Safe for people - the greens, the topsets and the underground bulbs are all edible, and all of them are more pungent than a supermarket onion. Like every allium, toxic to dogs and cats in quantity.

Overview

A perennial onion that plants itself: instead of flowers it grows a cluster of little bulbs on top of the stalk, which tips over and roots where it lands. The earliest green onion of the year and close to indestructible.

The Egyptian walking onion is the nearest thing a vegetable garden has to a self-running machine. It is a hardy perennial hybrid (Allium × proliferum, a cross between the common onion and the bunching onion) that almost never bothers with flowers. In their place, the top of each hollow stalk swells into a knot of marble-sized bulbs called topsets. As they fatten the stalk goes top-heavy, arches over, and sets them down on the soil, where they root and start a new clump — so the patch takes a step of a foot or two every year. That is the walking, and it is the whole personality of the plant.

One planting gives three different harvests. The hollow green tops are the first fresh thing out of the garden most years, often standing up through the last snow while the rest of the beds are bare. The summer topsets are sharp little onions that pickle beautifully or go straight back into the ground. And the base of each clump holds shallot-like underground bulbs you can dig at will. Nothing about it is Egyptian, and nothing about it is delicate: it is hardy to roughly -30°F, wants no feeding, and survives being ignored for years.

      Where a normal onion opens a globe of flowers, this one grows a knot of little bulbs. Occasionally a few sterile purple florets appear among them - harmless, and no seed comes of it.

Watch out for

White Rot (Allium) High DiseaseApr, May, Jun

The most serious allium disease there is. A soil fungus (Sclerotium cepivorum) rots the roots and the base of the bulb, growing a white fluffy mold over it studded with tiny black sclerotia like poppy seeds. Those sclerotia survive in the soil for twenty years or more and germinate whenever an allium is planted above them, so a bed that gets it is finished for alliums within a home gardener's timescale. It arrives on infected planting stock and on moved soil.

Watch for: Yellowing, wilting plants that pull up far too easily because the roots have gone, and - on the rotted bulb base - white cottony fungal growth with tiny black poppy-seed-like dots through it.

Prevent: This is entirely about never introducing it. Buy certified disease-free seed stock, sets and plants, never plant grocery-store bulbs or cloves, quarantine new stock, and do not move soil, bulbs or tools between an affected bed and a clean one. Once it is in, it is essentially permanent.

Treat: There is no viable garden treatment. Remove and bin infected plants, never compost them, and do not grow alliums in that soil again. This is why clean planting-stock discipline matters more here than for any other allium problem.

The one threat that can genuinely end a walking onion patch. A perennial allium bed is never rotated, which is exactly the condition white rot exploits - and topsets passed hand to hand between gardens are a classic way it travels. Start from a clean source, do not accept bulbs from a bed where alliums have collapsed, and never move soil or bulbs out of an affected patch.

Thrips Low PestJun, Jul, Aug

Tiny slender sap-sucking insects that rasp at leaves, buds and petals and drink what runs out, leaving silvery-white streaking and fine flecking, brown scorched patches, and new growth that comes out twisted or fails to open. They breed fast in hot, dry weather, shelter deep in leaf sheaths, folds and unopened buds where sprays struggle to reach, and several species also transmit plant viruses - which is often more damaging than the feeding itself.

Watch for: Silvery-white streaks and fine speckling on leaves and petals, brown discolored patches, distorted buds and blooms that fail to open properly, and tiny sliver-like insects that drop out when you shake foliage or a flower over a sheet of white paper. Worst in hot, dry spells and on drought-stressed plants.

Prevent: Scout early, before the damage reaches the part of the plant you care about. Start with clean planting stock, keep plants well watered since drought-stressed plants suffer worst, avoid heavy nitrogen, clear weedy hosts nearby, and hang blue or yellow sticky traps to catch the first arrivals. Reflective mulch deters them, and predatory mites, lacewings and minute pirate bugs do real work outdoors.

Treat: A strong water spray dislodges light infestations, and on a plant that can take it a hard shear and clean regrowth clears them outright. For heavier pressure use insecticidal soap, neem or spinosad, aimed down into the leaf sheaths and buds where thrips actually shelter, and repeat at intervals since eggs and pupae escape a single spray. Spinosad is a registered insecticide: use only a product labeled for the crop you are treating, follow the label exactly, and observe its pre-harvest interval.

Mostly cosmetic here, and it arrives in midsummer heat when the greens are already past their best. The spring and fall cuttings - the ones you actually want - are usually clean.

Rust (Allium) Low DiseaseMay, Jun, Jul, Aug

A fungal disease that raises bright orange pustules on allium leaves. The pustules destroy green tissue, and since those leaves are what feed the bulb, a heavy infection shrinks the crop or weakens the clump. It builds in humid weather, in crowded plantings and in high-nitrogen soil, and it rarely reaches the bulb itself.

Watch for: Orange-red raised dots and streaks on the leaf blades, worst in humid spells and on crowded, poorly spaced or congested plantings.

