Cherry
The flesh is the food. The pit (kernel) and the leaves and twigs contain cyanogenic compounds - don't eat the pit; leaves and wilted foliage are toxic and not for eating (and dangerous to livestock).
Overview
Two very different trees under one name: tall, high-chill SWEET cherries (Bing, Rainier) that usually need a pollen partner and mild-winter zones 5-7, and hardier, smaller, self-fertile SOUR/pie cherries (Montmorency) that fruit alone almost anywhere apples do. Birds are the universal enemy.
The single most important thing to understand about cherries is that "cherry" is two crops. Sweet cherries (Prunus avium - Bing, Rainier, Stella, Lapins) are the big, firm, glossy dessert cherries you eat by the handful: they make large trees, demand a lot of winter chill (roughly 700-1,200 hours), are fussy about climate (they thrive in zones 5-7 and hate both hard winters and humid summers), and most need a second, compatible sweet cherry to pollinate. Sour or pie cherries (Prunus cerasus - Montmorency, North Star, Meteor) are the smaller, tarter cooking cherries: they make compact, tough, cold-hardy trees, they're self-fertile so one tree crops alone, and they grow reliably far beyond sweet-cherry country. If you have room and the climate for only one, a self-fertile sour cherry is by far the easier, more forgiving choice.
Whichever you grow, two truths hold. Cherries don't ripen after picking, so they must hang on the tree until fully colored and sweet. And birds are the number-one cherry problem - a flock can strip a small tree in a day as the fruit colors, so netting the whole tree before it reddens is not optional. Add cherry fruit fly, spotted wing drosophila, brown rot, and (in the East) black knot, and cherries reward attention - but a tree-ripe homegrown cherry is a genuine luxury the supermarket can't touch.

Watch out for
Brown Rot High
The major fruit-rot disease of stone fruit: a fungus (Monilinia) that blights blossoms, cankers twigs, and rots ripening and stored fruit into fuzzy tan 'mummies' - it can destroy a ripe plum crop in days of warm, humid weather.
Watch for: Browned, collapsed blossoms in spring, sometimes with a small gummy canker on the twig behind them; firm brown spots on ripening fruit that erupt in tan fuzzy spores; and shriveled mummies clinging to the tree.
Prevent: Remove every mummy and rotted fruit - they are the spore source that starts next season - prune for airflow, thin so fruit don't touch, protect fruit from insect, bird and cracking injury (those wounds are the way in), and avoid wetting the foliage. Dry climates see far less of it.
Treat: Fungicide at bloom for blossom blight, and again in the last two to three weeks before harvest if the weather stays warm and wet. Use only a product whose label lists your crop by name, and follow that label's pre-harvest interval - some stone-fruit fungicides (chlorothalonil, ziram) may not legally be sprayed that close to picking. Strip and destroy infected fruit the day you see it. Sanitation - clearing mummies and infected wood - is at least half the control.
Humidity-driven, and worst on injured, split or bird-pecked cherries, which give the fungus an easy way in - rain in the last days before picking is the classic trigger.
Birds & Wildlife High
Birds find ripening fruit and seed before you do. Robins, waxwings, starlings, catbirds, jays, sparrows, finches, blackbirds, and doves all work a garden, and the pressure arrives in a narrow window - the last days before harvest, when sugar rises, color changes, and the crop softens or the grain hardens. A flock can strip a small planting in a day or two, and birds that only peck rather than take whole fruit still leave wounds that rot or draw wasps. Squirrels, chipmunks, and other wildlife usually turn up on the same crop at the same time. This is competition rather than disease: the birds are not harming the plant, and a big tree or a heavy-cropping bush often has enough for everyone - but on a small planting it can be the difference between a harvest and none.
Watch for: Fruit disappearing from the outermost, most exposed parts of the plant first, and from the top of a tree where you cannot reach anyway. Single neat pecks and gouges in ripening fruit, with several fruits sampled rather than one eaten through - the classic sign that it was birds rather than an animal. Heads of grain or seed going visibly lighter and emptier as they ripen, with hulls and chaff scattered underneath. Freshly sown seed vanishing off the surface of a bed before it germinates. Bird traffic in and out of the plant picking up as the crop colors, and birds waiting on nearby wires and branches. Wasps arriving at the pecked and split fruit shortly afterward.
