Buckwheat
The seed (groat) is a wholesome, naturally gluten-free pseudo-grain despite the 'wheat' in its name (it's not related to wheat and contains no gluten). Buckwheat is a recognized food allergen for some people, sometimes serious. Its sprouts, microgreens, and flowers contain fagopyrin, which raises sun sensitivity - eat them as a garnish rather than a bulk green, and be more cautious if you are fair-skinned or take a medication that increases sun sensitivity. The hulled groat is not a concern.
Overview

Buckwheat is one of the most useful and quickest plants a gardener can grow, and one of the most misunderstood. Despite its name it is not wheat, not a grass, and contains no gluten — it's a broad-leaved herb (a relative of rhubarb and sorrel) grown for its seed, which behaves like a grain in the kitchen, making it a 'pseudo-grain' alongside quinoa and amaranth. Its great virtues are speed and generosity. Birds find ripening fruit and seed before you do. Robins, waxwings, starlings, catbirds, jays, sparrows, finches, blackbirds, and doves all work a garden, and the pressure arrives in a narrow window - the last days before harvest, when sugar rises, color changes, and the crop softens or the grain hardens. A flock can strip a small planting in a day or two, and birds that only peck rather than take whole fruit still leave wounds that rot or draw wasps. Squirrels, chipmunks, and other wildlife usually turn up on the same crop at the same time. This is competition rather than disease: the birds are not harming the plant, and a big tree or a heavy-cropping bush often has enough for everyone - but on a small planting it can be the difference between a harvest and none.
Watch for: Fruit disappearing from the outermost, most exposed parts of the plant first, and from the top of a tree where you cannot reach anyway. Single neat pecks and gouges in ripening fruit, with several fruits sampled rather than one eaten through - the classic sign that it was birds rather than an animal. Heads of grain or seed going visibly lighter and emptier as they ripen, with hulls and chaff scattered underneath. Freshly sown seed vanishing off the surface of a bed before it germinates. Bird traffic in and out of the plant picking up as the crop colors, and birds waiting on nearby wires and branches. Wasps arriving at the pecked and split fruit shortly afterward.
Prevent: Net, and net early. Bird netting draped over a frame or hoops so it stands off the fruit, with the edges closed at ground level, is the only thing that reliably works at harvest scale - and it has to go on before the crop starts to color, because once birds have found the food they are far harder to displace. Keep fruit trees small enough that netting them is actually feasible; that decision gets made years earlier, at planting. Bags of mesh, organza, or paper slipped over individual heads, clusters, or prize fruit protect a small crop without netting the whole plant. Then shorten the exposure: pick promptly and completely rather than leaving ripe fruit hanging as a lure, clear split and dropped fruit that draws birds and wasps alike, and where a crop can finish off the plant, harvest a little early and ripen or dry it under cover. Rake in or cover broadcast seed so it is not lying in plain view.
Treat: There is no treatment once a crop is being taken - only protection and timing, so the answer is to get netting on and to pick what is ready. Reflective tape, flash ribbon, spinners, and decoy predators do work, but only for a few days at a time: birds habituate fast, so move and rotate them and never rely on them as the main defense for a crop you care about. Cut and gather grain or seed heads a little early, at firm dough, and finish drying them under cover instead of leaving them standing for the flocks. Plant a little extra, or a decoy crop the birds prefer, and accept sharing anything that crops heavily. On a wild or foraged patch, fruit going to birds and small mammals is the point of the plant rather than a problem to solve.

Aphids Low
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Slugs & Snails Low
Slugs and snails are nocturnal mollusks that rasp ragged holes in soft leaves, shear off seedlings at ground level, and chew into ripe fruit that touches the soil. They feed at night and in the early morning and spend the day hidden under boards, pots, dense mulch, leaf litter, and low foliage, becoming active in exactly the cool, damp, shaded conditions that suit young plants. Damage is heaviest in wet spells and on tender spring growth: a single wet week can erase a row of seedlings while an established, tough-leaved plant of the same species is barely marked. They lay clusters of small pearly eggs in damp soil and under debris, so a garden with plenty of cover carries a resident population year after year rather than being invaded from outside.
Watch for: Irregular ragged holes chewed out of the middle of leaves and along the edges - not the clean-edged cuts a caterpillar leaves. Seedlings that vanish overnight, or that are cut off at soil level with nothing left behind. Silvery dried slime trails across leaves, soil, pots, and paving in the morning: this is the giveaway that tells you it was mollusks rather than an insect. Chewed pits in ripe fruit, especially where it rests on the ground. Damage that shows up on the lowest, dampest leaves first and gets worse after rain or evening watering. Turn over a board, an upturned pot, or a clump of dense mulch during the day and look for the animals themselves sheltering in the cool underneath.
Prevent: Take away the daytime shelter first: lift boards and upturned pots, clear piles of debris, keep dense mulch pulled back from crowns and stems, and give crowded plantings enough airflow to dry out. Water in the morning rather than the evening so the surface is dry by the time they come out. Copper tape around containers and raised beds gives them a shock they will not cross, and it is the one barrier that reliably works. Get plants past the vulnerable stage quickly - start seedlings in pots and set them out at a decent size rather than direct-sowing into a cold wet bed, since most plants stop being worth defending once the leaves toughen. Leave the ground beetles, frogs, toads, and ground-feeding birds alone, because they eat mollusks all night for free and broad-spectrum slug pellets kill them too. Where thick-leaved or resistant varieties exist for what you are growing, they take far less damage.
Treat: Hand-picking works and costs nothing: go out an hour after dark with a headlamp, drop what you find into soapy water, and repeat nightly for a week or two - persistence is what wins, not any single product. Shallow beer traps sunk to soil level catch them too, but need emptying and refilling daily to be worth anything. Iron-phosphate bait is the standard control and is far lower-risk around pets and wildlife than the old metaldehyde products, but it is not harmless: many formulations include EDTA, and a dog that eats a quantity of pellets can develop iron toxicosis. Scatter it thinly per the label, never in piles, and keep dogs off a baited bed. Clear fallen foliage and debris in autumn, where the eggs are laid. In a wet climate this is a population you manage each season rather than one you eradicate - and on most established plants light grazing is cosmetic and needs nothing at all.

