Horehound candy, lozenges and ordinary tea are widely used and considered safe; medicinal doses are different. Europe's regulator contraindicates it in bile-duct obstruction, cholangitis, liver disease, ileus and mint-family allergy, cautions with peptic ulcer or gallstones, and advises against it under age 12. It may lower blood sugar and blood pressure, large doses can disturb heart rhythm and are laxative, and as a traditional emmenagogue it is avoided in pregnancy and breastfeeding.

Overview

The cough-drop herb: a tough, woolly gray perennial that thrives on poor dry soil and neglect, gives you bitter leaves for candy and syrup, and self-seeds hard enough to have taken over rangeland out west - so deadhead it, or grow it in a pot.

Horehound (Marrubium vulgare) is the plant behind old-fashioned horehound candy and a great many cough drops. It is a mint-family perennial with crinkled, woolly gray-white leaves and tight whorls of small white flowers, and it tastes frankly bitter - faintly menthol, somewhere between root beer, licorice and hops. That bitterness is the point. Boiled into a sugar syrup it becomes a lozenge that has been soothing throats for a couple of thousand years, and it is one of the few garden herbs with a documented medicinal record running unbroken from Dioscorides to the pharmacy shelf.

In the garden it is almost comically easy. It wants full sun, lean poor soil, and to be left alone - rich ground and regular water are what kill it, not drought or cold. That same toughness is the catch. Horehound sets an enormous quantity of seed in burred whorls that hitch a ride on clothing and livestock, spreads into disturbed and overgrazed ground, and has naturalized into rangeland across the dry western states - noxious-listed on the Navajo Nation, rated invasive in California - as well as being a declared pest across Australia. Grown deliberately - flowers cut before they seed, or the whole plant in a container - it is a well-behaved and genuinely useful herb. Grown carelessly in the wrong climate, it becomes someone else's problem.

      This is the one job that genuinely matters. Cut the flowering stems off as the white whorls fade and before the seed sets. Root rot is not one organism but a group of soil fungi and water molds - Pythium, Phytophthora, Fusarium, Rhizoctonia and others - that sit harmlessly in most soils and only turn destructive when the ground stays saturated. Waterlogged soil drives the air out, the roots suffocate, and the weakened tissue is invaded and goes soft, brown, and stringy. Because the damage is underground you usually see it first as something that looks like drought: wilting, yellowing, stunting, a plant that does not respond to being watered. Overwatering, heavy compacted ground, a low spot that collects runoff, a pot with no drainage or a saucer left standing full, and cold wet soil in winter are the usual causes. Once roots have actually rotted there is no cure - this is a problem you prevent rather than treat.

Watch for: Wilting in the middle of the day on a plant whose soil is damp - the classic tell, and the reason people water a rotting plant and finish it off. Leaves yellowing from the bottom up, dull off-color foliage, and growth that stalls for no visible reason. Whole shoots, or one side of the plant, collapsing while the rest still looks fine. Soft, dark, or mushy tissue at the base of the stem or at the crown, sometimes with a sour smell. Lift a failing plant and look at the roots: healthy ones are firm and pale, rotted ones are brown or black and slimy, and the outer layer slips off between your fingers leaving a thread of core behind. Seedlings that topple over at soil level are the same problem, called damping-off.

Prevent: Drainage is the whole defense. Match the plant to the site first - something that wants sharp drainage will not survive heavy clay or a low, water-collecting spot however well you tend it. Where the ground is heavy, plant on a raised bed, berm, or slope, or grow in a container. Set plants at the depth they were already growing, since burying the crown or the root flare is a common cause of rot, and keep mulch pulled back a few inches from the stem base instead of piled against it. Water the soil rather than the calendar: check that the top inch or two is dry before watering again, cut back hard in cool weather and winter dormancy, and never leave a pot standing in a full saucer. Do not plant or dig in soggy ground, and go easy on rich amendments for plants that want it lean. Rotate annual crops, and start with clean healthy plants and fresh mix.

Treat: There is no cure for tissue that has already rotted, so act on the conditions rather than looking for a spray. Stop watering at once and fix the drainage - open up compacted soil, or move the plant to a raised, sharply drained position or a container. Lift a badly affected plant, cut away every soft dark root and rotted section with a clean blade back to firm pale tissue, and replant only the healthy parts into fresh free-draining soil or mix. Often the better move is to give up on the plant and save its offspring instead: cuttings, offsets, or divisions taken from firm healthy growth root readily and give you a clean start. Bin the rotted material rather than composting it, and correct the drainage before you replant, because the rot comes straight back in the same wet spot.

