Both root and leaves are edible. Beets are high in oxalates - people prone to kidney stones may want to moderate the greens. The red pigment (betalain) can harmlessly tint urine and stool pink. Infants: do not use home-prepared beet or beet-green puree for babies under about six months - vegetable nitrate can cause methaemoglobinaemia in very young infants; commercial baby food is nitrate-tested.

Overview

A two-crops-in-one cool-season root: sweet earthy roots below and nutritious chard-like greens above, easy from seed and forgiving of cold.

Beets give you two harvests from one planting - the sweet, earthy taproot below and a flush of tender, nutritious greens above (they're the same species as Swiss chard, just bred for the root). They're a cool-season crop, quick and forgiving, tolerant of light frost, and one of the easier vegetables to grow from seed directly in the garden.

The one quirk to know: what looks like a single beet 'seed' is actually a corky cluster of several seeds, so a handful of sprouts comes up from each one. That makes thinning the key job - without it you get a tangle of small, deformed roots. Soak the seed, sow, thin the clumps to one plant every few inches, and eat the thinnings as baby greens.

The larvae of small flies that tunnel between the upper and lower surfaces of a leaf, leaving winding pale trails and translucent blister-like blotches. Because the larva lives inside the leaf, sprays rarely reach it. On an ornamental or an established plant the damage is cosmetic; on a leafy crop it is a direct hit on the part you eat.

Watch for: Squiggly white or tan tunnels and translucent blister patches inside the leaves, sometimes with a tiny maggot visible when a leaf is held up to the light, and small clusters of white eggs lined up on the leaf undersides.

Prevent: Float row cover or fine mesh over the crop from sowing so the adult flies cannot reach the leaves to lay, crush egg clusters on the undersides when you find them, and clear the weed hosts nearby - lambsquarters, chickweed and wild dock are the usual reservoirs. Avoid broad-spectrum sprays, which kill the parasitic wasps that do most of the real control.

Treat: Pick off and destroy mined leaves before the larvae mature, and do not compost them - the larva is inside the mine, so removing the leaf removes the insect. Sprays rarely reach it. On a plant that regrows fast, a hard cutback forces clean new growth, and row cover then protects the fresh flush.

The beet root is unaffected, so this only matters if you want the greens. Row cover from emergence is the control, since the flies cannot lay through it.

Cutworms Medium PestApr, May

The soil-dwelling larvae of night-flying moths. They spend the day curled just under the surface and come out after dark to chew through young stems at soil level, felling seedlings and transplants outright - a toppled plant lying beside its own stump is the signature. Some species also climb to gouge and notch emerging shoots and spears. They are worst in freshly worked ground, in beds that were weedy or grassy the year before, and on the first plantings of spring.

Watch for: Seedlings and transplants toppled at the soil line overnight, or shoots chewed and notched near the base, with the severed tops left lying beside the stumps. Dig an inch down within a few inches of the damage and you will usually find the culprit: a plump, dull gray-brown caterpillar that curls into a C when touched.

Prevent: Push a cardboard, foil or tin-can collar an inch into the soil around each seedling and transplant so the stem cannot be reached. Cultivate the bed a couple of weeks before planting to expose the larvae to birds and drying, and clear grassy weeds and debris, which is where the moths lay their eggs.

Treat: Dig around each fallen plant and destroy the caterpillar - left alone, one cutworm will fell another plant every night. Replant the gaps with collars fitted. Hand-picking after dark with a flashlight works well on a small bed, and a fast-growing crop soon outgrows the vulnerable stage.

Beets are direct-sown into cool spring soil, exactly when cutworms are most active, and a beet seed is a cluster, so one loss takes several plants with it. Collars are awkward on a sown row - cultivating the bed ahead of sowing is the practical control.

The most common hydrangea disease, especially on bigleaf types in the humid Southeast: a fungus producing small purple-brown spots, often with tan centers, freckling the lower leaves first and spreading up the plant in warm, wet late-summer weather. Unsightly and defoliating in bad years, but rarely a serious threat to the shrub's life.

