
Pork Chops with Garlicky Braised Chard
Thick bone-in pork chops seared in a skillet, then a whole bunch of chard, stems and all, braised in the same pan with garlic, white wine, and a knob of butter. One skillet, 35 minutes, and the chard is the point.

- 1 bunch Swiss chard, stems sliced 1/2 inch, leaves torn into wide ribbons · a large bunch, about 1 1/4 pounds
- 4 cloves garlic, thinly sliced
- 1 small onion, thinly sliced
From the pantry
- 4 bone-in pork chops, about 1 inch thick, patted dry · about 2 pounds total
- ½ cup dry white wine
- ½ cup chicken stock
- 2 tbsp olive oil
- 2 tbsp butter
- ½ tsp red pepper flakes
- 1 tbsp red wine vinegar
- salt · to taste