The growing-season half of the same problem. Excessive watering or standing water kills horehound outright - once a week in summer is plenty, and established plants often need nothing at all. The commonest cause is a plant put in a vegetable bed or a border on a drip line. Move it to unirrigated, sharply drained ground; in heavy clay or the humid Southeast, grow it in a pot with real drainage instead.

Crown rot is the rotting of a plant at the crown - the growing point where the stems meet the roots, right at or just below soil level. Soil fungi and water molds that live in most ground attack that tissue whenever it sits wet, cold, and airless, and because the crown is the one part a perennial cannot regrow from, losing it usually means losing the plant. It is above all a winter problem: a plant that survives hard frost perfectly well in dry ground rots out in a wet one, and the classic story is a perennial that simply never comes back in spring. Dry-adapted plants growing in heavy or over-improved soil are the most vulnerable, along with anything that has mulch, wet leaves, or piled debris sitting against the crown, and anything planted too deep.

Watch for: A plant that fails to green up or emerge in spring when everything around it does - the most common way this gets discovered, and by then it is already too late. Stems that wilt, blacken, and collapse in wet weather while the soil is clearly damp rather than dry. A crown that is soft, dark, brown, or mushy when you press or lift it, sometimes with a foul smell, instead of firm and pale. New growth that pulls away from the crown with almost no resistance. Clumps browning and going hollow in the middle while the outer growth stays alive. In stands and cover crops, patches wilting, yellowing, and thinning out after wet spells or over a mild wet winter.

Prevent: Drainage and airflow at the crown are everything. Match the plant to the site first: a dry-adapted perennial planted in heavy or enriched ground is on borrowed time whatever else you do. In wet or clay soil, plant on a slope, berm, raised bed, or gritty rock-garden site so water drains away from the crown rather than standing over it. Set plants at the right depth - never bury the crown - and keep mulch, dead leaves, and debris pulled back from it rather than piled against it, since damp material resting on the crown is a common trigger. Do not overwater, and ease right off during dormancy, when a resting plant wants to be barely damp rather than wet. Give crowded plantings enough space and airflow to dry out, and do not sow a stand too thickly. In cold, wet climates, divide in spring rather than fall, so plants are not recovering from surgery through the wettest months.

Treat: There is usually no cure once the crown itself has rotted: the plant is lost, and the job is to save what you can and fix the site. Lift it, cut away every soft, dark, rotted part with a clean blade back to firm tissue, and replant only healthy divisions or firm outer growth into fresh, sharply drained soil or medium. On potted and specialist plants, repotting into fresh airy medium and keeping them drier with better airflow gives the best chance, though a badly rotted crown is usually beyond saving. Bin the rotted material rather than composting it. Replant somewhere better drained rather than back into the same wet spot - or start again from seed, cuttings, or self-sown seedlings, which is the realistic option for anything that resents being moved at all.

The number one killer of garden horehound, and almost always self-inflicted. A drought-adapted plant sitting in heavy or over-improved soil through a wet winter rots at the crown and simply never re-emerges in spring. Keep bark, leaves and compost pulled back from the woolly crown, plant high on gritty raised ground, and turn irrigation off the plant from autumn onward. If a plant failed to return, dig it up and check the crown before blaming the cold.

Slugs & Snails Medium PestApr, May, Jun

Slugs and snails are nocturnal mollusks that rasp ragged holes in soft leaves, shear off seedlings at ground level, and chew into ripe fruit that touches the soil. They feed at night and in the early morning and spend the day hidden under boards, pots, dense mulch, leaf litter, and low foliage, becoming active in exactly the cool, damp, shaded conditions that suit young plants. Damage is heaviest in wet spells and on tender spring growth: a single wet week can erase a row of seedlings while an established, tough-leaved plant of the same species is barely marked. They lay clusters of small pearly eggs in damp soil and under debris, so a garden with plenty of cover carries a resident population year after year rather than being invaded from outside.

Watch for: Irregular ragged holes chewed out of the middle of leaves and along the edges - not the clean-edged cuts a caterpillar leaves. Seedlings that vanish overnight, or that are cut off at soil level with nothing left behind. Silvery dried slime trails across leaves, soil, pots, and paving in the morning: this is the giveaway that tells you it was mollusks rather than an insect. Chewed pits in ripe fruit, especially where it rests on the ground. Damage that shows up on the lowest, dampest leaves first and gets worse after rain or evening watering. Turn over a board, an upturned pot, or a clump of dense mulch during the day and look for the animals themselves sheltering in the cool underneath.