Watch for: Numerous small circular spots, tan-gray in the middle with a dark purple ring, on older leaves first; heavy spotting and leaf collapse when severe.

Prevent: Rotate out of beet/chard ground on a 2-3 year cycle, space for airflow, water at the base and in the morning, and clear infected debris at season's end.

Treat: Remove badly spotted leaves promptly (the plant keeps producing clean new ones), improve airflow, and apply copper early in a wet, warm season if pressure is high.

Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.

Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.

Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.

Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Aphids seldom hurt the root - the concern is clean greens, so check the crown and leaf undersides before you eat them. A row cover over young plants keeps them off.

Flea beetles are tiny dark beetles - often shiny black or bronze, rarely more than a couple of millimeters long - with enlarged back legs that let them spring away like fleas the moment you lean in. The adults chew countless small round pits and shot-holes through leaves, giving the foliage a peppered, buckshot-riddled look. They overwinter as adults in leaf litter, hedgerows, and crop debris, emerge hungry in spring, and are worst in warm dry spells. The damage is mostly a seedling and transplant problem: a small plant with a few leaves can be checked, stunted, or killed outright, while the same plant shrugs them off once it is large and growing strongly. Different species specialize on different plant families, so the beetles hammering your brassicas are not the ones on your nightshades. Some species also have larvae that feed on roots and tubers underground.

Watch for: Dozens of pinhead-sized round holes peppered across the leaves, thickest on the youngest, most tender growth. Tiny beetles that spring away as you brush the plants or lean in for a closer look - that jump is the identification. Seedlings that go lacy and stop growing, and transplants that sit and sulk instead of taking off. Damage heaviest in warm, dry weather and along the edge of a bed nearest weedy ground or last year's crop debris. On root crops, shallow narrow grooves or channels scarring the skin at harvest, from larvae feeding underground.

Prevent: Floating row cover or fine insect mesh, laid over the bed from the day of sowing or transplanting and sealed at the edges so nothing can walk in underneath, is the single best defense - and on the crops they favor it is close to essential. Leave it on until plants are large and growing strongly, or until flowering on anything that needs pollinating. Push growth: a well-watered, unchecked plant outgrows the damage, so the whole game is getting seedlings through their vulnerable weeks fast. Keep beds weed-free, since related weeds host the beetles alongside your crop, and clear crop debris at the end of the season where the adults overwinter. Rotate away from a bed that grew a related crop last year. Where you can, shift sowing dates - cooler-season and fall plantings often miss the peak of adult feeding entirely.

Treat: Row cover and healthy fast growth carry most crops through, and on an established plant the damage is usually cosmetic and needs nothing at all. Where a young planting is genuinely being stripped, kaolin clay coats the leaves and deters feeding, and spinosad will knock the beetles back. Spinosad is acutely toxic to bees while the spray is still wet - apply it at dusk when bees are not flying, never onto plants in flower, and follow the product label. Anything you spray must be labeled for the plant you are treating, and you must observe its pre-harvest interval on a crop you are picking. Yellow sticky traps are useful for telling you when the beetles have arrived. Where the damage falls on the part you eat, harvesting young often beats them outright; where you are growing for a root or a fruit, leaf damage can simply be tolerated. Larvae feeding underground cannot be reached by a foliar spray, so rotation and clean beds are what work against those.

Beets usually outgrow it - established plants tolerate the damage and grow straight through. Protect seedlings if pressure is high, and clear crop debris that shelters overwintering beetles.

Grow

Soak the seed clusters, direct-sow 1/2 inch deep in cool soil, and thin the clumps hard.

Direct-sow beets from a few weeks before your last frost - they germinate in soil as cool as 45°F. Soaking the seed overnight softens the corky seedball and speeds sprouting. Sow ½ inch deep, an inch or two apart, in rows about a foot apart, in loose soil worked with compost. (Beets also transplant reasonably well if you start them in cells, which buys a jump on the season.)

