Garden Cress
Leaves, shoots, seeds and flowers are edible. Not watercress (Nasturtium officinale) or upland cress (Barbarea verna), both also sold as 'cress'. Eat only seed sold as food or untreated for sprouting - garden seed may be fungicide-treated - and sprouted seed carries the usual raw-sprout risk. Leaves are very high in vitamin K: keep intake steady on warfarin. Like other brassicas it is goitrogenic. Medicinal seed doses are a documented abortifacient - not in pregnancy; leaf in a salad is food.
Overview
The fastest edible plant there is: it sprouts in two days, gives a cuttable microgreen in a week, and full peppery salad leaves in three to four weeks. It grows on damp paper towel with no soil at all, which makes it the classic first crop for a child - and it bolts nearly as fast as it grows, so the whole method is to keep sowing.
Garden cress (Lepidium sativum) is the quickest edible plant most people will ever grow. Seed put down today has sprouted by Thursday, is a cuttable microgreen inside 7-10 days, and is a bed of full peppery salad leaves in three to four weeks. That speed is the whole appeal. It is the crop to sow with a child who wants to see something happen, the crop for a gardener who has run out of patience, and the crop that fills a gap in a bed while something slower gets going.
It is a cool-season brassica with a hot mustard bite, and it has one famous trick: it does not need soil. Scattered thickly on damp paper towel, cotton wool, or a fibre mat on a windowsill it germinates and grows to cutting size on the water alone - the schoolroom experiment that has introduced generations of people to gardening, and a perfectly good way to have fresh greens in January. Outdoors it behaves like arugula's faster, blunter cousin: cool weather makes it tender, heat makes it fierce and sends it to flower, and the answer to both is simply to sow another patch every week or two.
Do not confuse it with the other cresses. Watercress (Nasturtium officinale) is an aquatic perennial that wants running water; upland or land cress (Barbarea verna) is a hardy biennial rosette. Garden cress is neither - it is an ordinary fast annual you sow in ordinary ground, and it is by far the easiest of the three.

Damping-Off High
A seedling rot that collapses young desert marigold seedlings sown too thickly or kept too wet in cool conditions - a minor issue easily avoided by lean, well-drained sowing and careful watering.
Watch for: Seedlings that fail to emerge or collapse at the soil line soon after germinating, and thin, patchy establishment in cold wet conditions.
Prevent: Sow into warm-enough, well-drained, moist (not soggy) soil with good seed-to-soil contact, and don't sow too deep or too early into cold ground.
Treat: None for affected seedlings; reduce watering, improve drainage and airflow, and resow more thinly if needed.
The number one failure of the indoor tray method, because a paper-towel or mat sowing is warm, crowded and permanently wet - exactly the conditions for it. Water from the base rather than over the tops, keep the mat damp rather than swimming, and give the tray some air movement. Note that the white fuzz alarming most first-time growers is usually cress's abundant root hairs, not mould: root hairs ring each root evenly and vanish when misted, mould spreads in grey patches and smells sour.
Slugs & Snails Medium
Slugs and snails are nocturnal mollusks that rasp ragged holes in soft leaves, shear off seedlings at ground level, and chew into ripe fruit that touches the soil. They feed at night and in the early morning and spend the day hidden under boards, pots, dense mulch, leaf litter, and low foliage, becoming active in exactly the cool, damp, shaded conditions that suit young plants. Damage is heaviest in wet spells and on tender spring growth: a single wet week can erase a row of seedlings while an established, tough-leaved plant of the same species is barely marked. They lay clusters of small pearly eggs in damp soil and under debris, so a garden with plenty of cover carries a resident population year after year rather than being invaded from outside.