Prevent: Take away the daytime shelter first: lift boards and upturned pots, clear piles of debris, keep dense mulch pulled back from crowns and stems, and give crowded plantings enough airflow to dry out. Water in the morning rather than the evening so the surface is dry by the time they come out. Copper tape around containers and raised beds gives them a shock they will not cross, and it is the one barrier that reliably works. Get plants past the vulnerable stage quickly - start seedlings in pots and set them out at a decent size rather than direct-sowing into a cold wet bed, since most plants stop being worth defending once the leaves toughen. Leave the ground beetles, frogs, toads, and ground-feeding birds alone, because they eat mollusks all night for free and broad-spectrum slug pellets kill them too. Where thick-leaved or resistant varieties exist for what you are growing, they take far less damage.

Treat: Hand-picking works and costs nothing: go out an hour after dark with a headlamp, drop what you find into soapy water, and repeat nightly for a week or two - persistence is what wins, not any single product. Shallow beer traps sunk to soil level catch them too, but need emptying and refilling daily to be worth anything. Iron-phosphate bait is the standard control and is far lower-risk around pets and wildlife than the old metaldehyde products, but it is not harmless: many formulations include EDTA, and a dog that eats a quantity of pellets can develop iron toxicosis. Scatter it thinly per the label, never in piles, and keep dogs off a baited bed. Clear fallen foliage and debris in autumn, where the eggs are laid. In a wet climate this is a population you manage each season rather than one you eradicate - and on most established plants light grazing is cosmetic and needs nothing at all.

A seedling-stage problem only. Soft young horehound gets sheared off at ground level in a damp spring, while the mature woolly, bitter foliage is left completely alone - so this is a threat with a deadline. Start plants in pots and set them out at a decent size rather than direct-sowing into cold wet ground, and the problem disappears on its own.

Aphids Low PestMay, Jun, Jul

Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.

Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.

Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.

Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Occasional and rarely serious. They cluster on the soft flowering stems rather than the felted leaves, and the dense white hairs make a small colony easy to overlook - check the stems and the flower whorls rather than the leaf surfaces. A hard jet of water usually ends it, and a plant grown lean and unfertilized attracts far fewer.

Deer (browse resistance) Low WildlifeMay, Jun, Jul, Aug

Deer are the largest garden problem across much of the country, and where pressure is high they set the limit on what you can grow at all. They browse at night and around dawn and dusk, taking tender shoots, leaves, buds, flowers, and fruit within about five feet of the ground, and they come back night after night to anything they have found and liked. Because they have no upper incisors they tear rather than cut, leaving ragged stem ends - that is how you tell deer damage from a rabbit's clean angled cut. In fall, bucks rub their antlers on young trunks and can strip the bark right around a stem, which kills a young tree outright. Palatability varies enormously between plants and between seasons: a herd short of food in late winter eats things it ignores in June, and no plant is truly deer-proof.

Watch for: Growth cleanly missing overnight, with the plant browsed back to a level line about as high as a deer can comfortably reach. Ragged, torn stem ends rather than the clean angled cut a rabbit leaves - the single most reliable identifier. Buds and flowers gone while the foliage below is untouched, since deer often take the best part first. Hoof prints and droppings in soft ground near the damage. Repeat visits, with fresh damage each morning once a planting has been found. On young trees, shredded and stripped bark and broken low branches in autumn - that is antler rubbing rather than feeding.

Prevent: Fencing is the only thing that reliably works. Eight feet is the standard for excluding deer, or two parallel four-foot fences a few feet apart, which they will not jump because they cannot judge the landing. Short of that, cage individual plants: a sturdy wire cage or trunk guard around every young tree, left on until the trunk is thick and the canopy is above browse height, prevents both browsing and antler rubbing and is the single highest-value thing you can do for a young tree. Repellent sprays do help at moderate pressure, but they wash off and deer habituate, so reapply after rain and rotate between different types through the season. Motion-activated sprinklers, scent deterrents, and noise devices work for a while and then stop. Siting matters too: plants close to the house, in daily traffic, and screened behind other planting get browsed less than the same plant out at the boundary.

Treat: There is no chemical fix, only exclusion and recovery. Get physical protection up immediately after the first damage, because deer return to a known meal, and reinforce or rotate whatever you were relying on before. Most plants regrow from browsing if the crown and roots are intact - feed and water a grazed plant and protect the regrowth while it comes back. What does not recover in the same season is anything whose buds or flowers have been taken, and a young tree whose bark has been rubbed right around the trunk is usually lost. Where deer pressure is genuinely heavy, the honest answer is to fence properly or to grow the plants deer leave alone, rather than to keep replacing losses.

