Chicken Dopiaza with Small Onions
The Mughlai braise whose name means two onions: half browned down into the masala, half fried whole and folded back in so they stay sweet and distinct.

- 2 lb small perennial onions (potato onions, walking onion topsets and their underground bulbs), peeled, half left whole and half sliced thin
- 6 cloves garlic, minced
- 2 medium ripe tomatoes, chopped
- ⅓ cup fresh cilantro, chopped
From the pantry
- 2 lb boneless, skinless chicken thighs, cut into 2-inch pieces
- 1 tbsp fresh ginger, minced
- ½ cup plain yogurt, whisked smooth · full fat, and at room temperature so it does not split
- 4 tbsp neutral oil · divided
- 2 tsp ground cumin
- 1½ tsp chili powder
- ½ tsp ground cinnamon
- ¼ tsp ground cloves
- 1½ cups long-grain rice · cooked, for serving
