Only the fruit inside the husk is eaten, and the correct green eating stage is fruit that has grown to FILL its husk. Like other nightshades the leaves and stems contain alkaloids and are not edible, and very immature fruit - picked long before it fills the husk - is bitter and mildly toxic, like other unripe nightshade fruit. Discard the papery husk.

Overview

The tangy green fruit behind salsa verde: a sprawling nightshade that hides each fruit in a papery husk - and needs at least two plants to set a crop.

The tomatillo is the tart, green, husk-wrapped fruit at the heart of Mexican salsa verde and green enchilada sauce. A relative of the tomato (and the ornamental Chinese lantern), it grows as a big, sprawling, vigorous annual, and each fruit develops inside its own papery lantern-like husk that splits open when the fruit is ripe. Where tomatoes are sweet, tomatillos are bright and tangy - a different flavor with its own indispensable role in the kitchen.

One quirk shapes everything about growing it: tomatillos are self-incompatible. A lone plant will bloom generously and set almost no fruit, because its flowers can't pollinate themselves - pollen has to move between two separate plants. So the number-one rule is plant at least two. Do that, give them full sun, warmth, and a cage to lean on, and a couple of plants will bury you in fruit.

Flea beetles are tiny dark beetles - often shiny black or bronze, rarely more than a couple of millimeters long - with enlarged back legs that let them spring away like fleas the moment you lean in. The adults chew countless small round pits and shot-holes through leaves, giving the foliage a peppered, buckshot-riddled look. They overwinter as adults in leaf litter, hedgerows, and crop debris, emerge hungry in spring, and are worst in warm dry spells. The damage is mostly a seedling and transplant problem: a small plant with a few leaves can be checked, stunted, or killed outright, while the same plant shrugs them off once it is large and growing strongly. Different species specialize on different plant families, so the beetles hammering your brassicas are not the ones on your nightshades. Some species also have larvae that feed on roots and tubers underground.

Watch for: Dozens of pinhead-sized round holes peppered across the leaves, thickest on the youngest, most tender growth. Tiny beetles that spring away as you brush the plants or lean in for a closer look - that jump is the identification. Seedlings that go lacy and stop growing, and transplants that sit and sulk instead of taking off. Damage heaviest in warm, dry weather and along the edge of a bed nearest weedy ground or last year's crop debris. On root crops, shallow narrow grooves or channels scarring the skin at harvest, from larvae feeding underground.

Prevent: Floating row cover or fine insect mesh, laid over the bed from the day of sowing or transplanting and sealed at the edges so nothing can walk in underneath, is the single best defense - and on the crops they favor it is close to essential. Leave it on until plants are large and growing strongly, or until flowering on anything that needs pollinating. Push growth: a well-watered, unchecked plant outgrows the damage, so the whole game is getting seedlings through their vulnerable weeks fast. Keep beds weed-free, since related weeds host the beetles alongside your crop, and clear crop debris at the end of the season where the adults overwinter. Rotate away from a bed that grew a related crop last year. Where you can, shift sowing dates - cooler-season and fall plantings often miss the peak of adult feeding entirely.

Treat: Row cover and healthy fast growth carry most crops through, and on an established plant the damage is usually cosmetic and needs nothing at all. Where a young planting is genuinely being stripped, kaolin clay coats the leaves and deters feeding, and spinosad will knock the beetles back. Spinosad is acutely toxic to bees while the spray is still wet - apply it at dusk when bees are not flying, never onto plants in flower, and follow the product label. Anything you spray must be labeled for the plant you are treating, and you must observe its pre-harvest interval on a crop you are picking. Yellow sticky traps are useful for telling you when the beetles have arrived. Where the damage falls on the part you eat, harvesting young often beats them outright; where you are growing for a root or a fruit, leaf damage can simply be tolerated. Larvae feeding underground cannot be reached by a foliar spray, so rotation and clean beds are what work against those.

Microscopic soil roundworms (Meloidogyne species) that invade roots and force them to swell into beady galls. A galled root cannot take up water and nutrients properly, so the plant stunts, yellows, wilts in heat despite watering, and yields poorly, and root and tuber crops come up forked, knobbly, hairy or cracked instead of clean. They are worst in warm, sandy soils and build up steadily wherever a susceptible crop is grown in the same ground year after year. The wounds they leave also open the way for fusarium wilt and rots.

Watch for: Stunted, yellowing, unthrifty plants that wilt in the heat even though the soil is moist, and poor yields for no obvious reason. Confirm by digging: beady swellings strung along the roots and side rootlets, and root crops that are forked, branched, cracked or knotted rather than clean.

