Sugar Maple
Sugar maple sap and the syrup made from it are safe and delicious. The one real caution is unrelated: maple leaves (especially wilted red maple leaves) are toxic to HORSES, so keep prunings and fallen leaves away from horse pasture. The tree itself is safe to grow and handle, and tapping done correctly does not harm a healthy mature tree.
Overview
The tree behind maple syrup and New England's fiery fall color - a stately, long-lived native shade tree that, decades on, you can tap each late winter for your own syrup.
Sugar maple (Acer saccharum) is one of the most beloved and useful native trees in North America. It's the source of maple syrup, tapped each late winter across the Northeast and Great Lakes, and the star of the region's legendary fall color, turning brilliant yellow, orange, and fiery red. A large, stately, long-lived shade tree (easily 200+ years and 60-90 feet tall), it also yields prized 'hard maple' timber and supports a wealth of wildlife.
Growing one is a long game and a generational gift: a sugar maple takes 30-40 years to reach tappable size, but it will then shade, color, and (if you like) sugar your yard for a century or more. It wants deep, moist, well-drained soil and cool conditions - it's a forest tree, not a tough street tree, and it resents drought, heat, road salt, and compacted urban soil. Given the right spot and patience, few trees give back so much for so long.

Asian Longhorned Beetle High
A large black-and-white invasive wood-borer whose preferred host genus is Acer - maple is its first choice, which makes a sugar maple a front-line tree. The larvae tunnel through the heartwood, killing limbs and then the tree. There is no rescue for an infested tree: it is cut down and destroyed. It is a federally reportable pest, and quarantines around known outbreaks make it unlawful to move maple wood, nursery stock, or firewood out of a regulated area.
Watch for: Perfectly round exit holes about 3/8 inch across (wide enough to take a pencil) in the trunk and larger branches; shallow oval egg-laying pits chewed into the bark; coarse sawdust-like frass piled at branch unions, in bark crevices, and at the base of the tree; sap weeping from wounds; dead limbs high in an otherwise healthy canopy. The adult is 1 to 1.5 inches long, glossy black with white spots and very long black-and-white banded antennae, and is out from summer into fall.
Prevent: Do not move firewood - buy it where you burn it. Never move maple wood, logs, limbs, nursery stock, or firewood out of an area under quarantine; that is how every US outbreak has spread, and it is against federal and state law. Buy nursery maples from reputable local sources, and look over the trunk and large limbs each summer.
Treat: Nothing you can do to save the tree - an infested maple is removed and chipped or burned under official direction. If you suspect it, do NOT cut, prune, or move the wood: photograph the beetle or the exit holes and report it to USDA APHIS or your state department of agriculture, which is required for a reportable pest, and let them confirm.
Acer is this beetle's preferred host genus. Quarantines have been active around Worcester MA, parts of Long Island NY, Clermont County OH, and Charleston SC - check the current APHIS boundaries before moving any maple wood, and treat this as the reason not to haul maple firewood anywhere.
Verticillium Wilt Medium
A soil fungus (Verticillium dahliae and relatives) that enters through the roots and grows upward inside the water-conducting tissue, plugging it from within. The plant is not being eaten or rotted, it is being cut off from its own water supply, which is why the signature symptom is one branch or one side wilting and browning while the rest looks perfectly healthy. Cut into affected wood or stem and the tissue is streaked olive-green, grey or brown. The host range is enormous - maples, redbud, olive, tomato, potato, pepper, eggplant, strawberry and many more - and the fungus survives in soil for years as tough resting structures, so infected ground stays infected. Grasses and conifers do not get it.
Watch for: One branch, one limb or one side of a plant wilting, yellowing and browning in summer while the rest carries on normally - the lopsided pattern is the tell - and leaves that wilt and then hang on rather than dropping cleanly. Cut into affected wood and look for olive-green, grey or brown streaking along the grain; in a cut vegetable stem it shows as a ring of discolored dots. On vegetables, lower leaves yellow in a wedge from the margin inward, and the plant wilts at midday but recovers overnight in the early stages.
Prevent: There is no way to sterilize garden soil of it, so prevention is plant choice and plant vigor. Do not replant a susceptible species where one has already died of it. Grasses, conifers, ginkgo, hawthorn, hornbeam, honeylocust, oak and beech do not get it, and many vegetable varieties carry bred-in resistance - the V in a VFN code on the seed packet. Rotate susceptible vegetables on a long cycle and keep them off ground where the disease has shown. Buy clean stock, avoid wounding roots with spades and machinery, and keep woody plants steadily watered, mulched and only lightly fed, because a vigorous plant walls the fungus off far better than a stressed one.
Treat: There is no cure and nothing to spray. On a tree or shrub the aim is to keep it alive long enough to compartmentalize the fungus, which many plants manage for years: prune out dead and wilting branches well below the discolored wood, sanitize the pruners between cuts, water deeply through dry spells, mulch, and feed lightly rather than pushing it with a heavy feed. On vegetables, pull and bin affected plants rather than composting them, and move that crop to clean ground or to containers of fresh mix. Do not replant the same species where one has died.
Sugar maple is a common host, and a tree already stressed by heat, drought or compacted soil goes down fastest. Never replant a maple in the spot where one died of this.
Leaf Scorch (Site Stress) Medium
The defining sugar maple problem: browning, crisping leaf margins and early leaf drop caused by drought, heat, reflected heat, compacted soil, or road salt - the tree is intolerant of these stresses.
Watch for: Brown, dry leaf edges and between-vein browning, especially on the sunny/road side, worsening in heat and drought and over years of urban stress.
Prevent: Site in cool, moist, deep, uncompacted soil away from pavement and de-icing salt; water deeply in drought and mulch the root zone.
Treat: Deep watering and mulch relieve drought scorch; salt- and compaction-caused decline is hard to reverse - improve the root zone and avoid further stress.
Tar Spot Low
A fungal disease that makes conspicuous raised black, tar-like spots on maple leaves in late summer - dramatic-looking but essentially harmless to the tree.
Watch for: Shiny raised black spots (like drops of tar) on the leaves, sometimes with yellow halos, appearing in late summer.
Prevent: Rake and remove or compost fallen leaves in fall to reduce next year's spore load; ensure good airflow.
Treat: None needed - it's cosmetic; leaf sanitation reduces it over time. Fungicides are not warranted for a shade tree.

