Eggplant
Only the fruit is eaten. Leaves and stems carry solanine-family alkaloids; some varieties have small spines at the calyx, so handle the stem end carefully.
Overview
The most heat-loving nightshade in the garden, grown as an annual for glossy fruit - reward the patient with a long warm season and it produces for months.
Eggplant is the sun-worshipper of the nightshade family: a tender perennial from India and Southeast Asia grown as a warm-season annual, wanting even more heat than its cousins the tomato and pepper. Give it a long, hot season, full sun, and steady water, and each bushy plant delivers a steady flow of glossy fruit — but rush it into cold soil and it will sulk all summer.
Despite the name (early European varieties were small, white, and egg-shaped), eggplant comes in a rainbow of forms: heavy Italian globes for grilling and parmesan, slender Asian types that cook fast and never turn bitter, striped heirlooms, and mini fruits for containers. Botanically it's a berry, and the whole plant is grown for that one edible fruit — the leaves, like all nightshade foliage, are not for eating.

Flea Beetles High
Flea beetles are tiny dark beetles - often shiny black or bronze, rarely more than a couple of millimeters long - with enlarged back legs that let them spring away like fleas the moment you lean in. The adults chew countless small round pits and shot-holes through leaves, giving the foliage a peppered, buckshot-riddled look. They overwinter as adults in leaf litter, hedgerows, and crop debris, emerge hungry in spring, and are worst in warm dry spells. The damage is mostly a seedling and transplant problem: a small plant with a few leaves can be checked, stunted, or killed outright, while the same plant shrugs them off once it is large and growing strongly. Different species specialize on different plant families, so the beetles hammering your brassicas are not the ones on your nightshades. Some species also have larvae that feed on roots and tubers underground.
Watch for: Dozens of pinhead-sized round holes peppered across the leaves, thickest on the youngest, most tender growth. Tiny beetles that spring away as you brush the plants or lean in for a closer look - that jump is the identification. Seedlings that go lacy and stop growing, and transplants that sit and sulk instead of taking off. Damage heaviest in warm, dry weather and along the edge of a bed nearest weedy ground or last year's crop debris. On root crops, shallow narrow grooves or channels scarring the skin at harvest, from larvae feeding underground.
Prevent: Floating row cover or fine insect mesh, laid over the bed from the day of sowing or transplanting and sealed at the edges so nothing can walk in underneath, is the single best defense - and on the crops they favor it is close to essential. Leave it on until plants are large and growing strongly, or until flowering on anything that needs pollinating. Push growth: a well-watered, unchecked plant outgrows the damage, so the whole game is getting seedlings through their vulnerable weeks fast. Keep beds weed-free, since related weeds host the beetles alongside your crop, and clear crop debris at the end of the season where the adults overwinter. Rotate away from a bed that grew a related crop last year. Where you can, shift sowing dates - cooler-season and fall plantings often miss the peak of adult feeding entirely.
Treat: Row cover and healthy fast growth carry most crops through, and on an established plant the damage is usually cosmetic and needs nothing at all. Where a young planting is genuinely being stripped, kaolin clay coats the leaves and deters feeding, and spinosad will knock the beetles back. Spinosad is acutely toxic to bees while the spray is still wet - apply it at dusk when bees are not flying, never onto plants in flower, and follow the product label. Anything you spray must be labeled for the plant you are treating, and you must observe its pre-harvest interval on a crop you are picking. Yellow sticky traps are useful for telling you when the beetles have arrived. Where the damage falls on the part you eat, harvesting young often beats them outright; where you are growing for a root or a fruit, leaf damage can simply be tolerated. Larvae feeding underground cannot be reached by a foliar spray, so rotation and clean beds are what work against those.
Eggplant is flea beetles' favorite host - the single most important pest to manage here, and the reason to cover young plants. A big established eggplant tolerates them; seedlings do not. Keep the cover on until the plants are large and flowering.
Colorado Potato Beetle High
The signature potato pest: a rounded yellow-and-black-striped beetle whose humpbacked brick-red larvae can strip a plant's foliage in days, cutting yield hard.
Watch for: Yellow-orange egg clusters on leaf undersides, humpbacked reddish larvae feeding in groups, and skeletonized leaves from the top down.
Prevent: Rotate potatoes far from last year's bed (adults overwinter in soil and walk to the nearest nightshade); use straw mulch and row cover on young plants; interplant beans.
Treat: Hand-pick adults and crush egg masses daily - the single most effective home control; spinosad or Bt (tenebrionis strain) for heavy pressure. They develop resistance fast, so rotate any spray.
Eggplant is a preferred host alongside potato - if you grow both, expect this beetle and scout from transplant.
Verticillium Wilt High
A soil fungus (Verticillium dahliae and relatives) that enters through the roots and grows upward inside the water-conducting tissue, plugging it from within. The plant is not being eaten or rotted, it is being cut off from its own water supply, which is why the signature symptom is one branch or one side wilting and browning while the rest looks perfectly healthy. Cut into affected wood or stem and the tissue is streaked olive-green, grey or brown. The host range is enormous - maples, redbud, olive, tomato, potato, pepper, eggplant, strawberry and many more - and the fungus survives in soil for years as tough resting structures, so infected ground stays infected. Grasses and conifers do not get it.
