
Sheet-Pan Cumin Lamb Chops with Roasted Cauliflower
A whole head of cauliflower and red onion wedges roasted hard with cumin, paprika, and cinnamon, then lamb chops laid on top to finish in the same oven, all drizzled with a lemony tahini sauce and fresh mint. Thirty-five minutes, one pan, dinner.

- 1 head cauliflower, cut into bite-size florets, tender stem and leaves sliced too · about 2 lb
- 1 large red onion, cut into 8 wedges through the root
- 3 cloves garlic, 1 minced for the sauce, 2 smashed for the pan
- ¼ cup fresh mint, leaves torn

- 2 lb lamb loin or rib chops, 8 chops, about 1 inch thick, patted dry
- 4 tbsp olive oil
- 2 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground cinnamon
- ½ tsp red pepper flakes
- 3 tbsp tahini
- 1 lemon, juiced
- 4 pieces warm pita (optional) · for serving
