Artichoke
The immature flower bud is the food - you eat the fleshy base of the bracts and the heart, discarding the fibrous 'choke' inside. Safe to eat; the plant is a thistle, so the mature plant and bracts have small spines on some varieties. Preserving warning: artichoke is a LOW-ACID vegetable. Hearts packed in oil are not shelf-stable and are a botulism risk - use a tested acidified recipe, or refrigerate and eat within a few days.
Overview
A giant edible thistle grown for its tender, unopened flower buds - a Mediterranean perennial where winters are mild, and a one-season annual everywhere else thanks to a chilling trick.
The artichoke is a magnificent oddity: a 4-to-6-foot silvery thistle whose immature flower buds are one of the great gourmet vegetables. Let a bud go unpicked and it opens into a spectacular purple thistle flower the bees adore — harvested young and tight, it's the artichoke you steam, stuff, or grill. Even as a plant it earns its space, architectural and dramatic in the bed.
Where you live decides how you grow it. In mild-winter regions (roughly zone 7 and warmer, and coastal California above all) it's a true perennial, cropping every spring for years. In cold zones it can't survive winter — but a clever vernalization trick (chilling the seedlings for a couple of weeks) fools annual varieties like Imperial Star into flowering their first summer, so northern gardeners can grow it as a one-season annual from seed.

Artichoke Plume Moth High
The signature artichoke pest, mainly where the plant is grown as a perennial: the caterpillars of a small tan plume moth (Platyptilia carduidactyla) feed on leaves and stalks and, most damagingly, bore into the developing flower buds, tunneling through the edible heart and fouling it with frass.
Watch for: Small entry holes and dark frass on buds and stalks, tunneling and webbing inside buds, and slender greenish caterpillars; the fringed, T-shaped adult moths flying at dusk.
Prevent: Cut down and destroy old stalks and plant debris in fall (larvae and pupae overwinter in them) - sanitation is the key control; use pheromone traps to monitor flights; remove nearby wild thistle hosts.
Treat: Remove and destroy infested buds and stalks; Bt (kurstaki) or spinosad applied to young larvae before they bore in gives good control. Once inside a bud, larvae are protected, so timing sprays to egg-hatch matters.
Aphids Medium
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
Artichokes are notorious aphid magnets: the artichoke aphid and green peach aphid pack into the crown and deep between the bud bracts where you can neither see nor reach them. Hose the crown out through the season, and soak cut buds in salted water before cooking to flush out what is hiding inside.
Slugs & Snails Medium
Slugs and snails are nocturnal mollusks that rasp ragged holes in soft leaves, shear off seedlings at ground level, and chew into ripe fruit that touches the soil. They feed at night and in the early morning and spend the day hidden under boards, pots, dense mulch, leaf litter, and low foliage, becoming active in exactly the cool, damp, shaded conditions that suit young plants. Damage is heaviest in wet spells and on tender spring growth: a single wet week can erase a row of seedlings while an established, tough-leaved plant of the same species is barely marked. They lay clusters of small pearly eggs in damp soil and under debris, so a garden with plenty of cover carries a resident population year after year rather than being invaded from outside.
Watch for: Irregular ragged holes chewed out of the middle of leaves and along the edges - not the clean-edged cuts a caterpillar leaves. Seedlings that vanish overnight, or that are cut off at soil level with nothing left behind. Silvery dried slime trails across leaves, soil, pots, and paving in the morning: this is the giveaway that tells you it was mollusks rather than an insect. Chewed pits in ripe fruit, especially where it rests on the ground. Damage that shows up on the lowest, dampest leaves first and gets worse after rain or evening watering. Turn over a board, an upturned pot, or a clump of dense mulch during the day and look for the animals themselves sheltering in the cool underneath.