Prevent: Rotate to non-hosts, and grow resistant varieties where they exist for your crop. A French marigold cover crop grown thickly the season before and turned in genuinely lowers populations. Build organic matter and mulch heavily, which feeds the soil life that suppresses them. Plant only clean stock, never move soil from an infested bed around the garden, and solarize badly infested ground through the hottest part of summer.

Treat: There is no in-season cure. Pull and destroy affected plants rather than composting them, and bring that ground back over several seasons with rotation, resistant varieties and marigold cover crops. Where a crop can be grown in a container of fresh mix, that sidesteps the problem entirely.

Most damaging in warm-zone sandy soils; marigolds are a genuinely useful interplant here.

Grow tomatillos much like tomatoes: start seed indoors 5-8 weeks before your last frost in warm mix, give strong light, and pot up burying the stem deeper each time. Transplant 1-4 weeks after last frost once nights hold above 50°F, planting deep in full sun and rich, well-drained soil. Space plants 24-36 inches apart - they get big and bushy, sprawling 3-4 feet.

Two non-negotiables: plant at least two plants (a single self-incompatible plant sets almost nothing), and give them support - a sturdy tomato cage or stake keeps the heavy sprawl off the ground, improves airflow, and makes the fruit findable. Go easy on nitrogen; over-fed tomatillos become huge leafy jungles with little fruit. Once established they're tough, productive, and far less fussy than tomatoes.

Care

Support the sprawl, water steadily, feed modestly, and keep the patch bee-friendly for the cross-pollination fruit set depends on.

Care is easy once the plants are in. Keep them caged or staked so the vigorous, brittle branches don't flop and root where they touch the ground. Water deeply about an inch a week for steady growth - tomatillos are more drought-tolerant than tomatoes but fruit best with consistency - and feed only modestly, since too much nitrogen trades fruit for foliage.

The care detail unique to tomatillos is pollination. Because fruit set depends on bees moving pollen between plants, keep the patch pollinator-friendly and avoid spraying insecticides during bloom. If you're getting lots of empty husks, the usual causes are only one plant, too few pollinators, or extreme heat during flowering. As a nightshade, tomatillos share tomato pests - watch for hornworms and flea beetles - but they generally shrug off problems that flatten tomatoes.

The husk is the harvest cue. A tomatillo is ready when the fruit has grown to fill its papery husk tightly, often splitting the husk slightly at the seams. For the classic tart, bright salsa verde, pick them firm and green at this stage. Left on the plant longer they turn yellow or purple and grow sweeter and milder - good for eating fresh but less punchy in salsa. Pick often, every few days, because a productive plant sets fruit continuously.

Expect windfalls: ripe tomatillos frequently drop in their husks, and fruit that falls still firm and husked is perfectly good - just gather it off the ground promptly (both to use it and to prevent a carpet of volunteer seedlings next year). Before the first frost, pick everything that's husked and reasonably sized; the papery husk protects the fruit and lets it keep for weeks.

Storage

Tomatillos are good keepers as long as you leave the husks on. Stored husk-on and dry in a mesh bag or open bowl somewhere cool, they hold for a couple of weeks; in the crisper (still husked, unwashed) they keep three weeks or more. Only remove the husk and rinse off the sticky film just before using.

For the flood: tomatillos freeze whole after husking and rinsing (spread on a tray, then bag) for winter salsa and sauces; they also roast and freeze beautifully as a ready-made salsa-verde base; and they can be canned as green salsa — but only by following a tested recipe exactly. Tomatillos are acidic, yet a salsa's safety comes from the ratio of tomatillo to the low-acid ingredients beside it: onion, pepper and garlic. Adding extra of any of those, or swapping proportions to taste, pushes the batch above pH 4.6 and out of water-bath territory. Follow a current National Center for Home Food Preservation or Ball recipe without adjusting the vegetable amounts — season after opening the jar instead. Roasting or charring before freezing deepens the flavor, and freezing carries none of these constraints. A couple of plants easily produce enough to preserve a year's worth of green sauce.

Growing across climates

A warm-season crop that fruits fast: cool-summer gardens can still grow it, hot zones grow it spring and fall around peak summer.

