Overview

The onion you never buy twice: plant one bulb, harvest a nest of six, and replant from your own stock forever. Grown on the garlic calendar and the best-keeping onion in the garden.

The potato onion is a multiplier: you plant a single bulb and lift a whole nest of them, clustered around where the original sat, the way a potato hill gives you a hill of potatoes. That is where the name comes from — there is no potato involved. It belongs to the same Aggregatum Group as the shallot, but it tastes like a proper onion rather than a shallot, grows bigger, and keeps far longer.

It is grown from bulb to bulb. There is no seed to buy, no seedlings to raise, no day-length puzzle to solve — you plant bulbs in fall like garlic, lift them the following summer, cure them, and put a share of the harvest back in the ground in the autumn. Well cured, the bulbs hold eight to twelve months, which means a good crop takes you right around to the next one. Buy planting stock once and, barring disaster, you never buy an onion again.

    • Choose your bulb size deliberately - it decides the crop
      Plant a SMALL bulb (under about an inch and a half) and it makes a few large onions. Plant a LARGE bulb and it makes a nest of many small ones. Nothing else you do this season matters as much. Most gardeners plant a mix: small bulbs for eating onions, large bulbs to multiply their stock.
    • Set bulbs shallow, 6-8 inches apart
      Push each bulb in root-end down so the tip sits just at or barely under the soil surface - about an inch deep, deeper in the coldest zones. The cluster needs elbow room to swell, so do not crowd the row.
    • Water in once so roots start before the freeze
      One thorough soaking at planting. After that, fall rain is usually enough; soggy ground rots a dormant bulb far faster than dryness hurts it.

      Straw or shredded leaves stop freeze-thaw heaving over winter and suppress spring weeds. In zones 4 and colder the mulch is what makes fall planting survivable at all.

      When about half to three-quarters of the tops have bent over at the neck, loosen the cluster with a fork on a dry day and lift the whole nest intact. Do not bend the tops down by hand to hurry it along.

      Spread the clusters, tops still attached, out of direct sun with good airflow until the necks are papery and tight and the skins crackle. Only then break the nest apart and trim tops and roots.

      There is no seed packet for this crop - next year's planting comes out of this year's harvest. Put back a share of small bulbs for big onions and a few large bulbs for multiplying, label them, and keep them separate from the kitchen basket.

Watch out for

White Rot (Allium) High DiseaseApr, May, Jun

The most serious allium disease there is. A soil fungus (Sclerotium cepivorum) rots the roots and the base of the bulb, growing a white fluffy mold over it studded with tiny black sclerotia like poppy seeds. Those sclerotia survive in the soil for twenty years or more and germinate whenever an allium is planted above them, so a bed that gets it is finished for alliums within a home gardener's timescale. It arrives on infected planting stock and on moved soil.

Watch for: Yellowing, wilting plants that pull up far too easily because the roots have gone, and - on the rotted bulb base - white cottony fungal growth with tiny black poppy-seed-like dots through it.

Prevent: This is entirely about never introducing it. Buy certified disease-free seed stock, sets and plants, never plant grocery-store bulbs or cloves, quarantine new stock, and do not move soil, bulbs or tools between an affected bed and a clean one. Once it is in, it is essentially permanent.

Treat: There is no viable garden treatment. Remove and bin infected plants, never compost them, and do not grow alliums in that soil again. This is why clean planting-stock discipline matters more here than for any other allium problem.

The specific risk for a crop replanted from its own stock: white rot travels on planting bulbs, and a gardener saving bulbs year after year can carry it forward indefinitely without noticing. Never replant a bulb from a cluster that wilted or rotted, be careful about accepting bulbs from a garden where alliums have collapsed, and rotate the bed even though the bulbs are your own.

Onion Maggot Medium PestApr, May, Jun, Jul

The larvae of a small gray fly - the onion fly is the same insect - that lays its eggs at the base of allium plants. The white maggots tunnel into the bulb, shank or stem base, and the damage they leave opens the door to soft rot, so the plant yellows, wilts and collapses into a mush. It is worst in cool, wet springs, in unrotated allium beds, and in dense rows where the maggots can work from one plant to the next.

Watch for: Individual plants yellowing and wilting while their neighbors look fine, and - on pulling one - small white maggots with brown, slimy rot in the bulb base, shank or stem.