Prevent: Give wide spacing and full sun so the leaves dry quickly, avoid overhead watering and excess nitrogen, divide congested perennial clumps, and rotate alliums on a three-year cycle. Rust-tolerant varieties are available in some allium crops.

Treat: Strip or shear off the worst-affected leaves early and let clean growth come back, improving airflow at the same time. A bulb crop usually still matures, so harvest on schedule rather than writing it off - rust rarely reaches the bulb itself.

Shows up on congested clumps in humid summers, after the best greens are already cut. Cut the affected leaves off, divide the clump to open it up, and the fresh growth comes back clean.

Onion Maggot Low PestApr, May, Jun, Jul

The larvae of a small gray fly - the onion fly is the same insect - that lays its eggs at the base of allium plants. The white maggots tunnel into the bulb, shank or stem base, and the damage they leave opens the door to soft rot, so the plant yellows, wilts and collapses into a mush. It is worst in cool, wet springs, in unrotated allium beds, and in dense rows where the maggots can work from one plant to the next.

Watch for: Individual plants yellowing and wilting while their neighbors look fine, and - on pulling one - small white maggots with brown, slimy rot in the bulb base, shank or stem.

Prevent: Rotate alliums yearly, cover the crop with row fabric through the fly's spring egg-laying window, space plants out rather than growing them in dense rows, and never plant into fresh manure, which draws the flies in.

Treat: There is no rescue for a maggot-riddled bulb. Pull and destroy infested plants rather than composting them, and never save affected bulbs for replanting. Beneficial nematodes drenched into the soil help suppress the larvae in a bed you have to keep using.

Established clumps mostly shrug this off, and rotation is not an option on a perennial planting - so the practical defense is dividing regularly to keep clumps vigorous and pulling out any individual bulb that wilts and goes soft.

Grow

Plant topsets an inch or two deep in fall, in a spot where a permanent colony is welcome; full sun, ordinary well-drained soil, no fuss after that.

You plant topsets, not seed — this is a sterile hybrid and it rarely sets true seed at all. Break a cluster into individual bulbils, push each one root-end down about an inch or two deep, and space them 6 to 12 inches apart. Late summer through fall is the right window across most of the country: the bulbils root before the ground freezes and go straight into growth as soon as winter loosens. Spring planting works too, but the first clump stays smaller and often makes no topsets until year two.

Give them full sun to part sun and ordinary, well-drained soil. They are genuinely unfussy about fertility — rich ground makes fatter greens, lean ground still works — but they will rot in a wet, heavy spot, which is about the only way to lose them. The one decision worth making carefully is where. This is a permanent plant that moves a little each year, so put it at the edge of a bed, along a fence or path, or in the herb and perennial ground rather than in the middle of an annual rotation you will want to dig and till.

Care

Weed it, water in a real drought, and divide congested clumps every two or three years. The only ongoing decision is how far you let it walk.

The care list is short enough to be suspicious of. Weed the patch in early spring before the onions close over, pulling rather than hoeing so you do not slice the shallow bulbs. Water in a genuine drought — drought makes the greens tough and sharp rather than killing anything. A single light nitrogen feed at green-up gives thicker, milder tops if you want them. That is the entire maintenance schedule.

Two jobs actually matter. First, divide every two or three years: clumps multiply underground until they strangle themselves, and a congested clump makes nothing but small bulbs and thin greens. Lift it in late summer, pull it apart, and replant single bulbs at proper spacing. Second, decide each June how far you want the patch to travel. Harvesting the topsets before the stalk bends keeps the clump exactly where you put it; letting the stalks fall gives you a free new colony a foot or two away. Neither is wrong — but if you never pick the topsets, do not be surprised by onions coming up where you did not plant them.

Harvest

Cut greens like scallions from late winter on, snap off topsets when they turn papery bronze in early summer, and dig underground bulbs once the tops brown off.

Greens come first and last longest. Snip hollow green tops an inch or two above the base any time they are soft enough to bend — late winter through spring, again in fall, and right through winter in mild zones. Cut whole tops rather than tips, and take from around the outside of a clump so it keeps producing. They toughen once the flower stalk starts up, so early is best.

Topsets are ready in early summer, when the bulbils are firm and tight and their skins have gone papery and coppery-bronze — usually just as the stalk begins to lean. Cut the whole cluster with a few inches of stalk attached. Leave them much longer and the cluster shatters and plants itself. Underground bulbs are dug from midsummer once the tops have browned off; loosen with a fork, take what you want, and always leave at least one bulb per clump in the ground so the patch carries on without you.

Storage

Greens keep about a week in the fridge; cured topsets keep for months in a mesh bag and pickle brilliantly; underground bulbs cure and store like shallots.

Cut greens keep about a week loosely wrapped in the crisper, and chopped tops freeze well for cooking. But the real answer for greens is that the garden stores them better than you can — a hardy clump outdoors is a living supply you cut from as needed, which is most of the point of a perennial onion.