Watch for: One branch, one limb or one side of a plant wilting, yellowing and browning in summer while the rest carries on normally - the lopsided pattern is the tell - and leaves that wilt and then hang on rather than dropping cleanly. Cut into affected wood and look for olive-green, grey or brown streaking along the grain; in a cut vegetable stem it shows as a ring of discolored dots. On vegetables, lower leaves yellow in a wedge from the margin inward, and the plant wilts at midday but recovers overnight in the early stages.
Prevent: There is no way to sterilize garden soil of it, so prevention is plant choice and plant vigor. Do not replant a susceptible species where one has already died of it. Grasses, conifers, ginkgo, hawthorn, hornbeam, honeylocust, oak and beech do not get it, and many vegetable varieties carry bred-in resistance - the V in a VFN code on the seed packet. Rotate susceptible vegetables on a long cycle and keep them off ground where the disease has shown. Buy clean stock, avoid wounding roots with spades and machinery, and keep woody plants steadily watered, mulched and only lightly fed, because a vigorous plant walls the fungus off far better than a stressed one.
Treat: There is no cure and nothing to spray. On a tree or shrub the aim is to keep it alive long enough to compartmentalize the fungus, which many plants manage for years: prune out dead and wilting branches well below the discolored wood, sanitize the pruners between cuts, water deeply through dry spells, mulch, and feed lightly rather than pushing it with a heavy feed. On vegetables, pull and bin affected plants rather than composting them, and move that crop to clean ground or to containers of fresh mix. Do not replant the same species where one has died.
One of eggplant's most serious diseases, and there are few resistant varieties, so rotation and clean soil are the main defenses. Growing in containers of fresh mix works where the ground is known to be infected.
Phytophthora Blight High
An aggressive water-mold disease (Phytophthora capsici) that rots roots, crowns, stems, and fruit; it can collapse a pepper planting within days in warm, waterlogged soil.
Watch for: Sudden permanent wilting, dark water-soaked lesions girdling the stem at the soil line, and white-moldy soft rot on fruit touching wet ground.
Prevent: Excellent drainage above all - plant on raised beds or mounds, never let peppers sit in standing water, use drip not overhead irrigation, and rotate on a long cycle away from peppers and cucurbits.
Treat: No cure once a plant collapses - remove it and improve drainage; the pathogen persists in soil for years, so prevention and rotation are everything.
Also attacks peppers, squash, and melons, so don't rotate eggplant to a bed those crops just left.
Aphids Medium
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
On eggplant, aphids also transmit viruses and cause leaf curling; controlling them protects against the virus as much as the feeding.
Spider Mites Medium
Spider mites are not insects but tiny sap-feeding arachnids, smaller than a grain of salt, and you almost always notice the damage before you notice them. They live on the undersides of leaves and drain the cells one at a time, which is why the leaf goes finely stippled with pale dots before it bronzes and dries. They breed explosively in hot, dry, dusty, still air - a generation can pass in a week at high temperature - so a barely visible population becomes a webbed, bronzed plant within a fortnight. Drought-stressed plants and plants wintered indoors in dry heated air are the classic hosts. Broad-spectrum insecticides make matters worse rather than better, because they kill the predatory mites and lady beetles that normally hold mites in check.
Watch for: Fine pale stippling or speckling across the upper leaf surface, as though the color had been sandblasted out of it, and later a dull bronze or rusty cast over the whole leaf. Delicate webbing across leaf joints, shoot tips, and undersides - that comes with a heavy infestation and means you caught it late. Leaves that dry, curl, and drop early while the plant looks thirsty no matter how much you water it. Hold a leaf over a sheet of white paper and tap it: the specks that fall and then start walking are mites. With a hand lens, look on the undersides for the mites themselves, pale or reddish, and their round translucent eggs. Damage that shows up first on the hottest, dustiest, most sheltered side of a plant, or on a pot sitting near a radiator indoors.
Prevent: Do not let plants get drought-stressed - that is the single strongest trigger, and a plant watered steadily through heat is far less likely to have a mite problem at all. Hose the foliage down, undersides included, during hot dry spells: it knocks mites off, washes away the dust they thrive in, and raises the humidity around the plant for a while. Indoors and under cover, keep the air from going hot, dry, and stagnant, wipe or rinse the leaves occasionally, and keep pots away from radiators and heating vents. Inspect any plant carefully before you bring it indoors for winter or set it among others, since mites almost always arrive on something else. Avoid broad-spectrum insecticides: they wipe out the predatory mites, lacewings, and lady beetles that do most of this work for you, and reliably leave you with a worse outbreak than you started with.
Treat: Start with water. A strong jet aimed at the leaf undersides, repeated every few days for a couple of weeks, knocks populations down and breaks the cycle - on many plants that alone ends it. On anything that regrows quickly, shearing back badly infested growth resets the plant to clean foliage. If it keeps building, spray insecticidal soap or horticultural oil directly onto the undersides where the mites actually live, and repeat every five to seven days for three rounds: contact sprays do not kill the eggs, so a single application always fails. Anything you spray must be labeled for the plant you are treating - follow the label and observe its pre-harvest interval on anything you eat. Predatory mites are an effective release in a greenhouse or on an indoor plant. Above all, correct the heat, dust, and drought stress that caused it, or the mites simply come back.
Eggplant is very mite-prone in hot, dry, dusty conditions, and a stressed, under-watered plant is the classic trigger. Watch the leaf undersides through midsummer.
Tomato Hornworm Low