Dry buckwheat seed thoroughly before storing. Kept in the hull, the seed stores longest and stays viable as seed; hull it as you need it. Groats (hulled) and buckwheat flour keep a few months in a cool, dry, airtight container, but buckwheat is somewhat oil-rich, so groats and especially the flour go stale or rancid over time — the refrigerator or freezer extends them to a year or more. As with all whole grains, store the intact seed or groat and grind flour fresh for the best flavor, since buckwheat flour's nutty, earthy taste fades and turns stale quickly.
Sealed containers guard against pantry pests; a spell in the freezer for new seed kills any hitchhiking eggs. Toasted groats (kasha) store a bit better than raw and are handy to keep on hand. Whole groats toasted and simmered become kasha, the hearty porridge and pilaf of Russian and Eastern European tradition; raw groats can also be cooked soft as porridge or sprouted for a crunchy raw addition — though sprouts and microgreens carry fagopyrin, so treat them as a garnish rather than a bowlful. But buckwheat's greatest reach is as flour: gluten-free and distinctive, it makes tender buckwheat pancakes and American 'buckwheat cakes', French galettes (savory crepes), Russian blini, and, most famously, Japanese soba noodles, whose nutty flavor and gray color come from buckwheat.
Because it lacks gluten, buckwheat flour is often blended with wheat for lighter results (as in many pancake and soba recipes), but 100% buckwheat galettes and noodles are traditional and beloved. Beyond the plate, buckwheat gives us dark, robust, molasses-like buckwheat honey (from those bee-covered flowers), prized for its bold flavor and high antioxidant content, and buckwheat hulls are even used to fill firm, breathable pillows. Home-grown, freshly hulled and ground buckwheat brings a fresh, aromatic earthiness to pancakes and soba that packaged flour can't match — a satisfying reward from a plant that also fed your bees and your soil.

Almost too easy: buckwheat self-sows freely and grows so fast from saved seed that a small jar of your best dry seed re-sows endless quick cover, catch, and grain plantings.
Buckwheat is effortless to keep going. It self-sows freely — any seed left to shatter will volunteer — and it grows so fast (seed to seed in 70-90 days) that you can produce your own sowing seed in a single short cycle. To save seed deliberately, just let a planting flower and set seed, then harvest and dry it as you would for eating (in the hull for longest life), and keep back a jar of the best, plumpest, fully brown seed.
A note on trueness: buckwheat is cross-pollinated by insects, and common buckwheat has a two-form flower system that means plants generally need to cross with each other to set seed — but since gardeners grow the standard common buckwheat as a broad population (not delicate named cultivars), saved seed carries the crop on reliably without special isolation. Store the dry seed cool and airtight, and re-sow whenever you have a warm, frost-free gap to fill. Between its free self-sowing and its lightning-fast cycle, buckwheat is one of the most self-perpetuating and generous plants you can grow — a jar of saved seed becomes a season of quick cover crops, pollinator patches, and catch crops.
History
Domesticated in the highlands of southwestern China thousands of years ago, buckwheat spread across Asia and into Europe as a fast, hardy crop for poor soils and short seasons, becoming a peasant staple and, later, a cover-crop and health-food favorite.
Buckwheat was domesticated in the cool highlands of southwestern China (the Yunnan and Tibetan borderlands) several thousand years ago, from a wild Central Asian ancestor. Its speed, hardiness, and tolerance of poor, acidic mountain soils made it a valued crop where true grains struggled, and it spread across Asia — becoming central to Japanese cuisine as soba, to Korean and Chinese cooking, and to Himalayan farming — then westward along trade routes into Russia and Europe by the medieval period.
In cool, poor-soiled regions of Russia, Eastern Europe, and later North America, buckwheat became a dependable peasant staple: fast enough for short seasons, undemanding on poor land, and the source of kasha, blini, buckwheat cakes, and buckwheat honey. American colonists grew it widely as both food and a quick soil-improving crop. Its cultivation declined in the 20th century as nitrogen fertilizers made wheat and corn viable on poorer ground, but buckwheat has rebounded on two fronts: as one of the most valued cover crops in sustainable gardening and farming (fast, weed-smothering, bee-feeding, phosphorus-scavenging), and as a rediscovered gluten-free health food. A crop of humble, hardy origins is now prized precisely for its speed, its bees, and its wholesome groats.