Prevent: Take away the daytime shelter first: lift boards and upturned pots, clear piles of debris, keep dense mulch pulled back from crowns and stems, and give crowded plantings enough airflow to dry out. Water in the morning rather than the evening so the surface is dry by the time they come out. Copper tape around containers and raised beds gives them a shock they will not cross, and it is the one barrier that reliably works. Get plants past the vulnerable stage quickly - start seedlings in pots and set them out at a decent size rather than direct-sowing into a cold wet bed, since most plants stop being worth defending once the leaves toughen. Leave the ground beetles, frogs, toads, and ground-feeding birds alone, because they eat mollusks all night for free and broad-spectrum slug pellets kill them too. Where thick-leaved or resistant varieties exist for what you are growing, they take far less damage.
Treat: Hand-picking works and costs nothing: go out an hour after dark with a headlamp, drop what you find into soapy water, and repeat nightly for a week or two - persistence is what wins, not any single product. Shallow beer traps sunk to soil level catch them too, but need emptying and refilling daily to be worth anything. Iron-phosphate bait is the standard control and is far lower-risk around pets and wildlife than the old metaldehyde products, but it is not harmless: many formulations include EDTA, and a dog that eats a quantity of pellets can develop iron toxicosis. Scatter it thinly per the label, never in piles, and keep dogs off a baited bed. Clear fallen foliage and debris in autumn, where the eggs are laid. In a wet climate this is a population you manage each season rather than one you eradicate - and on most established plants light grazing is cosmetic and needs nothing at all.
A major pest in mild coastal climates where they breed year-round. The plant's own big leaves are the favorite daytime hideout - check under them first - and they rasp the young buds as well as the foliage, so persistence matters here more than on most crops.
Gray Mold (Botrytis) Medium
Botrytis cinerea and its relatives - the fuzzy gray-brown mold of cool, wet, humid weather. It blights flowers and buds, rots ripening fruit, and moves into soft, aging, bruised or frost-damaged tissue through the smallest wound, coating whatever it kills in dusty gray spores. It overwinters on dead plant debris, spreads on air currents and by direct contact between touching tissue, and keeps working after harvest, which is why it also ruins fruit and bulbs in storage.
Watch for: Browned, collapsed flowers and buds; soft, water-soaked brown patches on leaves, stems or fruit; and a dusty gray-brown fuzz over the dead tissue. Rot jumping between two pieces of fruit or two petals that touch is the signature, and it often shows up again in the fridge or the storage box days later.
Prevent: Space and prune for airflow, water at the base rather than over the top, and go easy on nitrogen, which produces the soft growth it prefers. Clear dead leaves, spent flowers and rotting fruit at every pass, since that debris is where it overwinters. Handle fruit, buds and bulbs gently, because it enters through bruises, and cure and store anything you keep dry and well ventilated.
Treat: Cut out and destroy infected tissue as soon as it appears, and bag it rather than composting it. Harvest ahead of a prolonged wet spell and store the crop dry and cold. Protective fungicides help through long damp weather, but airflow and sanitation do most of the work.
On artichoke it takes the buds, entering through the cut stem and through any bruise or frost damage, then carries on in the fridge. Cut cleanly, handle buds gently, and strip dead outer leaves and spent buds through the damp part of the year.

As the flower stalk rises and buds form, keep an eye out for the pests that target them (aphids in the bracts, the artichoke plume moth boring into buds — see Threats). For perennial plants, the big added job is overwintering: after fall, cut the plant back and mulch the crown heavily — deeply in zone 7, lightly in zones 9-10 — and divide crowns every few years to keep them vigorous.

The large terminal bud at the top of the stalk matures first and is the biggest and best; smaller side buds follow and are picked as they size up over the following weeks, so harvest runs across a stretch rather than all at once. The tiniest young side buds are tender enough to eat whole, choke and all. In long-season and mild areas, cutting the plant back after the main harvest often triggers a second flush of buds in fall.
Storage
Best fresh; refrigerate whole buds up to a week, or blanch and freeze hearts. Oil-packed hearts are a fridge item, not a pantry item.