Prevent: Rotate alliums yearly, cover the crop with row fabric through the fly's spring egg-laying window, space plants out rather than growing them in dense rows, and never plant into fresh manure, which draws the flies in.

Treat: There is no rescue for a maggot-riddled bulb. Pull and destroy infested plants rather than composting them, and never save affected bulbs for replanting. Beneficial nematodes drenched into the soil help suppress the larvae in a bed you have to keep using.

A clustered nest gives the maggot several bulbs to work through once it is inside, so lift and destroy a whole affected cluster rather than trying to save part of it - and never keep bulbs from it for replanting.

Downy Mildew (Onion) Medium DiseaseMar, Apr, May, Jun

A cool, damp-weather disease (Peronospora destructor) that produces pale patches and fuzzy gray-violet growth on onion leaves, collapsing them and shrinking bulbs; also causes purple blotch to follow in the dead tissue.

Watch for: Pale yellow-green oval patches on leaves with a downy gray-purple fuzz in humid mornings; leaves yellowing and dying back from the tips.

Prevent: Space for airflow, water at the base in the morning, rotate alliums, avoid low wet spots, and grow resistant varieties (Red Wing) where it recurs.

Treat: Remove affected leaves, improve airflow, and apply copper protectively in a wet season. Harvest and cure carefully - infected necks invite storage rot.

The reason it matters here is storage: an infected neck rots in the basket months later, and this is a crop whose entire value is in keeping until next harvest. Cure hard, sort ruthlessly, and never replant a bulb with a discolored neck.

Thrips Low PestJun, Jul

Tiny slender sap-sucking insects that rasp at leaves, buds and petals and drink what runs out, leaving silvery-white streaking and fine flecking, brown scorched patches, and new growth that comes out twisted or fails to open. They breed fast in hot, dry weather, shelter deep in leaf sheaths, folds and unopened buds where sprays struggle to reach, and several species also transmit plant viruses - which is often more damaging than the feeding itself.

Watch for: Silvery-white streaks and fine speckling on leaves and petals, brown discolored patches, distorted buds and blooms that fail to open properly, and tiny sliver-like insects that drop out when you shake foliage or a flower over a sheet of white paper. Worst in hot, dry spells and on drought-stressed plants.

Prevent: Scout early, before the damage reaches the part of the plant you care about. Start with clean planting stock, keep plants well watered since drought-stressed plants suffer worst, avoid heavy nitrogen, clear weedy hosts nearby, and hang blue or yellow sticky traps to catch the first arrivals. Reflective mulch deters them, and predatory mites, lacewings and minute pirate bugs do real work outdoors.

Treat: A strong water spray dislodges light infestations, and on a plant that can take it a hard shear and clean regrowth clears them outright. For heavier pressure use insecticidal soap, neem or spinosad, aimed down into the leaf sheaths and buds where thrips actually shelter, and repeat at intervals since eggs and pupae escape a single spray. Spinosad is a registered insecticide: use only a product labeled for the crop you are treating, follow the label exactly, and observe its pre-harvest interval.

A minor problem on a fall-planted crop, which does most of its growing in cool weather and is usually near harvest by the time thrips build up in summer heat.

Rust (Allium) Low DiseaseApr, May, Jun, Jul

A fungal disease that raises bright orange pustules on allium leaves. The pustules destroy green tissue, and since those leaves are what feed the bulb, a heavy infection shrinks the crop or weakens the clump. It builds in humid weather, in crowded plantings and in high-nitrogen soil, and it rarely reaches the bulb itself.

Watch for: Orange-red raised dots and streaks on the leaf blades, worst in humid spells and on crowded, poorly spaced or congested plantings.

Prevent: Give wide spacing and full sun so the leaves dry quickly, avoid overhead watering and excess nitrogen, divide congested perennial clumps, and rotate alliums on a three-year cycle. Rust-tolerant varieties are available in some allium crops.

Treat: Strip or shear off the worst-affected leaves early and let clean growth come back, improving airflow at the same time. A bulb crop usually still matures, so harvest on schedule rather than writing it off - rust rarely reaches the bulb itself.

Rust in spring costs bulb size directly, because leaf area during spring growth is what sets how big every bulb in the nest gets. Space clusters properly and keep the bed open.