Start indoors 8-10 weeks early on a heat mat, and transplant only into truly warm soil (65-70°F) well after the last frost.
Eggplant is almost always started indoors or bought as transplants — the season is too long and too warmth-dependent to direct sow outside the hottest zones. Sow ¼ inch deep in warm mix 8-10 weeks before your last frost, with bottom heat at 80-90°F (this is the single biggest factor in good germination). Once the skin turns dull or bronzed, the seeds have hardened and the flesh has gone bitter and spongy — a common first-timer mistake is waiting for fruit to get 'bigger.' Most types are best well before their maximum size.
Always cut with pruners, leaving a short stem stub, because eggplant fruit clings to the stem and the calyx often carries small spines. Eggplant is one of the garden's poorer keepers, which is why it's best eaten within a day or two of picking. It's actually sensitive to cold and keeps best at cool room temperature (around 50°F) rather than a cold fridge, which causes chilling injury — brown pitting and soft spots. If you must refrigerate, wrap loosely and use within 5-7 days, and don't cut it until you're ready to cook, as the flesh browns fast.
For real storage, cook first: roasted, grilled, or fried eggplant freezes well, as do prepared dishes like baba ganoush or eggplant parmesan. Slices can be breaded and frozen, and the surplus also pickles and ferments beautifully in Mediterranean and Asian styles. Salting sliced eggplant before cooking (to draw out moisture and any bitterness) is optional with modern non-bitter varieties but still improves texture for frying.
Growing across climates
A hot-climate crop: zone 3 is out of range outdoors, zones 4-5 must force it with early starts and season extension, and warm zones grow it for months or years.
Zone 3: not offered — eggplant needs more heat than the outdoor season provides there, so no sowing or transplant window is given; if you want to try it, grow it in a tunnel or greenhouse. Zones 4-5: a challenge — the season is short and cool for such a heat-lover, so start early indoors, choose fast small-fruited varieties (Asian types, 'Fairy Tale'), warm the soil with black plastic, and use row cover to trap heat; a greenhouse or tunnel helps a lot. Zones 6-8: good eggplant country with a long enough warm stretch for globe types. Zones 9-10: ideal — but extreme summer heat can pause fruit set, so plant in late winter and again in late summer for spring and fall crops. Zones 11+: eggplant is a genuine perennial here and can crop for several years from one plant if protected from any rare cold; grow through the cooler, drier months for best quality.

