Apricot
The flesh is the food. The kernel inside the pit contains amygdalin (releases cyanide) - don't eat raw apricot kernels, despite folk claims; poisonings occur. Leaves and twigs are cyanogenic too, and wilted prunings are the dangerous form: never throw them into a pasture or anywhere goats, horses, sheep, cattle, or rabbits can reach them.
Overview
The gamble of the home orchard: a self-fruitful stone fruit that gives you incomparable tree-ripe apricots - in the years its famously early bloom dodges the frost.
An apricot is worth growing for one reason above all: a tree-ripe apricot, warm and fragrant off your own branch, is a completely different fruit from the firm, flavorless supermarket kind, because apricots barely ripen after picking. The upside is that most apricots are self-fruitful - a single tree crops on its own, no pollen partner needed - and they're relatively compact and long-lived.
The catch, and it's a real one, is frost. Apricots bloom earlier than almost any other fruit tree - often in February or early March, straight into the teeth of late-frost season - so in many climates the tree is healthy but the crop is a coin flip year to year. You still need to match chill hours (most want 600-900; low-chill types exist for the South), but the honest headline is: plant an apricot for the great years, site it to delay bloom, and don't count on fruit every single season.

Watch out for
Brown Rot High
The major fruit-rot disease of stone fruit: a fungus (Monilinia) that blights blossoms, cankers twigs, and rots ripening and stored fruit into fuzzy tan 'mummies' - it can destroy a ripe plum crop in days of warm, humid weather.
Watch for: Browned, collapsed blossoms in spring, sometimes with a small gummy canker on the twig behind them; firm brown spots on ripening fruit that erupt in tan fuzzy spores; and shriveled mummies clinging to the tree.
Prevent: Remove every mummy and rotted fruit - they are the spore source that starts next season - prune for airflow, thin so fruit don't touch, protect fruit from insect, bird and cracking injury (those wounds are the way in), and avoid wetting the foliage. Dry climates see far less of it.
Treat: Fungicide at bloom for blossom blight, and again in the last two to three weeks before harvest if the weather stays warm and wet. Use only a product whose label lists your crop by name, and follow that label's pre-harvest interval - some stone-fruit fungicides (chlorothalonil, ziram) may not legally be sprayed that close to picking. Strip and destroy infected fruit the day you see it. Sanitation - clearing mummies and infected wood - is at least half the control.
Apricots bloom very early, so a wet spell during that bloom is when blossom blight takes hold. Worst in warm, wet, humid conditions - the main reason apricots struggle in the Southeast.
Plum Curculio Medium
A small snout beetle of the eastern and midwestern US that cuts distinctive crescent- or half-moon-shaped scars into newly set fruit to lay its eggs. The larvae tunnel inside, so the fruit comes out misshapen and wormy or drops early, and the larvae then finish their development in the fallen fruit. It attacks stone fruit and pome fruit alike, and it is largely absent from the arid West.
Watch for: Crescent- or half-moon-shaped scars on newly set fruit within a few weeks of petal fall, a heavy premature fruit drop, and small grubs inside the dropped fruit when you cut one open.
Prevent: Pick up and destroy dropped fruit promptly and consistently - the larvae finish developing in the drops, so leaving them under the tree simply raises next year's population. Kaolin clay applied to the young fruit deters egg-laying without an insecticide.
Treat: Spread a sheet under the tree at dawn and jar the branches: the beetles play dead and drop, and you can collect them. Where damage is heavy, a targeted insecticide at petal fall and again shortly after is timed to adult activity - use only a product labeled for the crop you are treating, follow the label exactly, and observe the pre-harvest interval before you pick.
An eastern and midwestern problem, largely absent in the arid West where most apricots are grown well.
Peach Twig Borer Medium
A small moth whose larvae bore into shoot tips (causing 'flagged' wilting tips) early in the season and into ripening fruit later; a common pest of apricots and peaches in the West.
Watch for: Wilting, dying shoot tips (flagging) in spring, and larval entry holes with frass in ripening fruit.
Prevent: A dormant-season oil spray smothers overwintering larvae; pheromone traps time treatments; healthy trees tolerate light shoot damage.
