Culantro
Food-safe and eaten daily across the Caribbean, Latin America and Southeast Asia. The flavor is far stronger than cilantro, so use roughly a quarter as much. The leaf edges are finely serrated and can prickle when handling a large harvest. Traditional medicinal preparations use much larger amounts than cooking does and are not established as safe in pregnancy; the culinary herb is not a concern.
Overview
The heat-proof answer to cilantro that bolts: a shade-loving tropical rosette with the same flavor several times stronger, holding it through cooking, and cropping all summer when cilantro cannot.
Culantro (Eryngium foetidum) is the plant that solves cilantro's biggest problem. Cilantro bolts and dies the moment summer arrives; culantro is a tropical plant that thrives in the heat, cropping steadily right through the months when cilantro is impossible. It looks nothing like its famous cousin - a flat rosette of long, sawtooth-edged leaves rather than a lacy upright plant - but the flavor is unmistakably the same, only three to four times stronger.
It is the backbone of Puerto Rican sofrito and Trinidadian green seasoning, where it is called recao and chadon beni, and it appears across Vietnamese and Thai cooking as ngo gai, the long coriander served alongside pho. Crucially for the cook, it keeps its flavor when cooked, where cilantro fades - which is why it goes into the base of a dish rather than on top at the end.
The one thing that surprises new growers is that it wants shade, not sun. Give it a moist, part-shaded spot, cut out the flower stalks as they rise, and one plant will feed you for most of a year.

Slugs & Snails High
Slugs and snails are nocturnal mollusks that rasp ragged holes in soft leaves, shear off seedlings at ground level, and chew into ripe fruit that touches the soil. They feed at night and in the early morning and spend the day hidden under boards, pots, dense mulch, leaf litter, and low foliage, becoming active in exactly the cool, damp, shaded conditions that suit young plants. Damage is heaviest in wet spells and on tender spring growth: a single wet week can erase a row of seedlings while an established, tough-leaved plant of the same species is barely marked. They lay clusters of small pearly eggs in damp soil and under debris, so a garden with plenty of cover carries a resident population year after year rather than being invaded from outside.
Watch for: Irregular ragged holes chewed out of the middle of leaves and along the edges - not the clean-edged cuts a caterpillar leaves. Seedlings that vanish overnight, or that are cut off at soil level with nothing left behind. Silvery dried slime trails across leaves, soil, pots, and paving in the morning: this is the giveaway that tells you it was mollusks rather than an insect. Chewed pits in ripe fruit, especially where it rests on the ground. Damage that shows up on the lowest, dampest leaves first and gets worse after rain or evening watering. Turn over a board, an upturned pot, or a clump of dense mulch during the day and look for the animals themselves sheltering in the cool underneath.
Prevent: Take away the daytime shelter first: lift boards and upturned pots, clear piles of debris, keep dense mulch pulled back from crowns and stems, and give crowded plantings enough airflow to dry out. Water in the morning rather than the evening so the surface is dry by the time they come out. Copper tape around containers and raised beds gives them a shock they will not cross, and it is the one barrier that reliably works. Get plants past the vulnerable stage quickly - start seedlings in pots and set them out at a decent size rather than direct-sowing into a cold wet bed, since most plants stop being worth defending once the leaves toughen. Leave the ground beetles, frogs, toads, and ground-feeding birds alone, because they eat mollusks all night for free and broad-spectrum slug pellets kill them too. Where thick-leaved or resistant varieties exist for what you are growing, they take far less damage.
Treat: Hand-picking works and costs nothing: go out an hour after dark with a headlamp, drop what you find into soapy water, and repeat nightly for a week or two - persistence is what wins, not any single product. Shallow beer traps sunk to soil level catch them too, but need emptying and refilling daily to be worth anything. Iron-phosphate bait is the standard control and is far lower-risk around pets and wildlife than the old metaldehyde products, but it is not harmless: many formulations include EDTA, and a dog that eats a quantity of pellets can develop iron toxicosis. Scatter it thinly per the label, never in piles, and keep dogs off a baited bed. Clear fallen foliage and debris in autumn, where the eggs are laid. In a wet climate this is a population you manage each season rather than one you eradicate - and on most established plants light grazing is cosmetic and needs nothing at all.
