
South Indian Double Bean Curry
Double beans, as South India calls lima beans, simmered in a mustard seed tempering with onion, tomato, and coconut milk until the gravy clings to every bean.

- 3 cups fresh shelled lima beans, shelled
- 1 large yellow onion, finely chopped
- 2 medium ripe tomatoes, chopped
- 2 green chiles, slit lengthwise · use one for a mild pot
- 4 cloves garlic, minced
- 1 sprig fresh curry leaves, leaves pulled from the stem (optional) · about a dozen leaves; fresh or frozen, never dried
- ½ tsp ground turmeric
- ⅓ cup fresh cilantro, chopped
From the pantry
- 1 tbsp fresh ginger, minced
- 1 tsp ground cumin
- 1 tsp black or brown mustard seed
- 2 tbsp neutral oil
- 1 can coconut milk · full fat; light coconut milk will not thicken
- 1 lime, cut into wedges · for the table
- 1½ cups long-grain rice · cooked, for serving
- salt · to taste