Watch for: Irregular ragged holes chewed out of the middle of leaves and along the edges - not the clean-edged cuts a caterpillar leaves. Seedlings that vanish overnight, or that are cut off at soil level with nothing left behind. Silvery dried slime trails across leaves, soil, pots, and paving in the morning: this is the giveaway that tells you it was mollusks rather than an insect. Chewed pits in ripe fruit, especially where it rests on the ground. Damage that shows up on the lowest, dampest leaves first and gets worse after rain or evening watering. Turn over a board, an upturned pot, or a clump of dense mulch during the day and look for the animals themselves sheltering in the cool underneath.
Prevent: Take away the daytime shelter first: lift boards and upturned pots, clear piles of debris, keep dense mulch pulled back from crowns and stems, and give crowded plantings enough airflow to dry out. Water in the morning rather than the evening so the surface is dry by the time they come out. Copper tape around containers and raised beds gives them a shock they will not cross, and it is the one barrier that reliably works. Get plants past the vulnerable stage quickly - start seedlings in pots and set them out at a decent size rather than direct-sowing into a cold wet bed, since most plants stop being worth defending once the leaves toughen. Leave the ground beetles, frogs, toads, and ground-feeding birds alone, because they eat mollusks all night for free and broad-spectrum slug pellets kill them too. Where thick-leaved or resistant varieties exist for what you are growing, they take far less damage.
Treat: Hand-picking works and costs nothing: go out an hour after dark with a headlamp, drop what you find into soapy water, and repeat nightly for a week or two - persistence is what wins, not any single product. Shallow beer traps sunk to soil level catch them too, but need emptying and refilling daily to be worth anything. Iron-phosphate bait is the standard control and is far lower-risk around pets and wildlife than the old metaldehyde products, but it is not harmless: many formulations include EDTA, and a dog that eats a quantity of pellets can develop iron toxicosis. Scatter it thinly per the label, never in piles, and keep dogs off a baited bed. Clear fallen foliage and debris in autumn, where the eggs are laid. In a wet climate this is a population you manage each season rather than one you eradicate - and on most established plants light grazing is cosmetic and needs nothing at all.
A soft, dense, permanently damp cress stand is close to ideal slug habitat, and a patch can be shredded overnight in wet weather. Because the crop is finished in three weeks, getting the stand through its first week is the whole battle - and an indoor tray sidesteps the problem entirely.
Flea Beetles Medium
Flea beetles are tiny dark beetles - often shiny black or bronze, rarely more than a couple of millimeters long - with enlarged back legs that let them spring away like fleas the moment you lean in. The adults chew countless small round pits and shot-holes through leaves, giving the foliage a peppered, buckshot-riddled look. They overwinter as adults in leaf litter, hedgerows, and crop debris, emerge hungry in spring, and are worst in warm dry spells. The damage is mostly a seedling and transplant problem: a small plant with a few leaves can be checked, stunted, or killed outright, while the same plant shrugs them off once it is large and growing strongly. Different species specialize on different plant families, so the beetles hammering your brassicas are not the ones on your nightshades. Some species also have larvae that feed on roots and tubers underground.
Watch for: Dozens of pinhead-sized round holes peppered across the leaves, thickest on the youngest, most tender growth. Tiny beetles that spring away as you brush the plants or lean in for a closer look - that jump is the identification. Seedlings that go lacy and stop growing, and transplants that sit and sulk instead of taking off. Damage heaviest in warm, dry weather and along the edge of a bed nearest weedy ground or last year's crop debris. On root crops, shallow narrow grooves or channels scarring the skin at harvest, from larvae feeding underground.
Prevent: Floating row cover or fine insect mesh, laid over the bed from the day of sowing or transplanting and sealed at the edges so nothing can walk in underneath, is the single best defense - and on the crops they favor it is close to essential. Leave it on until plants are large and growing strongly, or until flowering on anything that needs pollinating. Push growth: a well-watered, unchecked plant outgrows the damage, so the whole game is getting seedlings through their vulnerable weeks fast. Keep beds weed-free, since related weeds host the beetles alongside your crop, and clear crop debris at the end of the season where the adults overwinter. Rotate away from a bed that grew a related crop last year. Where you can, shift sowing dates - cooler-season and fall plantings often miss the peak of adult feeding entirely.