Listed as good news rather than bad. Horehound is bitter and densely felted, and deer, rabbits and livestock all avoid it - which is exactly why it takes over overgrazed rangeland while everything palatable around it is eaten. In a browsed garden it is one of the safest herbs you can plant, and needs no protection.

Powdery Mildew Low DiseaseAug, Sep

Powdery mildew is a fungal disease that coats leaves - and often stems, buds, and fruit - in a white-to-gray powder that looks like spilled talcum. It is not one fungus but a large family of them, each fairly specialised to its own group of plants, which is why mildew on one crop rarely jumps to an unrelated one beside it. Unlike most leaf diseases it does not need wet leaves: it thrives on warm dry days followed by humid nights, and it takes hold fastest where plants stand crowded in still air or in shade. The coating blocks light, so heavily covered leaves yellow, brown, and drop early. On many plants that is mostly disfiguring and arrives late enough not to matter; where it strips away the leaves a crop still needed to finish, it costs you size, sweetness, and quality.

Watch for: Round white powdery spots on the upper leaf surfaces that spread and merge until whole leaves look dusted. It usually starts on the oldest, lowest, most shaded leaves and works upward, so check there first. Look at the undersides too, and at stems, buds, and flower stalks, which get coated as it advances. Leaves that yellow, brown, curl, or go crisp and drop early under the coating. New growth that opens small, crumpled, or twisted where the fungus has reached the shoot tips. On plants where it gets onto the fruit, a dull gray film, russeted or scarred skin, and cracking. Late in the season, tiny dark specks scattered through the white felt - that is the fungus setting up to overwinter on the debris.

Prevent: Give plants room. Crowding and still air are the biggest single driver, so space at the full recommended distance, thin seedlings properly, and divide or prune out congested growth until air moves through the plant. Full sun and an open position help; deep shade and a still corner against a wall are where it always starts. Water at the base rather than overhead, and water early in the day so nothing stays damp overnight. Keep plants evenly watered - drought stress at the roots leaves them far more susceptible, even though the fungus itself likes dry air. Go easy on nitrogen, since soft lush growth is the most vulnerable. Where resistant varieties exist for what you are growing, choosing one is the single most effective thing you can do on a plant that mildews every year. Clear infected leaves and stems away at the end of the season rather than composting them.

Treat: Start early: sprays protect healthy tissue, they do not clean up leaves that are already coated. Pick off and bin the worst leaves as soon as you see them, and open the plant up by thinning or pruning so air moves through. On anything that regrows quickly, shearing the whole plant back forces a clean flush and beats spraying. If it keeps spreading, potassium bicarbonate, horticultural oil, or neem applied weekly will hold it - cover both leaf surfaces. Sulfur also works, but it burns the foliage of some plants, should never go on in heat, and must not be mixed with or applied close behind an oil spray. Whatever you use must be labeled for the plant you are treating: follow that label and observe its pre-harvest interval on anything you eat. Do not compost badly infected material. Late-season mildew on a plant that is finishing anyway is usually cosmetic; on a crop still filling out it is worth acting on.

Mostly a humid-climate and crowded-planting problem, and easy to confuse with the plant's own white woolly coating - look for a flat powdery film on the upper leaf surface rather than the even felt of normal foliage. Space plants properly, keep them in full sun and open air, and shear the plant back rather than spraying a herb you intend to eat.

Spider mites are not insects but tiny sap-feeding arachnids, smaller than a grain of salt, and you almost always notice the damage before you notice them. They live on the undersides of leaves and drain the cells one at a time, which is why the leaf goes finely stippled with pale dots before it bronzes and dries. They breed explosively in hot, dry, dusty, still air - a generation can pass in a week at high temperature - so a barely visible population becomes a webbed, bronzed plant within a fortnight. Drought-stressed plants and plants wintered indoors in dry heated air are the classic hosts. Broad-spectrum insecticides make matters worse rather than better, because they kill the predatory mites and lady beetles that normally hold mites in check.

Watch for: Fine pale stippling or speckling across the upper leaf surface, as though the color had been sandblasted out of it, and later a dull bronze or rusty cast over the whole leaf. Delicate webbing across leaf joints, shoot tips, and undersides - that comes with a heavy infestation and means you caught it late. Leaves that dry, curl, and drop early while the plant looks thirsty no matter how much you water it. Hold a leaf over a sheet of white paper and tap it: the specks that fall and then start walking are mites. With a hand lens, look on the undersides for the mites themselves, pale or reddish, and their round translucent eggs. Damage that shows up first on the hottest, dustiest, most sheltered side of a plant, or on a pot sitting near a radiator indoors.

