
Oven-Braised Pork Ribs with Kale and Potatoes
Country-style pork ribs browned and braised with garlic, paprika, and white wine until falling apart, with potatoes cooked in the juices and a whole bunch of kale folded in at the end so it drinks up the pan. A Portuguese-style one-pot Sunday dinner.

- 1½ lb potatoes, peeled and cut into 2-inch chunks
- 1 large onion, sliced
- 6 cloves garlic, smashed

- 2½ lb country-style pork ribs, bone-in, patted dry · boneless work too; use 2 pounds
- 1 tbsp smoked paprika
- 2 bay leaves
- 1 cup dry white wine
- 1½ cups chicken stock
- 2 tbsp olive oil
- ½ tsp red pepper flakes
- 1 tbsp red wine vinegar