Fresh artichokes keep about a week in the refrigerator — store the whole buds unwashed in a bag in the crisper, and sprinkle a little water on them, as they dehydrate over time. A cut stem end left in water like a flower also helps them last.
For longer keeping, the tender hearts are what you preserve: trim buds down to the heart, cook them, and freeze them (blanch with lemon first to prevent browning). Frozen hearts keep for months and are far better than the can. Whole cooked artichokes don't freeze well, so process them down to hearts for storage.
About oil-packed hearts. Artichoke is a low-acid vegetable, and so is the garlic usually packed with it — which means hearts sitting in oil are a genuine botulism risk, not a theoretical one. Salt brine alone does not fix this; it does not bring the pH below 4.6. There are two safe routes and no third: simmer the hearts in a tested vinegar or lemon acidification recipe (National Center for Home Food Preservation, or a current Ball guide) before any oil goes in the jar — those keep for months — or make them as a fresh marinade, keep them in the refrigerator, and eat them within a few days. Never store home-made oil-packed hearts at room temperature.
Growing across climates
A perennial in mild zones 7-11 (coastal California is ideal); a vernalized one-season annual in cold zones 3-6; challenged by extreme heat and hard freezes alike.
The artichoke is a Mediterranean plant, so it wants mild, cool-summer conditions and resents both hard freezes and blazing heat. Zones 9-11 (especially coastal California): its happy home — a productive perennial cropping in spring (and often fall), where nearly all the US crop is grown. Zones 7-8: grow it as a perennial but overwinter the crown under heavy mulch; a hard freeze below about 20°F can kill an unprotected crown. Zones 3-6: too cold to overwinter, so grow it as an annual from seed, using vernalized annual varieties (Imperial Star) that bud the first summer — a genuinely reliable crop this way. Hot-summer regions everywhere: heat makes buds open fast and turn tough, and can push plants into summer dormancy; afternoon shade, heavy mulch, and constant moisture help, and spring/fall are the productive windows. Match the approach to your winter, and the artichoke rewards you almost anywhere.
Troubleshooting
No buds the first year means too little chilling; tough or open buds mean heat and drought; a dead perennial means an unprotected hard freeze.
Lots of leaves but no buds the first year (annual growing): the seedlings didn't get enough vernalizing chill — give annual varieties a solid 10-14 days below 50°F next time, and be sure you're using an annual-type variety. Small, tough buds that open too fast: heat and drought stress — water more consistently, mulch, and harvest buds younger and smaller. Perennial plant died over winter: a hard freeze reached an unprotected crown — mulch far more heavily, or grow it as an annual. Buds with entry holes and frass: artichoke plume moth (see Threats). Aphids swarming the crown and buds: common — blast them off and encourage predators. Buds with gray fuzzy mold in cool damp weather: botrytis — improve airflow and remove affected buds. Plant flowered before you picked: you waited too long — enjoy the stunning purple bloom and pick earlier next time.
Nutrition
One of the most antioxidant-rich vegetables, and a standout source of fiber, folate, vitamin K, and the artichoke-signature compound cynarin.
Artichokes are nutritional heavyweights despite being eaten in modest amounts. They're very high in fiber (including the prebiotic inulin that feeds gut bacteria), an excellent source of folate, vitamin K, vitamin C, and magnesium, and they rank among the most antioxidant-rich vegetables in the diet, loaded with polyphenols like chlorogenic acid and the artichoke-signature compound cynarin.
Artichoke's characteristic compounds are cynarin and other caffeoylquinic acids plus the flavonoid luteolin — not the silymarin found in milk thistle, a distant Asteraceae relative — and they are the basis of artichoke's long reputation in digestive traditions; more on that under Medicine. Nutritionally, an artichoke is a low-calorie, high-fiber, antioxidant-dense food, though how you eat it matters: steamed with a squeeze of lemon keeps it light, while the traditional drawn-butter or aioli dip is where most of the calories arrive.
