Gai Lan
Entirely edible - thick stem, leaves, buds, and open flowers are all eaten together, and nothing on the plant is toxic. Mildly bitter in the way broccoli stems are, and much less bitter than broccoli raab. Like all dark brassica greens it is high in vitamin K, so anyone on warfarin-type blood thinners should keep intake steady week to week rather than swinging - worth mentioning to a doctor, not a reason to avoid it.
Overview
Chinese broccoli, grown for thick sweet stems rather than a head - the most heat-tolerant brassica in the garden, ready in about eight weeks, and productive for a month of side shoots afterward.
Gai lan is grown for its stem. Where broccoli builds one dense head and kale makes leaves, gai lan puts everything into a thick, juicy, faintly sweet stalk topped with a small cluster of white flower buds and a few broad blue-green leaves. You cut the whole thing at once - stem, leaves, and buds together - and cook it as one vegetable. The texture of a well-grown stem is the point: crisp, succulent, and nothing like the fibrous stalk of a supermarket broccoli.
It is also the brassica that copes best with warmth. Gai lan keeps producing when daytime temperatures are in the 80s°F, which is when broccoli goes loose and bitter and cabbage stops heading, so it fills a real gap in the summer garden. In exchange it is a little less frost-hardy than kale or collards, so plan a fall crop to be cutting before hard freezes rather than standing through them.
On the naming: gai lan is Brassica oleracea, the same species as broccoli, kale, cabbage, and cauliflower. That makes it a true cousin of broccoli and a completely different plant from broccoli raab, which despite the name is Brassica rapa - a turnip relative. If you have eaten broccolini, you have eaten a deliberate cross between gai lan and broccoli, which is why it looks like a slimmer gai lan with broccoli florets.

Watch out for
Cabbage Worms & Loopers High
The brassica caterpillar complex: velvety green imported cabbageworms (larvae of the white cabbage butterfly) and inch-worming cabbage loopers (a moth larva). Both chew large ragged holes through the leaves, then work into whatever folds up at the center - head, curd, sprout, or growing crown - fouling it with green pellet droppings. Fast leaf crops are usually cut before the damage matters; slow heading crops suffer most. Nasturtium carries the same mustard-oil chemistry that cues the butterflies to lay, so it hosts them too and is often planted nearby as a decoy.
Watch for: Ragged holes in the leaves, dark-green frass in the crown, and green caterpillars that match the leaf and hide along midribs and leaf undersides. White butterflies fluttering low over the bed mean eggs are going down now - look under the leaves for the small pale-yellow eggs, laid one at a time rather than in clusters.
Prevent: Floating row cover from sowing or transplant is the near-complete fix - it stops the adults ever laying. Seal it at the soil edges and lift it only to weed or harvest. Otherwise check leaf undersides twice a week, rub off the eggs, and hand-pick the caterpillars. Let dill, cilantro, or other umbels flower nearby to feed the parasitic wasps that do this work for you.
Treat: Bt (Bacillus thuringiensis kurstaki) is the one to reach for first: it affects only caterpillars and is safe around bees, parasitic wasps, and hoverflies. Spinosad also works, but it is not caterpillar-specific - while the spray is still wet it is toxic to bees and to the parasitic wasps that hunt cabbage worms for you. If you use it, spray at dusk so it dries before bees are out, and never wet open flowers, including flowering companions like dill or nasturtium. Follow the label for both. On a small planting, hand-picking and rubbing off eggs is enough on its own.
Because gai lan crops through the summer when other brassicas have finished, it often becomes the only host left in the garden and takes the whole neighborhood's caterpillar pressure. Worms also tuck into the bud cluster at the stem tip - check there before cooking.
Clubroot High
A soil-borne pathogen (Plasmodiophora brassicae) that infects brassica roots and swells them into distorted, clubbed galls. Affected plants stunt and yellow, wilt on warm afternoons and recover overnight, and never size up properly. It is worst in acidic, poorly drained ground, and the resting spores survive in soil for up to 20 years, moving around on soil, tools, boots, water and infected transplants.
Watch for: Midday wilting that recovers overnight, yellowing and stunting with no obvious cause, and - the giveaway - swollen, distorted, clubbed roots instead of clean ones when a plant is pulled.
