The grain is a wholesome, ancient food. Barley contains gluten (a form called hordein) and is not suitable for those with celiac disease or a barley/gluten allergy. The green plant and hulls are not eaten. The barbed awns only travel one way, inward: keep dogs out of ripening and threshed barley and clean up awn debris, since awns lodged in paws, ears, nose or eyes commonly need veterinary removal.

Overview

The most ancient of grains and one of the toughest: a quick, drought- and cold-hardy cool-season grass with bristly bearded heads, grown for hearty soup grain, for malting, and as a fast cover crop.

Barley is humanity's oldest cultivated grain and still one of the most rewarding to grow: a quick, hardy, undemanding cool-season grass topped by dense, bristly bearded heads (the long stiff awns give barley its unmistakable bearded look). It's the toughest of the common small grains — the most drought- and salt-tolerant, cold-hardy, and quick to ripen — which is exactly why it fed the earliest civilizations and thrives from cool highlands to dry margins where other grains fail.

Barley is grown for several purposes. As food, its chewy grain is the soul of hearty soups and stews (think beef-and-barley), and it cooks like a risotto, grinds to flour, and makes a nourishing porridge. As malt, sprouted and dried barley is the foundation of beer and whiskey — barley is the brewing grain. And it makes a fast, hardy cover crop and livestock forage. Two things shape a home crop: whether you grow spring or winter barley (spring-sown, ripening the same summer, is simplest for most gardeners), and whether you grow hulled or hulless barley — and for eating, hulless (naked) barley is far easier, since standard hulled barley clings to its hull and needs pearling to reach the grain.

Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.

Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.

Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.

Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Cereal aphids matter here mainly as vectors of barley yellow dwarf virus - the disease barley gives its name to - which stunts plants and turns leaves yellow or reddish-purple in patches, worst on early-sown crops. Avoid very early sowing, which exposes seedlings to fall aphid flights, and grow tolerant varieties; the virus itself cannot be cured, so aphid control and sowing date are the practical home defenses.

Birds find ripening fruit and seed before you do. Robins, waxwings, starlings, catbirds, jays, sparrows, finches, blackbirds, and doves all work a garden, and the pressure arrives in a narrow window - the last days before harvest, when sugar rises, color changes, and the crop softens or the grain hardens. A flock can strip a small planting in a day or two, and birds that only peck rather than take whole fruit still leave wounds that rot or draw wasps. Squirrels, chipmunks, and other wildlife usually turn up on the same crop at the same time. This is competition rather than disease: the birds are not harming the plant, and a big tree or a heavy-cropping bush often has enough for everyone - but on a small planting it can be the difference between a harvest and none.

Watch for: Fruit disappearing from the outermost, most exposed parts of the plant first, and from the top of a tree where you cannot reach anyway. Single neat pecks and gouges in ripening fruit, with several fruits sampled rather than one eaten through - the classic sign that it was birds rather than an animal. Heads of grain or seed going visibly lighter and emptier as they ripen, with hulls and chaff scattered underneath. Freshly sown seed vanishing off the surface of a bed before it germinates. Bird traffic in and out of the plant picking up as the crop colors, and birds waiting on nearby wires and branches. Wasps arriving at the pecked and split fruit shortly afterward.

Prevent: Net, and net early. Bird netting draped over a frame or hoops so it stands off the fruit, with the edges closed at ground level, is the only thing that reliably works at harvest scale - and it has to go on before the crop starts to color, because once birds have found the food they are far harder to displace. Keep fruit trees small enough that netting them is actually feasible; that decision gets made years earlier, at planting. Bags of mesh, organza, or paper slipped over individual heads, clusters, or prize fruit protect a small crop without netting the whole plant. Then shorten the exposure: pick promptly and completely rather than leaving ripe fruit hanging as a lure, clear split and dropped fruit that draws birds and wasps alike, and where a crop can finish off the plant, harvest a little early and ripen or dry it under cover. Rake in or cover broadcast seed so it is not lying in plain view.

