
Red Wine Short Ribs over Charred Asparagus
Bone-in beef short ribs braised low in red wine and stock until the meat gives way to a spoon, then served over a pound and a half of hot-roasted asparagus with a lemon-parsley gremolata. The asparagus is the whole side, and its char and snap keep the rich braise from feeling heavy.

- 1 large onion, chopped
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 6 cloves garlic, 4 smashed for the pot, 2 minced for the gremolata
- 6 sprigs fresh thyme
- ½ cup flat-leaf parsley, finely chopped

- 4 lb bone-in beef short ribs, patted dry · English cut, 2 to 3 inches long, about 8 pieces
- 2 cups dry red wine
- 2 cups beef stock
- 2 tbsp tomato paste
- 2 bay leaves
- 4 tbsp olive oil
- 1 lemon, zest finely grated, then cut into wedges
