
Polish Marjoram Pork Meatballs in Sour Cream Gravy
Klopsiki, the Polish weeknight meatball: ground pork seasoned with a generous handful of fresh marjoram, browned, then simmered in an onion and sour cream gravy with more marjoram stirred in at the end where its sweet flavor stays bright. Serve over potatoes or noodles.

- ⅓ cup fresh marjoram, leaves stripped and finely chopped, divided · about 4 tablespoons chopped; use 2 tablespoons dried if that is what you have
- 2 medium yellow onion, 1 grated for the meatballs, 1 thinly sliced for the gravy
- 2 cloves garlic, minced
- 2 lb potatoes, peeled and boiled, for serving

- 1½ lb ground pork
- ½ cup dry breadcrumbs
- ¼ cup milk
- 1 egg
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1½ cups chicken stock
- ½ cup sour cream
- 8 oz mushrooms, sliced (optional)