Zones 4-5: very doable - tomatillos set fruit fast and take some cool nights, so a spring-started transplant produces well through a short summer; they're often easier than tomatoes here. Zones 6-8: ideal, long-fruiting summer crop; a couple of plants overwhelm a household, and self-sown volunteers appear the next year. Zones 9-10: the enemy flips from frost to peak heat - plant in late winter for a spring crop that finishes before the harshest summer, and a second crop in late summer for fall. Zones 11-13: grow in the cooler, drier stretches; extreme heat and humidity can drop blossoms and invite disease, so time plantings for the milder months. Tomatillos are heat-tough overall, more forgiving of both cool and hot than tomatoes.

Troubleshooting

Empty husks mean a pollination failure (usually only one plant); all-leaf plants mean too much nitrogen; the rest are the shared nightshade pests.

Nutrition

Low-calorie and vitamin-C-rich, with fiber, potassium, and unique antioxidant withanolides - and it flavors vegetables you'll actually eat.

Tomatillos are light and nutritious: a cup is only about 40 calories and supplies good vitamin C, vitamin K, potassium, and fiber, along with some niacin and manganese. Their tangy flavor comes from genuine acidity (malic and citric acids). They contain withanolides, a class of antioxidant compounds found in this branch of the nightshade family and studied for various bioactive properties.

Their real dietary value, though, is culinary leverage: because a good salsa verde or green sauce makes plain vegetables, beans, eggs, and grains genuinely delicious, tomatillos help you eat more whole foods. Eat them cooked or raw; roasting concentrates the flavor and mellows the tartness.

In the kitchen

Tomatillos are the foundation of Mexican green sauces. Husk them, rinse off the sticky film, and go one of three ways: raw, blitzed with chili, onion, cilantro, and lime for a sharp, bright salsa verde cruda; boiled until soft for a milder, rounder sauce; or - best of all - roasted or charred under a broiler or on a comal until blistered, which deepens and slightly sweetens them into a smoky salsa verde. That sauce is the backbone of green enchiladas, chilaquiles, pozole verde, and braises like chile verde.

Beyond salsa, tomatillos add tang to soups and stews, roast alongside meats, and (when picked ripe and yellow) turn sweet-tart enough for jams and even desserts. Their natural acidity brightens rich, fatty dishes the way a squeeze of lime does. The husk and the sticky residue are always removed before cooking; the fruit needs no peeling.

Propagation & seed saving

Saving tomatillo seed is easy and, because most varieties are open-pollinated, comes true. Scoop the seeds and pulp from a fully ripe fruit into a jar with a little water, let it ferment a couple of days until the pulp separates (as with tomatoes), rinse the good seeds that sink, and dry them on a plate. Stored cool and dry, the seed stays viable for years. Bear in mind tomatillos cross readily between varieties (they must cross to set fruit at all), so grow just one variety, or expect mixed offspring.

In practice you'll rarely need to sow deliberately: dropped fruit reliably produces a flush of self-sown volunteers the following spring - thin them to a couple of well-spaced plants and you have next year's crop for free. Note that the small, sweet ground-cherry (a husk-fruit sometimes called 'Pineapple' husk tomato) is a related but distinct Physalis species grown as its own plant - don't confuse it with the tart, larger tomatillo.

Tomatillos (tomate verde) have a genuine place in traditional Mexican folk medicine, where husk-fruit preparations were used for complaints from sore throats to digestive upset, and the plant's withanolides - antioxidant steroidal compounds characteristic of the Physalis genus - are of some interest to researchers for antimicrobial and other bioactive properties. This is more herbal history than most vegetables carry.

The honest framing, though, is that the human evidence is preliminary and the everyday value is nutritional: tomatillos are a low-calorie, vitamin-C-rich food whose best health contribution is making vegetable-forward meals taste good. Enjoy the tradition as context, not as a remedy. As with all nightshades, eat only the ripe fruit - the leaves and stems are not food.

History

A staple of Mesoamerica domesticated before the tomato, central to Aztec cooking and still the defining fruit of Mexican green sauces.

The tomatillo is an ancient Mesoamerican crop, domesticated in Mexico and Guatemala and important to Aztec and Maya cooking - very likely before the tomato, which it long outranked in the region. The Nahuatl word tomatl actually referred to the tomatillo first; when the smooth red fruit arrived, it was distinguished as xitomatl, and the English word 'tomato' descends from that lineage. Archaeological finds place husk-tomatoes deep in the Mesoamerican food record.

While the tomato conquered the world after the Columbian Exchange, the tomatillo stayed closer to home, remaining the essential base of Mexican and Central American green sauces for centuries. It has spread with Mexican cuisine across the Americas and beyond, and gardeners increasingly grow it for the incomparable fresh salsa verde no store jar quite matches - a food with a five-thousand-year continuous history on the table.