Prevent: Rotate at least 4 years out of every brassica, counting the fast salad ones and any brassica cover crop. Lime toward pH 7.0-7.2, since the pathogen dislikes alkaline soil, and improve drainage. Plant only clean seed and transplants, never move infested soil or plants around the garden, and grow resistant or tolerant varieties where the disease is known to be present.
Treat: There is no cure once the soil is infested. Pull and destroy affected plants - bag them, do not compost them - lime the bed, and keep brassicas off that ground for years. Rotation and pH are the whole game here.
Because gai lan is often grown as a summer filler between other crops, it is an easy way to break a brassica rotation without noticing. Count it as a brassica when you plan the beds.
Aphids Medium
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
The grey waxy cabbage aphid packs into the bud cluster at the stem tip, which is the part you eat and the part a spray cannot reach. Catch them while they are still on the outer leaves, and soak cut stems in salted water before cooking.
Flea Beetles Medium
Flea beetles are tiny dark beetles - often shiny black or bronze, rarely more than a couple of millimeters long - with enlarged back legs that let them spring away like fleas the moment you lean in. The adults chew countless small round pits and shot-holes through leaves, giving the foliage a peppered, buckshot-riddled look. They overwinter as adults in leaf litter, hedgerows, and crop debris, emerge hungry in spring, and are worst in warm dry spells. The damage is mostly a seedling and transplant problem: a small plant with a few leaves can be checked, stunted, or killed outright, while the same plant shrugs them off once it is large and growing strongly. Different species specialize on different plant families, so the beetles hammering your brassicas are not the ones on your nightshades. Some species also have larvae that feed on roots and tubers underground.
Watch for: Dozens of pinhead-sized round holes peppered across the leaves, thickest on the youngest, most tender growth. Tiny beetles that spring away as you brush the plants or lean in for a closer look - that jump is the identification. Seedlings that go lacy and stop growing, and transplants that sit and sulk instead of taking off. Damage heaviest in warm, dry weather and along the edge of a bed nearest weedy ground or last year's crop debris. On root crops, shallow narrow grooves or channels scarring the skin at harvest, from larvae feeding underground.
Prevent: Floating row cover or fine insect mesh, laid over the bed from the day of sowing or transplanting and sealed at the edges so nothing can walk in underneath, is the single best defense - and on the crops they favor it is close to essential. Leave it on until plants are large and growing strongly, or until flowering on anything that needs pollinating. Push growth: a well-watered, unchecked plant outgrows the damage, so the whole game is getting seedlings through their vulnerable weeks fast. Keep beds weed-free, since related weeds host the beetles alongside your crop, and clear crop debris at the end of the season where the adults overwinter. Rotate away from a bed that grew a related crop last year. Where you can, shift sowing dates - cooler-season and fall plantings often miss the peak of adult feeding entirely.
Treat: Row cover and healthy fast growth carry most crops through, and on an established plant the damage is usually cosmetic and needs nothing at all. Where a young planting is genuinely being stripped, kaolin clay coats the leaves and deters feeding, and spinosad will knock the beetles back. Spinosad is acutely toxic to bees while the spray is still wet - apply it at dusk when bees are not flying, never onto plants in flower, and follow the product label. Anything you spray must be labeled for the plant you are treating, and you must observe its pre-harvest interval on a crop you are picking. Yellow sticky traps are useful for telling you when the beetles have arrived. Where the damage falls on the part you eat, harvesting young often beats them outright; where you are growing for a root or a fruit, leaf damage can simply be tolerated. Larvae feeding underground cannot be reached by a foliar spray, so rotation and clean beds are what work against those.
A seedling problem here, not a mature-plant one - gai lan outgrows the damage once it is up and running. Since the crop needs no pollination, sealed row cover can stay on from sowing right through harvest.
Cabbage Root Maggot Medium
The larvae of a small gray fly that lays its eggs at the soil line against brassica stems. The white maggots hatch and tunnel down into the roots, scarring and rotting them, so plants wilt on warm days, stunt, take on a blue-green cast, and can die outright; root brassicas are tunneled through and spoiled. It is worst in cool, wet spring soil, on transplants and early sowings, and in ground that grew brassicas the year before.
Watch for: Sudden wilting on the first warm days even though the soil is moist, stunted plants with a bluish cast, and - on pulling a failing plant - brown tunnels and slimy scarring through the roots with small white maggots inside.
Prevent: Cover the crop with floating row fabric from the day you sow or transplant, sealing the edges down to the soil so the fly cannot reach the stems, or fit a cardboard or felt collar disc flat around each stem to block egg-laying. Rotate at least three years away from ground that grew brassicas, and do not plant into fresh manure.