The main pest of culantro, and largely self-inflicted: the damp, shaded, mulched conditions this plant wants are exactly the conditions slugs want. A flat ground-hugging rosette gives them easy access and nowhere for you to see the damage coming. Pull mulch back from the crown, hand-pick after dark for the first few weeks after planting out, and consider growing in raised containers with copper tape in a badly affected garden.
Aphids Medium
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
Aphids settle deep in the center of the rosette where they are hard to see and hard to wash out, so check the crown rather than the leaf tips. Because the whole plant is eaten raw and uncut, rinse harvested leaves thoroughly. A hard jet of water aimed into the center usually clears a colony without any spray.
Root Rot Medium
Root rot is not one organism but a group of soil fungi and water molds - Pythium, Phytophthora, Fusarium, Rhizoctonia and others - that sit harmlessly in most soils and only turn destructive when the ground stays saturated. Waterlogged soil drives the air out, the roots suffocate, and the weakened tissue is invaded and goes soft, brown, and stringy. Because the damage is underground you usually see it first as something that looks like drought: wilting, yellowing, stunting, a plant that does not respond to being watered. Overwatering, heavy compacted ground, a low spot that collects runoff, a pot with no drainage or a saucer left standing full, and cold wet soil in winter are the usual causes. Once roots have actually rotted there is no cure - this is a problem you prevent rather than treat.
Watch for: Wilting in the middle of the day on a plant whose soil is damp - the classic tell, and the reason people water a rotting plant and finish it off. Leaves yellowing from the bottom up, dull off-color foliage, and growth that stalls for no visible reason. Whole shoots, or one side of the plant, collapsing while the rest still looks fine. Soft, dark, or mushy tissue at the base of the stem or at the crown, sometimes with a sour smell. Lift a failing plant and look at the roots: healthy ones are firm and pale, rotted ones are brown or black and slimy, and the outer layer slips off between your fingers leaving a thread of core behind. Seedlings that topple over at soil level are the same problem, called damping-off.
Prevent: Drainage is the whole defense. Match the plant to the site first - something that wants sharp drainage will not survive heavy clay or a low, water-collecting spot however well you tend it. Where the ground is heavy, plant on a raised bed, berm, or slope, or grow in a container. Set plants at the depth they were already growing, since burying the crown or the root flare is a common cause of rot, and keep mulch pulled back a few inches from the stem base instead of piled against it. Water the soil rather than the calendar: check that the top inch or two is dry before watering again, cut back hard in cool weather and winter dormancy, and never leave a pot standing in a full saucer. Do not plant or dig in soggy ground, and go easy on rich amendments for plants that want it lean. Rotate annual crops, and start with clean healthy plants and fresh mix.
Treat: There is no cure for tissue that has already rotted, so act on the conditions rather than looking for a spray. Stop watering at once and fix the drainage - open up compacted soil, or move the plant to a raised, sharply drained position or a container. Lift a badly affected plant, cut away every soft dark root and rotted section with a clean blade back to firm pale tissue, and replant only the healthy parts into fresh free-draining soil or mix. Often the better move is to give up on the plant and save its offspring instead: cuttings, offsets, or divisions taken from firm healthy growth root readily and give you a clean start. Bin the rotted material rather than composting it, and correct the drainage before you replant, because the rot comes straight back in the same wet spot.
The tension to manage with this plant: culantro wants constantly moist soil but rots in soil that is actually waterlogged, and the difference is drainage rather than watering frequency. Grow it in humus-rich ground that drains, or in a pot with real drainage holes, and it tolerates far more water than most herbs. Crown rot at the center of the rosette is the usual form here, often after water sits in the crown in cool weather.
Spider Mites Low
Spider mites are not insects but tiny sap-feeding arachnids, smaller than a grain of salt, and you almost always notice the damage before you notice them. They live on the undersides of leaves and drain the cells one at a time, which is why the leaf goes finely stippled with pale dots before it bronzes and dries. They breed explosively in hot, dry, dusty, still air - a generation can pass in a week at high temperature - so a barely visible population becomes a webbed, bronzed plant within a fortnight. Drought-stressed plants and plants wintered indoors in dry heated air are the classic hosts. Broad-spectrum insecticides make matters worse rather than better, because they kill the predatory mites and lady beetles that normally hold mites in check.
