- 1 medium rutabaga (swede), peeled and cut into 1/4-inch dice
- 2 medium waxy potatoes, peeled and cut into 1/4-inch dice
- 1 medium yellow onion, finely diced
From the pantry
- 1 lb ground beef (or skirt steak, finely diced)
- 3½ cups all-purpose flour · plus more for rolling
- 14 tbsp butter, cold, cut into cubes · 12 tbsp for the pastry, the rest dotted over the filling
- 1 egg, beaten · for the wash
- salt · to taste
- black pepper · a pasty wants a heavy hand