Treat: There is no rescue once the maggots are inside the roots. Pull and destroy badly infested plants rather than composting them, and reset the bed with row cover and rotation. Beneficial nematodes drenched into the soil help suppress the larvae in a bed you have to keep using.
Only really a risk on the earliest spring sowings into cold wet soil. Later and summer sowings, which is where gai lan is most useful anyway, largely miss the fly.
Black Rot (Brassica) Medium
The most serious bacterial disease of brassicas (Xanthomonas campestris), and it thrives in warm, wet weather. It enters at the leaf margins through the pores and through wounds, then moves inward along the veins, producing yellow V-shaped wedges pointing in from the leaf edge with blackened veins inside them. From there it works into the stem and head as a foul soft rot. It is seed-borne as well as soil- and debris-borne, and it spreads readily on hands, tools and splashing water when plants are worked while wet.
Watch for: Yellow V-shaped wedges opening inward from the leaf margins, with darkened, blackened veins running through the wedge - the combination is diagnostic. Leaves yellow and drop, and a foul soft rot advances toward the stem, head or curd.
Prevent: Start with clean, hot-water-treated seed, since the bacterium travels on seed. Rotate at least three years out of brassicas, space plants widely for airflow, water at the base rather than overhead, never work or harvest the plants while the leaves are wet, and control cruciferous weeds, which host it between crops.
Treat: There is no cure. Remove and destroy infected plants - never compost them - disinfect tools between plants, do not save seed from an infected crop, and keep brassicas out of that ground for years. Clean seed and rotation are the whole strategy.
The main disease risk of growing gai lan through a hot humid summer, which is exactly when this bacterium is most active. Space widely, water at the base, and never work the plants while the leaves are wet.

Not true gai lan but the well-known home-garden broccolini: an interspecific hybrid of gai lan and broccoli that makes a small central floret and then a long, heavy run of slim asparagus-like shoots topped with green broccoli buds. Sweeter and less bitter than gai lan, needs no blanching, and is less heat-tolerant - time it like broccoli rather than like gai lan.
Grow
Direct sow ½ inch deep and thin to 6-8 inches - spacing is what makes stems thick. Sow in succession from spring through late summer; the fall crop has the best quality.
Direct sowing is easiest. Sow ½ inch deep in rows 15-18 inches apart, keep the bed damp for the week it takes to germinate, and then thin to 6-8 inches. That thinning is the single most important thing you will do: crowded plants make pencil-thin stems, and properly spaced plants make the thumb-thick ones you are growing for. Transplants raised for three or four weeks also work well and buy time in a short season, but do not let them sit until they are root-bound - a checked plant bolts early on a thin stem.
Give it full sun and rich, well-drained soil with plenty of compost. Gai lan is a moderate-to-heavy feeder: side-dress nitrogen about three weeks after sowing to build the stem, and feed again after the first cut to drive side shoots. Water evenly, around an inch a week - the woody, hollow stem bases that disappoint people almost always trace back to a dry spell.
Sow in succession every two or three weeks. Because it tolerates heat, the window is far wider than for other brassicas: in the North you can sow from a couple of weeks before the last frost right through midsummer, and in the South it runs September through February. Lay floating row cover over the bed from sowing and leave it sealed - the crop needs no pollination, and the cover blocks flea beetles, cabbage-worm moths, and root-maggot flies in one move.
Care
Even water and one or two nitrogen feeds build thick stems; row cover handles the pests; start checking the tip daily once buds appear.
Everything about caring for gai lan serves the stem. Even moisture comes first - a stem that stops growing and restarts goes woody and sometimes hollow at the base, and that damage cannot be cooked out. Aim for about an inch of water a week, more in heat, and mulch to hold it steady. Feed once during stem growth and again right after the first cut.
Keep the row cover on. There is nothing to pollinate, and it blocks the whole brassica pest lineup at once. Lift it to thin, weed, and harvest, then put it straight back. Watch the big frame leaves for cabbage worms and the growing tip for aphids, which get down into the bud cluster where a spray cannot reach them.
Once the small white bud cluster appears at the tip, check daily. Cool weather gives you several days of grace; a warm spell can open the buds in two. Open flowers are still fine to eat - just a little stronger - so a shoot that got away is not a loss.