Treat: Row cover and healthy fast growth carry most crops through, and on an established plant the damage is usually cosmetic and needs nothing at all. Where a young planting is genuinely being stripped, kaolin clay coats the leaves and deters feeding, and spinosad will knock the beetles back. Spinosad is acutely toxic to bees while the spray is still wet - apply it at dusk when bees are not flying, never onto plants in flower, and follow the product label. Anything you spray must be labeled for the plant you are treating, and you must observe its pre-harvest interval on a crop you are picking. Yellow sticky traps are useful for telling you when the beetles have arrived. Where the damage falls on the part you eat, harvesting young often beats them outright; where you are growing for a root or a fruit, leaf damage can simply be tolerated. Larvae feeding underground cannot be reached by a foliar spray, so rotation and clean beds are what work against those.
The main outdoor pest, since cress is a brassica and the damage lands squarely on the leaf you eat. The crop's speed is most of the defence - a sowing cut at two weeks is often gone before beetles find it - but insect mesh laid from the day of sowing is the reliable answer, and spraying a salad leaf you will cut in a fortnight is rarely worth it. Trays grown indoors never see them.
Aphids Low
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
Rarely a real problem on a crop this fast, but they hide deep in a crowded stand and are easy to miss until the leaves are in the bowl. Wash cress thoroughly before eating rather than spraying it, and skip the fertiliser - soft overfed growth is what breeds them.
Cabbage Worms & Loopers Low
The brassica caterpillar complex: velvety green imported cabbageworms (larvae of the white cabbage butterfly) and inch-worming cabbage loopers (a moth larva). Both chew large ragged holes through the leaves, then work into whatever folds up at the center - head, curd, sprout, or growing crown - fouling it with green pellet droppings. Fast leaf crops are usually cut before the damage matters; slow heading crops suffer most. Nasturtium carries the same mustard-oil chemistry that cues the butterflies to lay, so it hosts them too and is often planted nearby as a decoy.
Watch for: Ragged holes in the leaves, dark-green frass in the crown, and green caterpillars that match the leaf and hide along midribs and leaf undersides. White butterflies fluttering low over the bed mean eggs are going down now - look under the leaves for the small pale-yellow eggs, laid one at a time rather than in clusters.
Prevent: Floating row cover from sowing or transplant is the near-complete fix - it stops the adults ever laying. Seal it at the soil edges and lift it only to weed or harvest. Otherwise check leaf undersides twice a week, rub off the eggs, and hand-pick the caterpillars. Let dill, cilantro, or other umbels flower nearby to feed the parasitic wasps that do this work for you.
Treat: Bt (Bacillus thuringiensis kurstaki) is the one to reach for first: it affects only caterpillars and is safe around bees, parasitic wasps, and hoverflies. Spinosad also works, but it is not caterpillar-specific - while the spray is still wet it is toxic to bees and to the parasitic wasps that hunt cabbage worms for you. If you use it, spray at dusk so it dries before bees are out, and never wet open flowers, including flowering companions like dill or nasturtium. Follow the label for both. On a small planting, hand-picking and rubbing off eggs is enough on its own.
Cress carries the mustard-oil chemistry that cues cabbage whites to lay, but a three-week crop is usually cut long before caterpillars amount to anything. Hand-picking is the entire treatment here; look the leaves over before they go in a salad.
White Rust Low
A fungal-like disease (Albugo) of brassicas and other crucifers, common in cool, wet weather. It produces raised, shiny, chalky-white blister-like pustules on the undersides of the leaves, with yellow blotches showing through on the upper surface, and in bad cases it swells and distorts stems, shoots and flowering growth.
Watch for: Shiny white raised blister-pustules on the undersides of the leaves, yellow spots or blotches on the upper surface above them, and thickened, swollen or distorted shoots and stems where infection is heavy.