Treat: There is no treatment once a crop is being taken - only protection and timing, so the answer is to get netting on and to pick what is ready. Reflective tape, flash ribbon, spinners, and decoy predators do work, but only for a few days at a time: birds habituate fast, so move and rotate them and never rely on them as the main defense for a crop you care about. Cut and gather grain or seed heads a little early, at firm dough, and finish drying them under cover instead of leaving them standing for the flocks. Plant a little extra, or a decoy crop the birds prefer, and accept sharing anything that crops heavily. On a wild or foraged patch, fruit going to birds and small mammals is the point of the plant rather than a problem to solve.

Barley's sharp awns make its heads a little less bird-friendly than smooth grains, but small plots still need protection at both ends: rake in or cover broadcast seed, and net or harvest promptly as the grain ripens.

Powdery mildew is a fungal disease that coats leaves - and often stems, buds, and fruit - in a white-to-gray powder that looks like spilled talcum. It is not one fungus but a large family of them, each fairly specialised to its own group of plants, which is why mildew on one crop rarely jumps to an unrelated one beside it. Unlike most leaf diseases it does not need wet leaves: it thrives on warm dry days followed by humid nights, and it takes hold fastest where plants stand crowded in still air or in shade. The coating blocks light, so heavily covered leaves yellow, brown, and drop early. On many plants that is mostly disfiguring and arrives late enough not to matter; where it strips away the leaves a crop still needed to finish, it costs you size, sweetness, and quality.

Watch for: Round white powdery spots on the upper leaf surfaces that spread and merge until whole leaves look dusted. It usually starts on the oldest, lowest, most shaded leaves and works upward, so check there first. Look at the undersides too, and at stems, buds, and flower stalks, which get coated as it advances. Leaves that yellow, brown, curl, or go crisp and drop early under the coating. New growth that opens small, crumpled, or twisted where the fungus has reached the shoot tips. On plants where it gets onto the fruit, a dull gray film, russeted or scarred skin, and cracking. Late in the season, tiny dark specks scattered through the white felt - that is the fungus setting up to overwinter on the debris.

Prevent: Give plants room. Crowding and still air are the biggest single driver, so space at the full recommended distance, thin seedlings properly, and divide or prune out congested growth until air moves through the plant. Full sun and an open position help; deep shade and a still corner against a wall are where it always starts. Water at the base rather than overhead, and water early in the day so nothing stays damp overnight. Keep plants evenly watered - drought stress at the roots leaves them far more susceptible, even though the fungus itself likes dry air. Go easy on nitrogen, since soft lush growth is the most vulnerable. Where resistant varieties exist for what you are growing, choosing one is the single most effective thing you can do on a plant that mildews every year. Clear infected leaves and stems away at the end of the season rather than composting them.

Treat: Start early: sprays protect healthy tissue, they do not clean up leaves that are already coated. Pick off and bin the worst leaves as soon as you see them, and open the plant up by thinning or pruning so air moves through. On anything that regrows quickly, shearing the whole plant back forces a clean flush and beats spraying. If it keeps spreading, potassium bicarbonate, horticultural oil, or neem applied weekly will hold it - cover both leaf surfaces. Sulfur also works, but it burns the foliage of some plants, should never go on in heat, and must not be mixed with or applied close behind an oil spray. Whatever you use must be labeled for the plant you are treating: follow that label and observe its pre-harvest interval on anything you eat. Do not compost badly infected material. Late-season mildew on a plant that is finishing anyway is usually cosmetic; on a crop still filling out it is worth acting on.

Common on dense, over-fed or shaded barley, showing as white-gray patches later dotted with tiny dark specks. At garden scale it rarely warrants treatment: sowing at the proper rate, keeping nitrogen lean and choosing resistant varieties do more than any spray.

A fungal disease infecting the heads in warm, wet weather at flowering, shriveling the grain and contaminating it with mycotoxins - a food-safety concern as well as a yield loss. Oats are among the cereals most affected by the T-2 and HT-2 toxins.