Harvest
Cut the main stem 8-10 inches long as the buds appear, leaving two or three leaves on the stump, then cut side shoots every few days for four to six weeks.
Harvest when a cluster of white flower buds shows at the top of the main stem and the stem below it is roughly thumb-thick. Cut 8-10 inches down with a sharp knife, leaves attached. The test for tenderness is the same one you use on asparagus: a stem that snaps cleanly is good, and a stem that bends without breaking has gone woody, so cut higher.
Leave two or three leaves on the stump. From those leaf axils the plant sends up side shoots - slimmer than the main stem but just as tender - and it keeps doing so for four to six weeks if you cut every few days and give it a feed. In a good fall the side shoots outweigh the original harvest. When the shoots come thin and flower the day they appear, the plant is spent; pull it and re-sow.
Cut in the cool of the morning for the crispest stems, and get them into the fridge quickly - gai lan wilts faster than broccoli. If a plant blooms while your back was turned, harvest it anyway. Flowering gai lan is sold deliberately in Chinese markets and the open white flowers are a normal part of the dish.
Storage
Four to seven days in the fridge wrapped damp; blanch and freeze, or use it fast - it is a fresh vegetable, not a keeper.
Wrap unwashed stems in a damp towel inside a perforated bag and refrigerate, where they hold four to seven days before the leaves yellow and the cut ends dry out. Standing the bunch upright with the cut ends in an inch of water, like flowers, keeps it crisp a little longer. Wash right before cooking.
For a surplus, blanch and freeze: trim, split thick stems lengthwise so they cook evenly, blanch two minutes in salted boiling water, chill in ice water, drain and squeeze dry, and freeze flat. It loses the crisp bite that is half the appeal, so freeze it for soups, braises, and noodle dishes rather than for a plate of stems. Gai lan also pickles well in a quick sweet-and-sour brine, which is a good use for stems that got a little too thick.
In the kitchen
Blanch briefly, then dress with oyster sauce, or stir-fry hard with garlic and ginger. Split thick stems so they cook in the same time as the leaves.
The classic Cantonese preparation is the simplest and still the best: blanch whole stems in boiling salted water with a spoonful of oil for 60-90 seconds until the color deepens, drain, lay them out, and pour over warmed oyster sauce with a little sesame oil. That is gai lan yau, and it is on the table of every Cantonese restaurant for a reason.
The other route is a hard, fast stir-fry: hot wok, garlic and ginger, the stems in first, a splash of water or stock to steam them through, then the leaves for the last thirty seconds, finished with soy, oyster sauce, or fermented bean curd and a splash of Shaoxing wine. It is also excellent simply steamed, or grilled whole with oil and salt until the edges char.
One technique matters more than any recipe: split the thick stems. A thumb-thick stem takes twice as long to cook as the leaf attached to it, so halve or quarter the lower stem lengthwise, or peel the bottom inch if the skin is tough, and everything finishes together. Trim only the very base, where it stops snapping cleanly. Compared with broccoli raab, gai lan is much sweeter and only faintly bitter, so it needs far less taming - no long blanch required.
Growing across climates
The brassica that handles heat: a long spring-through-summer window in the North, a fall-through-winter staple in the South, but less frost-hardy than kale.
Zones 3-5: a straightforward spring-to-fall crop; cool summers suit it perfectly and successions can run right through the season. Zones 6-7: the crop that keeps a brassica bed producing in July, when broccoli and cabbage have given up - sow from spring through midsummer, then again for the excellent fall crop. Zones 8-9: flip the calendar; September through December is the main run, with a second late-winter sowing, and midsummer is the off-season. Zones 10-11: a cool-season crop on absolute dates, mid-September through mid-February.
Two limits to plan around. Gai lan is more heat-tolerant than any other brassica - it keeps cropping into the 80s°F, though stems come thinner and flavor stronger - and it is less cold-hardy than kale or collards, taking light frost but not standing through a hard freeze the way they do. So in the North it extends your season at the warm end, not the cold one; time a fall crop to be cut before serious freezes rather than to overwinter.
Troubleshooting
Thin stems mean crowding or starvation, woody or hollow stems mean uneven water, and early bolting on a thin stem means a checked transplant.