A small perennial clumping multiplier long grown in Tohono O'odham country in southern Arizona, named for the mountain of I'itoi. It behaves differently from a storage potato onion: it makes a dense clump of small shallot-sized bulbs and abundant slim green tops, is harvested mainly for those tops, and goes dormant through the summer heat. Plant in fall, lift and split the clump when it slows, and treat it as a standing perennial rather than a crop to cure.

Grow

Plant bulbs shallow in fall on the garlic calendar. The one rule that decides your crop: small bulbs make a few big onions, large bulbs make a nest of many small ones.

Learn the size rule first, because it governs everything. A small bulb — under about an inch and a half across — puts its energy into growing, and gives you a few large onions. A large bulb divides hard and gives you a nest of many small ones. Neither result is a failure; they are two different jobs. Most gardeners deliberately plant a mix: small bulbs for the kitchen crop, large bulbs to multiply their planting stock.

Plant in fall, on the same calendar as garlic, in full sun and loose, well-drained ground. Set each bulb root-end down with the tip at or just under the surface — about an inch deep, a little deeper in the coldest zones — and space them 6 to 8 inches apart so the cluster has room to swell. Water in once, then mulch four to six inches deep with straw or shredded leaves. In zones 3 and 4, fall planting is a gamble even under mulch, so plant in earliest spring instead, or split your stock and try both. That is the whole establishment job; the rest of the year is weeding.

Care

Feed nitrogen and weed hard through spring leaf growth, then stop feeding and taper water as the cluster sizes up. Do not disturb the nest while it divides.

Spring is where the crop is made. Pull the mulch back a little as growth starts, then feed lightly with nitrogen two or three times through leaf growth — every leaf the plant builds becomes bulb. Weed shallowly and relentlessly, because onions of every kind lose badly to competition and cannot make the growth up later, and water around an inch a week. Underground, the mother bulb is quietly splitting into a cluster; leave it alone, do not thin it, and resist scraping the soil away to check on it.

Then flip the switch, exactly as with a common onion. Once the bulbs start to swell, stop feeding. Late nitrogen gives you thick, soft necks, and a thick neck is the surest sign of a bulb that will rot in the basket rather than keep until spring. Taper the water off as the necks soften and the tops begin to lean, so the nest finishes dry in the ground. If a cluster throws a flower stalk (uncommon, and usually after a cold snap), mark it — it will not store, so eat it first.

Harvest

Lift the whole nest when most tops have fallen, cure it 2-3 weeks until the necks are papery, and set next year's planting stock aside before you start eating.

The plants tell you when: once about half to three-quarters of the tops have bent over at the neck, the cluster has finished sizing. Pick a dry day, loosen underneath with a fork, and lift each nest whole rather than pulling by the tops. Do not fold the tops over by hand to force the issue — that old trick just bruises necks and costs you storage life.

Then cure, which is the step that decides whether these keep for weeks or for most of a year. Spread the clusters in a single layer with the tops still attached, somewhere warm, dry, shaded and breezy, for two to three weeks — until necks are completely papery and tight and the outer skins crackle. Only then break the nest apart, trim tops to an inch and roots close, and brush off the soil without washing. Do one more thing before the basket reaches the kitchen: set your planting stock aside and label it. There is no packet to reorder from, and the best bulbs are always the ones you most want to eat.

Storage

Cool, dark, dry and airy: well-cured potato onions keep 8-12 months, the longest of any onion. Never a sealed bag, never beside potatoes.

This is what the crop is for. Properly cured potato onions are the best keepers in the onion family — commonly eight months, often a full twelve, which carries a household from one harvest to the next. Store them cool, dark, dry and with airflow: mesh bags, slatted crates, open baskets, or braided tops hung in a cool room. Check the basket every few weeks and pull anything soft.

The rules are the same as for any onion and worth repeating. Never seal them in plastic — trapped moisture is the fastest route to rot. Do not store them next to potatoes, since each speeds the other's spoilage. Keep them out of the fridge unless already cut. Sprouting, soft shoulders, a strong smell or mold at the neck all mean a bulb is going — use it now. And remember that some of what is in the basket is next year's crop, so keep the planting stock in its own labeled container where nobody grabs it for dinner.