Once the clumps are up, thin them - this is the step that makes or breaks the crop. Snip, don't pull, down to one seedling every 3-4 inches (a bit closer for baby beets, wider for big storage roots), and drop the thinnings into a salad. Keep beets out of very acidic soil; they like a near-neutral pH and a little boron, so poor soils benefit from balanced amendment.

Care

Even water for tender roots, mulch to steady moisture, and keep the bed weeded.

Beets want steady moisture - about an inch of water a week. Drought makes the roots tough, fibrous, and strongly earthy; wild swings between dry and wet make them crack. Mulch holds it even and keeps the greens clean. They're moderate feeders: rich soil with compost is plenty, and too much nitrogen grows lush tops at the root's expense.

Keep the bed weeded early, since beet seedlings compete poorly. If leaves show pale, corky cracks or the growing points die back, that can be a boron deficiency — a real but uncommon beet problem on light, sandy, or heavily limed soils, and one that drought and cracking also imitate. Confirm it with a soil test before you add any boron. Boron has the narrowest margin between too little and too much of any plant nutrient: the extension rate is roughly 1 tablespoon of borax fully dissolved in 1-2 gallons of water and spread evenly over 100 square feet, applied once and not repeated. Excess boron is phytotoxic, stays in the soil for years, and damages whatever you plant there next — sprinkling borax straight from the box is how gardeners accidentally sterilize a bed. Otherwise, beets are close to maintenance-free once thinned.

Harvest

Pull roots at golf-ball to tennis-ball size; take greens throughout; twist off tops rather than cutting to avoid bleeding.

Beets are best pulled young - between about 1.5 and 3 inches across. That's when they're tender and sweet; left to get large they turn woody and aggressively earthy. Loosen the soil with a fork and lift by the crown. Because each planting matures over a couple of weeks, you can pull them as needed rather than all at once.

Harvest the greens all along the way - take a few outer leaves from each plant while the root sizes, and eat the whole tops at final harvest. When you lift a root for storage, twist the tops off leaving an inch of stem, and don't trim the taproot: cutting into a beet makes it bleed its color and lose sweetness. Save every scrap - roots, greens, and stems all cook.

Storage

Store roots (tops off) in the fridge or damp sand for months; refrigerate greens separately for a few days.

Separate the two parts. Roots, with tops twisted off but skin and taproot intact, keep 1-3 months in a perforated bag in the crisper, or all winter in a box of damp sand in a cool cellar. In mild zones they'll hold in the ground under mulch. Greens are perishable - refrigerate them dry in a bag and use within a few days.

For the long haul, beets pickle beautifully (the traditional preservation), and cooked roots freeze well. They can and ferment too. Signs a root has gone: softness, dark sunken spots, mold, or a sour smell - compost those.

Growing across climates

Cold zones grow spring and fall crops; hot zones flip to fall-through-spring - beets stall and bolt in real heat.

Zones 3-5: spring and fall sowings bracket the summer; young plants take light frost, and fall beets under mulch can be dug well into the cold. Zones 6-7: classic beet country - stagger sowings spring and again in late summer, easing off in the hottest weeks. Zones 8-9: the calendar flips - beets are a fall-through-spring crop; summer heat both stalls the roots and can trigger bolting. Zones 10+: grow only through the coolest months, with afternoon shade. Everywhere, cool weather at maturity gives the sweetest roots, so fall crops beat spring ones on flavor.

Troubleshooting

Deformed roots come from unthinned clumps; woody roots from drought or over-maturity; white leaf trails are leaf miners; pale corky cracks may mean boron - soil-test before treating.

Small, tangled, deformed roots: the clumps weren't thinned - thin harder next time. Tough, woody, over-earthy roots: drought stress or harvested too large; water steadily and pull younger. No red color inside (or a white ring): some varieties are naturally golden or ringed - not a problem.