Prevent: Net, and net early. Bird netting draped over a frame or hoops so it stands off the fruit, with the edges closed at ground level, is the only thing that reliably works at harvest scale - and it has to go on before the crop starts to color, because once birds have found the food they are far harder to displace. Keep fruit trees small enough that netting them is actually feasible; that decision gets made years earlier, at planting. Bags of mesh, organza, or paper slipped over individual heads, clusters, or prize fruit protect a small crop without netting the whole plant. Then shorten the exposure: pick promptly and completely rather than leaving ripe fruit hanging as a lure, clear split and dropped fruit that draws birds and wasps alike, and where a crop can finish off the plant, harvest a little early and ripen or dry it under cover. Rake in or cover broadcast seed so it is not lying in plain view.
Treat: There is no treatment once a crop is being taken - only protection and timing, so the answer is to get netting on and to pick what is ready. Reflective tape, flash ribbon, spinners, and decoy predators do work, but only for a few days at a time: birds habituate fast, so move and rotate them and never rely on them as the main defense for a crop you care about. Cut and gather grain or seed heads a little early, at firm dough, and finish drying them under cover instead of leaving them standing for the flocks. Plant a little extra, or a decoy crop the birds prefer, and accept sharing anything that crops heavily. On a wild or foraged patch, fruit going to birds and small mammals is the point of the plant rather than a problem to solve.
Because cherries ripen in a tight window and are a favorite bird food, a couple of unprotected days can cost the whole crop - which is why many growers keep cherries on dwarf rootstock, so that netting the whole tree is actually possible. Squirrels join in.
Spotted Wing Drosophila High
An invasive vinegar fly (Drosophila suzukii). Unlike ordinary fruit flies, which need damaged or overripe fruit, the female has a saw-edged ovipositor that cuts into sound, intact, ripening fruit to lay her eggs. The larvae feed inside, so the fruit softens, sinks, weeps and collapses just as you were about to pick it. It has become the dominant pest of soft fruit across the country, and the old rule that fruit flies only bother spoiled fruit no longer applies.
Watch for: Soft, sunken, weeping fruit that collapses under light pressure, and tiny egg-laying scars on otherwise perfect ripening berries. To confirm, crush or float suspect fruit in salt water (1-2 teaspoons per cup) and look for small white maggots floating out. In an apple-cider-vinegar or yeast-sugar trap, the males carry a distinct dark spot at each wingtip.
Prevent: Pick short and often - every two or three days through the ripening window - and remove ALL overripe and dropped fruit, because culls left on the plant or the ground breed the next generation. Cool the harvest to about 35°F promptly, which stops larvae developing in fruit you have already picked. Fine mesh under 1 mm excludes the fly where pressure is high.
Treat: There is no rescue for infested fruit. Control is relentless sanitation plus trap-based monitoring to time any spray: bag or freeze culls rather than leaving them, never drop them on the ground, and use vinegar or yeast-sugar traps to tell you when the flies have arrived. Well-timed targeted sprays such as spinosad are used where pressure is high - use only a product labeled for the crop you are treating, follow the label exactly, and observe its pre-harvest interval.
A game-changer pest since its spread - it attacks intact ripening fruit, so the old 'only overripe fruit' assumption no longer applies to cherries. Harvest early and often, and clear every dropped and overripe fruit from under the tree.
Cherry Fruit Fly High
A small fly whose larvae (maggots) develop inside ripening cherries - the classic 'worm in the cherry.' Adults lay eggs in coloring fruit; the maggots feed at the pit, leaving soft, brown, infested cherries. A key reason commercial cherries are sprayed.
Watch for: Small white maggots inside cut fruit, soft brown depressions on the surface, and adult flies (with banded wings) caught on yellow sticky traps as fruit colors.