Watch for: Fine pale stippling or speckling across the upper leaf surface, as though the color had been sandblasted out of it, and later a dull bronze or rusty cast over the whole leaf. Delicate webbing across leaf joints, shoot tips, and undersides - that comes with a heavy infestation and means you caught it late. Leaves that dry, curl, and drop early while the plant looks thirsty no matter how much you water it. Hold a leaf over a sheet of white paper and tap it: the specks that fall and then start walking are mites. With a hand lens, look on the undersides for the mites themselves, pale or reddish, and their round translucent eggs. Damage that shows up first on the hottest, dustiest, most sheltered side of a plant, or on a pot sitting near a radiator indoors.
Prevent: Do not let plants get drought-stressed - that is the single strongest trigger, and a plant watered steadily through heat is far less likely to have a mite problem at all. Hose the foliage down, undersides included, during hot dry spells: it knocks mites off, washes away the dust they thrive in, and raises the humidity around the plant for a while. Indoors and under cover, keep the air from going hot, dry, and stagnant, wipe or rinse the leaves occasionally, and keep pots away from radiators and heating vents. Inspect any plant carefully before you bring it indoors for winter or set it among others, since mites almost always arrive on something else. Avoid broad-spectrum insecticides: they wipe out the predatory mites, lacewings, and lady beetles that do most of this work for you, and reliably leave you with a worse outbreak than you started with.
Treat: Start with water. A strong jet aimed at the leaf undersides, repeated every few days for a couple of weeks, knocks populations down and breaks the cycle - on many plants that alone ends it. On anything that regrows quickly, shearing back badly infested growth resets the plant to clean foliage. If it keeps building, spray insecticidal soap or horticultural oil directly onto the undersides where the mites actually live, and repeat every five to seven days for three rounds: contact sprays do not kill the eggs, so a single application always fails. Anything you spray must be labeled for the plant you are treating - follow the label and observe its pre-harvest interval on anything you eat. Predatory mites are an effective release in a greenhouse or on an indoor plant. Above all, correct the heat, dust, and drought stress that caused it, or the mites simply come back.
Almost entirely a problem on plants overwintered indoors, where dry heated air suits mites perfectly. Culantro brought in for winter is a common victim - check leaf undersides for fine stippling and webbing from midwinter on. Raising humidity around the pot and rinsing the foliage in the sink every couple of weeks usually prevents it outright.

There is essentially one culantro. The plant has never been through commercial cultivar development the way cilantro has, so seed is sold simply as culantro, recao, chadon beni or ngo gai depending on which market it is aimed at - all the same species, and any differences you see come from growing conditions rather than genetics. Seed sold under the Caribbean and Vietnamese names is identical.
Grow
Start early indoors because germination takes weeks, then grow it in part shade and steadily moist soil - the opposite of the hot sunny bed cilantro gets.
Culantro is easy to grow and slow to start, and almost every failure happens at the seed stage. The seed needs light to germinate, so press it onto the surface and do not cover it, keep it constantly damp at 75-85°F, and expect to wait three to five weeks. A humidity dome and bottom heat make an enormous difference. Trays are routinely thrown out at two weeks by people who assume nothing is coming; be patient.
Once growing, the rules invert everything you know about cilantro. Culantro is a tropical understory plant: it wants part shade - morning sun with afternoon shade is ideal - and evenly moist, humus-rich soil. Grown in full sun the leaves turn small, narrow and tough and the plant bolts early. Space plants 8-10 inches apart, mulch to hold moisture, and feed lightly every few weeks for tender leaves.
It is an outstanding container plant, and one of the better edible houseplants: a pot on a bright windowsill out of direct sun will crop for months, and in cold zones that is how you carry a plant through winter.
Care

Day to day, culantro asks for very little: steady moisture, shade from hot afternoon sun, and a light feed every few weeks. It does not want to dry out, and a mulch around the rosette keeps the root zone cool and damp.
