Prasorizo (Greek Leeks and Rice)
The Greek Lenten standard: a mountain of sliced leeks softened slowly in olive oil, then simmered with rice, tomato, and dill until creamy and lemon bright.

- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- ½ cup fresh dill, chopped

- 1 cup long-grain or medium-grain rice, rinsed until the water runs clear

- 2 tbsp tomato paste
- 2½ cups vegetable stock
- 1 lemon, half juiced, half cut into wedges