Nutrition

Nitrates for blood flow, betalains for antioxidants, plus folate and manganese - and the greens out-nutrient the root.

Beets earn their superfood reputation on two fronts. The roots are rich in dietary nitrates, which the body converts to nitric oxide - the compound behind the well-studied effects of beet juice on lowering blood pressure and improving exercise endurance and blood flow. They also carry betalains, the red-purple pigments that act as antioxidants, plus folate, manganese, potassium, and fiber, all at low calories.

Don't overlook the greens: leaf-for-leaf they carry even more vitamins A, K, and C and minerals than the root, essentially the same nutrition as Swiss chard. Both root and greens are high in oxalates, so anyone prone to kidney stones should enjoy them in moderation rather than by the bowlful. In the kitchen

Roasted for deep sweetness, boiled for salads, pickled for the pantry - and the greens cooked like chard. Nothing goes to waste.

Roasting is the beet's best friend: wrapped whole in foil and baked until tender, the sugars concentrate into deep, earthy sweetness, and the skins slip right off. Boiled or steamed beets go into salads (the classic with goat cheese and walnuts) and the Eastern European staples borscht and pickled beets. Raw, grated fine, they're crisp and sweet in slaws; juiced, they're the base of the trendy nitrate shot.

Cook the whole plant. The greens sauté like chard or spinach - garlic, olive oil, a squeeze of lemon - and the colorful stems can be sliced and cooked a few minutes ahead of the leaves. Golden and Chioggia beets, which don't bleed, are the neat choice for raw plating and roasting without staining everything pink.

Propagation & seed saving

Biennial like carrots: overwinter a few roots, let them flower in year two, and one plant yields abundant seed.

Beets set seed only in their second year, so seed-saving means keeping a few of your best roots alive over winter - mulched in the ground in mild zones, or dug, stored cool, and replanted in spring in cold ones. In their second summer they send up tall flower stalks that produce heaps of the familiar corky seedballs.

Two things to know: beets are wind-pollinated and cross freely with other beets, chard, and even sugar beets flowering nearby (isolate by a good distance or time flowering apart for pure seed), and save only from open-pollinated varieties. Let the seed stalks dry, strip the seedballs, and store cool and dry - beet seed stays viable 4-6 years, among the longer-lived garden seeds.

Its dietary nitrates convert to nitric oxide, which relaxes and widens blood vessels - and controlled studies do show that regular beet or beet-juice consumption produces modest reductions in blood pressure and measurable improvements in exercise endurance and oxygen use. Athletes drink beet juice for exactly this reason.

Traditionally, beets were used to 'build the blood' and support the liver and digestion, folklore that loosely tracks the real folate and nitrate content. Keep expectations honest: these are the gentle effects of a nutritious food, not a drug. Beet juice does not replace prescribed blood-pressure medication, and anyone taking blood-pressure drugs or nitrate-based heart medicines (nitroglycerin, isosorbide) should raise it with their clinician before drinking it regularly, since the effects can stack. The high oxalate content is the other real caution, for stone-formers. Eat them freely for the nutrition; the blood-pressure benefit is a genuine bonus.

History

From a Mediterranean sea-beet grown first for its leaves; the swollen red root was bred up by the Romans and later Europeans.

The beet descends from the wild sea beet of Mediterranean and Atlantic coasts, first cultivated in antiquity for its leaves - the swollen root came later. Greeks and Romans grew leaf beets (the chard line), and by Roman times a fatter-rooted form was appearing; the deep-red table beet as we know it was largely developed in Europe through the 1500s-1800s.

The same species produced two other world-changing crops: Swiss chard, selected for leaves, and the sugar beet, bred in the 18th and 19th centuries to concentrate sugar and now a major source of the world's table sugar. So the humble garden beet, its leafy chard cousin, and half the sugar in the pantry all trace back to one seaside weed.
