Rice
The milled grain is a safe, gluten-free staple food. Two honest cautions: rice takes up arsenic from soil and water more than most crops, so rinse it and cook in plenty of water; and standing paddy water breeds mosquitoes, so manage or drain it. The husk and unripe plant are not eaten.
Overview
The grain that feeds half the world, and a genuinely growable garden novelty: a warm-season grass grown in shallow flooded beds (or just constantly wet ground), harvested for its golden grain heads.
Rice is the staple food of more people than any other crop, and though we picture it as a vast flooded field, it's an ordinary annual grass that a determined gardener in a warm climate really can grow. The plant sends up clumps of grassy stems, each ending in a feathery panicle of grain, and it asks for two things above all: heat and water. It is fully tropical, needs a long frost-free season, and grows in standing water that it tolerates and its weeds do not.
There are two broad ways to grow it. Paddy (lowland) rice is grown under a shallow, managed flood — the classic method — which you can imitate at garden scale with a lined bed, a stock tank, or a low bermed plot kept a few inches deep. Upland rice is grown without flooding, in the wettest, richest ground you have, kept constantly moist. Either way the reward is the same: watching a true grain crop head out, ripen gold, and hand you rice you grew yourself. The berries are prized by birds, chipmunks, mice, turtles, and other wildlife, which often strip a patch of ripe fruit before a forager can gather much - a sign of the plant's ecological value as much as a nuisance.
Watch for: Ripe berries disappearing overnight, and birds and small mammals working the patch at dawn and dusk.
Prevent: Check the patch daily at peak ripeness and pick promptly; net a cultivated patch if you want the berries for yourself, though wildlife value is part of the plant's point.
Treat: Pick ripe berries as soon as they color and soften; accept that a foraged patch is shared with the wildlife that depends on it.
The bird problem defines the rice harvest - plan bird protection before the grain colors, not after the flocks arrive.

The most important disease of rice worldwide, a fungus (Magnaporthe oryzae) that lesions the leaves and can rot the neck of the panicle, causing whiteheads full of empty grain in warm, humid, high-nitrogen conditions.
Watch for: Diamond- or spindle-shaped gray-centered lesions on leaves, and a rotted, broken neck below the panicle that leaves the head standing white and empty.
Prevent: Grow resistant varieties, avoid excess nitrogen (lush growth is more susceptible), space for airflow, and don't let leaves stay wet from overhead irrigation.
Treat: Remove and destroy badly infected plants; fungicides exist but are rarely practical or warranted at garden scale - prevention and resistant varieties are the real control.
Neck blast at heading is the most damaging phase because it empties the grain; balanced nitrogen and resistant types are the home gardener's best defense.

A small stored-grain weevil that infests harvested and stored rice (and other grains), boring into the kernels to lay eggs so larvae hollow them from within - a storage pest, not a field one.

Prevent: Store thoroughly dried grain in airtight containers, keep it cool, and freeze new grain for a few days to kill any hitchhiking eggs before long storage.
Treat: Freeze infested grain to kill all stages, sieve out damaged kernels and frass, and clean the storage container before refilling.
Almost entirely a storage problem - clean, dry, cold, airtight storage prevents it; a bay leaf in the bin is a traditional deterrent.

Prevent: A brief drain of the paddy early (draining exposes larvae), delayed flooding, and healthy vigorous stands reduce damage; rotation helps.
Treat: Draining the flood for a few days early in the infestation disrupts the aquatic larvae; established vigorous plants often compensate for light root pruning.

Prevent: A standing 2-4 inch flood is the classic, effective weed control (rice tolerates it, most weeds don't); start clean, and hand-weed early in upland rice.
Treat: Raise the flood as soon as plants are tall enough to smother weeds, and hand-pull escapes; in upland rice, mulch and diligent early weeding are the tools.
This is why flooding matters as much for weed control as for the crop itself - it's the reason paddy culture developed.