Watch for: Prematurely bleached, straw-colored spikelets or whole heads while the rest is green, often with pink-orange fungal growth at the base of the florets, and shriveled, chalky-white 'tombstone' kernels.

Prevent: Rotate away from corn and small-grain residue, avoid dense stands that stay wet, and harvest and dry promptly - sheaves left damp in wet weather are the home-scale version of the problem.

Treat: No home cure - discard shriveled, discolored, musty, or moldy grain rather than eating or feeding it; the toxins survive cooking. Prevention through rotation and fast, thorough drying is the control.

The mycotoxin makes scab a safety issue, not just a yield one, and it's especially unwelcome in malting barley - discard heavily scabbed, shriveled, pink grain.

Storage

Store dried whole or hulless barley cool and airtight for a year or more; grind flour or pearl as needed, and keep some grain back as seed - malting barley must stay dry and viable to sprout.

Dry barley thoroughly and it stores well — whole or hulless grain kept cool, dry, and airtight lasts a year or more, like other whole grains. Store it in sealed containers against pantry moths and weevils, and freeze new grain briefly to kill any hitchhiking eggs before long storage. Whole grain keeps better than flour, so grind or pearl it as you need it.

If you're growing malting barley, storage matters extra: the grain must stay dry, sound, and alive (viable), because malting works by sprouting the grain — store malting barley carefully and don't let it heat or get damp. For everyone, keep back some of your best clean grain as next year's seed, since barley comes true from saved seed. Cooked barley (soaked or pre-cooked whole grain) also freezes well for quick soups, and pearled or whole barley can be toasted for a nutty flavor before storing for barley tea.

Growing across climates

The most adaptable of small grains: cold- and drought-hardy, quick to ripen, grown as spring barley in cold zones, winter barley in mild ones, and a cool-season crop in the hot South.

Barley's toughness gives it one of the widest ranges of any grain. Zones 3-5: grow spring barley, sown as soon as the ground can be worked and ripened the same summer; barley's cold tolerance and quick maturity suit short, cool seasons well. Zones 6-7: spring barley, and winter barley in the milder years (it's hardy but less so than winter wheat, so it can winterkill in harsh, snowless cold). Zones 8-9 (mild winters, hot summers): grow barley as a cool-season fall-through-spring crop, sown in fall for a spring harvest before the heat; barley's drought tolerance and fast ripening let it 'escape' summer. Zones 10+: a cool-season winter crop only. Everywhere, barley's virtues are speed, cold tolerance, drought tolerance, and even salt tolerance — it's the grain that grows where others struggle, from cool highlands to dry, marginal ground, making it a smart choice for tough or unpredictable conditions.

Flattened barley is lodging from nitrogen or wind; leaf blotches are net blotch or scald; clinging hulls mean you grew hulled, not hulless; sharp awns and shattering call for timely, protected harvest.

The crop flops flat ('lodging'): too much nitrogen or wind and rain on a full stand — feed lightly (especially for malting barley) and choose shorter, stiff-strawed varieties. Net-like brown blotches, spots, or bleached patches on leaves: net blotch, scald, or powdery mildew in cool wet weather — grow resistant varieties and give airflow; late leaf disease on a nearly ripe crop matters little. Grain won't release from its hull: you grew standard hulled barley — switch to hulless (naked) barley for food, or accept that hulled barley needs machine pearling. Yellow-red stunted patches: barley yellow dwarf virus from aphids — control aphids and avoid very early sowing. Grain dropping or heads breaking off: shattering/head-loss from over-ripe barley — harvest promptly once hard. Sharp bristles getting into skin and clothes: the awns — wear sleeves and gloves at harvest. Poor malt (won't sprout evenly or is high-protein): nitrogen too high, or the grain got damp or dead in storage — grow malting barley lean and store it dry and viable.

