A rustic green soup in the old European tradition: potatoes simmered soft in stock, then a big handful of foraged greens wilted in and half-blended for body. Nettles make the classic spring version.

  • 6 cups nettles, lambs-quarters, or other wild cooking greens, washed, tough stems removed
  • 1½ lb potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced

From the pantry

  • 5 cups vegetable stock
  • 3 tbsp olive oil · plus more for drizzling
  • ½ cup heavy cream (optional) · for a richer finish