Prevent: Do not let plants get drought-stressed - that is the single strongest trigger, and a plant watered steadily through heat is far less likely to have a mite problem at all. Hose the foliage down, undersides included, during hot dry spells: it knocks mites off, washes away the dust they thrive in, and raises the humidity around the plant for a while. Indoors and under cover, keep the air from going hot, dry, and stagnant, wipe or rinse the leaves occasionally, and keep pots away from radiators and heating vents. Inspect any plant carefully before you bring it indoors for winter or set it among others, since mites almost always arrive on something else. Avoid broad-spectrum insecticides: they wipe out the predatory mites, lacewings, and lady beetles that do most of this work for you, and reliably leave you with a worse outbreak than you started with.

Treat: Start with water. A strong jet aimed at the leaf undersides, repeated every few days for a couple of weeks, knocks populations down and breaks the cycle - on many plants that alone ends it. On anything that regrows quickly, shearing back badly infested growth resets the plant to clean foliage. If it keeps building, spray insecticidal soap or horticultural oil directly onto the undersides where the mites actually live, and repeat every five to seven days for three rounds: contact sprays do not kill the eggs, so a single application always fails. Anything you spray must be labeled for the plant you are treating - follow the label and observe its pre-harvest interval on anything you eat. Predatory mites are an effective release in a greenhouse or on an indoor plant. Above all, correct the heat, dust, and drought stress that caused it, or the mites simply come back.

The pest most likely to sneak up on horehound, because fine webbing and stippling hide beautifully in woolly gray foliage. Hot dry spells and container plants against a sunny wall are the usual setting. Hose the plant down and look at the leaf undersides in a good light; a dusty, off-color plant in August is worth checking before you assume drought.

Nurseries increasingly sell other Marrubium species as 'horehound' for their foliage - chiefly M. rotundifolium (silver-edged or Silverheels horehound), M. incanum (silver horehound) and M. supinum. They are handsome, tidy, far less inclined to seed themselves about, and excellent dry-garden plants. This is the herb, and effectively the only one. Marrubium vulgare has never been through cultivar development - there are no named horehound varieties in the way there are named thymes or basils, and seed and plants are sold simply as 'horehound' or 'white horehound' whatever the supplier. Any variation you see between plants comes from soil, sun and water rather than genetics. If a packet or a nursery label says Marrubium vulgare, you have the right plant; anything else sold as horehound is a relative, not a substitute.

Grow

Sow shallowly in spring in full sun and poor, sharply drained ground; the seed is slow and erratic, so cold-stratify it or start from a division or cutting instead, and space plants 10-24 inches apart.

Horehound wants the conditions most herbs merely tolerate: full sun and thin, dry, gravelly or sandy ground. It grows in almost any soil that drains - clay, loam or sand, acid to alkaline - and it is genuinely better in poor soil than good. Rich, fed, regularly watered beds give you a floppy plant with weak flavor that then rots over winter. Do not amend the soil, do not fertilize, and above all do not put it on an irrigation line.

Seed is the fiddly part. Sow about ¼ inch deep roughly three weeks before your last frost, or a month earlier under cover, and keep the surface just moist at 65-75°F. Germination is slow and uneven and often takes three weeks or more, so sow generously and be patient. A month of cold stratification on damp paper towel in the refrigerator lifts the rate markedly, and a fall sowing outdoors does the same job for free. Thin or space plants 10-24 inches apart - the closer figure for a dense cutting bed, the wider for individual plants that will bush out a foot or two across.

If seed frustrates you, skip it entirely. Horehound roots easily from softwood cuttings and divides readily in early spring, and a division gives you a harvestable plant the same summer instead of the following one. One plant supplies a household's cough syrup for a year; three is more horehound than most families will ever get through.

Care

Water rarely, feed never, shear it back hard after bloom, and deadhead before seed sets - the deadheading is the one job that actually matters.

Care is mostly restraint. Water no more than once a week in summer and let the soil dry right out in between; established plants get through most seasons on rainfall alone. Excess water is the only thing that reliably kills horehound, and standing wet in winter is the usual killer. Skip fertilizer entirely - lean soil makes the compact, aromatic, strongly bitter growth you actually want. Keep mulch pulled well back from the woolly crown; bark or leaves banked against it through a wet winter is the classic way to lose a good plant.