Prevent: Hang yellow sticky traps to detect adult emergence and time controls; harvest promptly and completely; clean up dropped and infested fruit to break the cycle.
Treat: Targeted insecticide (e.g., spinosad) timed to adult emergence and egg-laying, guided by traps; repeat as the label directs through the ripening period.
Trap-based timing is essential - the window to act is between adult emergence and egg-laying in coloring fruit.
Cherry Leaf Spot High
A fungus (Blumeriella jaapii) and the dominant disease of sour/pie cherries across the Great Lakes, Midwest, and Northeast. Small purple spots on the leaves turn brown, the leaves yellow, and the tree sheds them from midsummer on. Heavy defoliation strips the carbohydrate reserves the tree needs to ripen fruit and harden off, leading to poor ripening and winter kill of buds and wood.
Watch for: Small purple-to-brown spots on the upper leaf surfaces, yellowing leaves, and heavy leaf drop starting midsummer - a sour cherry that is half bare by August has it.
Prevent: Rake and destroy fallen leaves, which is where the fungus overwinters; prune for airflow so leaves dry fast; avoid overhead watering.
Treat: Protective fungicide from petal fall through the post-harvest period in wet regions - keeping the leaves on the tree after harvest matters as much as protecting the crop. Sanitation of fallen leaves each autumn breaks the cycle.
Severity is High on sour/pie cherries (Montmorency, North Star, Meteor) in humid regions and Medium on sweet cherries. Rare in the arid West.
Aphids Medium
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
The black cherry aphid is the one that matters here - shiny black colonies that tightly curl and blacken the new leaves, on sweet cherries especially. Get under the curled tips when you spray, and apply dormant oil in winter to smother overwintering eggs where it recurs. It can badly distort young-tree growth; established trees tolerate it once beneficials build up.
Bacterial Canker (Stone Fruit) Medium
A bacterial disease (Pseudomonas) that causes sunken, oozing, gummy cankers on cherry limbs and trunks, killing branches and sometimes whole young trees - especially in cold, wet sites and where pruning wounds are made in wet weather. Cherries are notably susceptible.
Watch for: Sunken, dark, oozing cankers with amber gum on limbs and trunk, dieback of branches above them, and 'sour sap' smell; worst in spring and fall.
Prevent: Plant on well-drained sites, keep trees vigorous, avoid frost injury, and above all prune ONLY in dry summer weather (never in wet winter/spring), sterilizing tools; copper sprays in fall/spring help in high-pressure areas.
Treat: Cut out cankered wood well below the margin in dry weather, sterilizing between cuts; there's no cure, so prevention (drainage, dry-weather pruning, vigor) is the whole strategy.
A key reason cherries are pruned in summer, not winter - wet-weather wounds are the main infection route.
Black Knot Medium
The signature disease of plums and cherries in the eastern US and Canada: a fungus (Apiosporina morbosa) that forms hard, black, crusty, warty swellings that encircle and girdle twigs and limbs, deforming and eventually killing branches. Left unchecked it takes over a tree over a few years.
Watch for: Olive-green, corky swellings on new growth that harden and turn coal-black and warty, encircling twigs and branches; worst on wood 1-2 years old.
Prevent: Cut out every knot 4-6 inches below the swelling during dormant winter pruning, sterilizing the saw between cuts and burning or bagging the wood; plant more-resistant varieties; and remove wild cherry and plum nearby, which harbor the disease.
Treat: Prune out and destroy all knots annually - this sanitation is the core control. Fungicide sprays from bud break through early shoot growth help in high-pressure orchards but don't replace cutting out the knots.
Affects both sweet and sour cherries. On cherries, make the cuts in dry weather - after harvest in summer is safest - because wet-weather wounds are the main bacterial-canker entry route; on plums the dormant-season routine is fine. Worse in the humid East than the arid West.

Grow
Decide sweet vs sour first. Plant a dormant grafted tree in full sun and sharply drained soil; give sweet cherries a compatible pollen partner and high-chill zone 5-7 conditions, and expect sour cherries to fruit alone almost anywhere.