In the kitchen

When the bracts are gone, scoop out and discard the fuzzy 'choke,' and the heart beneath — the best part — is eaten whole.
Beyond steaming: grilled artichoke halves (parboiled first) get smoky and charred; braised baby artichokes cook down whole and tender; and the Roman classic carciofi alla giudia deep-fries whole artichokes into a crisp, edible flower. Trimmed hearts are folded into pastas, dips (the beloved spinach-artichoke dip), pizzas, and antipasto platters. Rub cut surfaces with lemon to stop browning, and note the quirk that artichokes make whatever you drink afterward taste sweeter, thanks to cynarin.
Propagation & seed saving
Perennials multiply from crown offshoots that come true; seed is cheap but variable, so most named types are grown from offshoots or vernalized as annuals.
The traditional and true-to-type way to propagate artichokes is by offshoots (suckers): an established perennial crown throws up rooted side-shoots each year, and in spring you can slice one off with a piece of root and replant it. Because these are clones, they come true to the parent — how classic varieties like Green Globe have been perpetuated for generations — and dividing an old crown every few years both renews it and gives you free plants.
Seed is the other route and the one that opened artichokes to cold-climate gardeners, but it's variable: even named seed strains throw off-types with spiny or non-productive plants, so sow extra and cull. The breakthrough was vernalization-responsive annual varieties (Imperial Star, Colorado Star) that reliably bud the first year from chilled seedlings. To save your own seed you'd let buds bloom and set the thistledown seed, but the variability means most gardeners stick with offshoots for perennials and buy fresh annual seed each year for one-season crops.

Small clinical trials of concentrated artichoke leaf extract have reported improvements in indigestion symptoms and modest changes in cholesterol; reviews describe the evidence as limited and inconsistent, and artichoke is not a treatment for high cholesterol or any digestive disease. Talk to a clinician before using extracts, especially if you have gallstones or bile-duct problems. Its characteristic compounds are cynarin and other caffeoylquinic acids plus the flavonoid luteolin — not the silymarin found in milk thistle, a distant Asteraceae relative — and it's a common ingredient in digestive bitters (the Italian liqueur Cynar is made from it).
Keep the distinction honest: what evidence there is comes from concentrated leaf extracts, not the steamed bud on your plate — though eating artichokes does deliver real fiber, antioxidants, and cynarin as part of a healthy diet. Anyone with gallstones or bile-duct blockage should be cautious given the bile-stimulating action, and no extract should stand in for a prescribed medicine. As food-and-medicine plants go, the artichoke is better studied than most — a healthful vegetable whose extracts have modest and still-uncertain benefits.
History
Bred from a wild Mediterranean thistle and prized by Greeks, Romans, and Renaissance Italy, the artichoke became California's signature crop by way of Italian and Spanish growers.
The artichoke was developed from the wild cardoon, a spiny Mediterranean thistle, and has been cultivated around the Mediterranean since antiquity. Greeks and Romans ate it (Pliny wrote about it), and it was refined into the plump-budded globe artichoke in the gardens of Renaissance Italy — Florence and Naples are often credited — before spreading through France and Spain as a luxury vegetable of the nobility. Catherine de' Medici is famously said to have loved them, scandalously so for a young woman of the era.
Spanish and Italian immigrants carried the artichoke to the Americas, and it found a near-perfect home in the cool, foggy coast of central California, where the town of Castroville still calls itself the 'Artichoke Center of the World' and grows the vast majority of the US crop. (Marilyn Monroe was crowned its first Artichoke Queen in 1948.) From an ancient thistle tamed by Mediterranean gardeners to a Californian icon, the artichoke has always been a bit of an aristocrat among vegetables — and, thanks to modern annual varieties, one that gardeners far from the coast can finally grow.
