Pot Roast with a Heap of Carrots

A Sunday chuck roast braised in red wine and stock until it falls apart, cooked with two and a half pounds of garden carrots: half melt into the gravy, half go in late and come out whole, sweet, and glossy.

  • 2½ lb carrots, scrubbed, halved crosswise, thick ends split lengthwise · cut so every piece is about 2 inches long and a finger thick; one third goes in for the gravy, two thirds late
  • 2 large onions, cut into thick wedges
  • 6 cloves garlic, smashed
  • 6 sprigs fresh thyme

From the pantry

  • 3½ lb boneless beef chuck roast, patted dry, tied if it is in two pieces
  • 1½ cups dry red wine
  • 2 cups beef stock
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 2 tbsp olive oil
  • 1 tsp red wine vinegar · to finish the gravy
  • salt · to taste
  • black pepper · to taste