Prevent: Space and thin for airflow, water at the base and in the morning so the foliage dries, rotate crucifers, and clear infected leaves and debris rather than leaving them standing in the bed.
Treat: Strip and destroy affected leaves promptly, and harvest ahead of a prolonged wet spell - the crop is usually still perfectly usable if you catch it early. Copper can protect new growth where pressure is high through a long wet season.
Turns up on garden cress in cool wet spells like it does on other crucifers, showing as chalky white blisters on the leaf undersides. It seldom gets far in a crop harvested this young. Strip marked leaves, cut the patch and sow again rather than treating it.
Holly Leaf Miner Low
The larvae of small flies that tunnel between the upper and lower surfaces of a leaf, leaving winding pale trails and translucent blister-like blotches. Because the larva lives inside the leaf, sprays rarely reach it. On an ornamental or an established plant the damage is cosmetic; on a leafy crop it is a direct hit on the part you eat.
Watch for: Squiggly white or tan tunnels and translucent blister patches inside the leaves, sometimes with a tiny maggot visible when a leaf is held up to the light, and small clusters of white eggs lined up on the leaf undersides.
Prevent: Float row cover or fine mesh over the crop from sowing so the adult flies cannot reach the leaves to lay, crush egg clusters on the undersides when you find them, and clear the weed hosts nearby - lambsquarters, chickweed and wild dock are the usual reservoirs. Avoid broad-spectrum sprays, which kill the parasitic wasps that do most of the real control.
Treat: Pick off and destroy mined leaves before the larvae mature, and do not compost them - the larva is inside the mine, so removing the leaf removes the insect. Sprays rarely reach it. On a plant that regrows fast, a hard cutback forces clean new growth, and row cover then protects the fresh flush.
Cosmetic, but the winding pale trails ruin the look of a salad leaf, and the larva is inside the leaf where nothing you spray will reach it. Pick off mined leaves and bin them; cutting the patch young usually stays ahead of it.
Cutworms Low
The soil-dwelling larvae of night-flying moths. They spend the day curled just under the surface and come out after dark to chew through young stems at soil level, felling seedlings and transplants outright - a toppled plant lying beside its own stump is the signature. Some species also climb to gouge and notch emerging shoots and spears. They are worst in freshly worked ground, in beds that were weedy or grassy the year before, and on the first plantings of spring.
Watch for: Seedlings and transplants toppled at the soil line overnight, or shoots chewed and notched near the base, with the severed tops left lying beside the stumps. Dig an inch down within a few inches of the damage and you will usually find the culprit: a plump, dull gray-brown caterpillar that curls into a C when touched.
Prevent: Push a cardboard, foil or tin-can collar an inch into the soil around each seedling and transplant so the stem cannot be reached. Cultivate the bed a couple of weeks before planting to expose the larvae to birds and drying, and clear grassy weeds and debris, which is where the moths lay their eggs.
Treat: Dig around each fallen plant and destroy the caterpillar - left alone, one cutworm will fell another plant every night. Replant the gaps with collars fitted. Hand-picking after dark with a flashlight works well on a small bed, and a fast-growing crop soon outgrows the vulnerable stage.
Occasional in a spring sowing, and disproportionately annoying because a cress stand is so short-lived that losing a patch of seedlings costs you the whole planting. Clear weedy ground before sowing; the fix is usually just to resow, which takes a week.

Sold for windowsill sprouting as much as for garden sowing, and fast in the way curled cresses generally are - treat it as a standard curled type from a farm-maintained line rather than as a measurably quicker one.
Broad, deeply puckered and crumpled spoon-shaped leaves, thick-textured and dark green.
A distinctive broad-leaved selection with heavily puckered, spoon-shaped leaves and a reputation for being slower to bolt than most cresses - useful where spring warms quickly and the frilled types run to flower in a fortnight. Handsome enough to earn a place in a salad bed on looks alone, and it holds picking quality longer than it has any right to.
