanogenic compound - harmless if you swallow a few, but don't crush and eat them in quantity.
Overview
A long-lived pome tree in two very different families - buttery European pears you pick hard and ripen indoors, and crisp apple-textured Asian pears you eat off the tree. Most need a second variety to pollinate, and fire blight is the disease to respect.
A pear tree is a patient investment that outlives the gardener: give it a few years to settle in and it feeds a household every autumn for decades. But "pear" is really two crops in one tree shape. European pears (Bartlett, Bosc, Anjou, Comice, Seckel) are the classic buttery, melting dessert pear - and the one trick every grower must learn is that they must be picked mature but hard and ripened off the tree, or they rot from the core out. Asian pears (Hosui, Shinseiki, Chojuro, 20th Century), also called nashi or apple-pears, are round, crisp, and juicy - you ripen and eat them on the tree like an apple.
Two facts steer every decision. First, pollination: most pears can't set fruit with their own pollen and need a second, different variety blooming at the same time nearby - and European pollinates European, Asian pollinates Asian, since their bloom times rarely overlap. Second, fire blight: pears are more prone to this fast, limb-killing bacterial disease than almost any other tree fruit, so variety choice and restrained pruning matter enormously. Pears also want less winter chill than apples (roughly 400-800 hours; some Asian and southern types far less), which pushes their range further south.

