
Welsh Cawl with Short Ribs and Leeks
The Welsh national dish: bone-in short ribs simmered slowly into a clear, rich broth with potatoes and roots, then finished with a heap of sliced leeks that stay bright and sweet. Serve in deep bowls with bread and a wedge of sharp cheese.

- 1½ lb potatoes, peeled and cut into large chunks
- 3 medium carrots, cut into thick coins
- 1 small rutabaga (swede), peeled and cut into 1-inch chunks · or 2 parsnips
- 1 large onion, chopped
- ½ cup fresh parsley, chopped
