Old-Fashioned Rhubarb Pie

The spring pie that gave rhubarb its old name of pie plant: sharp pink stalks thickened just enough to slice, baked under an all-butter double crust.

  • 6 cups rhubarb stalks, leaves stripped, sliced 1/2 inch thick · about 2 pounds of trimmed stalks

From the pantry

  • 2½ cups all-purpose flour · for the pastry, plus a little for rolling
  • 1 cup butter, very cold, cut in 1/2 inch cubes · 2 sticks, for the pastry
  • 1¼ cups granulated sugar · for the filling, plus 1 tablespoon for the top
  • 3 tbsp cornstarch · rhubarb runs wetter than most fruit, so do not cut this back
  • 1 egg, beaten with a splash of water · for the wash
  • ¾ tsp salt