The one job that matters is deadheading. Cut the flowering stems off as the white whorls fade and before the seed ripens, both to stop the plant seeding itself across your own garden and, in the West, to stop it seeding into open land where it has become a rangeland weed. After flowering, shear the whole plant back by about half; it comes back tidier, denser and lives longer. Horehound is short-lived even so, generally three to five good years before it goes woody and sparse, so root a cutting or split off a division while the parent is still vigorous rather than waiting for it to fail.

Harvest

Cut leafy stems just before the flowers open, when the bitter principles peak; take about a third of a plant in its first year and a hard cut plus a lighter second cut every year after that.

Horehound leaves are at their best just before the plant blooms, which in most gardens means late spring to early summer of the second year - it rarely flowers at all in its first season. Pre-bloom is when the bitter compounds are strongest, and it is also before the flower stems turn tough and prickly; stems cut after bloom are unpleasant to strip and not worth the effort.

Cut leafy stems back to a few inches above the crown with shears. In the first year take no more than about a third of the plant, since it needs its foliage to build the taproot that carries it through winter. From the second year on, an established clump takes a hard cutting in early summer and usually gives a lighter second cut in late summer - stop about six weeks before your first frost so the plant hardens off. One mature plant yields plenty of dried herb for a year of candy, syrup and tea.

Strip the leaves and flowering tops from the stems while they are still fresh; it is far easier then than once everything has gone brittle. Wear long sleeves if you are cutting a lot, because the crinkled woolly foliage sheds a fine irritating fuzz.

Storage

Hang small bundles somewhere warm, dark and airy until the leaves crumble, then jar them whole - dried horehound holds its bitterness for about a year, and syrup or candy keeps the harvest far longer.

Horehound dries beautifully, which is lucky, because almost nothing is done with it fresh. Tie the cut stems into small loose bundles and hang them upside down somewhere warm, dark and airy, out of direct sun; a dehydrator on its lowest setting works too. They are ready when the leaves crumble rather than fold, usually in one to two weeks.

Strip the dry leaves and flowering tops into an airtight jar and keep it dark and cool. Store them whole and crumble as you use them - aroma and bitterness fade faster once the leaf is broken up. Expect roughly a year of useful potency, after which it tastes more of hay than of horehound without actually spoiling.

The traditional storage, though, is not dried leaf at all: it is syrup and candy. A strong decoction boiled down with sugar to hard-crack and poured out into drops keeps for months in a tin, and a honey or sugar syrup keeps for weeks in the refrigerator. Most growers dry a jar for tea and turn the rest of the harvest into lozenges the same week they cut it.

Propagation & seed saving

Seed, cuttings and division all work; cuttings and spring divisions are much faster than the slow erratic seed, and one plant left to bloom hands you more seedlings than you want.

Seed is cheap and abundant but slow and erratic. Collect the tiny nutlets from the dry flower whorls in late summer - the whorls turn burred and cling to gloves, which is precisely how the plant travels - and sow shallowly. A month of cold stratification in the refrigerator, or simply sowing in fall and letting winter do it, lifts germination considerably. Seed stays viable for years.

Cuttings are the shortcut. Take 4-6 inch softwood tips in late spring or early summer, strip the lower leaves, and root them in a gritty free-draining mix; they take readily and give a harvestable plant the same season. Division works too: lift an established clump in early spring, pull or cut it into rooted pieces, and replant about a foot apart.

Realistically you will not have to work at any of this. Horehound self-sows enthusiastically, and a plant allowed to seed hands you dozens of woolly volunteers around it the following spring - keep a couple and hoe off the rest while they are small, before the taproot makes them stubborn. That generosity is exactly why deadheading matters: 'never buy it again' arrives whether you plan for it or not, and in the wrong landscape it keeps going long after it has left your garden.

Nutrition

A bitter medicinal herb rather than a food - used by the teaspoon in tea or syrup, so it contributes essentially nothing nutritionally, and horehound candy is mostly sugar.

Horehound is not eaten as a vegetable or even as much of a seasoning. It is far too bitter to use in quantity, and the quantities actually involved - a teaspoon of dried leaf in a cup of tea, or a single lozenge - are too small to register nutritionally. Older herbals and some marketing list vitamins A, B, C and E and assorted minerals in the leaf, which is true per 100 grams and meaningless at the doses anyone consumes.