In the kitchen

A true onion, not a shallot: pungent, firm, and used anywhere a yellow onion goes. Small bulbs roast whole beautifully.

Despite sharing a botanical group with the shallot, a potato onion cooks like an onion. It is firm, dense and pungent — often sharper raw than a supermarket yellow — and it goes anywhere a cooking onion goes: sweated as the base of a soup or braise, caramelized slowly to jam, sliced into a stew, or fried. The pungency mellows completely with cooking, and the dense flesh holds its shape better than a watery sweet onion does.

The small bulbs from a large mother are their own treat. Peel them and roast them whole alongside meat or potatoes, where they go soft and sweet; drop them into a stew or a boeuf bourguignon in place of pearl onions; or pickle them. The green tops in spring can be snipped like scallions, though every leaf you take costs you bulb size, so take them only from a cluster you have already decided to eat young. Being an heirloom kept for storage rather than for the shelf, the flavor is stronger and more onion-like than most modern hybrids, which is exactly why cooks who find it tend to keep it.

Propagation & seed saving

Bulb to bulb, forever: replant from your own cured harvest. Potato onions almost never flower, so there is no seed and no seed packet - your stock is the variety.

Propagation is the crop. Potato onions almost never flower and set little or no viable seed, so every bulb in existence is a division of another bulb, and the way you keep a variety is simply by replanting it. Each fall, take a share of your cured harvest and put it back in the ground: small bulbs if you want big onions next year, large bulbs if you want to multiply your stock fastest. A modest first-year purchase of a pound or two of bulbs, replanted faithfully, becomes a self-sustaining supply within a couple of seasons.

That also means the health of your stock is entirely your responsibility. Only replant firm, clean, well-cured bulbs from clusters that grew well; never replant from a plant that wilted, rotted or bolted. Buy new stock only from a reputable source, and be cautious about accepting bulbs from a garden where alliums have collapsed — white rot travels on planting stock and stays in soil for decades. Keep the replant bulbs labeled and stored separately from the kitchen basket, because the temptation to eat the best ones is real and there is no packet to fall back on.

Growing across climates

Zones 3-10 with the calendar shifted: fall-planted across most of the country, spring-planted in the far north, and winter-grown in the warm South.

The potato onion sidesteps most of the day-length trap that governs seed onions. Because you plant a bulb that already carries its own energy, and grow it over the cool season on the garlic calendar rather than raising it from seed through summer, the classic long-day / short-day disaster is far less likely — the standard yellow potato onion has a long record of performing from the upper Midwest to the Gulf. What changes by region is the calendar. Zones 3-4: plant in earliest spring; fall planting works only under a heavy mulch and still loses bulbs in an open winter, so split your stock the first year and see which suits your ground. Zones 5-8: the sweet spot — fall plant on the garlic calendar, mulch, and harvest in early to midsummer. Zones 9-10: plant in late fall and grow through the mild winter for a late-spring harvest; drainage matters far more than cold, and summer heat is the off-season. Everywhere, well-drained ground matters more than anything else on this list.

Troubleshooting

Nothing but small bulbs usually means you planted a large mother bulb; one or two big ones means you planted a small one. Both are the size rule working.

History

An heirloom that nearly disappeared: a staple of nineteenth-century American kitchen gardens, kept alive by seed savers after commerce abandoned a crop that comes with no seed to sell.

Multiplier onions are very old — bulb-propagated onions were grown across Europe and the Near East long before graded seed existed — and the potato onion arrived in North America with European settlers. Through the nineteenth century it was a fixture of American kitchen gardens, valued precisely because it needed no seed and stored until the next harvest. Nineteenth-century seed catalogs listed it routinely, and in the Appalachian and Southern gardens where it was best loved it was known simply as the hill onion or mother onion.

Then it nearly vanished. A crop propagated by bulb offers a seed company almost nothing to sell, and as commercial hybrid onion seed took over in the twentieth century the potato onion fell out of catalogs and out of memory. What saved it was exactly the habit that made it uncommercial: gardeners kept replanting their own stock and passing bulbs along. Heirloom seed-saver organizations — the Seed Savers Exchange and Southern Exposure Seed Exchange among them — gathered the surviving strains and put the yellow potato onion back into circulation.
