Ramps
Ramps are a safe, delicious wild allium - the broad leaves and bulbs have a strong garlic-onion flavor. But they have DANGEROUS look-alikes that share the same rich woods: false hellebore (Veratrum) and lily-of-the-valley have similar broad leaves and are POISONOUS. The rule: crush a leaf and confirm the strong onion-garlic smell before eating - no smell means it is NOT a ramp. As with all alliums, they are also toxic to dogs and cats. Distinct from the cultivated leek (Allium ampeloprasum).

Treat: Long-term restoration: replant wiregrass ground cover, reintroduce prescribed fire, and allow years for the slow-establishing grass and its ecosystem to recover.

A narrower-leaved variety (sometimes treated as a separate species, A. burdickii) with smaller, narrower leaves, white (not reddish) leaf bases, and typically fewer flowers. Grows in similar rich woods, often on drier upland sites, and is harvested the same way - and just as slow to recover.
The common wild leek: relatively broad, smooth green leaves (often with a reddish leaf base) emerging in early spring from small white bulbs, dying back before a summer flower stalk appears. The classic ramp of Appalachian and Northeastern woods - slow-growing and to be harvested sustainably.
The European 'wild garlic' or bear's garlic, a related broad-leaved woodland allium used just like ramps in European cooking. It is faster-growing and far more vigorous (even weedy) than American ramps, so it is sometimes grown as an easier, more sustainable homegrown alternative in shade gardens. Not native to North America.
Grow
Grow them in rich, moist, deep-shade hardwood-forest soil with heavy leaf-litter mulch; plant bulbs in fall or sow fresh seed, then wait years. Cultivating your own is the sustainable alternative to digging wild patches.
Ramps can absolutely be grown - and doing so is the single best way to enjoy them without harming wild populations. They need the conditions of a rich hardwood forest floor: deep to part shade (ideally under maples, beech, or basswood), moist, humusy, well-drained soil that is slightly acidic to neutral and high in calcium, and a thick, permanent mulch of hardwood leaf litter, which they truly depend on. A shaded, moist corner of a woodland garden, the north side of a building, or under deciduous shrubs can all work.
Start them from bulbs planted in fall (the most reliable route) or from fresh seed sown into leaf litter (the cheapest, but slowest). Then comes the hard part: patience. Ramp seed has a long double dormancy and can take a year or more just to sprout, and plants need five to seven years to reach harvestable size, so a new patch must be left completely unharvested for several years to establish and spread. Once a colony is well established, though, it becomes a permanent, self-renewing spring crop - a small forest-farming success that takes pressure off wild stands. Growing ramps is a long game, but a deeply rewarding one.
Care
Once established, they need almost nothing but the right conditions: keep them in moist, shaded, hardwood-leaf-mulched soil, leave plants to flower and seed, and above all harvest lightly - the main 'care' is restraint.
An established ramp patch is very low-care, because it simply wants to be left in conditions like its native forest floor. Keep the soil moist, shaded, and mulched with hardwood leaf litter (replenish the leaf mulch each fall, as it feeds the soil and protects the bulbs), and do not let the site dry out or get too sunny. They need no fertilizer beyond the natural richness of leaf-mold soil, and they have essentially no serious pests or diseases.
The most important 'care,' though, is restraint in harvesting. Because ramps recover so slowly, a patch is easily loved to death. Let plenty of plants flower and set seed each year (never harvest so heavily that few are left to reproduce), scatter ripe seed into fresh leaf litter to help the colony spread, and follow the one-leaf-per-plant rule rather than digging bulbs. Think of a ramp patch as a long-term investment you draw only a little interest from each year. Managed that way, it will feed you every spring indefinitely; harvested greedily, it will vanish.