Treat: Bt or spinosad at bloom and again in summer where fruit damage occurs; the dormant oil is the key preventive step.

Bacterial Canker (Stone Fruit) Medium
A bacterial disease (Pseudomonas) that causes sunken, oozing, gummy cankers on cherry limbs and trunks, killing branches and sometimes whole young trees - especially in cold, wet sites and where pruning wounds are made in wet weather. Cherries are notably susceptible.
Watch for: Sunken, dark, oozing cankers with amber gum on limbs and trunk, dieback of branches above them, and 'sour sap' smell; worst in spring and fall.
Prevent: Plant on well-drained sites, keep trees vigorous, avoid frost injury, and above all prune ONLY in dry summer weather (never in wet winter/spring), sterilizing tools; copper sprays in fall/spring help in high-pressure areas.
Treat: Cut out cankered wood well below the margin in dry weather, sterilizing between cuts; there's no cure, so prevention (drainage, dry-weather pruning, vigor) is the whole strategy.
Prune apricots late and dry specifically to avoid this - fresh wet cuts are the main entry point.
Birds & Wildlife Medium
Birds find ripening fruit and seed before you do. Robins, waxwings, starlings, catbirds, jays, sparrows, finches, blackbirds, and doves all work a garden, and the pressure arrives in a narrow window - the last days before harvest, when sugar rises, color changes, and the crop softens or the grain hardens. A flock can strip a small planting in a day or two, and birds that only peck rather than take whole fruit still leave wounds that rot or draw wasps. Squirrels, chipmunks, and other wildlife usually turn up on the same crop at the same time. This is competition rather than disease: the birds are not harming the plant, and a big tree or a heavy-cropping bush often has enough for everyone - but on a small planting it can be the difference between a harvest and none.
Watch for: Fruit disappearing from the outermost, most exposed parts of the plant first, and from the top of a tree where you cannot reach anyway. Single neat pecks and gouges in ripening fruit, with several fruits sampled rather than one eaten through - the classic sign that it was birds rather than an animal. Heads of grain or seed going visibly lighter and emptier as they ripen, with hulls and chaff scattered underneath. Freshly sown seed vanishing off the surface of a bed before it germinates. Bird traffic in and out of the plant picking up as the crop colors, and birds waiting on nearby wires and branches. Wasps arriving at the pecked and split fruit shortly afterward.
Prevent: Net, and net early. Bird netting draped over a frame or hoops so it stands off the fruit, with the edges closed at ground level, is the only thing that reliably works at harvest scale - and it has to go on before the crop starts to color, because once birds have found the food they are far harder to displace. Keep fruit trees small enough that netting them is actually feasible; that decision gets made years earlier, at planting. Bags of mesh, organza, or paper slipped over individual heads, clusters, or prize fruit protect a small crop without netting the whole plant. Then shorten the exposure: pick promptly and completely rather than leaving ripe fruit hanging as a lure, clear split and dropped fruit that draws birds and wasps alike, and where a crop can finish off the plant, harvest a little early and ripen or dry it under cover. Rake in or cover broadcast seed so it is not lying in plain view.
Treat: There is no treatment once a crop is being taken - only protection and timing, so the answer is to get netting on and to pick what is ready. Reflective tape, flash ribbon, spinners, and decoy predators do work, but only for a few days at a time: birds habituate fast, so move and rotate them and never rely on them as the main defense for a crop you care about. Cut and gather grain or seed heads a little early, at firm dough, and finish drying them under cover instead of leaving them standing for the flocks. Plant a little extra, or a decoy crop the birds prefer, and accept sharing anything that crops heavily. On a wild or foraged patch, fruit going to birds and small mammals is the point of the plant rather than a problem to solve.
Because the whole crop ripens in a short window, a few days of bird pressure can take most of it. Net early - birds find ripe apricots before you do.
Aphids Low
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Grow
Plant a dormant bare-root tree in early spring in sharply drained soil and full sun - and site it to delay that dangerously early bloom.
