Fava Bean
The beans, young pods, tender shoots, and flowers are all edible. IMPORTANT: people with the inherited enzyme deficiency G6PD (favism) can suffer a serious reaction to fava beans and must avoid them - see the Culinary section. For everyone else, eat the beans cooked.
Overview
The cool-season bean that breaks all the bean rules: cold-hardy, planted in fall or earliest spring, and finished before summer heat - plus it feeds the soil with nitrogen.
Fava beans (broad beans) are the odd one out in the bean world. Every other bean is a heat-loving summer crop; the fava is a cold-season legume that thrives in cool, even frosty weather and is ruined by summer heat. It's an ancient Old World crop - unrelated to the New World green beans - grown on stiff, upright, waist-to-shoulder-high plants for its big, buttery seeds, borne in plush-lined pods.
Because of that cool-season nature, the planting calendar is inverted: in mild-winter regions you plant in fall for overwintering plants and a spring harvest, while in cold regions you sow the instant the ground can be worked in spring, racing to finish before the heat. As a bonus, favas are excellent nitrogen-fixers and a favorite cover/green-manure crop - many gardeners grow them as much to feed the soil as to feed themselves. Eat the beans fresh and green, or dry them for storage.

General Botrytis gray mold (beyond the tulip-specific Tulip Fire) that rots aging flowers, damaged tissue, and stored bulbs in cool, damp, humid conditions.

Prevent: Good airflow and drainage, remove spent blooms and debris, avoid wetting foliage, and cure and store bulbs dry.

On favas this Botrytis disease is called CHOCOLATE SPOT (mainly Botrytis fabae) - reddish-brown 'chocolate' speckles peppering leaves, stems, and pods that enlarge to dark blotches in damp weather. It is the signature fava disease, the one to watch in a cool, wet spring; airflow and dry foliage are the main defenses.

A fungal disease (Uromyces) producing rusty orange-brown pustules on leaves; heavy infection defoliates plants and shrinks the crop, worst in warm, humid, wet-leaf conditions.
Watch for: Small orange-brown raised pustules, mostly on leaf undersides, ringed by yellow; leaves browning and dropping when severe.
Prevent: Grow resistant varieties, space for airflow, water at the base to keep leaves dry, and rotate beans on a 2-3 year cycle.
Treat: Remove the worst leaves early; sulfur or copper fungicide slows spread in a wet season. Late infections often still allow a harvest.
On favas rust often shows up as the weather warms near the end of the season, when the crop is winding down anyway.

Direct sow big seeds 1-2 inches deep into cool soil - fall in mild zones, earliest spring in cold ones - and stake the tall plants.
Favas are always direct sown - the big seeds establish fast and don't like transplanting. Sow them 1-2 inches deep and about 4-6 inches apart in rows or blocks, in full sun and well-drained soil. Timing is everything and depends on your winters: where winters are mild (roughly zone 7 and warmer) sow in fall for overwintering plants that harvest in spring; where winters are hard, sow in early spring as soon as the soil is workable, well before your last frost, because favas need a long cool stretch and collapse in heat.
They germinate in cool soil (down to about 40°F) but slowly, so be patient and don't overwater cold ground. The plants grow tall - two to five feet - on hollow, brittle stems that flop, so plan to support them with stakes and twine around the bed or by planting in a solid block for mutual bracing. Favas fix their own nitrogen, so they need little to no feeding; rich nitrogen just grows leaves.
Care
Stake the tall stems, water steadily, and pinch out the aphid-prone growing tips once pods start - the one job that really pays off.
Fava care is light. Keep the plants supported so wind and rain don't lodge them, weed while they're small, and water evenly through flowering and pod-fill - a dry spell at bloom drops flowers and shrinks the crop. They need almost no fertilizer thanks to their nitrogen fixation.
The one signature task is pinching out the tops. Once the lowest flowers have set pods, snap off the top 4-6 inches of each stem. This does two things at once: it pushes the plant's energy down into filling the pods, and it removes the soft growing tips where black bean aphids (the fava's number-one pest) love to swarm - so it's both a yield booster and a pest control, and the pinched tips are a tasty green. Beyond that, watch for chocolate spot and rust in damp weather, and simply keep the crop moving toward harvest before summer heat ends its run.
Harvest
Pick pods young and plump for tender fresh beans, working up from the bottom - or leave them to blacken on the plant for dried favas.
Favas give you a choice of harvests. For fresh green beans - the tender, sweet, buttery prize - pick pods when they're plump and glossy and the beans inside are full-sized but still soft, before the pod turns leathery and the beans go starchy. The lowest pods ripen first, so work up the plant, picking every few days to keep it producing. You can also eat very young, finger-sized whole pods like snap beans, and the pinched shoot tips as a cooked green.
For dried beans or seed, leave the pods on the plant until they turn black, dry, and papery, then shell out the beans and finish drying them indoors. Dried favas store for years and make excellent soups and stews; set aside the biggest, best beans from your healthiest plants as next season's seed. Once summer heat arrives, the crop is finished - harvest everything and pull the plants (or cut them off at the base and leave the nitrogen-rich roots in the soil).
Storage
Fresh shelled favas keep days in the fridge or freeze well blanched; dried favas store for years in a jar.
Fresh favas are best eaten soon after picking - shelled beans keep only a few days in the fridge, and pods a bit longer. For the surplus, they freeze well: blanch the shelled beans briefly, cool, and freeze (many cooks also slip off the individual bean skins first, which is easier after blanching). Frozen favas hold their sweet, fresh quality for months.
Dried favas are one of the great storage legumes: fully dried and kept in a sealed jar somewhere cool and dark, they last for years, ready to soak and simmer into soups, stews, and purees. Always cook dried favas - they're not eaten raw. And remember to save seed: dried favas are their own planting stock, so a handful of the best beans replants next year's crop and cover crop for free.
Growing across climates
A cool-season crop everywhere: mild zones grow it through winter, cold zones sprint it in early spring, and hot summers end it in all - the reverse of summer beans.
Favas are all about avoiding heat. Zones 3-5: a spring crop - sow the moment the soil is workable and harvest in early summer before real heat; the plants take hard late frosts in stride. Zones 6-7: spring-sow early, or in the milder parts of zone 7 fall-sow with mulch for an overwintered crop and an earlier harvest. Zones 8-9: a fall-through-winter crop - sow in autumn, let the hardy plants grow through the mild winter, and harvest in spring before the heat; summer is impossible. Zones 10+: grow only in the coolest winter months on the same fall-sown pattern, and expect a short window, because favas simply won't tolerate sustained heat. Wherever you are, the rule is the mirror image of ordinary beans: grow favas in the cool, harvest before the heat.