Grow
Direct sow thickly a quarter inch deep as soon as the ground can be worked, keep the surface damp, and resow every 7-14 days. Indoors it grows on a damp mat, paper towel or cotton wool with no soil at all, year round on any bright windowsill.
Cress is direct sown, always - it is far too fast and too fond of cool soil to bother starting under cover, and its taproot resents transplanting. Sow as soon as the ground can be worked in spring, about 1/4 inch deep, in a band or short row rather than neat stations: this is a crop you cut in handfuls, so scatter seed thickly (roughly 10-15 seeds per foot if you want full-size plants) and expect to shear the stand rather than tend individuals. Full sun in cool weather, light afternoon shade once it warms, and any ordinary soil that stays evenly moist will do. It needs almost no fertiliser; a three-week crop simply doesn't have time to be hungry.
The indoor method is the one worth learning. Line a shallow tray or saucer with damp paper towel, cotton wool, or a coir mat, scatter seed thickly across it so the seeds are nearly touching, and keep it on a bright windowsill at around 60-70°F. It sprouts in two to three days and is ready to cut with scissors in 7-10 days. No soil, no drainage holes, no season - this works in February on a kitchen counter and is the reason cress is the standard classroom plant. Sow a fresh saucer each week and you have salad all winter.
Outdoors, the calendar is the only thing to plan. Cress runs to flower quickly in warmth and long days, so a single big sowing gives you one glut and then a bed of bolting stalks. Instead sow a short row every 7-14 days from early spring, stop when summer heat arrives, and start again in late summer for the best crop of the year.
Care
Water is the entire care programme: keep it evenly moist and the leaves stay tender and pleasantly peppery, let it dry out and they turn fiery, bitter and bolt within days. Beyond that, shade it in warmth and keep sowing.
There is really only one rule: never let it dry out. Garden cress is shallow-rooted, thin-leaved and finished in a month, so it has no reserves and no ability to recover from a check. Dry soil for a day or two turns the flavour from a pleasant mustard bite into something genuinely harsh, and it pushes the plant straight into flower. Water before the surface dries rather than after, water in the morning, and mulch lightly outdoors if the bed dries fast. Indoor trays need topping up daily, ideally by adding water to the base rather than pouring over the tops.
Everything else is minor. Skip the fertiliser - a three-week leaf crop in decent soil needs none, and a heavy feed only breeds aphids. Give light afternoon shade once daytime temperatures push past about 75°F, which buys you a week or two more of tender leaves. Outdoors, cover a spring sowing with insect mesh if flea beetles are a problem where you garden; indoors nothing bothers it at all. And accept that the plant will bolt on its own schedule and no amount of care will stop it - the answer is never to nurse an old patch but to have a new one already coming.
Harvest
Three harvests from one plant: shear the microgreen at 7-10 days, cut baby leaf at 2-3 weeks, take full leaves at 3-4, and eat the flowers and green pods when it bolts. Cut with scissors above the crown and most stands regrow twice.
Cress gives you a choice of harvests rather than one moment of ripeness. At 7-10 days the stand is 1-2 inches tall with its seed leaves open and the first true leaf showing: shear it just above the mat with scissors and you have classic mustard and cress, mild and grassy-peppery. At 2-3 weeks the true leaves are 2-3 inches and the flavour has come up to a proper mustard bite - cut an inch above the crown and the patch usually regrows for a second and sometimes a third cutting. At 3-4 weeks you have full 4-6 inch leaves, peppery and slightly coarser, and you can either shear the lot or pick outer leaves and leave the centre growing.
Cut in the cool of the morning and use it the same day; cress wilts quickly and does not improve in a bag. The clock on the whole business is bolting: once the centre of a plant starts to elongate, the leaves sharpen from peppery to genuinely fiery within days. That is your signal to cut everything worth having. It is not a total loss when you miss it, though - the tiny white flowers and the flat green seed pods that follow are both edible, the pods carrying a sharp horseradish-like heat that is excellent scattered over a plate.