Start with a grafted tree on a named rootstock and plant it while dormant, roots spread in a hole no deeper than it grew in the nursery, graft union above the soil. Two site rules matter more for apricots than for any other fruit tree. First, drainage: apricots die in wet, heavy soil - if yours holds water, plant on a raised mound or berm. Second, bloom timing: because early bloom is the enemy, plant on high ground where cold air drains away, or on a cooler north-facing slope that keeps the tree dormant a little longer, past the worst frost dates.
Full sun, and only one tree needed since most are self-fruitful. Train to a low open-center vase so you can net it against birds and reach the fruit. In cold regions choose late-blooming, cold-hardy varieties (the Canadian HAR series, Manchurian-derived types); in the warm South choose low-chill varieties or the tree simply won't fruit.

Unlike a peach or a tomato, an apricot picked hard stays hard and bland - it does not sweeten meaningfully on the counter. So the rule is patience: harvest only when the fruit is uniformly orange with no green at the stem, smells like an apricot, and gives to gentle pressure, lifting off the spur with a light twist. That tree-ripe apricot is the entire payoff for the frost gamble.
Be ready for a concentrated harvest - a single tree tends to ripen most of its crop within a two- to three-week window, so plan to eat, dry, and preserve in a burst. Handle gently; ripe apricots bruise instantly. Check the tree every day or two during the window, and net it, because birds and squirrels have the same calendar you do.
Storage
Fresh apricots keep only days - the great apricot preservation is drying, plus jam, canning, and freezing the glut.
Fresh apricots are fleeting: two to three days at room temperature, up to a week refrigerated, and cold dulls their flavor, so let chilled fruit warm up before eating. Because a tree's crop lands all at once, the real answer to apricot storage is preservation, and apricots are one of the great drying fruits - halved, pitted, and dried (or sun-dried in hot-dry climates), they keep for many months and concentrate into intense, tangy-sweet chews.
Beyond drying: apricot jam and preserves are classics (the fruit is naturally high in pectin and acid), halves can and freeze well for winter baking and compotes, and any bruised or slightly-past fruit becomes syrup, chutney, or fruit leather. Almost nothing needs to go to waste in a good apricot year - which is fortunate, because good years come in bunches.
Growing across climates
Cold zones: late-blooming hardy varieties on frost-safe sites. Mediterranean-dry climates: apricot heaven. Humid South: low-chill types, but brown rot fights you.
Zones 4-6: the tree is hardy but the early bloom is the whole battle - plant late-blooming, cold-hardy varieties (Canadian HAR series - Harcot, Harglow, Harlayne; Manchurian-derived Moongold, Westcot) on high, cold-draining ground, and accept that some springs the frost wins. Zones 7-8, and especially dry-summer / Mediterranean climates: apricot paradise - warm dry air suits the fruit and starves the brown rot, which is why California and the interior West are apricot country. Humid Southeast: the hard case - warm humid springs and summers make brown rot and bacterial spot relentless, and only low-chill varieties (Katy, Gold Kist, ~300-500 hours) even meet their chill; expect a fight for clean fruit. Zone 9 into 10a: low-chill varieties only, sited for the little cold they can get; past that, zone 10b banks too few chill hours for any apricot to fruit. Chill hours and late-frost risk together decide whether an apricot fruits at all - weigh both before planting.
Troubleshooting
No fruit despite a healthy tree usually means frost killed the early bloom. Fuzzy rotting fruit is brown rot; oozing bark is bacterial canker.
Healthy tree, beautiful bloom, no apricots: almost always a late frost during the early bloom, or cold wet weather that grounded the pollinators - the tree is fine; the site or the season failed it. Ripe fruit turning to fuzzy gray-brown mush on the branch (brown rot): remove every rotted fruit and mummy, improve airflow by pruning, and spray at bloom and pre-harvest in wet climates. Amber gum oozing from the bark and dying branches (bacterial canker / gummosis): prune out infected wood in dry weather only, and keep the tree vigorous. Small holes / shot-hole in leaves: shot-hole (Coryneum) blight - a dormant copper spray helps. Fruit cracked or with hollow, split pits: uneven watering during pit hardening - keep moisture steady. Every-other-year cropping: thin harder in the heavy years.
Nutrition
A standout for beta-carotene (vitamin A) and potassium fresh, and a concentrated fiber-and-iron snack dried.