Thin, pencil-like stems. Almost always crowding - gai lan thinned to 3 inches makes 3-inch-worth of stem. Thin to 6-8 inches and feed. Starved soil and deep shade do the same thing. Woody or hollow stems. Interrupted growth: a dry spell, a cold check, or a plant left standing too long past the bud stage. Water evenly, mulch, and cut while the stem still snaps. Bolted at six inches tall on a thin stem. A root-bound transplant, or a seedling checked by drought or transplant shock; direct sow, or set plants out at three or four weeks. Buds opened into white flowers. Not a failure - flowering gai lan is sold deliberately in Chinese markets. Cook it as normal, expecting a slightly stronger flavor. Shot-holes across the young leaves. Flea beetles; row cover from sowing is the fix. Grey sticky clusters in the bud cluster. Cabbage aphids hiding where sprays cannot reach - catch them on the outer leaves, and soak cut stems in salted water before cooking. Bitter and stringy in midsummer. Heat plus water stress; keep it damp, cut younger and more often, and accept that summer stems are a notch below fall ones.
Propagation & seed saving
Gai lan is Brassica oleracea, so it crosses freely with broccoli, kale, cabbage, collards, kohlrabi, and Brussels sprouts - and NOT with broccoli raab, bok choy, or turnip. Most gardeners should buy seed.
Gai lan is unusual among the oleracea brassicas in that it flowers in its first season, so unlike broccoli or kale you do not have to overwinter a plant to get seed. Stop cutting, let a block of plants bloom, wait for the slender pods to dry tan on the plant, and thresh out the round seeds.
Get the isolation right. Gai lan is Brassica oleracea, so it crosses freely with broccoli, cabbage, kale, collards, cauliflower, kohlrabi, and Brussels sprouts - all the same species - and it does not cross with broccoli raab, bok choy, napa cabbage, mizuna, tatsoi, komatsuna, or turnip, which are Brassica rapa. This is exactly the reverse of the raab situation, and getting the two backwards is the commonest seed-saving mistake in an Asian-greens bed. Isolate by roughly 800 feet, or cage and hand-pollinate, and remember that a kale plant you let bolt in the corner counts.
Two more practical notes. Most gai lan sold in the US is F1 hybrid seed, whose offspring will not come true - save from open-pollinated varieties if you want repeatable results. And like other B. oleracea, gai lan is largely self-incompatible, so a couple of plants will set little seed and inbreed quickly; save from twenty or more, or simply buy fresh seed, which is the honest advice for most gardens.
Nutrition
Very high in vitamins K, A, and C with good folate and calcium, and among the better plant calcium sources because the oxalate level is low.
Gai lan carries the standard dark-brassica profile - lots of vitamin K, plenty of vitamin A as carotenoids, most of a day’s vitamin C in a serving, plus folate, potassium, and fiber, all for very few calories. Because you eat the stem, the leaves, and the buds together, a serving covers more ground than florets alone would.
It is worth singling out for calcium. Brassicas in general are among the few plant foods whose calcium is well absorbed, because they are low in the oxalates that lock calcium up in spinach and chard, and gai lan sits at the higher end of the family for calcium content. It also contains the glucosinolates that the whole family is studied for, though at lower levels than the sharply bitter greens like raab and mustard.
The one dietary caution is the same as for kale and broccoli: the vitamin K content matters to people on warfarin-type blood thinners, for whom the goal is a steady intake rather than avoidance. Mention it to your doctor and then eat it freely.
History
A southern Chinese vegetable of the Pearl River Delta, carried worldwide by Cantonese emigration, and one parent of the broccolini sold in every US supermarket.
Gai lan was developed in southern China - Guangdong and the Pearl River Delta especially - from the same wild Mediterranean cabbage that Europe was busy turning into cabbages and kales. Chinese growers selected in a different direction entirely, for a succulent flowering stem rather than a head or a leaf rosette, and the result is one of the few Brassica oleracea crops that did not come out of Europe. It has been a staple of Cantonese cooking for centuries and remains the default green vegetable of the Cantonese table.
Cantonese emigration carried it to Southeast Asia, Australia, and North America, where it has long been a fixture of Chinatown greengrocers under a dozen romanizations - gai lan, kai-lan, gailan, jie lan. Its widest fame, though, is second-hand: in the 1990s Japanese breeders at Sakata crossed gai lan with broccoli to produce the long-stemmed hybrid marketed as broccolini or tenderstem broccoli, which took the gai lan stem and the broccoli floret and put both in every supermarket in America - usually without ever mentioning the parent plant.
