
Smoky Turkey and Lima Bean Skillet
Fresh shelled limas simmered right in the pan with browned ground turkey, tomatoes, thyme, and smoked paprika until the beans are creamy and the juices turn into a gravy. A Southern-style butter bean supper over rice, done in 35 minutes.

- 2 medium ripe tomatoes, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 sprigs fresh thyme, leaves stripped
- 3 green onions, thinly sliced (optional)
From the pantry
- 1 lb ground turkey
- 2 tsp smoked paprika
- 2 cups chicken stock
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- hot sauce · to taste, at the table
- 1½ cups rice, cooked for serving
