Cattail (Typha latifolia) is the marsh plant everyone knows - tall strap leaves and the unmistakable brown, hot-dog-shaped seed spike - and it's among the most useful native plants in North America. Foragers have called it a 'supermarket of the swamp': the spring shoots are a crisp vegetable ('Cossack asparagus'), the green summer spikes are eaten like tiny corn cobs, the male flowers shed clouds of protein-rich yellow pollen used as flour, and the fat rhizomes are packed with edible starch.