Start by choosing your system. For paddy rice, build a bed that holds water: a lined trench, a raised bed with a berm, a kiddie pool, or a stock tank filled with rich soil. For upland rice, pick the wettest, most fertile spot in full sun and commit to never letting it dry out. Either way rice wants heat — soil and water above 65F — and a long season, so most gardeners in cooler zones start seeds indoors 4-6 weeks early and transplant.
Presoak the seed a day to speed sprouting, then sow into warm saturated soil or set out 3-4 week seedlings about 9 inches apart. Keep young plants in shallow water or wet soil; once they are 6-8 inches tall, raise a 2-4 inch flood on paddy rice, which smothers most weeds and steadies the temperature. Rice care is water management. Hold the flood (or constant moisture) steady all season, and above all never let it go dry at heading and flowering — drought then gives empty, unfilled grain. A standing flood is your best weed control; without it, be ready to weed grassy competitors hard while plants are small. Feed nitrogen during tillering to multiply the stems, since each strong tiller becomes a grain head.
Late in the season the job flips: drain the paddy a week or two before harvest so the ground firms and the grain dries evenly. The other great late-season task is bird defense — ripening rice draws blackbirds, sparrows, and ducks, and a small plot can be stripped in days. Net the plot, run flash tape, or bag the heads. In warm, humid weather watch for rice blast, the main fungal disease, which shows as diamond-shaped lesions on leaves and can rot the neck of the panicle.
Harvest
Cut whole stalks when the heads are golden and the grain is firm at dough stage; dry the bundles, then thresh, winnow, and hull - hulling is the hardest home step.
Rice is ready when about 80-90% of the grains on each head have turned from green to golden and feel firm when pressed (the dough stage), usually well over a hundred days from sowing. Cut the whole stalks with a sickle or shears and bundle them; if birds are heavy, cut a touch early and finish drying under cover.
Then comes the processing that makes rice more work than most grains. Dry the bundles 2-3 weeks somewhere airy. Thresh by beating or rubbing the heads to knock the grain loose, then winnow away the light chaff in a breeze or with a fan. What you have now is rough rice (paddy), each grain still wrapped in a tough, inedible husk. Removing that husk — hulling — is the real challenge at home: it's done by careful hand-rubbing (labor-intensive), a small tabletop rice huller, or a rubber-roller mill. Hulled but bran-on grain is brown rice; milling further to strip the bran gives white rice.
Storage
Store thoroughly dried rough or brown rice cool and airtight; white rice keeps for years, brown rice a few months before its oils go stale, and the freezer extends both.
Dry the grain thoroughly before storing — damp rice molds and can develop toxins. Kept as rough rice (still in the husk) it stores longest and stays viable as seed; hull it as you need it. White rice, with its oily bran removed, is one of the most storable of all foods, keeping for years in a cool, airtight container. Brown rice keeps its bran and therefore its oils, so it goes stale or rancid in a few months at room temperature; refrigerate or freeze it to extend that to a year or more.
Store all rice in sealed containers against pantry moths and weevils; a bay leaf or a spell in the freezer discourages them. Growing across climates
A hot-climate crop through and through: easy in the Gulf South and tropics, marginal and experimental in cool zones where only short-season types transplanted early have a chance.
Rice is defined by its need for heat and a long season. Zones 3-6: genuinely difficult — the season is too short and cool, so success means the earliest short-season varieties, seedlings started indoors, and a warm sheltered flooded tub; treat it as an experiment. Zones 7-8: workable with an early start; the warm valleys and the Gulf South are real rice country, historically the home of Carolina Gold. Zones 9-10: excellent — the long hot season suits rice fully, and a second (ratoon) crop can regrow from the stubble of the first. Zones 11-13: rice's native home, grown year-round with the rains or under irrigation. Everywhere, the non-negotiables are heat, full sun, and abundant water; where you can supply all three through a long summer, rice will grow.
Troubleshooting
Empty grains mean heat or drought stress at flowering; poor stands mean cold water; missing grain means birds; diamond leaf lesions are rice blast - all point back to heat, water, and timing.

Rice is above all an energy food — predominantly starch, easy to digest, and naturally gluten-free, which makes it a foundational grain for much of the world and for gluten-sensitive diets. The nutritional difference between kinds is really about milling. Brown rice keeps the bran and germ, and with them useful fiber, B vitamins (thiamin, niacin, B6), magnesium, and some protein. White rice has the bran milled off for longer storage and a softer texture, losing much of that (which is why white rice is often enriched to add back B vitamins and iron).
Two honest notes. Rice's protein is modest and incomplete, which is why traditional diets pair it with beans, lentils, or fish for a complete meal. In the kitchen

Rice is the quiet backbone of more cuisines than any other food, and the variety you grow decides the dish. To save seed, simply keep back a portion of your best rough rice (the grain still in its protective husk) from vigorous, fully ripe, disease-free plants. Store it dry, cool, and in the husk, where it stays viable for a few years.
Next season, presoak and sow that saved seed exactly as you would bought seed. History
Domesticated in China thousands of years ago and central to Asian civilization, rice reached the Americas partly through the knowledge of enslaved West Africans, whose skill built the Carolina Gold Lowcountry rice culture.
Rice was domesticated from wild grasses in the Yangtze valley of China more than 8,000 years ago, and a separate African rice (Oryza glaberrima) was domesticated along the Niger in West Africa. From those origins Asian rice spread across the monsoon lands to become the foundation of Chinese, Indian, and Southeast Asian civilization — the crop around which paddies, terraces, and entire societies were organized.
Rice came to the American South in the colonial era, and its success there rested heavily on the agricultural knowledge of enslaved West Africans, who came from rice-growing societies and whose expertise in flooding, cultivation, and processing built the wealthy Lowcountry rice culture of South Carolina and Georgia. Its signature grain, aromatic Carolina Gold, was famous the world over before the Civil War and the end of enslaved labor ended the plantation system that produced it. Nearly lost, Carolina Gold was revived by seed-savers in the late 20th century and is grown again today — a heritage grain a home gardener can plant, carrying forward a food history that is both celebrated and sober.