Storage
Cress does not store, and does not need to - it is faster to grow another tray than to keep the last one. A few days in the fridge wrapped in a damp towel is the limit; it will not dry or freeze, but the seed keeps for years.
Garden cress is the least storable green in the garden and the one that cares least, because a replacement is only a week away. Cut leaves keep about 2-4 days in the fridge, and only if you treat them properly: rinse, spin or pat thoroughly dry, then wrap loosely in a slightly damp paper towel inside a bag or box. Wet leaves go to slime within a day. A microgreen tray keeps better uncut than cut, so leave it growing on the windowsill and snip what you need.
It does not preserve. Drying destroys the volatile mustard compounds that are the entire reason to eat it, leaving green flakes with no flavour, and freezing turns the leaves to mush. There is no cress pesto tradition worth defending either - the bite disappears with processing. What does store is the seed: kept cool, dark and dry it stays viable for four or five years, so a single seed packet or one plant left to pod supplies an awful lot of future sowings. Soaked seed for eating keeps its gel for a day or two in the fridge, no longer.
Propagation & seed saving
About as easy as seed saving gets: an annual that flowers and pods in the same season, largely self-pollinating, with pods that dry fast and thresh with your fingers. One plant left standing supplies years of sowings.
Garden cress is a genuine never-buy-seed-again plant. Unlike its biennial cabbage-family relatives it flowers and sets seed in the same season - flowering six to eight weeks from sowing, with ripe pods a few weeks behind that - so there is no overwintering to manage. Leave a few plants of one variety standing when the rest bolts, let the small white flowers pass into flat round pods, and cut whole stalks into a paper bag as soon as the pods turn tan. They shatter readily, so cut a little early and finish drying indoors. Crush the dry pods between your hands and winnow out the small red-brown seed.
It is largely self-pollinating, so saved seed comes reasonably true if you grow one variety at a time. Because a single plant produces thousands of seeds, one bolted row will supply a household for years - and any pods you miss will self-sow, giving volunteer cress next spring. That self-sowing is mild and easily managed: the seedlings are shallow and pull out in handfuls, and the plant does not persist or run. Seed stored cool and dry stays viable four to five years, and the same seed you save is the seed you soak and eat.
Nutrition
A genuinely nutrient-dense leaf for something so quick - vitamin K, vitamin C, vitamin A and folate at almost no calories - plus the brassica glucosinolates behind its bite. The seed is a different food: high in protein, oil and soluble mucilage fibre.
For a plant that takes three weeks, the leaves are surprisingly worth eating. Garden cress is very low in calories and a good source of vitamin K, vitamin C, vitamin A (as beta-carotene) and folate, with useful calcium, iron and manganese for a leaf. Like every brassica it carries glucosinolates - in cress mainly the one that releases benzyl isothiocyanate, which is exactly the peppery heat you taste. Because cress is eaten raw and eaten young, those heat-sensitive vitamins and compounds arrive intact, which is not true of brassicas you always cook.
The seed is a separate food with a separate profile: roughly a quarter protein, high in oil, and rich in a soluble mucilage fibre that makes it gel like chia within minutes of soaking. It is genuinely a good source of iron, though you should treat the figures circulating online - the widely repeated claim that it holds twelve times the iron of spinach - with real scepticism, since published composition tables vary enormously and the popular numbers trace back to marketing rather than to food-composition databases. Two honest practical notes: cress leaves are high enough in vitamin K that anyone on warfarin should keep their intake steady rather than lurching, and like other brassicas it contains goitrogens, which matters only if you have an untreated thyroid condition and eat a great deal of it.
In the kitchen
Eaten raw, essentially always: egg-and-cress sandwiches, scattered over soup, folded into salads, snipped onto potatoes and fish. The peppery mustard heat vanishes with cooking, so it goes on at the last second - and the soaked seed is a food in its own right.
