
Wild Greens and Potato Soup
A rustic green soup in the old European tradition: potatoes simmered soft in stock, then a big handful of foraged greens wilted in and half-blended for body. Nettles make the classic spring version.

- 6 cups nettles, lambs-quarters, or other wild cooking greens, washed, tough stems removed
- 1½ lb potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
From the pantry
- 5 cups vegetable stock
- 3 tbsp olive oil · plus more for drizzling
- ½ cup heavy cream (optional) · for a richer finish
- salt · to taste