What the leaf does carry is a distinctive chemistry: the labdane diterpene marrubiin, the compound the plant is known for, along with other bitter diterpenes, flavonoids, phenolic acids and a modest aromatic oil. Those bitters are also why horehound appears in digestive bitters and aperitif liqueurs - here, bitterness on the tongue is the active principle rather than a nutrient. And it is worth saying plainly that horehound candy is candy: mostly sugar, with just enough herb in it to taste medicinal.

In the kitchen

Culinary use is basically one recipe - horehound candy - plus tea, syrup, a bit-part in bitters and liqueurs, and old English horehound ale. It is far too bitter to cook with like a normal herb.

Horehound has one famous culinary use and it is a confection. Horehound candy is made by simmering a strong tea of the dried leaf, straining it, boiling it with sugar - traditionally in a copper kettle - to hard-crack, then pouring it out to score into drops. The result is bitter-sweet and faintly menthol, somewhere between root beer, licorice and hops: a genuinely acquired taste that people either love or quietly put down, and a fixture of American general stores, Appalachian kitchens and Ozark candy makers for two centuries.

Beyond candy the uses are narrow but real. A tea of the dried leaf - a teaspoon to a cup, steeped covered for ten minutes - is bracingly bitter and almost always sweetened with honey. A syrup made from that decoction with honey or sugar is the traditional cough preparation and by far the pleasantest way to take it. Horehound flavors bitters and herbal liqueurs, and it was long brewed into horehound ale in England, a bitter country beer still made occasionally today. What it is not is a cooking herb: do not reach for it the way you would for oregano or thyme.

Traditional & historical uses

One of the oldest cough herbs, used as an expectorant since antiquity. Europe's EMA accepts it as a traditional herbal medicine for cough with a cold, mild indigestion and poor appetite - a status resting on long use, not trial evidence, and the US FDA dropped it from OTC cough products in 1989 for that reason. Real cautions in pregnancy, liver and bile disease, heart and diabetes.

Horehound is one of the very few kitchen-garden herbs with a continuous, documented medicinal record running from antiquity to the pharmacy shelf. Dioscorides described it for chest complaints in the first century, it runs through the Anglo-Saxon and medieval herbals, and it is still an ingredient in commercial cough drops. Its signature constituent is marrubiin, a bitter labdane diterpene generally credited with the expectorant effect, alongside other bitter principles and flavonoids.

Traditional use, and what the regulators say. Horehound is used as an expectorant - loosening thick chest mucus so a cough becomes more productive - and as a bitter digestive for bloating, flatulence and poor appetite. The European Medicines Agency's herbal committee accepts both as traditional-use indications: as an expectorant in cough associated with a cold, and for mild dyspeptic complaints such as bloating and flatulence and for temporary loss of appetite - telling you to see a doctor if a cough runs past a week, or the digestive complaint past two. Read that classification for exactly what it is. A traditional-use registration means the herb has plausibly and safely been used this way for a very long time; it explicitly does not mean the effect has been demonstrated in clinical trials. Horehound was also once permitted as an over-the-counter cough ingredient in the United States, and the FDA removed it in 1989 for lack of evidence of effectiveness as an expectorant. Same herb, two regulators, two honest answers to two different questions - and it stayed on the shelves as a candy.

What the evidence actually shows. Laboratory and animal work on marrubiin and horehound extracts reports anti-inflammatory, antioxidant, antispasmodic, vasorelaxant and blood-sugar-lowering activity, and the phytochemistry is well characterized. Human trials are few, small and generally of poor quality, and there is no good controlled evidence that horehound eases a cough better than an equally sweet syrup of something else - soothing a throat with a demulcent syrup is itself part of the effect. The bitter-digestive use is at least mechanistically reasonable, since bitterness on the tongue genuinely stimulates digestive secretion. Treat horehound as a pleasant traditional remedy with a plausible story, not as a proven treatment.

Cautions that matter. Candy, lozenges and ordinary tea are widely used and considered safe. Medicinal-strength doses are a different question. Horehound is a traditional emmenagogue used to bring on menstruation, so medicinal amounts are not for pregnancy, and it is not recommended while breastfeeding. Large doses have been reported to disturb heart rhythm, and the herb can lower blood pressure and blood sugar - which matters a great deal if you take medication for either. The EMA contraindicates it outright in bile-duct obstruction, cholangitis, liver disease and ileus and in allergy to horehound or other Lamiaceae (mint-family) plants, tells anyone with an active peptic ulcer or gallstones to check with a doctor first, and does not recommend it under age 12. It stimulates gastric acid, so avoid it with gastritis or ulcers, and large amounts are laxative. None of this is medical advice; it is background on a traditional herb, and anything beyond a cough drop is a conversation to have with a clinician.