Cress is a raw ingredient and a finishing one. Its most famous role is British: egg and cress, hard-boiled egg mashed with mayonnaise and a thick layer of freshly snipped mustard-and-cress on soft white bread, a sandwich that has outlived every food fashion since. Beyond that it works exactly where you would use a peppery herb rather than a salad leaf - snipped over soups and potato dishes, folded through egg and cheese, scattered on smoked fish, laid across open sandwiches in the Dutch and German manner (tuinkers, Gartenkresse), or stirred into yoghurt and labneh in Middle Eastern cooking. Larger leaves go into mixed salads where their heat plays against something sweet or fatty - avocado, beetroot, orange, a good oil.
The rule that matters is add it off the heat. The mustard-oil compounds that give cress its bite are volatile and largely destroyed by cooking, so a cress soup made the way you would make a watercress soup tastes of very little. Stir it in at the table instead. The other thing worth knowing is the seed, sold as halim, aliv or habb al rashad: soaked in water or milk it swells into a gel and goes into Indian ladoo and kheer, Iranian and Gulf drinks, and porridges given to new mothers - a completely different ingredient from the leaf, and one many gardens grow the plant without ever discovering.
Traditional & historical uses
The seed, not the leaf, carries the tradition: habb al rashad in Middle Eastern medicine, halim in Ayurveda and Unani, used for cough, as a postpartum tonic and galactagogue, and for fracture healing. Garden cress leaves have only a light folk history - a spring tonic and appetite stimulant, much like other pungent greens. The serious tradition belongs to the seed, which under the names habb al rashad (Arabic), halim or aliv (Indian) and chandrashoor (Sanskrit) is a well-established remedy in Unani, Ayurvedic and Middle Eastern practice, and is still bought by the bagful in spice markets today.
Traditional uses: the soaked seed is taken as a demulcent and expectorant for cough, asthma and bronchitis, as a mild laxative (the mucilage swells like psyllium), as a postpartum strengthening food and galactagogue given to nursing mothers across India and the Gulf, as an iron tonic for anaemia, and - a persistent and specific tradition - as a poultice or food to speed fracture and bone healing. A hot poultice of ground seed is also an old remedy for sprains and rheumatic pain.
What the evidence actually shows: considerably less than the tradition claims. There is a substantial body of laboratory and rodent work reporting antioxidant, antimicrobial, bronchodilatory, hypoglycaemic, fracture-healing and diuretic effects, and the mucilage's laxative action is mechanically plausible and not really in dispute. Human evidence is thin: a handful of small, short, mostly single-centre trials, including one on milk production in lactating mothers that reported a benefit, and some review articles that place cress seed alongside fenugreek among traditional galactagogues. These studies are too small and too weakly controlled to establish anything, and no health authority recognises garden cress as a treatment for any condition. Treat the seed as a nourishing traditional food with an interesting research literature, not as a medicine that has been shown to work.
Cautions that matter. The seed has a documented traditional use as an abortifacient, and animal studies report antifertility, antiovulatory and teratogenic effects, so medicinal quantities of cress seed are not for pregnancy - a sprinkle of leaf on a salad is food and is not the issue. Like other brassicas it contains goitrogens that can interfere with iodine uptake, which is worth knowing if you have an untreated thyroid condition. The leaf is high in vitamin K, so keep intake steady if you take warfarin. Mucilaginous seed taken in quantity needs plenty of water, as any bulk laxative does. Brassica allergy is uncommon but real. History
One of the oldest cultivated greens: Persian before bread, Egyptian before the pyramids were old, Greek and Roman as a byword for keen wits. Later the humblest of English kitchen crops, and for a century the plant every schoolchild in the West grew first.