Barley is a genuinely healthful whole grain, and like oats it's notably rich in beta-glucan, the soluble fiber that lowers LDL cholesterol and slows the rise in blood sugar — barley carries an approved heart-health claim on that basis, and it has one of the highest total fiber contents of any grain. Whole (or hulless) barley also delivers good plant protein, selenium, manganese, magnesium, phosphorus, and B vitamins, with a low glycemic response that makes it a steadying, filling food.

A nutritional note: whole/hulless barley keeps its bran and therefore its full fiber and minerals, while pearl barley is polished to remove the bran and outer layers, which cooks faster and softer but loses much of the fiber and nutrients — so hulless or lightly pearled barley is the more nutritious choice. The honest caveat: barley contains gluten (hordein), so it's off-limits for people with celiac disease or gluten intolerance, who should choose the gluten-free grains instead. For everyone else, barley is one of the most fiber-rich, heart-friendly, satisfying grains you can grow and eat.

Barley's kitchen signature is soup: its chewy, nutty grain thickens and enriches hearty soups and stews — beef-and-barley, mushroom-barley, Scotch broth — releasing starch that makes the broth silky. Cooked like a risotto ('orzotto') it turns creamy; simmered on its own it makes a satisfying whole-grain side or grain-bowl base; ground to flour it lends a sweet, mild, slightly cakey quality to breads and flatbreads (barley bread is ancient); and it cooks into a comforting porridge. Toasted whole barley steeped in hot water makes the nutty barley tea beloved across East Asia.

Barley's other great culinary life is malt. Sprouting barley, then drying and kilning it, converts its starches to sugars and develops flavor — this malted barley is the essential grain of beer and whiskey, and malt extract and malted-barley syrup sweeten and flavor everything from bagels and malted milk to baked goods. Home malting for brewing is a craft in its own right, but even a food gardener can appreciate that the same grain making tonight's soup is the one that has brewed the world's beer for millennia. Choose hulless barley for easy eating; malting traditionally uses hulled types.

Propagation & seed saving

Self-pollinating and true from saved seed: keep back clean, plump grain from your best plants, store it dry (and viable, if for malt), and re-sow each season.

Barley is easy to keep going because it is self-pollinating — each floret fertilizes itself, so varieties stay true and rarely cross with neighbors. Saving seed is simply saving your cleanest, plumpest grain from vigorous, healthy, well-ripened plants — the same grain you'd cook. Store it dry, cool, and airtight, where it stays viable for several years.

Sow that saved seed next season as you would purchased seed — spring barley in early spring, winter barley in fall. Because there's no crossing to manage, a good hulless or heritage barley can be carried on indefinitely, and by always selecting from the plants that ripened first, stood up without lodging, and resisted disease, you slowly adapt it to your own ground — the same process that produced barley's thousands of landraces across the world's cool and dry regions. One extra note for would-be maltsters: save malting barley from healthy, plump, low-protein grain and keep it alive and dry, since malt depends on the grain sprouting evenly.

History

One of the first plants ever domesticated, barley fed the earliest Near Eastern and Egyptian civilizations, served as bread, porridge, and the original beer grain, and remains a staple of cool and dry lands.

Barley is a founder crop of civilization — one of the very first plants domesticated in the Fertile Crescent around 10,000 years ago, alongside the earliest wheats. Its hardiness, quick ripening, and tolerance of drought, cold, and salty soils made it the dependable staple of the ancient Near East, and it fed the great early civilizations: barley bread and barley porridge nourished Mesopotamia and ancient Egypt, where barley even served as a unit of measure and a form of wages, and where its sprouted grain brewed the world's first beer.

For millennia barley was a primary bread grain for ordinary people across Europe, the Near East, and Asia, only gradually ceding the bread table to wheat (whose gluten makes lighter loaves) while holding its place in soups, porridges, animal feed, and, above all, brewing and distilling. It spread worldwide with migration and trade, thriving from Tibetan highlands to Scandinavian farms to dry Mediterranean margins.