Codling Moth High
The classic 'worm in the fruit': larvae of a small gray moth tunnel in from the skin and feed at the core or kernel, packing the entry hole with sawdust-like frass and ruining the crop for keeping. The same moth works apples, pears and walnuts.
Watch for: Small entry holes ringed with brown frass, early fruit or nut drop, and a tunnel running to the seed cavity or kernel when you cut or crack a damaged one open.
Prevent: Hang pheromone traps to time any spray; gather and destroy dropped fruit and nuts promptly to break the cycle; bag individual fruits or apply kaolin clay for spray-free control.
Treat: Spinosad timed to egg hatch (the traps tell you when), or codling moth granulosis virus (CpGV) as a targeted biological. Bt does not work on codling moth - the newly hatched larva bores straight into the fruit within hours and never eats enough surface tissue to take in a dose. Use only a product labeled for the crop you are treating, follow the label exactly, and observe the pre-harvest interval before you pick. Sanitation and fruit-bagging matter more than any single spray.
Pears are hit as hard as apples, and the tunnel runs to the core just the same. Usually two to three generations a season; the first, at petal fall, is the one to stop. Bt is not a control here - the newly hatched larva is inside the fruit within hours - so time spinosad to egg hatch or use codling moth granulosis virus (CpGV), and lean hardest on sanitation and fruit-bagging.
Fire Blight High
A fast, destructive bacterial disease (Erwinia amylovora) of the rose family. It enters through open blossoms and soft shoot tips in warm, humid weather, then runs back down the shoot, blackening leaves and wood as though scorched and bending the tip into a telltale 'shepherd's crook'. From there it moves into limbs as dark sunken cankers, and it can kill a young tree in a single season. Apple, pear, quince, loquat, hawthorn, serviceberry and toyon are all hosts, and susceptibility varies enormously between species and between varieties.
Watch for: Sudden wilting and blackening of blossoms and shoot tips that look burned rather than diseased, shoots bent over into a hook, dark sunken cankers on limbs, and amber bacterial ooze on the bark in warm humid weather.
Prevent: Where a resistant option exists for your crop, variety choice matters more than any spray - check before you buy. Avoid heavy nitrogen and hard pruning, both of which force the soft succulent growth the bacteria enter through, and never prune or work the plant in wet weather. Keep susceptible hosts spaced apart rather than planted hard against each other, and do not prune two of them in the same wet spell.
Treat: Cut strikes out at least 8 to 12 inches below the visible damage, sterilizing the saw or pruners between every single cut, and remove and destroy the prunings rather than leaving them lying. Cut cankers out in dry dormant weather. Copper or biological sprays at bloom help in high-pressure areas - use only a product labeled for the crop you are treating, follow the label exactly, and observe the pre-harvest interval before you pick.
The number-one reason home pears fail in the warm, humid South and East, and variety resistance matters more than any spray. Bartlett is the most susceptible common variety; Kieffer, Harrow Sweet, Magness, Moonglow and Seckel are among the resistant ones.
Deer (browse resistance) Medium
Deer are the largest garden problem across much of the country, and where pressure is high they set the limit on what you can grow at all. They browse at night and around dawn and dusk, taking tender shoots, leaves, buds, flowers, and fruit within about five feet of the ground, and they come back night after night to anything they have found and liked. Because they have no upper incisors they tear rather than cut, leaving ragged stem ends - that is how you tell deer damage from a rabbit's clean angled cut. In fall, bucks rub their antlers on young trunks and can strip the bark right around a stem, which kills a young tree outright. Palatability varies enormously between plants and between seasons: a herd short of food in late winter eats things it ignores in June, and no plant is truly deer-proof.
Watch for: Growth cleanly missing overnight, with the plant browsed back to a level line about as high as a deer can comfortably reach. Ragged, torn stem ends rather than the clean angled cut a rabbit leaves - the single most reliable identifier. Buds and flowers gone while the foliage below is untouched, since deer often take the best part first. Hoof prints and droppings in soft ground near the damage. Repeat visits, with fresh damage each morning once a planting has been found. On young trees, shredded and stripped bark and broken low branches in autumn - that is antler rubbing rather than feeding.
Prevent: Fencing is the only thing that reliably works. Eight feet is the standard for excluding deer, or two parallel four-foot fences a few feet apart, which they will not jump because they cannot judge the landing. Short of that, cage individual plants: a sturdy wire cage or trunk guard around every young tree, left on until the trunk is thick and the canopy is above browse height, prevents both browsing and antler rubbing and is the single highest-value thing you can do for a young tree. Repellent sprays do help at moderate pressure, but they wash off and deer habituate, so reapply after rain and rotate between different types through the season. Motion-activated sprinklers, scent deterrents, and noise devices work for a while and then stop. Siting matters too: plants close to the house, in daily traffic, and screened behind other planting get browsed less than the same plant out at the boundary.
Treat: There is no chemical fix, only exclusion and recovery. Get physical protection up immediately after the first damage, because deer return to a known meal, and reinforce or rotate whatever you were relying on before. Most plants regrow from browsing if the crown and roots are intact - feed and water a grazed plant and protect the regrowth while it comes back. What does not recover in the same season is anything whose buds or flowers have been taken, and a young tree whose bark has been rubbed right around the trunk is usually lost. Where deer pressure is genuinely heavy, the honest answer is to fence properly or to grow the plants deer leave alone, rather than to keep replacing losses.
Young trees are far more vulnerable than mature ones - the first few years are the risk window, for antler rubbing as much as for browsing.
Plum Curculio Medium
A small snout beetle of the eastern and midwestern US that cuts distinctive crescent- or half-moon-shaped scars into newly set fruit to lay its eggs. The larvae tunnel inside, so the fruit comes out misshapen and wormy or drops early, and the larvae then finish their development in the fallen fruit. It attacks stone fruit and pome fruit alike, and it is largely absent from the arid West.
Watch for: Crescent- or half-moon-shaped scars on newly set fruit within a few weeks of petal fall, a heavy premature fruit drop, and small grubs inside the dropped fruit when you cut one open.
Prevent: Pick up and destroy dropped fruit promptly and consistently - the larvae finish developing in the drops, so leaving them under the tree simply raises next year's population. Kaolin clay applied to the young fruit deters egg-laying without an insecticide.
Treat: Spread a sheet under the tree at dawn and jar the branches: the beetles play dead and drop, and you can collect them. Where damage is heavy, a targeted insecticide at petal fall and again shortly after is timed to adult activity - use only a product labeled for the crop you are treating, follow the label exactly, and observe the pre-harvest interval before you pick.
An eastern and midwestern pest, largely absent in the arid West. Less damaging on pears than on stone fruit, but still worth watching at petal fall.
Pear Psylla Medium
A tiny sap-sucking insect specific to pears - the most damaging pear-only pest. Nymphs coat leaves and fruit in sticky honeydew that grows black sooty mold, weakening the tree, russeting the fruit, and, in heavy infestations, transmitting a decline disease.
Watch for: Sticky, shiny honeydew on leaves and fruit, black sooty mold, tiny cicada-like nymphs and adults on new growth, and yellowing, dropping leaves on a stressed tree.
Prevent: Keep trees moderately vigorous (over-fertilized succulent growth feeds them), apply dormant horticultural oil to smother overwintering adults and eggs, and protect the predators (ladybugs, lacewings, anthocorid bugs) that normally keep psylla in check.
Treat: Dormant and early-season horticultural oil; kaolin clay as a repellent; targeted insecticides only when populations are high, choosing products that spare beneficials. Use only a product labeled for this crop, follow the label exactly, and observe the pre-harvest interval before you pick. Reducing tree stress is half the battle.
A pear-only pest - it does not attack apples. Worst on stressed trees and where broad-spectrum sprays have wiped out its natural enemies.
Aphids Low
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Grow
Plant a dormant grafted tree in early spring, graft union above the soil, in full sun and well-drained ground - with a compatible pollen partner of the same pear type within ~50-100 feet.
Buy a grafted tree on a named rootstock. Quince rootstocks give a small, early-fruiting tree perfect for a home yard but need a sheltered site and, for some varieties, an interstem; standard pear rootstock makes a large, long-lived, but slower-to-fruit tree. Plant while dormant in early spring (or fall in mild zones), spreading the roots in a hole no deeper than the tree grew at the nursery, and keep the graft union a few inches above the soil line. Full sun and genuine drainage are non-negotiable.
The pollination rule is load-bearing: plant a second, different variety of the same pear type within about 50-100 feet, matched to bloom at the same time. A lone Bartlett or a lone Hosui will bloom beautifully and set almost nothing. A handful of pears are partially self-fruitful (some report Bartlett setting light crops alone in mild climates), but plan on a partner. Because pears are so susceptible to fire blight, resist the urge to over-fertilize and over-prune - both force the soft, fast growth the disease races through. In warm, humid regions, choosing a resistant variety (Harrow Sweet, Magness, Moonglow, Kieffer) does more for your success than any spray.