Topsets cure like miniature onions: spread the clusters somewhere dry and airy for a couple of weeks until the skins are crisp, then keep them in a mesh bag or open basket in a cool dry place, where they hold for several months before they start to sprout. A sprouting topset is not wasted — plant it. Underground bulbs cure the same way as shallots, two to three weeks until the necks are papery, and then keep three to six months. Do not seal any of them in plastic, and keep them out of the fridge unless already peeled.

In the kitchen

Sharper than a supermarket onion in every part: greens as strong scallions, topsets pickled whole or roasted, underground bulbs used like small pungent shallots.

Expect real pungency. Walking onions are stronger than the mild green onions you buy, so use the greens the way you would scallions but with a lighter hand — scattered over eggs and potatoes, stirred into soups and stir-fries, chopped into butter or soft cheese. The very first spring cuttings are the mildest of the year.

The topsets are the fun part and the fiddly part. They are the size of a marble with a tight papery skin, and peeling a bowl of them is a job — drop them in boiling water for a few seconds and the skins slip off far more easily. Pickled whole in vinegar they make superb cocktail onions and the classic use for a big harvest; they are also excellent roasted whole alongside meat or potatoes, where they go sweet, or chopped small anywhere you want a hard onion punch. Underground bulbs behave like small, assertive shallots: fine sliced into dressings, good caramelized, and strong enough that a little goes a long way.

Propagation & seed saving

It propagates itself - that is the defining trick. Replant topsets, divide congested clumps, or simply let a stalk fall over and root where it lands.

There are three routes and all of them are free. Topsets are the main one: break a cluster apart and plant the bulbils, either fresh in summer or any time through fall. Big bulbils give big clumps faster; the tiny ones at the edge of a cluster still grow, just slower. Division is the second: lift a crowded clump in late summer, separate the underground bulbs, and replant them singly. This is maintenance and multiplication in one job.

The third route is to do nothing. Leave the topsets on the stalk, let it arch over under their weight, and they will root themselves exactly where they land — a new clump, at no cost and no effort, a step away from the parent. Because the plant is a sterile hybrid it almost never sets true seed, so every walking onion in cultivation descends by bulb from another one. That is why it travels garden to garden by the handful over the fence rather than by the seed packet, and why a clump given to you may be older than anyone can account for.

Growing across climates

Zones 3-9: bulletproof and earliest-in-the-garden across the cold half of the country; in the warm South it grows through winter and sulks in summer.

Zones 3-5: the plant is in its element. Hardy to around -30°F, it dies back for winter and is the first edible green up in late winter or very early spring, often through snow. Mulch a first-year planting; after that, nothing. Zones 6-8: the easiest range of all — clumps stay green through much of the winter, greens are pickable in most months, and topsets come in early summer. Zone 9: workable but shifted. Treat fall through spring as the growing season, plant in late fall, and expect the patch to slow down or go dormant in summer heat. Zone 10 and warmer: not worth it. Without a real winter the clumps run down, topset production is unreliable, and a bunching onion or garlic chives will serve you better.

Troubleshooting

No topsets in year one is normal; onions appearing where you did not plant them is the plant working as designed; small bulbs mean a congested clump that needs dividing.

No topsets the first year: normal, especially from a spring planting or from small bulbils. The clump has to bulk up first; year two nearly always delivers. Onions coming up where you never planted them: a stalk fell over and rooted its topsets. That is the plant working exactly as designed — harvest topsets earlier next year if you want it to stay put. Small bulbs, thin greens, a crowded-looking clump: congestion. Lift it in late summer, split it, and replant single bulbs at proper spacing. Greens tough and harshly sharp: heat, age, or drought — cut them younger and water in dry spells. Bulbs soft and rotting: almost always wet ground; move the patch somewhere with drainage. You want it gone and it keeps coming back: every bulbil and every missed underground bulb regrows, so clearing a patch means digging and sifting the soil rather than pulling tops. Whole clumps yellowing and pulling free easily, with white fuzz and black specks at the base: white rot — see Threats, and take it seriously in a bed you cannot rotate.

History

Nothing to do with Egypt: a passed-over-the-fence heirloom onion that travelled Europe and North America by the handful, never by the seed packet.

The name is a historical mislabel. The plant is a hybrid of two Old World onions and has no documented Egyptian origin; the tag seems to have attached the way exotic-sounding names once got fixed to any plant that arrived through traders from the east, and it stuck. Older and plainer names describe it far better — tree onion, top onion, topsetting onion, winter onion — and all of them point at the same trick with the bulbs on the stalk.

Because it sets no seed, it has never been a commercial crop and has never come in a packet. Every clump alive today is a piece of another clump, handed from gardener to gardener as a fistful of topsets. It shows up in North American kitchen gardens through the nineteenth century and survives now largely through heirloom seed-saver networks and garden-fence generosity. If someone gives you a bag of topsets, you are being handed a genuinely old plant — one that has been kept going for generations purely because it is hardy, useful, and impossible to kill.