Sugar maple wants a good site and space. Give it deep, fertile, moist but well-drained soil and plenty of room for a 60-90 foot tree with a wide canopy and shallow, spreading roots - well away from foundations, pavement, and septic lines. It grows in full sun to part shade and is happiest in cool, moist conditions; it struggles with drought, heat, compacted soil, reflected heat, and especially road salt, so it's a poor choice for tough curbside or Deep South sites.
Plant a balled-and-burlapped or container tree in early spring, water it deeply and regularly for its first 2-3 years, and mulch the root zone (keeping mulch off the trunk). Then settle in for the long haul: sugar maple is slow-growing and takes decades to mature. If you're growing it to tap, know that it won't be ready for syrup for 30-40 years - so plant it as a gift to your future self, or the next generation.
Care
Little care once established - water in drought, prune in summer (not late winter, when it bleeds sap), mulch the roots, and protect it from salt and compaction.
An established sugar maple in a good site needs little care. The main things are water in drought (even mature trees scorch and drop leaves in extended dry spells), a wide mulch ring over the shallow roots, and protection from the stresses it hates - salt, soil compaction, trunk wounds from mowers, and reflected heat.
Prune only as needed, and do it in mid-to-late summer: like all maples, sugar maple 'bleeds' sap heavily from cuts made in late winter and early spring (harmless but dramatic), so avoid pruning then - and don't waste on pruning the sap you could tap. Watch for cosmetic leaf issues (tar spot, leaf scorch) that rarely need treatment, and for verticillium wilt, which can cause branch dieback. Otherwise, a well-sited sugar maple largely takes care of itself for a very long time.
Harvest
Once mature (30-40+ years, 10+ inch trunk), tap it in late winter's freeze-thaw window and boil the sap into syrup - about 40 gallons of sap per gallon of syrup.
The signature harvest is sap for syrup, and it's a magical late-winter ritual. Wait until the tree is mature - at least about 10-12 inches in trunk diameter, which takes 30-40+ years - then tap during the freeze-thaw window (nights below freezing, days above 40°F, typically late February into March), when alternating temperatures pump clear sap up the trunk. Then boil it down: sap is only about 2% sugar, so it takes roughly 40 gallons of sap to make 1 gallon of syrup - a lot of boiling, best done outdoors. Storage
Fresh sap is perishable and must be boiled quickly; finished maple syrup keeps for a year sealed and indefinitely frozen or canned hot.
Fresh sap is highly perishable - it's essentially lightly sweet water and will sour within a day or two, faster in warm weather - so collect it daily and boil it down promptly, keeping it cold (near freezing) in the meantime. Once boiled to finished syrup (219°F, about 66-67% sugar), it's shelf-stable: sealed hot in sterilized jars it keeps unopened for a year or more in the pantry, and an opened jar keeps for months in the fridge. For longer storage, syrup freezes well (it won't solidify) or can be canned. Maple syrup can also be boiled further into maple sugar or candy, which store for a very long time. There's nothing else to store from the tree - the seeds are for wildlife and propagation, not the kitchen.
Propagation & seed saving
Grow from fall-sown seed (needs long cold stratification, slow) or, far faster to a usable tree, plant a nursery transplant; named cultivars are grafted.
Sugar maple grows readily from seed, but slowly. The paired winged 'helicopter' seeds ripen in fall and need a long cold-moist stratification (about 90+ days), so sow them outdoors in fall and let winter do the work; they germinate the following spring. Seedlings are slow, taking many years to become a real tree, so for a yard tree it's far faster to plant a nursery-grown transplant a few feet tall.
Named cultivars - selected for form or fall color, like 'Green Mountain' or 'Legacy' - don't come true from seed and are propagated by grafting onto seedling rootstock, a job for specialist nurseries. For most people, buying a young transplant (or protecting a self-sown seedling, since sugar maples seed themselves freely under mature trees) is the practical route. However you start it, remember you're planting for decades.

Maple sugaring is a truly Indigenous North American tradition. Long before European contact, Native peoples of the Northeast and Great Lakes tapped sugar maples and boiled the sap into sugar and syrup, timing it to the late-winter thaw - and they taught the practice to arriving colonists, for whom maple sugar became a vital homegrown sweetener at a time when cane sugar was imported and, later, tied to slavery. Sugar maple is fundamentally a cool-climate tree, native to and best suited to the Northeast, Upper Midwest, and Appalachian highlands, zones 3 through about 7 (8 only in cool uplands). Zones 3-5: its heartland - cold winters give reliable sap runs and the most brilliant fall color, and the tree thrives. Zones 6-7: still excellent in deep, moist soil, though summer heat and drought stress it more; keep it watered and out of hot, dry, paved sites. Zones 8+ and the Deep South: generally too hot - sugar maple suffers and is short-lived there; southern gardeners should choose heat-tolerant natives like Southern sugar maple (A. floridanum) or other regional trees instead. Sugaring depends on the late-winter freeze-thaw cycle, so reliable syrup production is limited to climates with cold nights and warming days in late winter - which is exactly why the maple-syrup belt hugs the northern states and Canada, and why a warming climate is pushing that belt northward.