Choose the type before you buy. If you want big fresh-eating cherries and live in the sweet-cherry belt (zones 5-7, cool winters, not-too-humid summers), plant a sweet cherry - but plan on a second, compatible sweet variety for pollination, since most are self-unfruitful and some pairs won't pollinate each other (self-fertile Stella, Lapins, or Sweetheart solve this and can pollinate the others). If you want a low-fuss, cold-hardy tree for pies, jam, and juice - or you're outside sweet-cherry climate - plant a sour cherry, which is self-fertile and needs no partner.
Plant while dormant in early spring, graft union above the soil, in full sun and genuinely well-drained ground - cherries are quick to succumb to root and crown rot and to bacterial canker in wet, cold, poorly drained sites. Dwarfing rootstocks (Gisela, and for a big tree, Mazzard/Mahaleb) let you keep sweet cherries small enough to net and pick - a real advantage, since standard sweet cherries grow into 30-foot giants you can't protect from birds. Site cherries where cold air drains (early bloom means frost risk), and always prune in dry weather to keep disease out of the cuts.

Cherries want less intervention than most fruit trees, and forcing it backfires. Prune sparingly, after harvest, and only in dry weather - open the canopy, thin crowded wood, and cut out any black knot, but heavy pruning and winter or wet-weather cuts invite bacterial canker and silver leaf, cherries' worst wound diseases. Keep water steady: even moisture prevents the fruit-splitting that ruins sweet cherries, and the classic trigger is a big drink (rain or irrigation) right as they ripen, so ease off water in the final days.
The season's real work is protecting the fruit. Net the whole tree before it colors - birds are the number-one cherry loss and they don't wait. Hang traps and, in the West and increasingly everywhere, manage cherry fruit fly and spotted wing drosophila, which lay eggs in ripening cherries and leave maggots in the fruit; timely harvest and, where needed, targeted sprays keep them out. In humid climates, brown rot rots blossoms and ripe fruit (sanitation plus bloom and pre-harvest sprays), and in the East black knot demands the same cut-it-out-every-year routine as plums — but on a cherry make those cuts during the dry after-harvest prune, not in winter. Keep the trunk healthy and drained against borers and canker, and cherries stay productive for decades.
Harvest
Cherries don't ripen off the tree - wait for full color and sweetness. Pick sweet cherries with stems on for keeping; strip sour cherries fast and process the same day. Beat the birds and the rain.
The cardinal rule: cherries do not sweeten after picking, so leave them on the tree until they reach full deep color and taste ripe - then confirm by tasting a test cherry, not by color alone. Pick sweet cherries with their stems attached (pull from the spur, not the fruit, so you don't tear the spur that bears next year), which keeps them far longer; go over the tree every couple of days as they ripen. Pick sour/pie cherries when they're fully red and slightly soft - they pull free easily (often leaving the pit-stem behind) and a small tree strips in one quick pass, but they ripen all at once and must be pitted and processed the same day.
Two things beat you to the crop if you let them. Birds will finish a reddening tree overnight - net before color. And rain splits ripe sweet cherries (they drink through the skin and burst), so when a storm threatens ripe fruit, pick everything ahead of it. A mature dwarf sweet cherry can yield 30-50 pounds; a productive sour cherry, plenty for a winter of pies.
Storage
Fresh cherries keep about a week cold, stems on and unwashed. The real answer for a glut is to pit and freeze, dry, juice, can, or make jam - sour cherries especially freeze superbly for winter pies.
Fresh cherries are perishable but hold better than most soft fruit: keep them unwashed, stems on, cold, and dry, and sweet cherries last about a week in the fridge (washing or de-stemming shortens that fast). Don't leave them at room temperature - they lose quality quickly in warmth. Sour cherries are more fragile still and are really a pick-and-process fruit.
Because the crop ripens in a tight window - and sour cherries all at once - preservation is the point. The best all-purpose move is to pit and freeze (spread on a tray, then bag): frozen cherries are perfect for pies, smoothies, and sauces all winter, and this is exactly how you bank a sour-cherry tree's crop for pie season. Cherries also dry into chewy snacks, cook into some of the best jam and preserves of any fruit, juice (tart cherry juice is a product in its own right), and can in syrup. A cherry pitter is the one tool that makes any of this bearable in volume.
