
Seared Flank Steak with Watercress Salad
A hard-seared, thinly sliced flank steak laid over a whole heap of peppery watercress, radishes, and herbs, all dressed in a lime, fish sauce, and shallot vinaigrette the way Vietnamese beef salads are. The warm steak wilts the cress just slightly, and its juices become part of the dressing.

- 8 cups watercress, thick stems trimmed, washed and spun very dry · about 2 large bunches, 10 to 12 ounces
- 6 medium radishes, sliced paper-thin
- 2 medium shallots, sliced into thin rings
- ½ cup fresh mint, leaves torn
- ½ cup cilantro, leaves and tender stems, roughly chopped (optional)
- 2 cloves garlic, finely grated
From the pantry
- 1½ lb flank steak, patted dry
- 3 limes, juiced, about 6 tablespoons
- 3 tbsp fish sauce
- 1 tbsp sugar
- 2 tbsp vegetable oil
- ½ tsp red pepper flakes (optional)
- 1½ cups jasmine rice (optional) · cooked, for serving
- salt · to taste
- black pepper · coarsely ground, and plenty of it