Eggplant is light on calories and nutrients by weight (it's mostly water and fiber) but earns its place through what it carries and how it eats. It provides good dietary fiber, some potassium, manganese, and B vitamins, and its skin is rich in nasunin, a purple anthocyanin antioxidant studied for protecting cell membranes — a good reason to leave the peel on when a dish allows.
The kitchen caution is fat absorption: eggplant's spongy flesh soaks up oil like nothing else, so a fried eggplant can carry far more fat (and calories) than a grilled or roasted one. Roast, grill, or steam it and eggplant stays a genuinely light, high-fiber food; deep-fry it and it becomes a delivery vehicle for oil. The nutrition is real but modest — grow it for the flavor and texture first.

Eggplant's magic is texture and its genius for absorbing flavor. Match the type to the job: dense Italian globes (Black Beauty, Rosa Bianca) hold up sliced for eggplant parmesan, moussaka, and grilling; slim Asian types (Ichiban, Ping Tung) have thinner skin, fewer seeds, cook fast, and never need salting — ideal for stir-fries, Sichuan 'fish-fragrant' eggplant, and quick grilling; mini and striped types (Fairy Tale) roast whole.
Three techniques unlock it: charring whole over flame until collapsed, then scooping the smoky flesh for baba ganoush and Middle Eastern dips; roasting thick slices with olive oil until silky and caramelized; and frying for crisp-outside, creamy-inside results (accepting the oil it drinks). Undercooked eggplant is unpleasantly spongy, so cook it fully — it should turn tender and creamy, never squeaky.

Save seed from an overripe fruit and it comes nearly true; eggplant self-pollinates, so isolation is easy.
Eggplant is a satisfying seed-saving crop because it's largely self-pollinating, so open-pollinated and heirloom varieties come true with only modest isolation (a bit of insect crossing happens, so 30-50 feet between varieties keeps seed pure). Save seed from a fruit left to grow well past eating stage — dull, browned, and hard, the opposite of a kitchen-ready eggplant. Scoop or grate the flesh, wash the heavy seeds free of pulp in water, dry them thoroughly on a plate, and store cool and dry, where they stay viable up to 4-6 years.
Save only from open-pollinated varieties (hybrid seed won't grow true), and pick your seed fruit from your healthiest, most productive plant. In frost-free climates you can skip seed entirely: eggplant is perennial and a favorite plant can be overwintered in a pot — cut back and kept warm and bright — for a head start and an exact clone next year.

History

Eggplant was domesticated in the region of India, Burma, and China more than two thousand years ago — the only major nightshade crop from the Old World rather than the Americas. Arab traders carried it west across the medieval Mediterranean (the names aubergine and brinjal both trace back through Arabic and Persian to Sanskrit), and it became a cornerstone of Middle Eastern, North African, and eventually Italian cooking.
Northern Europe was slower and warier: early Europeans, noting its nightshade family, called it mala insana — the 'mad apple' — and grew it as a curiosity, believing it caused madness or fever. Only as it moved into warmer Mediterranean kitchens did it win its culinary place. The English name comes from the small, white, egg-shaped varieties that early English speakers first encountered — a reminder of how many colors and shapes this one plant holds.