The one habit that matters most is removing the flower stalks. Left alone, the plant sends up a branched, spiny flower head from the center of the rosette, and leaf production stops as it puts everything into seed. Snap or cut that stalk out at the base as soon as you see it rising and the plant returns to making leaves. Done consistently, this turns a plant that would finish in a few months into one that crops for the better part of a year.
Harvest by taking the outer leaves and leaving the growing center intact. In zones 9 and warmer it behaves as a short-lived perennial and self-sows; elsewhere it is grown as an annual, or potted up and brought indoors before frost.
Harvest
Start cutting outer leaves once the rosette is a few inches across, roughly ten weeks from sowing, and keep taking from the outside for months.
First harvest comes about 10 weeks from sowing, once the rosette has several leaves 4-6 inches long. Cut the outer leaves at their base with scissors and leave the young center untouched - this is a cut-and-come-again crop, and taking the outside repeatedly is what keeps it productive.
You can also harvest the whole rosette at once by cutting it off just above the crown, and a healthy plant will regrow from the base, though more slowly than the outer-leaf method. Leaves are at their best before the plant flowers; once a flower stalk goes up and is left, the remaining leaves narrow and toughen.
Bear the strength in mind when you cook. Culantro is roughly three to four times as potent as cilantro, so a couple of leaves stands in for a generous handful of the other. A single well-grown plant supplies more seasoning than most households get through.
Storage
Keeps a week or two fresh, and unusually for a soft herb it dries and freezes well - blended into seasoning bases is how most cooks actually store it.
Fresh leaves keep one to two weeks in the refrigerator, wrapped loosely in a damp towel in a bag, or standing with their stems in a little water. That is noticeably better than cilantro manages.
Because its flavor survives heat, culantro also stores far better than cilantro does. It dries well, retaining much of its aroma where dried cilantro tastes of nothing - spread leaves in a single layer somewhere warm and airy, or use a dehydrator on low, then crumble into a jar. It also freezes well, either as whole leaves in a bag or chopped into ice-cube trays with a little water or oil.
The traditional storage method is the best one: blend a large harvest into sofrito or green seasoning with garlic, peppers, onion and other herbs, and freeze it in portions or cubes. That is how Caribbean kitchens carry the harvest through the year, and it turns a glut into the ready-made base of a hundred meals.
Propagation & seed saving
Save seed from a single bolted plant and you never buy it again - the seed is expensive and hard to find commercially, and culantro self-sows freely where it is happy.
Culantro seed is expensive and often hard to find in ordinary seed catalogs, which makes saving your own unusually worthwhile. Simply let one plant bolt instead of cutting its flower stalk out. It throws up a branched stem with spiny, greenish-white flower heads, and each head produces a great deal of tiny seed.
Cut the heads into a paper bag as they brown and dry, then rub them out and winnow away the chaff - watch the spines, which are sharp. Store the seed cool and dry; viability is decent but not indefinite, so resow within a couple of years.
Where the climate suits it, culantro self-sows readily, and a patch left to its own devices renews itself each year with volunteers you can transplant while small. In frost-free zones a single planting can become effectively permanent. Division is not practical - it grows from a single taproot - so seed is the only route.
Nutrition
A seasoning herb used in small amounts, so not a nutritional contributor; the leaf does carry carotenoids, calcium and iron, and the aromatic oils behind its flavor.
Culantro is used as a seasoning rather than a vegetable, in amounts far too small to matter nutritionally. Per weight the leaf is respectably rich in carotenoids, calcium, iron, and riboflavin, and it carries the aromatic aldehydes - notably E-2-dodecenal - that give it its powerful cilantro character, but a few leaves in a pot of stew contribute flavor and essentially nothing else.
Its real dietary value is indirect and worth having: like most strong aromatics it lets you build deep flavor into beans, rice and stews with less salt and less fat, and it is the reason a Caribbean sofrito tastes of so much while consisting largely of vegetables and herbs.

Cilantro is a finishing herb that collapses under heat; culantro is built for the beginning of the pot and keeps its flavor through a long simmer, which is exactly why it anchors slow-cooked seasoning bases.
It is excellent with beans, rice, pork, goat, fish, and any dish built on garlic and peppers, and it makes a superb chimichurri-style sauce. Chopping it finely matters, since the leaf is fibrous compared with cilantro.