Growing across climates
Sweet cherries want zones 5-7, high chill, and dry-ish summers - marginal in cold north, humid South, and warm-winter regions. Sour cherries are hardy, self-fertile, and grow far more widely, including colder zones.
Cherries are the most climate-particular common tree fruit, and the sweet/sour split maps onto climate. Sweet cherries hit their sweet spot in zones 5-7 with cool winters (they need 700-1,200 chill hours), a frost-free bloom, and relatively dry summers - the Pacific Northwest, the Great Lakes fruit belts, and interior valleys are classic. They struggle where winters are too cold (bud kill, canker), where summers are hot and humid (brown rot, cracking, disease), and where winters are too warm (not enough chill). Sour/pie cherries are far tougher: cold-hardy (many to zone 4), self-fertile, more disease- and heat-tolerant, and they fruit reliably across a much wider range, including the upper Midwest and Northeast where sweet cherries are marginal.
Zone 4: sour cherries only - Montmorency, North Star, and Meteor are the ones to plant - and sweet cherries generally fail. Zone 3 is past the limit of even the hardiest sour cherry, which is why you won't find a planting window here for it; the ultra-hardy bush cherries (Nanking, Prunus tomentosa, and the Saskatchewan Romance series - Carmine Jewel, Juliet, Romeo) are the honest answer that far north, but those are different plants and this guide doesn't cover them. Zones 5-7: the full range, sweet and sour, thrives - this is cherry country. Zones 8-9: too warm for enough chill and too humid/hot for most sweet cherries; a few lower-chill selections and dwarf trees in the coolest microclimate are the only realistic shot, and container culture with a cold winter spell is the workaround where the ground won't do it.
Troubleshooting
Sweet-cherry heavy bloom but no fruit means no compatible pollen partner. Split cherries come from rain or uneven water. Maggots in the fruit are cherry fruit fly or SWD. Vanishing fruit is birds. Oozing sunken bark is bacterial canker.

Sweet cherry won't fruit at all in a warm-winter area: not enough chill - it's the wrong climate for sweet cherries.

Rich in vitamin C, potassium, and (especially in tart cherries) powerful anthocyanin antioxidants - tart-cherry compounds are among the more genuinely studied for anti-inflammatory and sleep effects.
Cherries are nutrient-dense little fruits: a source of vitamin C, potassium, fiber, and - above all - a deep concentration of anthocyanins and other polyphenol antioxidants, the pigments behind their red-to-black color. Sour/tart cherries are especially rich in these compounds and have become a genuine subject of nutrition research rather than just folklore.
The most credible cherry health story is tart cherry: studies (many on tart cherry juice or concentrate) suggest real anti-inflammatory effects, modest reductions in exercise-induced muscle soreness in athletes, and a small but measurable improvement in sleep, plausibly through the cherries' natural melatonin and anti-inflammatory polyphenols. Sour/tart cherries are the real cooking cherry: their bright acidity is what makes a genuine cherry pie, cobbler, clafoutis, strudel, and Black Forest cake sing, and they cook into the best cherry jam, preserves, and sauce. The classic sour Morello and Amarena cherries define these desserts. Rootstock choice is important for cherries: dwarfing stocks like Gisela keep a sweet cherry small enough to net and pick, while vigorous Mazzard and Mahaleb make big traditional trees. To grow a known variety, bud-graft or whip-graft your scion onto a compatible cherry rootstock.
Sour cherries are the more approachable of the two for the home propagator. Many sucker from the roots, and suckers from an own-rooted (non-grafted) sour cherry can be dug and transplanted to make new trees of the same variety; sour cherries also root from hardwood cuttings more willingly than sweet cherries do. You can also try growing a rootstock from a stratified pit (8-12 weeks of moist cold) and grafting your chosen variety onto it. As with all Prunus, a single grafted tree can carry more than one variety - useful for solving the sweet-cherry pollination problem on one trunk.