Garden cress is ancient. It was cultivated across Persia, Egypt and Mesopotamia long before the classical world, and Xenophon's Cyropaedia describes Persian boys carrying bread for their food and cress for a relish - the line often repeated online, that Persians ate cress before they had bread, is a garbling of that passage. The Greeks and Romans grew it steadily and made a proverb of it - eat cress was advice to sharpen a dull wit - and Pliny lists a formidable set of uses for it. Its Latin name, Lepidium, comes from the word for a scale, after the flat little seed pods. The confusion that dogs it began early too: the Romans applied nasturtium, 'nose-twister', to pungent cresses generally, and the name has since been handed off to two entirely unrelated plants.
In medieval and early modern Europe it settled into being the humblest and most reliable of kitchen crops - fast, cold-tolerant, sowable in a windowbox - and in Britain it fused with white mustard into the paired sowing sold to this day as mustard and cress. Its second life came from schools. Because it germinates on damp paper in two days and needs nothing but a window, cress became the standard classroom plant across Britain, Europe and North America through the twentieth century, the seedling in the saucer that showed a generation of children how a plant begins. It has also served science in the same role, as a fast germination bioassay for soil and water toxicity, and cress seedlings have been grown aboard spacecraft to study how roots find their way without gravity. Not bad for a weed you can harvest in a week.
Troubleshooting
Nearly every cress problem is water, light or heat. Bolting means warmth and long days; bitterness means dry roots; leggy pale seedlings mean too little light; fuzz on an indoor tray is usually root hairs rather than mould. Sow again rather than nursing a failing patch.
It bolted in three weeks: heat and lengthening days, and it is the plant's nature rather than your mistake. Sow earlier, shade it in warmth, favour the autumn crop, and above all keep resowing. Leaves fiercely hot and bitter: dry roots or heat stress, or leaves picked too old. Water before the surface dries and cut younger. Pale, stretched, floppy seedlings that fall over: not enough light - move a windowsill tray to the brightest window you have, and outdoors thin a stand that was sown ridiculously thickly. White fuzz around the seeds on an indoor tray: almost always the fine white root hairs that cress produces abundantly, which alarm every first-time grower. Root hairs are evenly distributed around each seedling's root and disappear if you mist them; true mould is grey or blue-green, spreads in patches, and smells sour. If it is mould, you are keeping the tray too wet with too little air.
Seedlings collapse at soil level in a tray: damping-off from standing water and stale air. Water from the base, use less, and give the tray some air movement. Nothing germinated: the surface dried out, which at this stage is fatal within hours, or the seed was buried too deep. Leaves peppered with tiny shot-holes: flea beetles, an outdoor brassica problem - cover the bed with insect mesh from the day you sow, and remember that indoor trays never get them. Slimy, chewed leaves and silver trails: slugs, which love a soft dense cress stand in damp weather. Cress everywhere next spring: pods you missed shattered and self-sowed. It is a mild self-seeder and the seedlings pull out in handfuls; leave the ones you want.
Growing across climates
A cool-season annual anywhere with a cool season, and an indoor crop everywhere else. Spring and autumn in the north, autumn through winter in the south, and a windowsill tray in any zone in any month - heat, not cold, is what ends it.
Cress is bounded by heat, not cold. It germinates in soil far too cool for most crops, shrugs off light frost, and keeps cutting under a cold frame long after tender things have gone - but it runs to flower fast above about 75-80°F and turns unpleasantly fierce with it.
Zones 3-5: its speed suits a short season perfectly. Sow from the moment the ground can be worked, keep going every 7-14 days, and use the cool summers here to sow right through midsummer where many crops stall. Zones 6-7: a quick spring crop that bolts as May warms, then a far better autumn crop from late summer that carries into winter under cover. Zone 8: flip the calendar - grow from mid-September through spring and treat summer as the off-season entirely. Zones 9-11: a cool-season crop on absolute dates, roughly October to mid-February, with afternoon shade at either end.
And then there is the answer that ignores the map altogether: because cress will grow to cutting size on a damp mat on a windowsill in ten days, every zone can grow it in every month. A tray on a kitchen counter in a Minnesota February or a Phoenix July produces exactly the same crop it produces outdoors in April. No other food plant in the catalogue is so completely independent of climate.