Alongside its culinary life, culantro has a substantial folk-medicine record across the Caribbean, Central and South America, and Southeast Asia - one of those plants that sits in the kitchen and the medicine cupboard at once.
Traditional uses: a leaf or whole-plant tea is the usual preparation, taken for chills and fevers, stomach upset, colic and flatulence, and as a general tonic; in Trinidad and elsewhere it is a common home remedy for children's colic. Its striking folk name 'fitweed' records a traditional use in convulsions and epilepsy, and crushed leaves have been applied to burns, bites and skin complaints. Laboratory work has found anti-inflammatory, antioxidant and anticonvulsant activity in extracts, alongside a documented essential-oil chemistry, which makes the tradition plausible rather than proven.
Honest caveats: essentially none of this has been tested in controlled human trials, so it remains traditional practice rather than demonstrated medicine, and epilepsy above all is not a condition to treat with a garden herb. History
A tropical American native carried around the world by trade and migration, adopted so completely into Caribbean and Southeast Asian cooking that both regions treat it as their own.
Culantro is native to the tropical Americas - Mexico, Central America, the northern reaches of South America, and the Caribbean - where it has been gathered and grown as both seasoning and medicine for a very long time. Its botanical name is unkind: foetidum means foul-smelling, a European botanist's verdict on an aroma that a great many cooks consider one of the best in the world.
From the Americas it travelled with trade and colonial movement into Southeast Asia, where it was adopted so thoroughly that most people encountering it in a bowl of Vietnamese pho assume it is indigenous there. The same happened in reverse across the Caribbean diaspora, which carried recao and chadon beni to New York, London and Toronto, where it is now a fixture of any well-stocked Caribbean or Asian grocery.
It remains, oddly, almost unknown in mainstream North American gardening despite being both easier to grow through summer than cilantro and considerably more useful in the kitchen - a gap that says more about seed catalogs than about the plant.
Troubleshooting
Seed that never comes up was buried or dried out; tough narrow leaves mean too much sun; a plant that stops producing has been allowed to flower.
Seed never germinated: the usual causes are burying it (it needs light), letting the surface dry out, sowing too cool, or simply giving up too early. Surface-sow, cover the tray to hold humidity, keep it near 80°F, and allow a full five weeks before writing it off.
Leaves are small, narrow and tough: too much sun. Culantro is not cilantro - move it into part shade, and it will produce broader, more tender leaves within a few weeks.
Plant stopped making new leaves: it has bolted. Look for a branched spiny stalk from the center; cut it out at the base and the rosette usually resumes. Cutting stalks out as soon as they appear prevents this entirely.
Ragged holes chewed in the leaves overnight: slugs and snails, which love the damp shaded conditions culantro is grown in. Hand-pick after dark and pull mulch back from the crown.
Leaf tips browning: usually dry air or inconsistent watering, common on indoor plants. Keep the soil evenly moist and away from heating vents.
Flavor is overwhelming: not a fault - use about a quarter as much as you would cilantro.
Growing across climates
A true tropical: perennial and self-sowing in zones 9-11, an easy summer annual everywhere else, and one of the best edible plants for a shaded, humid spot where little else thrives.
Culantro is genuinely tropical and its calendar follows heat rather than frost dates. Zones 10-11: a perennial that crops year-round in shade, self-sows, and needs nothing but moisture and the removal of flower stalks. Zone 9: perennial in a sheltered spot, cut back by hard frost but usually resprouting, and reliably self-sowing.
Zones 7-8: grown as a summer annual and genuinely valuable, because it produces through July and August when cilantro is impossible. Start indoors in late winter and set out well after frost.
Zones 4-6: a container crop and an excellent one. Start very early indoors, grow outside in a shaded spot through summer, and bring the pot in before frost to carry it on a bright windowsill through winter. It handles indoor life better than most herbs, since it wants indirect light anyway.
The universal rule is shade and moisture. In hot climates that means real afternoon shade, and in humid ones culantro is one of the few herbs that positively enjoys the conditions that make Mediterranean herbs rot. If you garden somewhere hot and humid and have struggled to grow herbs at all, this is the one to try.