That deep orange color is the nutrition talking: apricots are rich in beta-carotene, the vitamin A precursor tied to eye and skin health, and they deliver good vitamin C, vitamin E, potassium, and fiber for only about 50 calories per couple of fresh fruit. They're one of the better fruit sources of provitamin A.
Dried apricots are a different, concentrated food: pound for pound they pack far more fiber, potassium, and iron than fresh, along with the sugars - a genuinely nutritious, portable snack, though calorie-dense, so a small handful goes a long way. (Commercially dried apricots are often treated with sulfur dioxide to stay orange; your unsulfured home-dried ones turn brown but are just as good.) Whichever form, apricots are food, not medicine - and excellent food at that.
In the kitchen
Best eaten dead-ripe out of hand; then jam, dried, roasted, or baked - apricot's tart-sweet edge shines with almond, honey, and savory meats.
A tree-ripe apricot needs nothing but your hand, but the fruit's bright tart-sweet character makes it one of the most versatile in the kitchen. It has a famous affinity for almond (they're botanical cousins - the same family), for honey and vanilla in desserts, and, unusually for a sweet fruit, for savory pairings: apricots with lamb, pork, chicken, and warm spices are a Middle Eastern and North African tradition, which makes sense given the fruit's origins along that trade route.
When the whole crop ripens at once: make jam (apricot's acid and pectin set it easily), dry halves for the pantry, roast them with a little sugar until caramelized, bake them into tarts and clafoutis, or simmer into a compote. Slightly underripe fruit actually cooks and preserves better than dead-ripe, holding its shape - so the tart early pickings have a job too.

Like other tree fruit, apricot varieties are propagated by grafting or budding onto a rootstock - a seed won't reproduce the parent variety. That said, apricots come closer to type from seed than apples do, and a sprouted pit can grow into a decent (if unpredictable) tree, especially with the tough Manchurian seedlings often used as cold-hardy rootstock. If you want to try, stratify the pit through winter cold (moist, 6-8 weeks in the fridge) to break dormancy - it mimics the winter the seed expects.
The reliable route to a specific variety is grafting: collect dormant scion wood in late winter and bud or graft it onto apricot, plum, or peach rootstock in spring. This is also how you rescue a variety you love or add it to an existing tree. For most gardeners, though, the practical move is simply buying the grafted variety matched to your climate - propagation is the enthusiast's project, not a requirement.

The apricot fruit has no meaningful herbal-medicine tradition beyond being wholesome, vitamin-rich food - eat it for the beta-carotene and fiber, not as a remedy. There is, however, one apricot health claim that needs a firm correction. The kernels inside the pits are sold as a supposed cancer treatment ('laetrile' or 'vitamin B17'), and this is dangerous pseudoscience: the kernels contain amygdalin, which releases cyanide in the body, laetrile has repeatedly failed to treat cancer in clinical study, and there are real, documented cases of cyanide poisoning from eating apricot kernels.
So the honest medicine section is a caution, not a recommendation: enjoy the flesh freely, and do not eat raw apricot kernels or take laetrile supplements. If you're using apricots in a whole-diet sense, their genuine contribution is the everyday one - potassium, provitamin A, and fiber in a naturally sweet package.
History
Native to Central Asia and cultivated for over 4,000 years, the apricot rode the Silk Road west, picking up its 'Armenian plum' name and the early-ripening legend in its name.
The apricot was domesticated in Central Asia and northern China thousands of years ago and carried westward along the Silk Road, reaching Armenia and the Mediterranean so long ago that the ancient world assumed it was Armenian - hence the botanical name Prunus armeniaca and the old English name 'Armenian plum.' It was a favorite of the Persians and Greeks, spread across the Roman Empire, and reached Spain with the Moors.
The very word 'apricot' records the fruit's defining trait: it descends through Arabic and Latin from praecoquum, 'early-ripening,' because the apricot flowers and fruits ahead of the other stone fruits - the same early habit that makes it such a frost gamble for gardeners today. Spanish missionaries carried apricots to California in the 1700s, and the state's warm, dry interior valleys turned out to be one of the great apricot climates on earth. Plant one and you're growing a fruit that has followed the same trade routes, and fought the same late frosts, for four millennia.
