Chinese-Style Plum Sauce

A sweet, tangy, gently spiced dipping and glazing sauce made from a glut of ripe plums simmered with onion, garlic, ginger, vinegar, and brown sugar, then water-bath canned. Brush it on roast chicken and pork, or set it out with egg rolls and dumplings.

  • 4 lb ripe plums, pitted and roughly chopped, skins on · any type; red-fleshed plums give the deepest color
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced

From the pantry

  • 2 tbsp fresh ginger, peeled and grated
  • 1 cup brown sugar, packed
  • ½ cup sugar
  • 1 cup apple cider vinegar · 5% acidity; do not reduce this amount
  • 1 tsp red pepper flakes
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • 1 tsp mustard seed (optional)
  • 1 tsp salt