History

Prescribed by Dioscorides for the chest, carried through every European herbal, planted in colonial American dooryards and sold by the pound as candy in general stores - and now, having escaped those gardens, a rangeland weed across the dry West and a declared weed in Australia.

Horehound is one of the oldest herbs in continuous human use. It appears in ancient Egyptian and Greek practice, and Dioscorides recommended it for coughs and chest complaints in the first century AD, with Pliny listing it among the most useful plants known. The Latin marrubium gave the genus its name, its own origin argued over ever since. The English name has nothing to do with dogs: 'horehound' comes from Old English har hune, roughly 'hoary plant', for the white woolly leaves - though the old alternative name houndsbane and a much-repeated Egyptian 'seed of Horus' etymology have kept the confusion alive for centuries.

It ran straight through the medieval monastery gardens and the great early-modern herbals - Gerard, Culpeper, the lot - and crossed the Atlantic with the first English colonists, who planted it in dooryard gardens as the household cough remedy. Nineteenth-century American general stores sold horehound drops by the pound, and the candy is still made in the Appalachians and the Ozarks by families who simply never stopped.

The last chapter is less charming. Escaping from those same gardens and from deliberate plantings, horehound naturalized across North and South America, southern Africa, New Zealand and above all Australia, where it is a declared pest over enormous areas of rangeland - livestock avoid the bitter foliage and graze everything around it, which is exactly how it takes over. In the American West it is now a widespread rangeland and roadside weed, noxious-listed on the Navajo Nation and rated invasive in California, though no US state has put it on a noxious-weed list. A well-behaved dooryard herb and an invasive plant can be the same organism in different ground.

Troubleshooting

Nearly every horehound failure is too much water, too much food, or too much shade. The other common complaint is the opposite problem - seedlings everywhere - which is a deadheading failure.

Plant collapsed, blackened at the base, or never came back in spring: almost always wet soil rather than cold. Horehound rots in ground that stays saturated over winter. Move it to a raised, gritty spot, stop watering it, and keep mulch pulled back from the crown.

Floppy, sprawling, pale growth with weak flavor: too much water, too much fertilizer, or too much shade. This herb is at its best half-starved in full sun. Do not feed it, shear it back by half, and move it if it is shaded.

Seed never came up: normal - it is slow and erratic. Allow a full three weeks at 65-75°F, keep the surface just damp, sow no deeper than ¼ inch, and cold-stratify a month in the refrigerator before the next attempt. Or take a cutting from someone else's plant and skip the problem.

Seedlings coming up all over the garden: the flowers were allowed to set seed. Hoe them off while small, and next season cut the flowering stems as the whorls fade. If you cannot commit to that, grow the plant in a container.

Prickly, tough stems and a bitter dust when you strip them: you harvested after flowering. Cut before the flowers open next time.

Plant going woody, sparse and unproductive after a few years: normal - it is short-lived. Shear it hard, and start a replacement from a cutting or division.

Fine stippling or webbing on the leaves in a hot dry spell: spider mites, easy to miss in the woolly foliage. Hose the plant down and check the undersides.

Growing across climates

Hardy through zone 4 and reliable to zone 8; cold is rarely the limit, winter wet is. In dry-summer western climates it grows too well - that is where it has naturalized into range - and in the humid Southeast it usually rots.

Horehound's limits are about moisture, not temperature. It is reliably hardy through zone 4 and is reported hardy to zone 3, but in every zone the plant that dies is the one sitting in wet ground, not the one that got cold.

Zones 4-5: fully hardy and easy given sharp drainage. Site it high and gritty, keep winter mulch off the crown, and expect it to be a little slower to fill out.

Zones 6-8: the comfortable middle, and where it behaves most like the classic dooryard herb - a hard cut in early summer and often a lighter second cut in late summer.

Humid Southeast (roughly zones 7-9 east of the Mississippi): the difficult case. Summer rain, heavy soil and warm wet nights bring crown rot and mildew, and plants are often short-lived. Grow it raised and gritty, or in a pot, and plan to replace it more often than the books suggest.

Dry-summer West (zones 8-10 in California, the Great Basin and the Southwest): horehound thrives here - which is precisely the problem. This is the climate where it has naturalized into grassland, scrub and overgrazed range, and where weed authorities treat it as invasive. If you garden here, grow it in a container or deadhead without exception, and do not plant it anywhere adjoining open land.

Everywhere: full sun, poor ground, nothing on an irrigation line, and the flowers cut before they seed.