Harvest
Pick European pears mature but HARD and ripen them indoors; pick Asian pears tree-ripe and eat them like apples. Getting this backwards ruins the crop.
Harvesting is where the two pear families split hardest. European pears must be picked firm and ripened off the tree. Left to ripen on the branch, they go brown, gritty, and mealy from the inside out - the classic disappointment. Pick them when the green ground color begins to lighten and, crucially, when a fruit lifted and tilted to horizontal snaps free at the stem. Then ripen them at room temperature (a few days; winter pears like Bosc and Anjou want a stretch of cold first). The pear is ready to eat when the flesh near the neck gives to gentle pressure - the "check the neck" test.
An Asian pear is the opposite: leave it on the tree until it reaches full color and tastes sweet and crisp, then pick and eat it straight away like an apple. It doesn't need off-tree ripening and stores crisp for weeks. Handle every pear gently - bruises become soft rot in storage - and a mature tree can hand you well over a hundred pounds a year once it hits its stride.

Bartlett and other summer pears keep only a few weeks; Bosc, Anjou, and Comice hold for two to four months in a cold, humid spot. Keep pears away from strong-smelling foods and, like apples, aware that their ethylene ripens neighbors.
Asian pears are the easy keepers - picked ripe and crisp, they hold for weeks to a couple of months in the fridge with little fuss. For the surplus of either type: pears can beautifully in light syrup, poach in wine or spice, cook down into pear butter and sauce, and dry into chewy slices. Windfall and cull European pears are the traditional base for perry, the pear equivalent of hard cider.
Growing across climates
Cold north: hardy European classics and fire-blight-resistant types. Warm, humid South: lean hard on blight-resistant and low-chill Asian pears. Standard European pears fail in near-frost-free zones.
Zones 4-6: excellent pear country - hardy European varieties (Bartlett, Bosc, Anjou, Flemish Beauty) and hardy Asian types thrive; late frost during bloom is the main worry, so plant on higher ground where cold air drains. Zones 6-8: the widest choice, but fire-blight pressure climbs with heat and humidity, especially in the Southeast - here resistant varieties (Kieffer, Harrow Sweet, Magness, Moonglow, Ayers, Orient) and Asian pears (which tolerate the climate well) are far more reliable than blight-prone Bartlett. Zones 8-9: chill hours become limiting - grow genuine low-chill types: low-chill Asian pears (Shinseiki, 20th Century, Hosui) and southern European selections (Hood, Baldwin, Floridahome, ~150-300 hours). Standard European pears never accumulate their required 600-800 chill hours here and bloom sparsely. Container culture lets gardeners north of zone 4 grow dwarf pears and shelter them over winter, but in the ground, match the variety's chill needs and fire-blight resistance to your climate before anything else.
Troubleshooting
Shoots blackening into a shepherd's crook is fire blight. European pears going mealy inside means they ripened on the tree. Heavy bloom but no fruit means no pollen partner. Wormy fruit is codling moth.

Like apples, pears do not come true from seed - plant a Bartlett seed and you'll get a wild-card seedling, usually a small, gritty, unremarkable fruit. Every named pear on earth is a graft: a cutting (scion) of the chosen variety joined onto a rootstock, cloning it exactly. Rootstock choice decides the tree's size and speed to fruit - quince for small, early-bearing home trees; pear seedling or clonal pear rootstock for large, hardy, long-lived ones.
For the home grower this is an opportunity. Collect dormant scion wood of a variety you love in late winter and graft it (whip-and-tongue onto young rootstock, or cleft/bark graft onto an existing branch) - a single tree can carry three or four varieties this way, which conveniently provides its own pollen partners and spreads the harvest across the season. Grafting is a genuinely learnable skill, and once you have it you never have to buy that variety again. One caution specific to pears: many European pears are grafted onto quince, and a few varieties are graft-incompatible with quince and need a compatible interstem - check before you graft.

The pear is one of humanity's oldest orchard fruits. European pears descend from Pyrus communis, native from Europe into western Asia, and were cultivated at least 3,000 years ago - Homer called them among the "gifts of the gods," and the Romans grew dozens of named kinds and spread grafting techniques across their empire. But the pears we know best were largely created in a burst of breeding in 17th-19th century Belgium and France, where growers selected for the buttery, melting, dessert-quality flesh (the French beurré, "buttery") that defines Bartlett, Bosc, Anjou, and Comice today. Bartlett itself is the English "Williams" pear, renamed after the American nurseryman who spread it.
Asian pears (Pyrus pyrifolia and related species) were domesticated entirely separately across China, Japan, and Korea, where the crisp, round, apple-textured "nashi" has been prized for well over a thousand years and remains a symbolic fruit of autumn and celebration.