Fava beans are a nutritional heavyweight, as legumes tend to be: high in plant protein and fiber, and an excellent source of folate, manganese, copper, iron, magnesium, and potassium, all for modest calories. Like other pulses they combine slow-digesting carbohydrate with protein, making them filling and steadying on blood sugar - a genuine staple food across the Mediterranean and Middle East for millennia.
Favas also contain notable amounts of L-dopa (levodopa), a precursor to the neurotransmitter dopamine, which has drawn research interest (including in the context of Parkinson's disease). This is a real, measurable compound - but it's also why anyone taking certain medications, particularly MAO-inhibitor antidepressants, should be cautious with large quantities of favas. For most people, favas are simply excellent, protein-rich food; cook them, and enjoy them as the cornerstone legume they've been for thousands of years.

Fresh green favas are a spring delicacy worth the labor: shell the beans from the pods, blanch them a minute, then pop each bean out of its tough individual skin to reveal the bright, sweet, buttery kernel inside. From there they shine simply - tossed with olive oil, lemon, and mint or pecorino; mashed onto toast; folded into risotto, pasta, or salads; or the young ones eaten raw with cheese in the Italian tradition. The pinched shoot tips cook up like spinach, and tiny whole pods can be cooked like green beans. Dried favas are the base of hearty soups, stews, Egyptian ful medames, and (skinned and ground) traditional falafel.
One serious note, briefly and honestly: a minority of people - most often of Mediterranean, Middle Eastern, African, or South Asian descent - have an inherited enzyme deficiency called G6PD deficiency, and for them eating fava beans (or even inhaling the pollen) can trigger favism, a dangerous breakdown of red blood cells. If you or a family member has G6PD deficiency, favas must be avoided entirely. For everyone else they're a wholesome food - just always cooked, never raw in quantity.
Propagation & seed saving
The simplest seed-saving there is: let some pods dry to black on the plant, shell out the beans, and you have next year's seed and cover crop.
Saving fava seed is as easy as growing a dried crop - because the dried beans are the seed. Leave some of your best pods on the healthiest plants until they turn black, dry, and papery, then shell out the large beans and finish drying them indoors until hard. Stored cool and dry, fava seed stays viable for several years, and the seeds are so big that a small handful plants a long row.
Favas are largely self-pollinating but do cross somewhat via bees, so if you grow more than one variety and want to keep them pure, separate them or grow just one kind at a time - for most home gardeners a little crossing hardly matters. Because favas double as a nitrogen-fixing cover crop, saving your own seed cheaply lets you sow them generously to improve the soil as well as to eat, turning one packet into a self-perpetuating supply.
Medicine
More cautionary tale than remedy: real L-dopa content gives favas genuine pharmacology - including the favism risk - so they're food to respect, not a medicine.
